The notion of industrialized agriculture has been a dominant theme in the applied economics literature. More recently, the debate has entered the realm of organic agriculture, with some suggesting that the organic sector has strayed from its agrarian roots. The terms “industrial” and “agrarian” are widely used, yet few have given precise definitions of what the terms mean. This paper puts forth testable hypotheses for agrarian and industrial agriculture. Then, using census data from the 2008 Organic Production Survey, we examine the evidence to assess whether the organic farm sector fits an agrarian or industrial model. Overall the evidence is mixed, yet suggests that the organic sector is less agrarian than expected.

Industrial principles of specialization, simplification and concentration began to be applied to agriculture after the Second World War with positive production results. But it is now widely recognized that this agriculture and food system faces daunting challenges in the decades ahead, including increased human population growth, natural resource depletion, ecological degradation, climate change and escalating energy costs. These challenges have refocused the attention of agriculturalists and food scientists on the question of how we can continue to feed the human species. But these challenges also provide opportunities to rethink and redesign our food system. Agriculturalists are recognizing that resilience is at least as important to food security as maximum production, and consumer concerns provide us with unprecedented opportunities for farmers and consumers to come together as ‘food citizens’ to determine appropriate changes in our food system. To that end it is important to examine the various production systems and infrastructures in an effort to select the most viable options for long-term sustainability.

The high level of meat and saturated fat consumption in the USA and other high-income countries exceeds nutritional needs and contributes to high rates of chronic diseases such as cardiovascular disease, diabetes mellitus and some cancers. Affluent citizens in middle- and low-income countries are adopting similar high-meat diets and experiencing increased rates of these same chronic diseases. The industrial agricultural system, now the predominant form of agriculture in the USA and increasingly world-wide, has consequences for public health owing to its extensive use of fertilisers and pesticides, unsustainable use of resources and environmental pollution. In industrial animal production there are public health concerns surrounding feed formulations that include animal tissues, arsenic and antibiotics as well as occupational health risks and risks for nearby communities. It is of paramount importance for public health professionals to become aware of and involved in how our food is produced.
