We collected infant food samples from 714 households in Kisumu, Kenya, and estimated the prevalence and concentration of Enterococcus, an indicator of food hygiene conditions. In a subset of 212 households, we quantified the change in concentration in stored food between a morning and afternoon feeding time. In addition, household socioeconomic characteristics and hygiene practices of the caregivers were documented. The prevalence of Enterococcus in infant foods was 50% (95% confidence interval: 46.1 - 53.4), and the mean log10 colony-forming units (CFUs) was 1.1 (SD + 1.4). No risk factors were significantly associated with the prevalence and concentration of Enterococcus in infant foods. The mean log10 CFU of Enterococcus concentration was 0.47 in the morning and 0.73 in the afternoon foods with a 0.64 log10 mean increase in matched samples during storage. Although no factors were statistically associated with the prevalence and the concentration of Enterococcus in infant foods, household flooring type was significantly associated with an increase in concentration during storage, with finished floors leading to 1.5 times higher odds of concentration increase compared to unfinished floors. Our study revealed high prevalence but low concentration of Enterococcus in infant food in low-income Kisumu households, although concentrations increased during storage implying potential increases in risk of exposure to foodborne pathogens over a day. Further studies aiming at investigating contamination of infant foods with pathogenic organisms and identifying effective mitigation measures are required to ensure infant food safety.

Diversified farms are operations that raise a variety of crops and/or multiple species of livestock, with the goal of utilising the products of one for the growth of the other, thus fostering a sustainable cycle. This type of farming reflects consumers' increasing demand for sustainably produced, naturally raised or pasture-raised animal products that are commonly produced on diversified farms. The specific objectives of this study were to characterise diversified small-scale farms (DSSF) in California, estimate the prevalence of Salmonella enterica and Campylobacter spp. in livestock and poultry, and evaluate the association between farm- and sample-level risk factors and the prevalence of Campylobacter spp. on DSSF in California using a multilevel logistic model. Most participating farms were organic and raised more than one animal species. Overall Salmonella prevalence was 1.19% (95% confidence interval (CI95) 0.6–2), and overall Campylobacter spp. prevalence was 10.8% (CI95 = 9–12.9). Significant risk factors associated with Campylobacter spp. were farm size (odds ratio (OR)10–50 acres: less than 10 acres = 6, CI95 = 2.11–29.8), ownership of swine (OR = 9.3, CI95 = 3.4–38.8) and season (ORSpring: Coastal summer = 3.5, CI95 = 1.1–10.9; ORWinter: Coastal summer = 3.23, CI95 = 1.4–7.4). As the number of DSSF continues to grow, evaluating risk factors and management practices that are unique to these operations will help identify risk mitigation strategies and develop outreach materials to improve the food safety of animal and vegetable products produced on DSSF.

The rise in antimicrobial resistance (AMR) poses a major threat to animal agriculture and human health. To summarize and update current and emerging AMR issues that are significant for animal health and food safety, this issue presents a virtual AMR symposium consisting of seven review papers. These reviews cover a newly described AMR mechanism in Campylobacter, effects of AMR and microbiome on Campylobacter infection, plasmid-mediated colistin resistance in food-producing animals, the impact of point source or antibiotic residues on the environmental resistome, and potential factors influencing horizontal gene transfer in the intestines of food animals. These papers also identify significant knowledge gaps in AMR research and provide new directions for the development of innovative and effective strategies to mitigate AMR in the animal production system.

The purpose of this study was to investigate the microbiological quality of liver pâté. During 2012–13, a total of 870 samples, unrelated to the investigation of food-poisoning outbreaks, were collected either at retail (46%), catering (53%) or the point of manufacture (1%) and were tested using standard methods to detect Salmonella spp. or Campylobacter spp., and to enumerate for Listeria spp., including Listeria monocytogenes, Clostridium perfringens, coagulase-positive staphylococci including Staphylococcus aureus, Bacillus spp., including Bacillus cereus, Escherichia coli, Enterobacteriaceae, and aerobic colony counts (ACCs). Seventy-three percent of samples were of satisfactory microbiological quality, 18% were borderline and 9% unsatisfactory. Salmonella spp. or Campylobacter spp. was not recovered from any sample. The most common causes of unsatisfactory results were elevated ACCs (6% of the samples) and high Enterobacteriaceae counts (4% of samples). The remaining unsatisfactory results were due to elevated counts of: E. coli (three samples); B. cereus (one sample at 2·6 × 105 cfu/g); or L. monocytogenes (one sample at 2·9 × 103 cfu/g). Pâté from retail was less likely to be contaminated with L. monocytogenes than samples collected from catering and samples from supermarkets were of significantly better microbiological quality than those from catering establishments.

An actinobacterial strain with antimicrobial activity, INACH3013, was isolated from soil collected from Antarctica. The taxonomic status of the isolate was established using a polyphasic approach. The strain was identified as belonging to the genus Streptomyces based on the scanning electron microscopic observation and partial 16S rRNA gene sequence analysis. The sequence analysis revealed that strain INACH3013 is closely related to Streptomyces fildesensis (99.8%), S. beijiangensis (98.1%) and S. purpureus (97.2%). A phylogenetic tree constructed using the partial 16S rRNA gene sequences of strain INACH3013 and closely related strains revealed that INACH3013 fell into the same subclade as S. fildesensis and S. purpureus. Strain INACH3013 was observed to be psychrotolerant, slightly halotolerant (up to 5% NaCl) and capable of inhibiting the growth of seven Gram-negative and eight Gram-positive foodborne pathogens. The GenBank/EMBL/DDBJ accession number for the 16S rRNA gene sequence of the strain is KJ624755.

Poultry and poultry products have repeatedly been implicated as a source of foodborne infection for humans. The significant increase in the number of reported foodborne disease outbreaks worldwide has altered opinions on food safety. It has become clear that current legislation alone is inadequate, and that industry must accept a greater share of responsibility for the quality and safety of the food it produces. The fact that processing plants are not able to reduce the incidence of pathogenic bacteria effectively in poultry products means that every effort must be made to reduce infection in and/or contamination of the live birds with foodborne pathogens before dispatch to processing plants. The main control strategy should include the following: cleaning the production pyramid from the top, as in the case of Salmonella enteritidis and Salmonella typhimurium, by destroying infected flocks (with compensation), sanitising hatching eggs and limiting the introduction and spread of pathogens at the farm through Good Animal Husbandry Practices (GAHPs). To achieve GAHPs, effective measures of hygiene should be applied to poultry houses and the feed. Reducing salmonella colonisation by using antimicrobial feed additives, competitive exclusion treatment or vaccines is worth consideration. Fur-thermore, hygienic systems for catching and transporting live poultry must be included. To reduce carcass contamination during processing, thorough schedules for cleaning and disinfection of the equipment and plant are essential. Machine design must permit easy and thorough cleaning. Because the success of any food safety programme on the farm and in the processing plant depends on the hygiene practices of the staff, it is essential to incorporate education programmes for all people involved in the poultry production chain. In the farm-to-fork concept, post-processing food handling is also a very important factor in reducing foodborne infections. Finally, the development and application of acceptable methods for end product decontamination and preservation in the processing plant must be pursued.
