Four Scottish Blackface rams were mated with a group of their own daughters and a similar number of non-related ewes. The matings were made in three successive years. All ewes were maintained under normal hill conditions. Female progeny from the matings entered the ewe flock unculled. Records of birth type, birth weight, fleece and live-weights throughout life were obtained.

Inbred lambs had lower mean values for all measured characters than did their non-inbred half-sibs and there was a greater number of apparently barren ewes amongst the flock ewes which were expected to produce inbred lambs. The inbred progeny, also maintained in the normal hill flock, showed a higher incidence of barrenness and lower lamb survival rates at all ages than did their non-inbred contemporaries in the same environment. In the final year of the observations, when the standard of nutrition during late pregnancy was raised, the neo-natal mortality rate in both groups was reduced.

The mechanism of action of leptin in pregnant breeding sows, in which hyperphagia is managed through dietary strategies, is yet to be clarified. The aim of this study was to monitor leptin concentrations and their interactions with lactogenic hormones in Large White×Landrace breeding multiparous sows (n=15). All sows showed a normal body condition (mean body condition score: 2.96). Blood samples were collected the day after weaning the litters, at insemination, every 15 days up to day 45 of pregnancy and every 7 days from day 46 to farrowing. At delivery, the placenta was collected for the analysis of leptin and leptin receptor expressions. Plasma leptin levels increased from the end of mid gestation (day 72) and remained high until farrowing (P<0.05). As expected, plasma prolactin (PRL), low during most of pregnancy, increased during the 2 weeks before farrowing (P<0.05), whereas progesterone levels reached plateau at 30 days of gestation and decreased at farrowing (P<0.05). Cortisol levels peaked close to farrowing (P<0.05). Leptin was expressed in the placenta, where the receptor expression analysis showed the presence of the short form but not of the long form. A positive correlation was found between leptin and PRL concentrations during mid (r=0.430; P<0.001) and late (r=0.687; P<0.001) pregnancy, and with progesterone in early pregnancy (r=0.462; P<0.05). During late gestation, a positive correlation was observed between leptin and cortisol (r=0.585; P<0.001). Our results suggested that, in restrictively fed pregnant sows, the leptin levels increased from the end of mid pregnancy to delivery, confirming the presence of leptin resistance. We showed a correlation between leptin and lactogenic hormones during different stages of pregnancy in sows. Lactogenic hormones show pregnancy-specific changes in their secretion and all may become involved in modulating leptin signal.

Existing methods for estimating individual dairy cow energy balance typically either need information on feed intake, that is, the traditional input–output method, or frequent measurements of BW and body condition score (BCS), that is, the body reserve changes method (EBbody). The EBbody method holds the advantage of not requiring measurements of feed intake, which are difficult to obtain in practice. The present study aimed first to investigate whether the EBbody method can be simplified by basing EBbody on BW measurements alone, that is, removing the need for BCS measurements, and second to adapt the EBbody method for real-time use, thus turning it into a true on-farm tool. Data came from 77 cows (primiparous or multiparous, Danish Holstein, Red or Jersey) that took part in an experiment subjecting them to a planned change in concentrate intake during milking. BW was measured automatically during each milking and real-time smoothed using asymmetric double-exponential weighting and corrected for the weight of milk produced, gutfill and the growing conceptus. BCS assessed visually with 2-week intervals was also smoothed. EBbody was calculated from BW changes only, and in conjunction with BCS changes. A comparison of the increase in empty body weight (EBW) estimated from EBbody with EBW measured over the first 240 days in milk (DIM) for the mature cows showed that EBbody was robust to changes in the BCS coefficients, allowing functions for standard body protein change relative to DIM to be developed for breeds and parities. These standard body protein change functions allow EBbody to be estimated from frequent BW measurements alone, that is, in the absence of BCS measurements. Differences in EBbody levels before and after changes in concentrate intake were calculated to test the real-time functionality of the EBbody method. Results showed that significant EBbody increases could be detected 10 days after a 0.2 kg/day increase in concentrate intake. In conclusion, a real-time method for deriving EBbody from frequent BW measures either alone or in conjunction with BCS measures has been developed. This extends the applicability of the EBbody method, because real-time measures can be used for decision support and early intervention.

Belly traits including predicted fat percentage of the belly (FATPC), combined area of the rib bone and muscle (RBMA), intermuscular fat area (IMFA) and subcutaneous fat area (SFA) were recorded on 2403 pigs along with carcase fat depth at the P2 site (P2). Belly traits were derived from image analysis of the anterior side of pork bellies. Further data available for pigs with belly data and their contemporaries included lifetime growth rate, ultrasound backfat and loin muscle depth (35 406 records), along with meat quality traits (3935 records). There were 4586 feed intake records and 18 398 juvenile insulin-like growth factor-I (IGF-I) records available, which included the majority of pigs with belly data. Genetic parameters were estimated based on an animal model using Residual Maximum Likelihood procedures. Heritability estimates for belly traits ranged from 0.23 to 0.34 (±0.05 to 0.06) while the common litter effect varied from 0.04 to 0.07 (±0.03). Genetic correlations between FATPC, individual belly fat measurements and carcase P2 fat depth differed significantly from unity, ranging from 0.71 to 0.85 (±0.05 to 0.08). Genetic correlations between IMFA and subcutaneous fat measurements varied from 0.47 to 0.63 (±0.08 to 0.13). Genetic correlations between belly and performance traits show that selection for reduced juvenile-IGF-I, reduced feed intake and reduced backfat along with increased loin muscle depth will reduce overall fat levels in the belly. Only loin muscle depth had a significant genetic correlation with RBMA (0.32 ± 0.10), thereby assisting selection for improved lean meat content of the belly. Ultimately, genetic improvement of belly muscles requires specific measurements of lean meat content of the belly. For this to be effective, measurements are required that can be routinely recorded on the slaughter line, or preferably on the live animal.

Early weaning may be used in beef cattle production to improve reproduction rates in range conditions. However, weaning causes a stress response in cows, which may be especially strong in early weaning management, as the bond between the cow and the calf is still strong. We hypothesized that weaning calves in two steps, with the aid of anti-sucking devices (nose flaps) would reduce the behavioural stress response in the cows separated from their calves 2 months after parturition. We compared the behaviour frequency and weight change in cows that were weaned abruptly, by separation of the calf on day 0 of the study, or in two steps, consisting of the use of anti-sucking nose flaps for 5 days before permanent separation; a third group was not weaned to serve as control. Thirty-six crossbred multiparous Aberdeen Angus×Hereford cows and their calves (n=12/treatment) were managed in three paddocks with similar pasture availability, with four dyads from each treatment per paddock. Cows’ behaviour was observed by direct visual instantaneous sampling, at 10 min intervals from days −3 to 11. Weaning the calves in two steps clearly attenuated the behavioural stress response observed in abruptly weaned cows, which included reductions in grazing and lying, and increases in pacing, walking and vocalizing. Our results corroborate those previously shown for cows nursing older calves, and indicate that step weaning can reduce the behavioural stress response of cows at weaning, even when the calf is weaned shortly after birth, when the bond between the cow and calf is still very strong.

Housing soivs in large groups is increasing in popularity but some group-housing systems may compromise subsequent reproductive performance. An experiment was designed to test this hypothesis using multiparous sows weaned at 21 ±2 days. Two treatments were studied: a stable group of 12 sows and a dynamic group of 18 sows. Both treatments had similar space allowances in the lying area (1·24 m2 per sow). Sows were allocated to treatment within 1 week of service and remained on treatment until after day 40 of pregnancy. Each stable treatment group remained unchanged, whereas sows were replaced weekly in the dynamic treatment. Sows were fed using a single electronic feeder for each pen. All sows were treated similarly for the rest of pregnancy. Eighty and 120 sows from the stable and dynamic treatments respectively completed pregnancy. Five second parity sows from the dynamic treatment were removed having suffered from aggression. The farrowing rate was 0·78 and 0·85 for stable and dynamic treatment sows respectively. The stable treatment sows had larger litters and a higher proportion of litters having 10 or more total piglets born (P < 0·01). The stable treatment showed a significantly heavier (P < 0·05) litter weight for total pigs born (16·9 v. 14.6 (s.e.d. 0·57) kg per litter). The parities were uneven so the data must be treated with caution. However, the results indicate that the present advice, that soivs should be housed in stable groups for the first 4 weeks of pregnancy, should remain unchanged.

Suckling lamb meat is traditionally produced in Mediterranean Europe. Breed can affect the quality of the lamb carcass and meat. This study is aimed at comparing the carcass and meat quality between suckling lambs from a local and a non-native dairy breed, Churra and Assaf. Churra is included in the Spanish Protected Geographical Indication (PGI) ‘Lechazo de Castilla y León’, whereas Assaf is not. However, Assaf breeders have requested the inclusion of the breed in the PGI. Carcasses and meat from 16 male lambs (eight Churra and eight Assaf) were used in this study. The lambs were all raised under an intensive rearing system and fed on a milk substitute to minimise maternal influence. The carcasses were evaluated for conformation, fatness, joint and leg tissue proportions and the meat was analysed for composition (i.e. proximate composition, iron, haematin, fatty acids and volatiles) and technological quality traits (i.e. texture, water holding capacity, colour and lipid stability). Churra carcasses were larger than Assaf carcasses. However, the proportions of commercial joints and main tissues did not differ between breeds. Cavity and intermuscular leg fat, but not total leg fat, were higher in Churra carcasses. Churra meat showed a higher proportion of n-6 fatty acids, higher redness and better colour stability during aerobic storage. In contrast, Assaf lamb was more resistant to lipid oxidation after cooking. This is a preliminary study to measure the influence of breed on a wide range of quality characteristics in Churra and Assaf suckling lamb carcass and meat. It may be of relevance for breeders, consumers and food policy makers, setting the basis for future studies that include larger commercial populations.

Three hundred and eight cattle, comprising steers and heifers from continental and British crosses were finished on an 18-month beef production system at Warren Farm, Lambourn, Berkshire and slaughtered across a range of fatness levels. The eating quality of roasting joints (semimembranosus.) and sirloin steaks (longissimus thoracis et lumborumj was evaluated and the chemical composition of the lean tissue was taken on a subset of the samples. Results suggested that the greatest differences between the breeds was in the joints. There were significant (P < 0·01) differences in the lipid, moisture and collagen contents of the lean tissue of the joints from the different sire breeds. The Belgian Blue sire progeny had significantly lower lipid content than the Charolais or Aberdeen Angus crosses, and significantly lower collagen content than the Aberdeen Angus cross. In addition joints from Belgian Blue crosses were more tender than joints from other breed crosses. Although the lipid and moisture contents of the steaks from different sire crosses were significantly different there was no evidence of differences in eating quality. Perhaps surprisingly there were no significant relationships between the eating quality and chemical composition between or within breed. Irrespective of breed, carcass fatness influenced the juiciness of both the joints and the steaks although the response was different for continental crosses and British crosses and depended on carcass sex. Over and above this response, steer meat was generally more juicy than heifer meat.

1. Two groups of Friesian calves, one group of 10 reared on whole milk and the other group of 9 changed gradually from whole milk at 21 days of age to a full diet of reconstituted buttermilk powder at 29 days of age, were slaughtered at a live-weight of approximately 203 1b. Data obtained at slaughter showed a highly significantly heavier weight of omental fat from the calves of the whole milk group, and a significant difference in the weight of the unemptied intestinal tract in favour of the buttermilk group.

2. One side of each carcass was dissected by anatomical joints into the primary tissues; bone, muscle, fat, and tendon and waste. The absolute proportional weight of the dissectible fatty tissues and the weight of kidney and channel (pelvic) fat were statistically highly significantly heavier in the carcass sides of the calves reared on whole milk. The percentage of muscular tissue in the sides of the buttermilk reared calves was significantly higher than for the sides in the other group.

3. The chemical composition of the dissected muscular tissue revealed highly significant differences in fat (ether extract) and a significant difference in water percentage in favour of the carcass sides of the calves reared on whole milk.

4. The chemical composition of the dissected fatty tissue showed statistically highly significant differences in favour of the calves reared on whole milk for the items: water weight and percentage, fat weight and percentage, protein weight, and ash weight. The buttermilk group had in their dissectible fatty tissue a highly significantly greater proportion of water and protein.

5. The dissectible components of the individual joints showed: significantly heavier weight of fatty tissue from the leg, loin, pelvis, 9–10–11 rib cut, thorax, and shoulder of the left sides of the calves reared on whole milk. The weights of the dissectible muscular tissue of the loin and the rib cut were significantly heavier for the buttermilk-reared calves.

6. Cutting-out data on a limited number of sides showed no consistent differences between groups.

7. The meat trade did not differentiate against the buttermilk-fed calves despite their lower fat content. The high muscular tissue content at 65–68% makes veal a very desirable product.

A total of 182 pigs from one farm and comprising 65 boars (B), 65 gilts (G) and 52 castrates (C) from 48 litters, were reared from birth to 89 kg live weight. Sex of pig did not influence age at slaughter but B compared with G and C had lower killing-out proportions (0·748 v. 0·756 v. 0·753) and reduced backfat measurements. Skin damage in transit to slaughter and/or in lairage was more prevalent in B compared with C, with G being intermediate. Muscle pH measurements were not influenced by sex except ultimate pH of the m. semispinalis capitis, where B compared with G and C had a higher incidence of values above 6·1 (0·246 v. 0·060 v. 0·120). Carcasses of B had proportionately more shoulder (0·04 unit) and more leg (0·011 unit), at the expense of middle, than those of C with G being intermediate. Weight losses in the preparation of de-boned sides for curing were higher in carcasses of B compared with G and C.

Present day sows, particularly young sows, have smaller fat reserves than they did 10 to 20 years ago (Whittemore, Franklin and Pearce, 1980). Consequently, changes in the sows' body reserves during pregnancy and lactation have become much more critical in evaluating various nutritional strategies. The interpretation of many experiments designed ot investigate the effects of nutrition of the sow would be enhanced if changes in the body composition of the animal could be determined.

1. Herbage was ensiled, fresh at 17% DM or wilted to 32% DM, with and without the addition of formic acid (19·2 kg/tonne DM). The silages were fed individually ad libitum to 36 fifteen-month-old British Friesian steers of about 280 kg initial live weight (nine animals per treatment).

2. Wilting and the application of formic acid both inhibited fermentation, resulting in silages with higher levels of water-soluble carbohydrates, lower concentrations of volatile nitrogen and lower organic acid contents.

3. There were no significant dry matter × formic acid interactions in dry-matter intake or daily live-weight gain.

4. Treatment with formic acid did not enhance significantly either dry-matter intake or daily live-weight gain. Furthermore, it had little effect on digestibility, nitrogen retention or metabolizable energy (ME) concentration.

5. Wilting before ensiling increased dry-matter intake from 5·0 to 8·3 kg/head per day with consequent marked increases in ME intake, nitrogen retention and live-weight gain. Wilting, however, had little effect on digestibility, ME concentration, or the efficiency with which dietary nitrogen intake was retained.

Insulin-like growth factor 1 (IGF1) correlates with antler growth and body growth in penned red deer stags. The present study aimed to investigate the relationships among plasma concentration of IGF1, body growth and carcass composition in grazing stags. Twenty-eight 10-month-old stags were kept at pasture from September to February. They were bled, weighed and their antlers measured fortnightly. Plasma was analysed for total IGF1. All stags were slaughtered in February (aged 15 months); organ weights were recorded and the carcasses were analysed chemically for water, fat and ash. The stags began the study weighing 60·7 (s.e. 1·4) kg and were 96·3 (s.e. 2·0) kg at the end. They grew rapidly in spring and early summer but growth rate slowed in mid summer before increasing again in late summer.

Total plasma 1GF1 for each stag throughout the study correlated positively with antler length (P < 0·001), total live-weight gain (P < 0·001), hot carcass weight (P < 0·01), fat-free carcass weight (P < 0·01), carcass fat weight (P > 0·05) and carcass fat percentage (P > 0·05). Thus IGF1 correlated significantly with all measures of body weight except fat. IGF1 correlated positively with antler growth rate (P < 0·001) calculated individually for each stag during each fortnight. IGF1 correlated positively with the spring phase of live-weight gain calculated as above (P < 0·001) but negatively (P < 0·01) with live-weight gain during the late summer growth phase. The relationships between IGF1 and growth in penned stags also pertain in grazing animals, and in addition 1GF1 is closely associated with carcass lean mainly via an overall effect on body size.

Two trials were performed to assess changes in the physicochemical properties of precisely processed (micronised v. extruded) wheats, prior to inclusion in piglet diets. The in vitro data obtained were subsequently related to biological responses of newly weaned piglets over 14 days. The effects of the severity of micronisation (Trial 1) or extrusion (Trial 2) on the nutritional value of two wheats (varying in endosperm texture) were examined. Extrusion, in contrast to micronisation, drastically disrupted the structural properties of wheat starch granules through melting of crystallites and macromolecular degradation of starch polysaccharides. These structural changes strongly improved the hydration characteristics of starch and its digestibility. The amount of starch digested in vitro was approximately 0.20, 0.70 and 0.90 for the unprocessed, micronised and extruded samples, respectively. This enhanced in vitro digestibility correlated well with, and helped to explain, the significant improvement in the apparent digestibility of starch at both the 0.5 region (mean coefficients for extruded wheat were 0.869 and 0.959 v. raw 0.392; P = 0.017) and 0.75 region (extruded 0.973 v. raw 0.809; P = 0.009) of the small intestine, when compared with piglets fed an unprocessed wheat diet. Extrusion and, to a lesser extent, micronisation lessened the reduction in apparent starch digestibility on day 4 post-weaning, typically seen at the 0.5 intestinal region in piglets fed an unprocessed wheat diet. Processing variables influenced both in vitro and in vivo data, with for instance, a positive relationship between specific mechanical energy (SME) input during extrusion and starch digestibility at the 0.5 region. The higher digestibility coefficient observed at the 0.5 region for the high SME diet suggests enhanced digestion and more rapid release of starch. However, it remains to be seen whether a diet containing rapidly digestible, as opposed to slowly digestible, starch is more beneficial for piglets. This rate of starch breakdown in the piglet is an important finding, which may have implications in helping to alleviate the post-weaning growth check, particularly in the absence of in-feed antibiotic growth promoters. Processing did not appear to offer any benefit over unprocessed wheat with regard to daily live-weight gain or the apparent digestibility of nitrogen in the small intestine over the 14-day period. Based on the enhanced in vivo starch digestibility, performance might be improved over a longer period, although future studies are required to confirm this. Precise processing variables for raw materials must be stated in all animal trials.

The aim of this study was to determine the effect of single layer centrifugation (SLC) using Androcoll-E-Large on donkey sperm quality parameters after 24 h of cool-storage. Ejaculates were collected from Andalusian donkeys and then cooled at 5°C. SLC was carried out after 24 h of cool-storage using Androcoll-E-Large. In the first experiment, all sperm parameters assessed (total and progressive sperm motility, viability, sperm morphology and sperm kinematics VCL, VSL, VAP, LIN, STR, WOB, ALH and BCF) were statistically compared between semen samples processed or not with Androcoll-E-Large. Significant differences (P<0.05) were found between SLC-selected and unselected semen samples for all parameters assessed, obtaining better results after SLC. In the second experiment, semen samples were classified in two groups according to their sperm progressive motility (PM) before SLC. Then, the increments obtained in semen quality parameters after SLC were compared between groups. No significant differences were found between groups, indicating that SLC improved the sperm quality parameters of entire set of semen samples processed with independence to their original PM. In conclusion, SLC with Androcoll-E-Large can be used in donkeys, increasing the sperm quality of cooled-stored donkey semen doses after 24 h of cool storage.

Muscle lipid concentration is known to influence pork eating quality. This study aimed at evaluating the effect of a restriction–re-alimentation feeding strategy on intramuscular fat deposition in pigs. A total of 70 Duroc × (Large White × Landrace) pigs (castrated males and females) were used. Ten pigs were first slaughtered at 30 kg live weight (LW) to determine initial body and muscle composition. From 30 to 80 kg LW (growing period), pigs were either fed ad libitum (AL) or restricted to 70% of the ad libitum intake of AL pigs (RA). From 80 to 110 kg LW (finishing period), both AL and RA pigs were fed ad libitum. In each group, pigs were slaughtered at 80 kg (n = 10) and at 110 kg (n = 20) LW. During the growing period, the growth rate of RA pigs was reduced by 30% (P < 0.001) compared with AL pigs. During the finishing period, RA pigs had a 7% (P = 0.09) higher growth rate than AL pigs due to compensatory feed intake (+14%). Plasma insulin-like growth factor-1 concentration was lower in RA pigs at 80 kg LW, but markedly increased after re-alimentation up to the level observed in AL pigs (P < 0.001). At 80 kg, the leaner carcasses of RA pigs resulted from a more pronounced reduction in fat than in lean tissue deposition rates. Re-alimentation of RA pigs increased fat tissue deposition (+160% for females, P < 0.01) but not lean deposition in the carcass, leading to limited differences in carcass composition between RA and AL pigs at 110 kg LW. Regarding tissue deposition rates, the response to feeding strategy differs between muscles. In the m. biceps femoris (BF), restriction affected lipid (−50%, P < 0.001) and protein (−25%, P < 0.001) deposition, whereas re-alimentation increased lipid (+62%, P < 0.05) but not protein deposition rates. At market weight, the extent of the difference in BF lipid concentration between RA and AL pigs was strongly reduced, but still significant. By contrast, in the m. longissimus, restriction decreased protein but not lipid deposition, whereas neither of them was modified during re-alimentation. Therefore, an increased muscle lipid concentration at 110 kg LW could not be reached in RA pigs. Modifications of onset and/or duration of restriction and re-alimentation periods should be tested to optimise effects on muscle lipid deposition and thereby achieve improved pork quality.

Gaining a deeper understanding into the underlying mechanisms associated with intestinal function and immunity during the weaning transition is critical to help shed new light into applied nutrition approaches to improve piglet performance and health during this critical life-stage transition. The transient anorexia triggered at weaning leads to compromised intestinal barrier function and a localized inflammatory response. Considering barrier function, specific nutrient fractions appear to have a significant impact on the development and function of the immune and microbial systems around weaning. Understanding the specific impact of nutrients in the small intestine and hindgut is important for helping to bring more focus and consistency to nutritional approaches to support health and immunity during the weaning transition period. The challenge continues to be how to translate these modes of action into practical and scalable approaches for swine nutrition. We will focus specifically on practical nutritional approaches to influence intestinal immunity through lipid, protein and antioxidant nutrition.

Summary studies of dairy cow removal indicate increasing levels of mortality over the past several decades. This poses a serious problem for the US dairy industry. The objective of this project was to evaluate associations between facilities, herd management practices, disease occurrence and death rates on US dairy operations through an analysis of the National Animal Health Monitoring System’s Dairy 2007 survey. The survey included farms in 17 states that represented 79.5% of US dairy operations and 82.5% of the US dairy cow population. During the first phase of the study operations were randomly selected from a sampling list maintained by the National Agricultural Statistics Service. Only farms that participated in phase I and had 30 or more dairy cows were eligible to participate in phase II. In total, 459 farms had complete data for all selected variables and were included in this analysis. Univariable associations between dairy cow mortality and 162 a priori identified operation-level management practices or characteristics were evaluated. Sixty of the 162 management factors explored in the univariate analysis met initial screening criteria and were further evaluated in a multivariable model exploring more complex relationships. The final weighted, negative binomial regression model included six variables. Based on the incidence rate ratio, this model predicted 32.0% less mortality for operations that vaccinated heifers for at least one of the following: bovine viral diarrhea, infectious bovine rhinotracheitis, parainfluenza 3, bovine respiratory syncytial virus, Haemophilus somnus, leptospirosis, Salmonella, Escherichia coli or clostridia. The final multivariable model also predicted a 27.0% increase in mortality for operations from which a bulk tank milk sample tested ELISA positive for bovine leukosis virus. Additionally, an 18.0% higher mortality was predicted for operations that used necropsies to determine the cause of death for some proportion of dead dairy cows. The final model also predicted that increased proportions of dairy cows with clinical mastitis and infertility problems were associated with increased mortality. Finally, an increase in mortality was predicted to be associated with an increase in the proportion of lame or injured permanently removed dairy cows. In general terms, this model identified that mortality was associated with reproductive problems, non-infectious postpartum disease, infectious disease and infectious disease prevention, and information derived from postmortem evaluations. Ultimately, addressing excessive mortality levels requires a concerted effort that recognizes and appropriately manages the numerous and diverse underlying risks.

The purpose of this experiment was to determine whether body temperature is a sensitive parameter to measure long-term effects of stress in pigs. Mixing of unacquainted pigs is a severe stressor that has detrimental effects on health, production and welfare. We measured deep body temperature after mixing growing pigs. Five pigs of 15 weeks of age, each individually housed with a companion pig, were mixed with two unacquainted congeners. Deep body temperature, heart rate and activity were recorded by radiotelemetry 9 days prior to until 8 days after mixing. These parameters were also recorded in five control pigs (individually housed with a companion pig) during the same time span. Behaviour during the light period was recorded on videotape on the day of mixing and on three subsequent days. Mixing induced a significant rise in body temperature that lasted for 8 h after mixing. Although heart rate and general activity level did not significantly differ between mixed and control pigs, mixing significantly increased the frequency of fighting and reduced the frequency of eating. In conclusion, the present experiment shows that mixing induces a long-lasting hyperthermia in pigs. Thus, deep body temperature may be used as a sensitive parameter to measure long-term effects of stress in pigs.

The aim of this study was to rank diverse beef cattle genotypes for meat quality characteristics and to determine whether that ranking changed depending on the environment in which the animals were finished. Breed groups, ranging from 100% Bos indicus to 100% Bos taurus content, were derived from Indian zebu (Brahman), African zebu (Boran), British breeds (Hereford-Shorthorn), continental breeds (Charolais and Simmental) and Sanga (Tuli and Belmont Red). Heavy steers (>600 kg) were raised in a tropical environment and finished either on pasture or in a feedlot.

For striploins (longissimus) from feedlot finished steers, cooking loss was greatest for zebu (Z) steaks, least for British (B) steaks (P < 0·001), and intermediate for the other breeds. For striploins from pasture finished steers and eye rounds (semitendinosus) from both pasture finished and feedlot finished steers, there were no breed differences in cooking loss.

For both feedlot finished and pasture finished steers, striploin steaks from B steers were most tender, and Sanga (S) and zebu × continental cross (ZC) steaks were more tender than Z steaks. Warner-Bratzler initial yields suggested that the lower toughness of these breeds was due to lower myofibrillar toughness. Peak force minus initial yield suggested a smaller, opposite effect of increasing connective tissue toughness associated with increasing Bos taurus content. This breed effect on connective tissue toughness was more prominent in the eye round samples. In the feedlot finished steers, Z eye round was as tender as B eye round. In pasture finished steers, Z eye round had a peak force 1·3 kg lower than B in contrast to the results for striploin where Z was 1·2 kg higher than B. Sanga eye round followed the same trend as B relative to Z but to a lesser extent. From the feedlot, S eye round was more tender than Z eye round and from pasture, S eye round was the same as Z eye round. There was no evidence of heterosis f or any meat quality attribute.

These results are best explained in terms of a model incorporating differential effects of breed on the myofibrillar and connective tissue components of toughness. The implications of this study are that the tenderness of grilling and roasting cuts of meat from the predominantly Brahman-based beef herd of northern Australia can be improved through crossbreeding with any of the taurine breeds studied.
