Adsorption of Ni(II) by Ca- and Na-saturated kaolinites was studied in equilibrating solutions with total Ni concentrations ranging from 118 to 946 μg/liter. Background electrolytes used in these experiments were 0.005,0.01,0.025, and 0.5 M Ca(N03)2,0.002 and 0.005 M CaSO4, 0.01 and 0.1 M NaNO3, and 0.005 and 0.05 M Na2SO4, Ion speciation in equilibrium solutions was calculated by the computer program GEOCHEM. Computed Ni2+ concentrations and activities at equilibrium were correlated with total Ni adsorbed by kaolinite. Increasing ionic strength resulted in decreasing Ni adsorption. Adsorption of Ni was greater from solutions when NO3 was the dominant anion. Based on adsorption data in SO4 medium, the standard free energy of adsorption of Ni2+ ion on kaolinite was computed to be —27 kJ/mole.

The clay-polysaccharide interaction is of practical importance in the formation and stabilization of soil aggregates. This study examined the adsorption of three synthetic polysaccharides (PSS) and one soil PSS on Silver Hill illite. The adsorption of PSS was influenced by both the adsorbed cations on the adsorbents and the charge characteristics of the polymers. The adsorbed cations formed different surface complexes with the clay surfaces, with varying ability to screen the surface negative charge and thereby influenced the adsorption of charged polymers. Na-illite adsorbed substantially higher amounts of the cationic PSS, but lower amounts of the anionic PSS, than hydroxy-Al illite. The adsorption of the nonionic PSS was, however, little influenced by those adsorbed cations. The adsorption of the soil PSS resembled that of anionic PSS. However, it yielded linear adsorption isotherms due to the heterogeneous nature of the soil PSS. The adsorption of the three synthetic PSS on Na-illite was in the general order: cationic > nonionic > anionic, confirming that electrostatic forces played a role in the adsorption of charged polymers. pH and ionic strength influenced the adsorption of the charged PSS, because of their influences on the charge characteristics of both the polymer and the clay, and on polymer conformation. This study indicates that surface charge properties of both clays and organic polymers and the presence of polyvalent cations in the system are important factors influencing the complexation between soil clays and organic constituents.

Sorption of several organic and inorganic cations on illite (Clay Minerals Society Source Clay Imt-2) was determined experimentally and results compared to model calculations. The cations studied were crystal violet (CV+), benzyltrimethylammonium (BTMA+), benzyltriethylammonium (BTEA+), Ca2+, Mg2+, K+, Na+, Cs+, and Li+. The adsorption-model calculations involved a solution of the electrostatic Gouy-Chapman equations. The model considered specific adsorption and sorption/exclusion in the double-layer region in a closed system. Model calculations considered the simultaneous presence of four to six cations in the system. The adsorption of CV included formation of neutral and charged complexes. The adsorption attained 0.37 mol kg−1 or 150% of the cation exchange capacity (CEC) of illite in aqueous suspension. The adsorption of BTMA and BTEA did not exceed the CEC and was reduced with an increase in ionic strength. The sorption of CV below the CEC was rather insensitive to the ionic strength because of the large binding coefficients and was only slightly reduced in NaCl, CsCl, or Na2SO4 solutions. When added in amounts exceeding the CEC in high ionic strength, 0.667 M NaNO3, NaCl, or CsCl solutions, the adsorbed quantities of CV increased to three times the CEC. At high sulphate concentrations (0.333 M Na2SO4), the adsorption was below the CEC. Model calculations yielded satisfactory simulations for the adsorption, particularly for cations added in amounts approaching or exceeding the CEC. The binding coefficients for formation of neutral complexes followed the sequence: CV > Ca > BTMA > BTEA > Cs > Mg > K > Na > Li. Model calculations also suggested that sites were present which bound exchangeable cations, particularly K+, Na+, and Mg2+, very tightly.

The adsorption of the monovalent organic cations benzyltrimethylammonium (BTMA) and benzyltriethylammonium (BTEA) to montmorillonite was studied as a function of their concentrations and ionic strength. At low ionic strength the adsorbed amounts of BTMA and BTEA reached values of the cation exchange capacity (CEC) of the clay. An increase in the ionic strength resulted in reduction in the adsorbed amounts of the organic cations, unlike the pattern observed previously with organic monovalent cationic dyes. The reduction in adsorbed amounts of BTMA and BTEA depended on the inorganic cations according to the sequence Cs+ > Na+ > Li+, which follows the sequence of binding coefficients of these inorganic cations added. The type of the anion (that is, Cl−, ClO4−, SO42-) had no effect on the adsorbed amounts. An adsorption model which considers the electrostatic Gouy-Chapman equations, specific binding and closeness of the system could adequately simulate the adsorbed amounts of BTMA and BTEA and yield predictions for the effect of the ionic strength and concentration of electrolytes. The binding coefficient employed was K = 5000 M−1 for the formation of neutral complexes of BTMA and BTEA. This value is larger than those found for the inorganic cations but is several orders of magnitude below those found for the monovalent dyes. The binding coefficients for the formation of charged complexes of BTMA and BTEA were 20 and 5 M−1, respectively. The basal spacing of the clay did not change significantly with the adsorbed amounts of both BTMA and BTEA up to the CEC.

The effects of pH and ionic strength on the rheological behavior of aqueous suspensions of both crude and purified Wyoming bentonite and natural interstratified illite-smectite from Tunisia were investigated. Flow tests were performed on the four clay suspensions at a 10% clay concentration at different pH values. They showed that the rheological properties were highly sensitive to pH and the nature of the clay. The evolution of the yield stress as a function of pH is characterized by the presence of maxima and minima attributed to changes in the mode of association of the particles. The effect of pH on the behavior of clay suspended in NaCl solutions was also studied. The results show that the presence of NaCl has very little effect on the pH and yield stress values of the four materials.

In the present in vitro study, the effects of pH and ionic strength on the release of iron from pectin and the ability of pectin to reduce ferric iron to ferrous iron were examined. The bioavailability of Fe bound to pectin was evaluated in rats. The amount of Fe released from pectin was at a maximum at pH 2·0 and decreased as the pH value increased. At pH 2·0, the amount of Fe released from pectin increased as the ion length increased; at pH 5·0, ion length had no effect on pectin release. Pectin effectively reduced Fe from the ferric form to the ferrous form. In rats fed a pectin diet, where Fe bound to pectin was the only Fe source, the final Hb concentration using diets containing 4·4–5·7, 7·2 or 11·5 mg Fe/kg diet was equal to the concentration in rats fed diets containing 4·5, 7·6 or 13·5 mg ferrous iron/kg diet, respectively. Hb regeneration efficiencies in rats fed pectin diets were significantly different from rats fed a diet containing 13·5 mg ferrous iron/kg diet. In rats fed a diet with or without pectin, where ferric iron was the only Fe source, pectin increased the final Hb concentration. These results suggest that Fe bound to pectin is utilised by rats.

During a study on the effect of addition of monovalent and divalent salts on the apparent viscosity of sodium caseinate solutions (Carr et al. 2002) it was discovered that many of the high viscosity solutions appeared to gel when refrigerated. Furthermore this cold gelation was found to reverse on heating. The phenomenon of reversible cold gelation of caseinate solutions has not been reported. The most well known example of reversible cold gelation is gelatin solutions, but a number of polysaccharides also form gels on cooling, e.g. agarose, pectin and carrageenan (Evans & Wennerstrom, 1994). Whey proteins also gel at 25 °C in the presence of calcium ions, though not in their absence, and this gelation is not reversible (Barbut & Foegeding, 1993).

Bipolar-membrane electroacidification (BMEA) technology, which uses the property of bipolar membranes to split water and the demineralization action of cation-exchange membranes (CEM), was tested for the production of acid casein. BMEA has numerous advantages in comparison with conventional isoelectric precipitation processes of proteins used in the dairy industry. BMEA uses electricity to generate the desired ionic species to acidify the treated solutions. The process can be precisely controlled, as electro-acidification rate is regulated by the effective current density in the cell. Water dissociation at the bipolar membrane interface is continuous and avoids local excess of acid. In-situ generation of dangerous chemicals (acids and bases) reduces the risks associated with the handling, transportation, use and elimination of these products. The aim of this study was to evaluate the performance of BMEA in different conditions of added ionic strength (μadded = 0, 0·25, 0·5 and 1·0 M) and added salt (CaCl2, NaCl and KCl).The combination of KCl and μadded = 0·5 M gave the best results with a 45% decrease in energy consumption. The increased energy efficiency was the result of a decrease in the anode/cathode voltage difference. This was due to an increase of conductivity, produced by addition of salt, necessary to compensate for the lack of sufficiently mobile ions in the skim milk. However, the addition of salts, irrespective of type or ionic strength, increased the required operation time. The protein profile of isolates were similar under all experimental conditions, except at 1·0 M-CaCl2.

The refolding of four disulfide lysozyme (at pH 5.2, 20 °C) involves parallel pathways, which have been proposed to merge at a near-native state. This species contains stable structure in the α- and β-domains but lacks a functional active site. Although previous experiments have demonstrated that the near-native state is populated on the fast refolding pathway, its relevance to slow refolding molecules could not be directly determined from previous experiments. In this paper, we describe experiments that investigate the effect of added salts on the refolding pathway of lysozyme at pH 5.2, 20 °C. We show, using stopped flow tryptophan fluorescence, inhibitor binding, and circular dichroism (CD), that the rate of formation of native lysozyme on the slow refolding track is significantly reduced in solutions of high ionic strength in a manner dependent on the position of the anion in the Hofmeister series. By contrast, the rate of evolution of hydrogen exchange (HX) protection monitored by electrospray ionization mass spectrometry (ESI MS) is unchanged under the refolding conditions studied. The data show, therefore, that at high ionic strengths β-domain stabilization and native state formation on the slow refolding pathway become kinetically decoupled such that the near-native state becomes significantly populated. Thus, by changing the energy landscape with the addition of salts new insights into the relevance of intermediate states in lysozyme refolding are revealed.
