1. A direct calorimeter is described, capable of partitioning the total heat loss from individual pigs into its evaporative and non-evaporative components; tests revealed that the instrument measured non-evaporative heat loss with a coefficient of variation of 3%, and evaporative heat loss with a coefficient of variation of 5·0% at 10° and 20°C, and 5·6% at 30°C.

2. Experiments were carried out to measure the differences between heat losses at 20° and 9°C, or at 20° and 30°C, for pigs weighing approximately 26 kg and 64 kg; each measurement lasted 20 minutes and was made after an equilibration period of 3–4 hr.

3. Heat loss was proportional to body weight raised to the power of 0·6, under the present experimental conditions, over the range 26–64 kg at 20°C.

4. Total heat loss at 9°C was significantly greater than at 20°C for pigs of both sizes; total heat loss at 30°C was smaller than at 20°C for pigs of both sizes, the decrease being significant for the heavier pigs only. Nonevaporative heat loss increased significantly with decrease in temperature. Evaporative heat loss at 30°C was significantly greater than at 20°C. The increases in total and non-evaporative heat losses at 9°C when compared with 20°C, were significantly greater for the lighter pigs than for the heavier pigs. The small decrease in total heat loss at 30°C, compared with 20°C, may have been due to non-attainment of thermal equilibrium at 30°C.

5. Values for whole body thermal conductance were calculated from the measurements of non-evaporative heat loss, and these indicated that a change in tissue conductance took place between 20° and 30°C; the mean values at 9°C were 3·78 and 3·15 kcal/°C.m2.hr for the lighter and heavier pigs respectively.

6. Evaporative heat loss at 20°C amounted to 280 and 330 kcal/m2. 24. hr for the lighter and heavier pigs respectively. This component of heat loss amounted to 8% and 13% of the total heat loss at 9° and 20°C respectively for all pigs; the corresponding values at 30°C were 32% and 25% for the lighter and heavier pigs respectively. The increased evaporative loss at 30°C was accompanied by an increase in respiratory rate.

7. These results agreed well with the results of previous work with groups of pigs, for heat loss at 20°C. Comparisons with that work indicate that the increase in heat loss at 9°C, when compared with 20°C, was greater for individual pigs than for groups of pigs, of both sizes.

Four groups each of 14 sheep aged 11 to 13 months comprising outbred (O) and inbred (I, inbreeding coefficient 0·37 or 0·5) sheep reared on either a low plane (L, maintenance) or on a high plane (H, ad libitum) of nutrition from the age of 6 months were exposed first to acute cold and 1 week later to heat. Exposures in climate chambers ended for each sheep when rectal temperature decreased to 36°C (in the cold) or increased to 42·5°C (in the heat) subject to a limit of 8 h. Throughout the experiment, sheep were kept in matched quartets comprising one sheep of each type.

The average cold resistance times (min) were 161, 267, 348 and 381 for the LI, LO, HI and HO groups respectively, showing a significant effect of both inbreeding and plane of nutrition (P < 0·01). Five sheep in the HO group lasted the full 8 h in the cold chamber with little or no reduction in rectal temperature. Skin temperature at the mid side was significantly higher in L than in H sheep throughout cold exposure, but there was no effect of inbreeding.

Respiration rates were much higher before and during cold exposure in the H sheep, but there was no effect of inbreeding.

The residual correlation of cold resistance with live weight was 0·58, but differences in live weight do not explain all the differences in cold resistance and particularly do not explain the rapid decrease in rectal temperature of the LI sheep. It was concluded that under cold exposure a high level of nutrition was able to compensate partly for the disadvantages of inbreeding, and that outbreeding was able to compensate partly for the adverse effects of poor nutrition.

With heat exposure, there were no significant differences among the four groups in heat tolerance time, but within the 1st h, H sheep had slightly higher rectal temperatures and much higher respiration rates than L sheep. Inbreeding affected only the time taken to reach a respiration rate > 200 per min, which was longer in I (131 min) than in O sheep (113 min) and longer in L (149 min) than in H animals (96 min).

A total of 56 individually-penned pigs, with equal numbers of boars and gilts, were fed ad libitum in an investigation of the effects of nutrient density in growing (17 to 35 kg) and finishing (35 to 82 kg) periods.

Diets of high (H) and medium (M) nutrient density, with 13·8 or 12·6 MJ digestible energy (DE) per kg and 10·0 or 9·1 g lysine per kg, were used.

In the growing period, diet H proportionately increased the rates of DE intake and live-weight gain by 0·17 (P < 0·001) and 0·24 (P < 0·001) respectively. While the nutrient density of the diets given in the growing period did not significantly affect the mean performance over the finishing period, carry-over effects were observed for about 4 weeks following the change with evidence of compensation in energy intake.

In the finishing period, diet H proportionately increased the rates of consumption of DE and live-weight gain by 0·06 (P < 0·05) and 0·04 (P = 0·18) respectively. The consumption of energy was virtually identical for the two sexes.

It is concluded that the change in nutrient density had only transitory effects on energy intake and growth rate and did not affect overall performance in the finishing period.

Eighty castrated male lambs were allocated to either an initial slaughter group (no. = 16) or one of eight treatment groups (no. = 8). Ammoniated barley straw was offered ad libitum. This was supplemented with sodium (Na) propionate (0 or 20 g/day), formaldehyde-treated casein, (protected casein, 0 or 50 g/day) and/or calcium (Ca) salts of long-chain fatty acids (Ca soap, 0 or 30 g/day), as a factorial design. Measurements were made of food intake, live-weight gain and wool growth, rumen fluid parameters and changes in body composition over a period of 155 days.

Food intake (g dry matter per kg live weight) was lower in the groups supplemented with Ca soap and Na propionate. Fleece-free live-weight gain was increased by supplementation with protected casein and Ca soap, but was not affected by Na propionate. Supplementation with protected casein increased wool yield. Adjusted means for water, protein and ash content of the body (adjusted to mean fleece/digesta-free body weight at slaughter of 27·1 kg) were affected significantly by the second-order interaction between the supplements. Adjusted body water and protein mass were lower when Na propionate was given alone or with Ca soap and protected casein. Fat mass tended to be higher under those conditions. Supplementation with Ca soap increased adjusted fat and gross energy contents and decreased adjusted protein and water mass. Supplementation with protected casein decreased total body fat and increased adjusted protein mass in the body. The partitioning of water, protein, fat, ash and energy between the carcass and non-carcass residues was affected to a small extent also. These results demonstrate interactive effects of the supplements used, on nutrient partitioning in lambs offered straw-based diets.

Plane of nutrition (PN) offered to ewe replacements during the rearing phase (8 to 17 months) and first pregnancy may affect reproductive and progeny performance when replacements are joined at ~19 months. The effects of PN offered to spring-born ewe replacements during their first winter (winter_1), second summer (summer_2) and subsequent winter (mid and late pregnancy; winter_2) were evaluated, over 3 consecutive years, using 287 ewe lambs of four genotypes: Charmoise×Scottish Blackface (C×SBF), Belclare×SBF (Bel×SBF), Belclare (Bel) and Belclare×SBF (heterozygous for a gene, either FecGH or FecXG mutations, that increases ovulation rate: BelMG×SBF). Ewe lambs were offered, daily, a deferred-grazed herbage allowance (HA) of either 0.75 or 1.75 kg dry matter during winter_1. During summer_2 the replacements were set-stocked to maintain sward heights of 4 or 6 cm. Ewes were housed during mid and late pregnancy (winter_2) and offered either medium or high-feed-value grass silage, thus yielding a 2×2×2 factorial design. Increasing HA during winter_1 and residual sward height during summer_2 increased ewe BW post joining (P<0.001) and at lambing (P<0.01), but had no effect (P>0.05) on number of lambs reared. Increasing HA during winter_1 increased lamb BW at birth (P<0.05) and reduced carcass fat score (P<0.05). There was a significant interaction between PN offered during winter_1 and summer_2 for average daily gain (ADG) from birth to 5 weeks (P<0.01) and from 5 to 10 weeks (P<0.05): progeny of replacements that experienced either a high or low PN throughout the rearing phase had lower ADG than lambs born to the replacements that experienced a low PN only during winter_1 or summer_2. Increasing PN during winter_2 increased ewe BW (P<0.001), lamb BW at birth (P<0.001) and weaning (P<0.05) and reduced the proportion of ewes that failed to lamb (P<0.01). Ewe genotype had a significant (P<0.001) effect on litter size (1.48 to 2.45), number of lambs reared, lamb BW at birth and weaning, lamb ADG and age at slaughter. It is concluded that, among the nutrition treatments examined, increasing PN during mid and late pregnancy had the greatest effect on ewe and progeny performance. Although increasing PN offered during winter_1 increased lamb birth BW, PN offered during summer_2 had no effect on lamb performance. There were no significant interactions between PN and ewe genotype.

Thyroid activity was assessed in two groups of crossbred lambs and in Dorset Horn lambs fed ad libitum, by measuring the rate constant (K4) for the release of 131iodine from the gland. The results demonstrated a highly significant curvilinear correlation (P<0·001) between growth rate and the rate constant (K4) in experiments based on individual measurements in animals from three populations.

Separate work carried out on the measurements of both thyroid size and RNA/DNA ratio suggests a need for caution when these are interpreted as parameters of thyroid activity. In the growing animal these may be more reflective of the growth of the thyroid gland itself, differences which may be governed by factors not directly related to variations in hormone secretion rate.

The findings are discussed in terms of an explanation of the contradictory results obtained where attempts have been made to alter the thyroid status of growing animals by the use of thyroid hormone analogues and thyroid depressant drugs.

Alternative Norwegian sheep breeding schemes were evaluated by stochastic simulation of a breeding population with about 120 000 ewes, considering the gain for an aggregate genotype including nine traits and also the rate of inbreeding. The schemes were: a scheme where both young unproven rams (test rams) and proven rams (elite rams) are used in artificial insemination (AI scheme), a scheme with test rams in natural mating in ram circles and elite rams (from one and a half years of age) in AI across all flocks in the country (NMAI2 scheme), a scheme where, in addition to testing rams, the youngest elite rams (one and a half years of age) are also used in natural mating in ram circles, while older elite rams are used in AI (NMAI1 scheme), and a scheme, acting as a control, where both test and elite rams are used in natural mating (NM scheme). Within the NMAI- and AI-schemes, experimentation was performed for percent ewes inseminated to elite rams v. test rams (EM%), numbers of ewes inseminated per elite ram (EAIn), and numbers of ewes mated per test ram by natural service (TNMn) or by AI (TAIn), respectively. With a restriction on the rate of inbreeding (⩽0.8% per generation), the AI scheme gave similar gain to the NMAI2 scheme (and about 40% more than did the NM scheme). Less gain was generated by the NMAI1 scheme, but it was still considerably more than for the NM scheme (about 25%). In the AI scheme, relatively few ewes (200/300) should be inseminated to each test/elite ram, and a low EM% should be chosen (10%). In the NMAI schemes, TNMn should be relatively high (40 to 50), combined with average and somewhat larger than average EAIn (NMAI2: 700 ewes, NMAI1: 900 ewes), and EM% medium (30%).

A grower diet containing barley, wheat and soya-bean meal was expanded at 110°C and subsequently pelleted at 80°C. This processing was evaluated in laboratory tests as well as in digestibility experiments involving 12 barrows with an average initial live weight of 40 kg. The unprocessed control diet was offered as a meal. Each diet was offered ad libitum to six pigs during a 5-week period. The 1st week was an adaptation period and measurements were not carried out. Each pig was used in two 5-day digestibility trials which were performed in weeks 2 and 4. Neither food intake, weight gain nor food: gain ratio during the whole 4-week experimental period, nor apparent faecal digestibility and apparent retention of protein were significantly affected (P > 0·05) by expanding and pelleting the diet. Processing caused an increase in the in vitro protein solubility (P < 0·05) and reduced the dietary contents of free lysine and methionine (P < 0·05) while the contents of available lysine and free threonine and tryptophan were not significantly changed (P > 0·05). Apparent faecal digestibility of crude fibre increased substantially (P < 0·05) when the diet was processed, resulting in significantly lower production of faecal mass (P < 0·05) as well as lowerfaecal moisture content (P < 0·05). These phenomena were parallelled by a smaller water consumption (P < 0·05). Apparent digestibility and retention of phosphorus and calcium were diminished (P < 0·05) when the diet was expanded and pelleted.

Milk and butterfat production data from eight herds of dairy cows in Australia for the years 1963 and 1964 were analyzed for relationship with serum transferrin type. In the 932 lactations considered D2/D2 cows produced 521 ± 152 lb of milk more than A/A cows and lactated 15·3 ± 7·8 days longer after correction for season. There was no difference in fat percentage of the milk. The production of A/D2 cows was also significantly higher than A/A cows, but less than D2/D2 cows. Allowing for differences in lactation length still left a significant difference between D2/D2 and A/A cows in milk yield.

The best estimate of the effect of replacing a TfA by a TfD2 gene, allowing for season, was 170 lb more milk (P<0·01) and 6·5 days longer lactation (P<0·05), while TfD1 did not differ from TfA in either yield or lactation length.

Two isonitrogenous, isocaloric and isofibrous diets for finishing beef cattle differing only in their roughage constituents were compared in a feeding trial with Limousin bulls. A control maize silage (chop length = 9 mm) and wheat straw were the roughage sources of the former diet representing 0·23 and 0·09 of the dietary dry matter (DM) respectively. These roughage sources were fully replaced in the latter by the inclusion of a coarsely chopped maize silage (19 mm) at a level of 0·45 of the total dietary DM. Two balanced groups of 20 Limousin bulls (425·8 ± 20·3 kg live weight) each allotted in four pens were given the two diets ad libitum for a finishing period of 138 days. The different dietary roughages did not affect either bull growth performance (average daily gain = 1·39 ± 0·25 kg/day) or food conversion ratio. However, the diet containing the coarse silage significantly (P < 0·05) reduced the intake of both DM (8·30 v. 9·02 kg/day) and neutral-detergent fibre (NDF) (2·64 v. 2·92 kg/day). Although total ruminating time was similar for both diets, bulls given the coarse maize silage diet spent more time ruminating 1 kg of DM or NDF, probably due to the higher percentage of dietary forage NDF. No food selection activity towards specific chemical constituents was observed in either diet. Slaughter measurements and meat quality were satisfactory and unaffected by the type of dietary roughage. Based on cattle growth performance, feeding behaviour, and meat quality, the use of coarse maize silage as a dietary source of roughage can be considered a feasible alternative in beef cattle finishing.

A stochastic risk model was developed to estimate the time elapsed before overcrowding (TOC) or feed interruption (TFI) emerged on the swine premises under movement restrictions during a classical swine fever (CSF) outbreak in Indiana, USA. Nursery (19 to 65 days of age) and grow-to-finish (40 to 165 days of age) pork production operations were modelled separately. Overcrowding was defined as the total weight of pigs on premises exceeding 100% to 115% of the maximum capacity of the premises, which was computed as the total weight of the pigs at harvest/transition age. Algorithms were developed to estimate age-specific weight of the pigs on premises and to compare the daily total weight of the pigs with the threshold weight defining overcrowding to flag the time when the total weight exceeded the threshold (i.e. when overcrowding occurred). To estimate TFI, an algorithm was constructed to model a swine producer’s decision to discontinue feed supply by incorporating the assumptions that a longer estimated epidemic duration, a longer time interval between the age of pigs at the onset of the outbreak and the harvest/transition age, or a longer progression of an ongoing outbreak would increase the probability of a producer’s decision to discontinue the feed supply. Adverse animal welfare conditions were modelled to emerge shortly after an interruption of feed supply. Simulations were run with 100 000 iterations each for a 365-day period. Overcrowding occurred in all simulated iterations, and feed interruption occurred in 30% of the iterations. The median (5th and 95th percentiles) TOC was 24 days (10, 43) in nursery operations and 78 days (26, 134) in grow-to-finish operations. Most feed interruptions, if they emerged, occurred within 15 days of an outbreak. The median (5th and 95th percentiles) time at which either overcrowding or feed interruption emerged was 19 days (4, 42) in nursery and 57 days (4, 130) in grow-to-finish operations. The study findings suggest that overcrowding and feed interruption could emerge early during a CSF outbreak among swine premises under movement restrictions. The outputs derived from the risk model could be used to estimate and evaluate associated mitigation strategies for alleviating adverse animal welfare conditions resulting from movement restrictions.

The aim of this study was to determine the effect of prepartum somatotropin injection in late-pregnant Holstein heifers on metabolism, milk production and resumption of postpartum ovulation. For this study, 31 late-pregnant Holstein heifers were used. The heifers were assigned randomly into two treatments: (1) 500 mg sc injections of somatotropin (somatotropin treatment, n = 15) at −35 and −21 days, and, if pertinent, at −7 days from expected calving date and (2) no treatment (control group, n = 16). Blood samples were collected weekly from −5 to 7 weeks after calving. Heifers with progesterone concentrations in plasma above 1 ng/ml in two consecutive postpartum samples were considered as having resumed ovarian activity. A higher proportion (P = 0.04) of heifers treated with somatotropin resumed ovarian activity in the first 7 weeks post partum (73.3%; 11/15) compared with the control group (37.5%; 6/16). A higher number (P = 0.02) of heifers in the somatotropin treatment group also ovulated during the first postpartum follicular wave (53.3%; 8/15) compared with the control group (12.5%; 2/16), as indicated by the number of heifers ovulating in the first 3 weeks post partum. Pregnancy rate was not affected by treatments (P > 0.10) and averaged 40.0% (6/15) in somatotropin-treated and 25.0% (4/16) in control heifers when evaluated up to 150 days in milk. Somatotropin treatment increased the average daily milk production by 2.8 kg/cow per day (P < 0.0001) and reduced the somatic cell count (P = 0.009). Plasma IGF-I was higher (P < 0.05) for somatotropin-treated heifers in the prepartum period. Insulin and body condition score were higher (P < 0.05) and non-esterified fatty acids were lower (P < 0.05) for somatotropin-treated cows in the early postpartum period. In conclusion, somatotropin injection during the prepartum period in late-pregnant Holstein heifers was able to increase the proportion of heifers resuming ovarian activity early post partum, inspite of higher milk production.

The quality of the attachment of meat to bone is often reported to be insufficient by more and more poultry’s consumers. This is particularly true for thigh meat in broilers. The aim of this study was to compare muscle to bone attachment (namely, tendons) from a biomechanical and a biochemical point of view in 50 standard (S) and 50 Label Rouge (LR) chickens. Carcasses weighted around 1.7 kg in the two groups. Two tendons were harvested and proceeded for passive stretch tests, prior to cooking or not, to determine main mechanical characteristics (maximum load, stiffness and longitudinal strain). Biochemical parameters such as dry matter percentage, total collagen content, collagen solubility and sulphated glycosaminoglycans (sGAGs) content were also determined. Results showed that biomechanical values differ largely between the two studied tendons. For a given tendon, the values were also different between the two groups of chickens mainly after cooking. The results clearly showed that, mainly after cooking, the mechanical resistance of tendon to stretch was better in LR than in S chickens. LR chickens were reported to have tendons with higher collagen and sGAGs contents associated with a lower collagen solubility. These differences may explain biomechanical differences observed for the two types of tendons and could be due to increased age and/or higher physical activity of LR chickens.

Mechanisms responsible for excellent marbling in Japanese black cattle, Wagyu, remain to be established. Because both muscle cells and intramuscular adipocytes are developed from mesenchymal progenitor cells during early muscle development, we hypothesized that intramuscular progenitor cells in Wagyu cattle have attenuated myogenic capacity in favor of adipogenesis, leading to high marbling but reduced muscle growth. Biceps femoris muscle biopsy samples were obtained from both Angus (n=3) and Wagyu (n=3) cattle at 12 months of age. Compared with Angus, the density of satellite cells was much lower in Wagyu muscle (by 45.8±10%, P<0.05). Consistently, the formation of myotubes from muscle-derived progenitor cells was also lower (by 64.2±12.9%, P<0.05), but adipogenic capacity was greater in Wagyu. The average muscle fiber diameter was larger in Wagyu (by 23.9±6.8%, P=0.089) despite less muscle mass, suggesting less muscle fiber formation in Wagyu compared with Angus cattle. Because satellite cells are derived from fetal myogenic cells, the reduction in satellite cell density together with lower muscle fiber formation suggests that myogenesis was attenuated during early muscle development in Wagyu cattle. Given the shared pool of mesenchymal progenitor cells, the attenuated myogenesis likely shifts progenitor cells to adipogenesis during early development, which may contribute to high intramuscular adipocyte formation in Wagyu cattle.

In ruminants, feeding behaviour variables are parameters involved in feed efficiency that show variation among individuals. This study aimed to evaluate during the first two production cycles in ruminants the repeatability of feed intake pattern, which is an important aspect of feeding behaviour. Thirty-five dairy goats from Alpine or Saanen breeds were housed in individual pens at four periods (end of first gestation, middle of first and second lactations and middle of second gestation which is also the end of first lactation) and fed a total mixed ration (TMR) ad libitum. Individual cumulative dry matter intake (DMI) was automatically measured every 2 min during the last 4 days of each period. Feed intake pattern was characterized by several measures related to the quantity of feed eaten or to the rate of intake during the 15 h following the afternoon feed delivery. Two main methods were used: modelling cumulative DMI evolution by an exponential model or by a segmentation-clustering method. The goat ability to sort against dietary fibre was also evaluated. There was a very good repeatability of the aggregate measures between days within a period for a given goat estimated by the day effect within breed and goat, tested on the residual variance (P > 0.95). The correlations between periods were the highest between the second and either the third or fourth periods. With increasing age, goats sorted more against the fibrous part of the TMR and increased their initial rate of intake. Alpine goats ate more slowly than Saanen goats but ate during a longer duration. Principal component analysis (PCA) was performed on all the aggregate measures of feed intake patterns. The factor score plots generated by the PCA highlighted the opposition between the different measures of feed intake patterns and the sorting behaviour. The projection of the animals on the scoring plots showed a breed effect and that there was a continuum for the feed intake pattern of goats. In conclusion, this study showed that the feed intake pattern was highly repeatable for an animal in a given period and between periods. This means that phenotyping goats in a younger age might be of interest, either to select them on feeding behaviour and choose preferentially the slow eaters or to adapt the quantity offered and restrict feed delivery to the fast eaters in order to increase feed efficiency and welfare by limiting the occurrence of acidosis, for example.

Two groups of eight N'Dama calves were fed different quantities of milk from birth to 10 months of age to compare efficiencies of converting milk to live-weight gain, and to assess the economic efficiencies of the two feeding regimes. Group 1 received an average of 347 (s.e. 2·4) kg per calf, with a daily and seasonal pattern of feeding designed to simulate a village production system where calves have access to only part of the milk produced by their dams, the rest being extracted for human consumption. Group 2 received an average of 617 (s.e. 5·1) kg per calf, and simulated situations where no milk is extracted such as in a ranch or station-type of operation.

During the first 6 months, when growth was certainly mediated only by milk, and live-weight gains were consistently positive at 151 and 262 g/day in groups 1 and 2 respectively, the biological conversion of milk to live weight did not differ between groups (8·7 v. 8·8 kg milk per kg live-weight gain). When the two groups were compared over the same weight range to remove possible effects of variable maintenance requirements, the conversion efficiencies again did not differ significantly. Over the whole 10-month period the biological conversion factors were slightly less favourable but still not different between groups (9·5 v. 9·4 kg/kg). When monetary values of milk and live weight at farmgate prices were applied to quantities of milk consumed and calf live-weight increases, the cost efficiency of group 1 was superior to that of group 2.

Based on these findings and results from other on-farm experiments in The Gambia, it was concluded that the current practice of partial milk extraction as occurs in the village production system is a logical approach for profit maximization.

In the mountainous areas of Europe with a humid climate, dairy cattle production is a major agricultural activity, and the milk is often processed into cheese according to protected designation of origin (PDO) specifications. We analyzed the extent to which PDO specifications and/or a mountain environment influence the spatial distribution of estimated breeding values (EBVs) of cows and the herd–year effects (HYEs) for milk yield (kg/lactation) and protein and fat contents (g/kg), as well as lactation ranks and calving months. The study focused on the northern French Alps. A total of 37 023 lactations, recorded in 2006, in 1153 herds were analyzed. The cows belonged to the Montbéliarde (21 516 lactations), Abondance (10 346 lactations) and Tarentaise (5161 lactations) breeds. The two factors of variation considered were the status of the commune where the farm was located in relation to PDO (three categories: area with no PDO, area with a PDO with no milk yield limit, area with a PDO with a milk yield limit) and ‘mountain’ environment (four categories based on the European regulation: plain, piedmont, mountain and high mountain). In the Abondance breed, the average lactation rank increased with an increase in production constraints due to the PDO or to a mountain environment. In the Abondance and Tarentaise breeds, grouping of calving in winter was most marked in the ‘PDO with a milk yield limit’ and ‘high-mountain’ categories. In the Tarentaise breed, no significant effect on any trait and any variable was found in the ‘PDO’ or ‘mountain’ categories. In the other two breeds, the average EBV for milk yield decreased with an increase in the constraints due to PDO, with differences of 226 and 93 kg between extreme values in the Abondance and Montbéliarde breeds, respectively. The average HYE for milk yield was higher in the Abondance breed in the ‘PDO with no milk yield limit’ category than in the other categories (+740 and +1110 kg, respectively); HYE was not affected by the ‘PDO’ factor in the Montbéliarde breed or by the ‘mountain’ factor in either breed. Concerning the protein and fat contents, the effect of the ‘PDO’ and ‘mountain’ factors depended on the trait, the variable and the breed. The proportion of individual decisions (the farmer makes the decision) v. collective decisions (breed management) concerning herd dynamics in the face of existing constraints is discussed.

The problem of hypoxia adaptation in high altitudes is an unsolved brainteaser in the field of the life sciences. As one of the best chicken breeds with adaptability to highland environment, the Tibet chicken, is genetically different from lowland chicken breeds. It is well known that hypoxia has significant impact on growth by inducing the expression of the alpha subunit of the heterodimeric transcription factor, hypoxia-inducible factor 1 (HIF1α). In the present study, HIF1α expression in brain, heart and liver tissues of the Tibet and Dwarf Recessive White chicken embryos were investigated at the different development stages of days 10, 17 and 20 by real-time PCR, and the expression pattern of HIF1α in chicken embryos of the two chicken breeds incubated under conditions of hypoxia (13% O2) and normoxia (21% O2) was studied. The incubation mortality of the Tibet chicken was lower than the Dwarf Recessive White chicken during the whole incubation in hypoxia, and the mRNA expression of HIF1α had presented the differences in three tissues. The results implied that the hypoxia adaptability of the Tibet chicken embryo was higher than the Dwarf Recessive White chicken, especially in the early stage (day 10) and at a later time (day 20) during the incubation period, but the mechanism of the oxygen transfer of embryos of mountain species is not completely understood, and hypoxia adaptability of the Tibetan chicken remains to be studied further.

Data from a boar progeny testing scheme based on ad libitum feeding were analysed to test the hypothesis that the resultant correlations of food conversion ratio with related factors would differ from those found under conditions of restricted feeding.

The results support the hypothesis, showing that the primarily genetic correlations derived from boar effects for growth and conversion ratio, are lower than those reported elsewhere for restricted feeding. It was also shown that these primarily genetic correlations could vary between breeds, the leanness associated with rapid growth in Wessex not being found in Large White, and that the correlations due to residual effects containing a greater environmental component varied widely from test to test.

It is concluded that the parameters used in the design of a genetic improvement scheme should be derived specifically for each breed and feeding system. However, if the marked variability in phenotypic correlations noted here is generally applicable, this could present a difficult problem in the design of pig improvement programmes with multiple objectives.

Distribution of tissue weight in the musculature and skeleton was studied in ram, wether and ewe Omani sheep raised under an intensive management system and slaughtered over the range 18 to 38 kg live weight. Ram lambs had higher muscle weight in the forequarters than wether and ewe lambs whereas the latter ‘sexes’ had heavier hindquarters and slightly more muscle in the muscle groups of proximal hind- and forelimbs and those surrounding the spinal column. Some of the neck region muscles, e.g. m. splenius and m. longissimus capitis et atlantis, were more developed in ram than in wether and ewe lambs. The proportions in the side muscle weight of some muscles (mainly in the hindquarter) decreased with increased slaughter weight whereas others (mainly in forequarter) increased, with the majority of the muscles showing no significant slaughter weight effects. The magnitude of change in proportions of individual muscles with increased slaughter weight was small and unlikely to have a commercial impact on meat production from Omani sheep.

As a proportion of total carcass bone, the axial skeleton and the hindlimb decreased with increased slaughter weight whereas the forelimb did not show a significant change. Ram lambs had heavier individual bones than wether and ewe lambs and higher proportions of the axial skeleton and lower proportions of the hindlimb than wethers at 28 kg live weight. There were few differences between the various ‘sexes’ in length, width or circumference of bones. Except for the 12th rib, individual bones, in all sexes, grew at a rate lower than empty body weight.

It is suggested that future improvement of Omani sheep should take into consideration the high proportion of bone in the carcass of these animals as well as the relatively higher proportion of bone in the limbs than in the axial skeleton.
