The aim of this work was to improve the knowledge on young suckled Salers bull production and to study the effect of forage type and concentrate level on performance, carcass and muscle characteristics as well as on meat quality. Twenty-four Salers male calves of 150 days of age were assigned to six groups: C0 (fed exclusively with hay and dam’s milk and slaughtered at approximately 6 months of age), and HH (hay – high concentrate), HL (hay – low concentrate), GH (cut grass – high concentrate), GL (cut grass – low concentrate) and CP (control pasture: pasture – high concentrate) groups differing in feeds received until slaughter and slaughtered unweaned at approximately 10 months of age. Carcass weights averaged 210 kg at 10 months of age at slaughter. Average daily weight gain (ADWG) in HH and GH groups tended to be higher (P = 0.09) than in HL and GL groups (1354 v. 1248 g/day). ADWG in CP group (1542 g/day) was higher (P < 0.05) than in the other groups. Carcass weight in CP group (230 kg) tended to be higher (P < 0.1) than in HL (198 kg) and GL (200 kg) groups. Carcass muscle weight was higher (P < 0.05) in GH (155 kg) and CP groups (165 kg) than in HL (141 kg) and GL (142 kg) groups. Carcass and offal fatty tissue weights and carcass fatness did not differ between groups. Neither forage type nor concentrate level had significant effect on the area of muscle fibres or on muscle metabolic enzyme activities (namely, lactate dehydrogenase – LDH, phosphofructokinase – PFK, isocitrate dehydrogenase – ICDH, citrate synthase – CS and cytochrome-c oxidase – COX). semitendinosus muscle of CP group presented higher CS enzyme activities (8.10 μmol/min per g) than HH (5.30 μmol/min per g) and GL (4.52 μmol/min per g) groups. Neither total nor insoluble collagen content significantly differed between groups. Lipid content in rectus abdominis muscle was relatively low (average 67.5 mg/g dry matter) and was not affected by diet (P > 0.05). The ratio between n-6 and n-3 polyunsaturated fatty acid content was lower (P = 0.01) in the low-concentrate-fed than in the high-concentrate-fed group (3.95 v. 5.37, respectively). Sensory analysis noted that longissimus thoracis muscle from CP animals was more tender and juicy than that from HH and GH animals (P < 0.05).

Three experiments were conducted to compare the performance of 9-month-old Friesian steers wintered in three environments, (a) conventional cattle houses, (b) wind-sheltered roofless sawdust pads and (c) unsheltered roofless sawdust pads. Within each environment animals were fed on two planes of nutrition.

In each experiment, winter live-weight gains of animals accommodated on the three winter environments were similar as were weight changes during the subsequent four weeks at grass in Experiments 2 and 3.

No interaction on live-weight gain was found between plane of nutrition and winter environment. Health of outwintered animals was good throughout. The response to feeding barley with hay in these experiments (obtained by comparing low-plane with high-plane treatment groups) showed that on average 5·5 kg of barley dry matter were required to produce 1 kg of additional live-weight gain above that obtained from hay fed alone.

The fatty acid composition of backfat from Pietrain and Large White pigs was examined. Both the inner and outer layers of Pietrain backfat had higher concentrations of unsaturated fatty acids and lower concentrations of saturated fatty acids. Pietrains consequently had relatively soft fat.

A pair-feeding experiment was conducted with Large White and Pietrain pigs to determine whether these differences could be explained by the lower voluntary feed intake of Pietrains. The results showed that the Large Whites continued to accumulate relatively saturated fatty acids even at the lower level of feeding. It was concluded that the differences in the fatty acid composition of backfat reflect genetic differences in the capacity for fat deposition between the two breeds.

Shorn Southdown and Welsh Mountain sheep on high or maintenance levels of nutrition were subjected to two acute (−20°C; 4 mph wind) cold exposures in climate chambers. Before and between exposures the sheep were kept in either a cold (+8°C) or a thermoneutral (+30°C) environment.

1. At +8°C, all the sheep shivered and showed sustained vasoconstriction and elevated heart rates.

2. At + 30°C, heart rates, skin temperatures on the extremities and muscular tone were all consistently higher in sheep which had previously been kept at +8°C.

3. During cooling, the onset of vasoconstriction and increase in heart rate were both delayed in sheep previously kept at + 8°C.

4. These effects (2, 3) were retained for at least 2 days but less than 12 days after the sheep returned to thermoneutrality. They decayed faster than the increased resistance to body cooling produced simultaneously in the same sheep (Sykes and Slee, 1969), since this was still detectable after 2 weeks.

5. Breed differences were mainly small.

6. It was concluded that acclimatization induced by chronic cold exposure was associated with a temporary increase in basal metabolic rate.

Ninety-three Kellakui fat-tailed single lambs were assigned after birth to a 2×2×2 factorial experiment; 46 were uncastrated males and 47 were females. About half the lambs of each sex were docked before they were 1 week old. Half the lambs had unrestricted milk from the ewes until 115 days of age (phase 1) and the other half received all the ewes' milk for the first 30 days and then about one-third of the milk until weaning at 60 days. Creep feed was avail-able to all lambs from about 3 weeks of age, in addition to 200 g of alfalfa dry matter per lamb daily. From 115 days of age, all lambs were fed on a standard fattening ration until slaughtered at weights of 46 to 49 kg for males and 35 to 38 kg for females (phase 2).

Lambs given unrestricted milk were 7·4 kg heavier than restricted lambs at the end of phase 1. Significantly better gains due to docking were observed only for females during phase 2. There was little indication that docking affected feed conversion efficiency. In docked lambs the fat normally deposited in the tail was partially (less than 50%) relocated as subcutaneous plus intermuscular and internal fat. Lean meat percentages of carcasses were similar for docked and control treatments. There is a need to standardize reporting of results from docking experiments to make valid comparisons.

Ultrasound imaging is widely used in animal breeding to provide in vivo estimates of the carcass composition of candidates for selection. Although the technique is less accurate than more recent medical imaging methods, such as X-ray computed tomography and magnetic resonance imaging, it is relatively cheap and mobile. Therefore large numbers of animals can be measured. Most current ultrasound scanners require some degree of manual interpretation of images, which is time consuming and liable to vary both between and within individuals. Hence, this study investigated the automatic interpretation of ultrasound scans from sheep. A computer algorithm is proposed for identifying tissue boundaries. Estimates of tissue depth are shown to be comparable with those obtained by manual interpretation, for images of 72 sheep scanned twice at the position of the 13th thoracic vertebra. The root-mean-square errors of subcutaneous fat depth and m. longissimus muscle depth ivere 0·7 mm and 1·7 mm, respectively.

The efficacy of three microbial phytases to increase the amount of digestible phosphorus (dP) was studied in pigs. A basal diet was prepared meeting the requirements of 30-kg pigs with the exception of P. Concentrations (in g/kg dry matter) were: P 2·9, phytate P 1·3, calcium (Ca) 6·9, and crude protein 208. Intrinsic phytase activity was below detection limit. Microbial phytase was supplemented from three sources (Aspergillus niger (Asp), Peniophora lycii (Pen), and consensus phytase (Con)) at the following levels (phytase units (FTU) per kg diet): 150, 300, 450, 600 and 900. Diets were pelleted without steam. Forty-eight male castrated crossbred pigs ((Large White X German Landrace) X Pietrain) initially weighing, on average, 28 kg were individually penned. Each of the 16 diets was offered to three pigs in three consecutive periods of 17 days each, resulting in nine replicates per treatment. No animal received the same diet twice. Faeces were spot-sampled for each individual pig twice daily for the last 7 days of each period. TiO2 was used as an indigestible marker. An exponential function was fitted to the data, and both marginal and cumulative efficacies of phytases were described on the basis of the resulting functions.

No significant period effect was detected for any of the obtained data. On overall average, daily live-weight (LW) gain was 730 g, and 2.57 kg food were needed per kg LW gain. Neither criterion was significantly affected by source or level of supplementary phytase. Digestibility of organic matter and crude protein averaged 0.90 and 0.84, respectively, again without a significant treatment effect. Digestible P concentration in no case exceeded 1.5 g/kg DM, indicating that P supply to pigs was marginal in all treatments. Digestibility of P from the basal diet was 0.22. P digestibility was significantly affected (P = 0.001) both by the source and by the level of supplementary phytase. It responded in a non-linear fashion to increasing phytase supplementation, this course being less clear for Pen than for Asp and Con phytase. In no case was a clear plateau in P digestibility reached within the range studied. For Asp and Con, marginal efficacy decreased from about 2 mg dP per incremental FTU at low supplementary level to roughly 0.6 mg dP per incremental FTU. This clear dose dependent effect was not present for the Pen phytase, where about 0.6 to 0.7 mg dP per incremental FTU were released almost irrespective of the level of supplementation. It is concluded that phytases of different origin rank differently from each other regarding their efficacy, depending on the level of supplementation. Dose-response studies are recommended in cases where different phytases are to be compared.

Males and females from Soay, Welsh Mountain, Southdown, Finnish Landrace, Jacob, Wiltshire Horn and Oxford Down sheep breeds and a breed of feral goats were slaughtered when they reached 0·40, 0·52, 0·64 or 0·76 of the mean mature body weight of their breed and sex. Total weight of dissected muscle was close to 0·30 times fleece-free empty body weight, or 0·24 times live weight, for all breeds and stages of maturity. The growth of 12 individual muscles or muscle groups dissected from the commercially higher-valued joints of the carcass, was examined in relation to live weight and total muscle weight. Limb muscles matured early. All 12 muscles, when combined, also matured early so that the proportion of lean tissue from the higher-valued joints declined as live weight increased.

There were small but significant sex differences in the relative growth rate of some muscles. The abdominal muscles were early maturing for males and average for females. There were also sex differences in muscle weight distribution. The proportion of muscle in the hind limb of females was 1·055 times that in males, while the 12 muscles from higher-valued cuts constituted 0·403 of total carcass muscle for females and 0·389 for males, a proportional difference of 0·035.

Muscle weight distribution was unrelated to breed size with the possible exception of m. gastrocnemius which appeared to be relatively smaller in genetically larger breeds. After accounting for differences in mature weight, there remained small but significant breed deviations in muscle weight distribution. Southdowns had the most attractive distribution. Feral goats and Jacob sheep, although they had the highest proportion of total muscle, had a much less attractive distribution.

Correlated responses in slaughter and carcass traits to divergent selection for high or low carcass lean content in Texel-Oxford sheep were measured in the crossbred progeny of 23 rams. Rams were selected using the selection index: -0·995 FATD + 0·206 WT20, where FATD and WT20 are the ultrasonic backfat depth and live weight at 20 weeks of age, with both traits standardized to have zero mean and unit phenotypic variance. A total of 329 crossbred lambs were slaughtered at 16 weeks of age and 250 lambs were slaughtered at fixed weight, 38 to 40 kg for castrated males and 36 to 38 kg for ewe lambs. Progeny from high-line rams grew faster, as indicated by the heavier slaughter weight of lambs slaughtered at fixed age (04 (s.e.d. 0·5) kg) and the lower age at slaughter for lambs slaughtered at fixed weight (-5 (s.e.d. 3) days). Subcutaneous and internal fat scores and the Meat and Livestock Commission carcass appraisal and conformation scores were all lower in the high line than in the low line and the magnitude of the selection line differences for lambs slaughtered at fixed weight was essentially double that of lambs slaughtered at fixed age (0·8 v. 0·5 score units).

Shoulder joints of 254 lambs, slaughtered at fixed age, were dissected and half carcasses were dissected on 66 of the lambs. Carcass and shoulder joint information was combined with double-sampling methodology, using multiple regression equations to predict carcass composition. For each tissue type, viz. lean, subcutaneous fat, internal fat and bone, the correlations between carcass content and shoulder joint content were at least 0·90 and the proportions of variation in carcass tissue content accounted for by the prediction equations were also at least 0·90. Progeny of high-line rams had higher carcass lean weight, (402 (s.e.d. 140) g) than progeny from the low line, with no difference in carcass fat weight, such that carcass lean content was higher, (10 (s.e.d. 5) g/kg), and carcass fat content was lower, (-10 (s.e.d. 7) g/kg). Based on the slaughter and carcass traits of these crossbred progeny, divergent selection for high and low carcass lean content has established lines of animals with different rates of lean growth but similar rates offat deposition.

Since consumers are showing increased interest in the origin and method of production of their food, it is important to be able to authenticate dietary history of animals by rapid and robust methods used in the ruminant products. Promising breakthroughs have been made in the use of spectroscopic methods on fat to discriminate pasture-fed and concentrate-fed lambs. However, questions remained on their discriminatory ability in more complex feeding conditions, such as concentrate-finishing after pasture-feeding. We compared the ability of visible reflectance spectroscopy (Vis RS, wavelength range: 400 to 700 nm) with that of visible-near-infrared reflectance spectroscopy (Vis-NIR RS, wavelength range: 400 to 2500 nm) to differentiate between carcasses of lambs reared with three feeding regimes, using partial least square discriminant analysis (PLS-DA) as a classification method. The sample set comprised perirenal fat of Romane male lambs fattened at pasture (P, n=69), stall-fattened indoors on commercial concentrate and straw (S, n=55) and finished indoors with concentrate and straw for 28 days after pasture-feeding (PS, n=65). The overall correct classification rate was better for Vis-NIR RS than for Vis RS (99.0% v. 95.1%, P<0.05). Vis-NIR RS allowed a correct classification rate of 98.6%, 100.0% and 98.5% for P, S and PS lambs, respectively, whereas Vis RS allowed a correct classification rate of 98.6%, 94.5% and 92.3% for P, S and PS lambs, respectively. This study suggests the likely implication of molecules absorbing light in the non-visible part of the Vis-NIR spectra (possibly fatty acids), together with carotenoid and haem pigments, in the discrimination of the three feeding regimes.

The effects of months and seasons of the year on the testis size, libido and plasma testosterone (T) concentrations were studied in 10 young sexually mature male goats over a 12-month period. Testis size was expressed in terms of scrotal circumference, testis diameter and paired testes width while the libido was measured as stimulation and reaction times,number of mounts and services, and libido index. These measurements were recorded fortnightly.

The body weight increased from 33·5 (s.e. 0·95) kg in October, to a maximum of 62·8 (s.e. 1·55) kg in July. All parameters of testis size decreased from October through January with a sharp increase noted in July and August. These parameters were significantly higher in the summer and autumn than in the winter and spring (P < 0·01). The libido in the goats increased from October to a maximum in December, declined gradually to reach the minimum in July, and then improved again in August. Thus, libido was lowest during the summer and highest in winter, the difference being significant (P < 0·01). Plasma T concentrations were high during October, with the lowest values noted in June. An increase in the T concentrations was observed in August, reaching the maximum value in September, the difference being significant (P < 0·01). The T concentrations were significantly higher during autumn than in all other seasons (P < 0·01).

Hypothalamic peptides orexin A (OXA) and orexin B (OXB) are derived from the proteolytic cleavage of a common precursor molecule, prepro-orexin (PPO). They act via two orexin receptors (OX1R and OX2R), which belong to the G-protein coupled receptor superfamily. Orexins are implicated in the regulation of arousal states, energy homeostasis and reproductive neuroendocrine function. The objective of this study was to investigate the presence and changes in orexin expression in the porcine pituitary during the estrous cycle. Adenohypophysis (AP) and neurohypophysis (NP) tissue samples were harvested on days 2 to 3, 10 to 12, 14 to 16, and 17 to 19 of the estrous cycle. The expression of the PPO gene increased in AP and NP during the estrous cycle. The highest PPO protein concentrations in AP were reported on days 2 to 3 (P<0.05), and in NP – on days 10 to 12 and 17 to 19 (P<0.05). The expression of PPO mRNA was lower in AP than in NP, but PPO protein levels were higher in AP. In AP, OXA immunoreactivity was higher (P<0.05) on days 10 to 12 and 14 to 16. In NP, the highest (P<0.05) content of the analyzed protein was observed on days 10 to 12 and the lowest (P<0.05) – on days 14 to 16 and 17 to 19. OXB immunoreactivity in AP reached the highest level (P<0.05) on days 2 to 3, and the lowest level (P<0.05) was determined on days 10 to 12 and 17 to 19. OXB protein concentrations in NP peaked (P<0.05) on days 10 to 12 of the cycle. Our study was the first experiment to demonstrate the expression of the orexin gene and orexin proteins in the porcine pituitary and the correlations between expression levels and the phase of the estrous cycle.

The replacement of the finite and costly resource fish oil is an important task for aquaculture nutrition. A promising approach could be the use of plant bioactives that may have the potential to influence the metabolism and the synthesis of n-3 long chain polyunsaturated fatty acids, especially EPA (20:5n-3) and DHA (22:6n-3). In this study, the two phytochemicals resveratrol (RV) and genistein (G) were investigated for their effects on fish growth, nutrient utilization and body nutrient composition alongside their effects on whole body fatty acid (FA) composition. In a feeding trial lasting 8 weeks, rainbow trout (initial BW: 81.4±0.5 g) were held in a recirculating aquaculture system and fed six experimental diets with varying fish oil levels as plain variants or supplemented with 0.3% of dry matter (DM) of either RV or G. The six diets were as follows: diet F4 had 4% DM fish oil, diet F0 had 0% DM fish oil, diets F4+RV, F4+G, F0+RV and F0+G were equal to the diets F4 and F0, respectively, and supplemented with the phytochemicals RV and G. The feeding of the F0+RV diet resulted in reduced feed intake, growth rate and slightly reduced whole body lipid levels. At the same time, the amount of polyunsaturated FA and the n-3/n-6 ratio were significantly increased in whole body homogenates of rainbow trout fed diet F0+RV in comparison to the F0 control. The feeding of the F0+G diet led to reduced feed intake, slightly increased protein utilization but did not significantly affect the whole body FA composition. Overall, feeding the fish oil-free diet supplemented with the phytochemicals resulted in more pronounced effects on fish performance and FA composition than the single factors per se (dietary fish oil level or phytochemical). Present data indicate that G might not be of profitable use for trout nutrition. In terms of FA composition, RV could be a potentially useful complement for fish oil. However, the impairment of growth and performance parameters as observed in the present study discourages its use in trout diets.

During 1963, pigs tested at the five pig progeny testing stations in Britain were examined and scored by each station manager for leg weakness at the end of test. Some 19 individual items were scored, the score being 0 if satisfactory, 1 if a mild fault and 2 if a serious fault. In addition an overall legs and action score was given, scoring on a scale from 1 to 6 points; in this case the higher the score the better the leg condition. Data were available on 1,240 Landrace and 1,892 Large White pigs (2 females and 2 castrated males per litter)from 128 and 202 sires respectively. Sex differences in incidence were small,most of them being less than a tenth of a standard deviation unit, and so the analyses were performed ignoring sex. To avoid any effects of differences in incidence and in scoring among stations and to avoid the effects of any trends in the scoring pattern over the year, the analyses were performed within three-monthly periods within stations.

Meat quality was studied in pigs reared in groups kept as units during the fattening period and slaughter (unmixed). The results were compared with conventionally reared pigs, which were mixed during the fattening period, at transport to the abattoir and at lairage (mixed). It is concluded that the unmixed pigs in this study had a better meat quality measured as pH,, pHu, weight loss and also fewer skin lacerations compared with the mixed groups (i.e. less development of pale, soft exudative (PSE) and dark, firm dry (DFD) in the unmixed animals). There were no significant differences in meat colour or in lean content between the unmixed and mixed pigs.

The salinity tolerance of Javan rusa deer (Cervus timorensis russa) was investigated with seven stags, aged 4·5 years. Animals were offered a medium-quality chaffed lucerne hay and given five different levels of water salinity: (a) control (570 mg/kg of total dissolved salts (TDS)) and (b) ‘saline’ water with TDS contents of 1000, 3500, 6000 and 8500 mg/kg. Food intake, food digestibility and nitrogen balance were not affected by increasing salt concentration in drinking water, however the drinking water (DW) intake, the total (food plus drinking) water intake and the DW:dry-matter ratio increased with increasing salt concentration. Some deer given water containing 8500 mg TDS per kg showed signs of stress which included large between-day fluctuations in water intake, opening of the orbital gland, head shaking, and rapid breathing. Rusa deer can tolerate drinking water containing 6000 mg TDS per kg for at least 9 days without harmful effect but may be unable to tolerate water with 8500 mg TDS per kg.

A randomized block experiment was conducted using 27 British Friesian cows to assess the effects of three levels of concentrate input (589 (H), 456 (M) and 316 (L)±19·2 kg/cow) on performance. The animals, mean calving date of 6 January, were blocked according to calving date and allocated at random to treatments. All concentrates were given during the post-partum indoor feeding period (mean of 86 days) in addition to access ad libitum to grass silage. All animals received equal concentrate inputs/kg milk produced for 29 days after calving, following which the concentrate inputs were reduced, the reduction depending upon treatment. The milk outputs during the treatment period were 2147, 2075 and 1850 ± 75·8 kg and live weights at the end of the period were 504·1, 500·0 and 468·8 ± 4·96 kg for the H, M and L levels of concentrate supplementation respectively. Six animals per treatment were rotationally grazed at pasture at a stocking rate of 6·0 cows/ha for 11 weeks following the indoor feeding period. Performance at pasture was not affected significantly by previous treatment, with the milk outputs for the pasture period being 1647, 1673 and 1738 ± 53·0 kg, for the H, M and L treatments respectively. The milk outputs during the total indoor feeding plus grazing period at 3887, 3852 and 3636 ± 103·5 kg for the H, M and L treatments respectively did not differ significantly. Milk composition data are also presented.

Effects of castration on growth, wool production, carcass characteristics, and meat quality in sheep were investigated.

The experiment included two flocks (similar in their effect on pre-weaning performance, but representing high and low planes of nutrition after weaning), two years, and two slaughter ages. Rams weighed approximately 5 % more thanwethers at weaning, and 15 % and 23 % more as yearlings on the low- and high planes of nutrition respectively. Differences in favour of rams in terms of skeletal and muscle size and wool production were also greater on the higher plane of nutrition. Carcass weight was approximately 4%, 8% and 19% higher for rams among lambs, low plane and high plane yearlings, respectively. Proportion of carcass weight in the forequarters was 0·5 %, 1·1 % and 2·3 % higher for rams in these three groups. Rams had less kidney fat and the same percentage of the carcass weight in loin and trimmed leg as wethers in all groups.

Carcass grade and eating quality as evaluated by a taste panel did not differ between ram and wether lambs. Among the lighter yearling group, meat from the loin of ram carcasses was less tender. Quality was appreciably lower for rams in the heavier yearling group. Meat from ram carcasses had 1 to 2% higher cooking loss than that from wethers.

Ninety of each of New Zealand White (NZW) and Californian (Cal) male weaned rabbits at 5 weeks of age with nearly similar average live weights were used during two periods of the year (mild and hot, each of 9 weeks), in a trial to evaluate their adaptability as meat animals to the subtropical conditions of Egypt. The results showed that NZW surpassed Cal, in most of the traits studied. The increase was significant in final live weight, daily weight gain, final body solids, daily body solids gain, body water concentration (ml per 100 g body solids) and pre-slaughter weight. Meanwhile, Cal significantly surpassed NZW in daily water consumption. The temperature-humidity index (THI) values indicated absence of heat stress in the first period and exposure to moderate (but very close to severe) heat stress in the second. The hot conditions induced significant decline in final live weight, daily weight gain, food intake, final body solids, daily body solids gain, plasma tri-iodothyronine (T3) hormone, total proteins, albumin, globulin, total lipids, glucose, electrolytes (Na, K, Ca, Mg and P), pre-slaughter weight and kidneys with fat weight. In contrast, the hot conditions were accompanied by significant increases in water intake, body water concentration, plasma urea-N, creatinine and physiological body reactions (respiration rate and temperatures of rectum, skin and ear). Drinking water containing high levels of salt (3000 p. p. m. and more) caused significant decreases in final live weight, daily live-weight gain, final body solids, daily body solids gain, plasma T3 hormone, total proteins, albumin, total lipids, glucose, pre-slaughter weight and kidneys with fat weight. At the same time, significant increases occurred in water consumption, body water concentration, plasma urea-N, creatinine, electrolytes (Na, K, Ca and P), respiration rate and rectal and skin temperatures. Estimations of adaptability to the subtropical environment of Egypt and tolerance to drinking saline water under the same conditions were found to be proportionately 0·844 and 0·876 and 0·821 and 0·803, in NZW and Cal, respectively.

Experiment 1, with rams (17·0 kg initial weight (M)), and experiment 2, with steers (203 kg M), involved 2 × 2 arrangements of treatments to compare the effect of doubling the amount of stover offered (25 or 50 g/kg M daily) and chopping (unchopped or chopped), upon intake, selection and live-weight change. The stover used was a non-bird-resistant, local variety (Dinkamash). The particle length distribution of the chopped stover (produced by a tractor-driven chaff cutter) was: <4·5 mm, 0·148; 4·5 to 8 mm, 0·157; 8 to 12 mm, 0·181; 12 to 20 mm, 0·269; 20 to 33 mm, 0·168; 33 to 54 mm, 0·040; 54 to 90 mm, 0·003; >90mm, 0·034. The stover was supplemented with minerals and cottonseed cake (sheep, 0·1 kg dry matter (DM) per day; cattle, 0·76 kg DM per day). Experiment 1, over 56 days, involved 48 Menz Highland, 18-month-old, rams, with four replicate pens containing three rams. Experiment 2, over 49 days, used 32, individually penned, Friesian × zebu yearling steers. With rams, doubling the amount offered and chopping increased intake, and the effects were additive (unchopped: 0·98 v. 2·24; chopped: 1·08 v. 1·60 (s.e. 0·071) kg DM per pen per day). With steers, there was an amount × chopping interaction (P < 0·05) (unchopped: 3·7 v. 4·7 chopped: 3·6 v. 3·9 (s.e. 0·16) kg DM per day), with chopping reducing intake of stover offered at 50 g/kg M per day. Increased intakes were associated with increased growth rate. In both experiments refused stover contained less leaf-plus-sheath than offered stover but the difference was more pronounced in rams compared with steers indicating the superior selective ability of the rams. In rams offered unchopped stover, the increase in stover intake with increasing amount offered was accounted for by a proportional 1·03 unit increase in consumption of leaf-plus-sheath and a 0·06 unit reduction in intake of stem. Doubling the amount of unchopped stover offered increased intake of both rams and steers by 0·27 unit. Chopping stover was clearly beneficial for rams but not for steers. Doubling the amount of stover offered is a simple excess-feeding strategy to apply. Excess feeding also increases the proportion of stover refused from about 0·2 to 0·5, thus generating an uneaten residue available for other purposes, e.g. mulch or compost.
