We tested the hypothesis that milk proteins, through microencapsulation, guarantee protection against bioactive substances in coffee silverskin extracts. Therefore, the aim of this study was to carry out technological, nutritional and physicochemical characterisation of a coffee silverskin extract microencapsulated using instant skim milk powder and whey protein concentrate as wall materials. The aqueous extract of coffee silverskin was spray-dried using 10% (w/v) skim milk powder and whey protein concentrate. The samples were characterised by determining the water content, water activity, particle size distribution, colour analysis and total phenolic compound content as well as antioxidant activity using 2,2-diphenyl-radical 1-picrylhydrazyl scavenging methods, nitric oxide radical inhibition and morphological analysis. The product showed water activity within a range that ensured greater stability, and the reduced degradation of the dried coffee silverskin extract with whey protein concentrate resulted in better rehydration ability. The luminosity parameter was higher and the browning index was lower for the encapsulated samples than for the pure coffee silverskin extract. The phenolic compound content (29.23 ± 8.39 and 34.00 ± 8.38 mg gallic acid equivalents/g for the coffee silverskin extract using skimmed milk powder and whey protein concentrate, respectively) and the antioxidant activity of the new product confirmed its potential as a natural source of antioxidant phenolic compounds. We conclude that the dairy matrices associated with spray drying preserved the bioactive and antioxidant activities of coffee silverskin extracts.

Milk and dairy products have great importance in human nutrition related to the presence of different nutrients, including protein, fatty acid profile and bioactive compounds. Dietary supplementation with foods containing these types of compounds may influence the chemical composition of milk and dairy products and hence, potentially, the consumer. Our objective was to summarize the evidence of the effect of supplementation with antioxidants and phenolic compounds in the diets of dairy animals and their effects on milk and dairy products. We conducted a systematic search in the MEDLINE/PubMed database for studies published up until July 2022 that reported on supplementation with antioxidants and phenolic compounds in diets that included plants, herbs, seeds, grains and isolated bioactive compounds of dairy animals such as cows, sheep and goats and their effects on milk and dairy products. Of the 94 studies identified in the search, only 15 met the inclusion criteria and were analyzed. The review revealed that supplementation with false flax cake, sweet grass, Acacia farnesiana, mushroom myceliated grains and sweet grass promoted an effect on the milk lipid profile, whereas supplementation with dried grape pomace and tannin extract promoted an effect on the milk and cheese lipid profiles. In six studies, the addition of Acacia farnesiana, hesperidin or naringin, durum wheat bran, mushroom myceliated grains, dried grape pomace and olive leaves increased the antioxidant activity of milk. In conclusion, supplementation with bioactive compounds had a positive impact which ranged from an increase in antioxidant capacity to a decrease in oxidative biomarkers such as malondialdehyde.

Seasonality and species are key aspects of the abiotic and biotic environment, respectively, that influence nutrient, phytochemical and antioxidant profiles of invasive alien plants leaf-meals. The current study investigated the effects of season on nutrient, amino acid, fatty acid, mineral, bioactive polyphenolic composition and antioxidant activity of Acacia mearnsii and A. dealbata leaf-meals. Overall, A. mearnsii leaf-meal harvested in the hot-dry-season had greater crude protein, ether extract, neutral detergent soluble fibre, 24 and 48 h in vitro neutral detergent fibre digestibility, macro-mineral contents, individual polyphenols, C18:1n9 and C18:2n6 compared to other leaf-meals. Regardless of the season, A. mearnsii leaf-meals had greater amino acid concentrations than A. dealbata leaf-meals. Hot-dry-season leaf-meals had a greater concentration of total flavonoids than the leaf-meals in the cool-wet-season irrespective of species. Antioxidant potency composite of the Acacia leaf-meals was in the order of A. dealbata × hot-dry-season > A. mearnsii × hot-dry-season > A. mearnsii × cool-wet-season > A. dealbata × cool-wet-season. The findings suggested that A. mearnsii leaf-meal harvested in the hot-dry-season has superior nutritional and polyphenolic profiles, which could support its use as a nutraceutical and preservative for the enhancement of ruminant production and product quality compared to other leaf meals.

In addition to a multifactorial etiology of nutritional, social and environmental stressors, post-weaning diarrhea (PWD) in pigs is often related to infection with specific pathogens such as enterotoxigenic Escherichia coli (ETEC). In swine farming operations, the incidence of PWD is a global concern and is associated with an unbalanced gut status, resulting in poor performance and high antimicrobial consumption via prophylaxis and metaphylaxis. Increases in antimicrobial resistance are reinforcing an already-urgent need for sustainable, alternative solutions for maintaining optimal gut health in livestock. Tannin-rich plants and extracts contain bioactive compounds that could be of great interest in this respect. This review describes how the use of tannins around weaning could be beneficial for pigs, with special emphasis on the reduction of ETEC-related PWD. An overview of the broad chemical diversity of tannins is presented together with their physicochemical and biological properties, as well as how they may be metabolized in the digestive tract. The pharmacological effects exerted by tannins are summarized; more precisely, the possible mechanisms by which tannins can disrupt the different steps of the pathogenesis of ETEC-related PWD are highlighted. The factors affecting the bioactivity of tannins are also discussed, shedding light on the importance of chemical structure among different tannins.

The Schiff base N1,N2-di(2-hydroxy)benzylidenebenzene-1,2-di-imine was prepared from salicylaldehyde and 1,2-diaminobenzene by reflux in ethanol for 6 h obtaining an orange crystalline solid. The Schiff base solid was separated by filtration and washed with ethanol and ethylic ether, and finally, it was dried in a vacuum system for 2 h. The X-ray powder diffraction pattern for this new compound showed that the crystalline compound belongs to the monoclinic system and space group P21/c (No. 14) with refined unit-cell parameters a = 5.9672 (7) Å, b = 16.561 (1) Å, c = 16.337 (2) Å, β = 91.41° (1). The volume of the unit cell is V = 1614.1 (2) Å3.

The purpose of this study was to investigate nutritional and phytochemical composition of Henicus whellani Chopard, a seasonally occurring ground-dwelling cricket consumed in south-eastern Zimbabwe. Insects were sampled from four quadrants (approximately 100 m2) in one representative site (approximately 3000 m2) in Bikita District, and were hand-picked or dug out from burrows in a manner similar to traditional insect-harvesting practices. Proximate composition using whole-dried insects and bioactive components using dried pulverized material were analysed using standard procedures. The proportional nutrient composition was 53.6% crude protein, 4.3% fat, 13.4% ash, 10.6% crude fibre, 4.0% carbohydrate and 268.3 kcal/100 g energy. Phenolics, tannins, alkaloids, cyanogenic glycosides, oxalates, saponins and flavonoids were present in the extracts of insects. The quantities of saponins (53.3 mg/g) and alkaloids (52.3 mg/g) were higher than those of other phytochemicals, with the quantity of tannins (0.168 mg/g) being the lowest. Radical-scavenging capacity determined using di(phenyl)-(2,4,6-trinitrophenyl)iminoazanium (or 2,2-diphenylpicrylhydrazyl) and methanol extracts was 42%, which is lower than those of the standards. This study shows that H. whellani provides potential nutritional benefits in terms of protein, fibre and flavonoid contents. The relatively high ash content compared with that from other edible insects indicates a rich source of minerals such as calcium, iron, magnesium, phosphorus and potassium. However, the presence of saponins, oxalates and tannins could be a limitation and requires further studies. There is a need to evaluate the bioaccessibility of the nutrients and the safety of bioactive compounds in relation to human consumption.

The present study investigates the effect of strawberry antioxidants in beverage form on meal-induced postprandial inflammatory and insulin responses in human subjects. Overweight adults (n 24) consumed a high-carbohydrate, moderate-fat meal (HCFM) accompanied by either a strawberry or a placebo beverage in a cross-over design. Postprandial changes in plasma anthocyanins, their metabolites, insulin, glucose and inflammatory markers were assessed for 6 h. The postprandial concentrations of pelargonidin sulfate and pelargonidin-3-O-glucoside were significantly increased when the strawberry beverage was consumed concurrently with the HCFM compared with the placebo beverage (P < 0·001). The strawberry beverage significantly attenuated the postprandial inflammatory response as measured by high-sensitivity C-reactive protein and IL-6 (P < 0·05) induced by the HCFM. It was also associated with a reduction in postprandial insulin response (P < 0·05). Collectively, these data provide evidence for favourable effects of strawberry antioxidants on postprandial inflammation and insulin sensitivity.

Epidemiological studies have clearly shown that whole-grain cereals can protect against obesity, diabetes, CVD and cancers. The specific effects of food structure (increased satiety, reduced transit time and glycaemic response), fibre (improved faecal bulking and satiety, viscosity and SCFA production, and/or reduced glycaemic response) and Mg (better glycaemic homeostasis through increased insulin secretion), together with the antioxidant and anti-carcinogenic properties of numerous bioactive compounds, especially those in the bran and germ (minerals, trace elements, vitamins, carotenoids, polyphenols and alkylresorcinols), are today well-recognised mechanisms in this protection. Recent findings, the exhaustive listing of bioactive compounds found in whole-grain wheat, their content in whole-grain, bran and germ fractions and their estimated bioavailability, have led to new hypotheses. The involvement of polyphenols in cell signalling and gene regulation, and of sulfur compounds, lignin and phytic acid should be considered in antioxidant protection. Whole-grain wheat is also a rich source of methyl donors and lipotropes (methionine, betaine, choline, inositol and folates) that may be involved in cardiovascular and/or hepatic protection, lipid metabolism and DNA methylation. Potential protective effects of bound phenolic acids within the colon, of the B-complex vitamins on the nervous system and mental health, of oligosaccharides as prebiotics, of compounds associated with skeleton health, and of other compounds such as α-linolenic acid, policosanol, melatonin, phytosterols and para-aminobenzoic acid also deserve to be studied in more depth. Finally, benefits of nutrigenomics to study complex physiological effects of the ‘whole-grain package’, and the most promising ways for improving the nutritional quality of cereal products are discussed.

The effect of psychological stress on health is becoming a serious concern, with figures from the World Health Organization showing that stress-related disorders affect nearly 450 million individuals worldwide. Heightened physiological stress responses and psychosocial factors have been linked to disease pathways such as hypertension and CVD. This has prompted significant interest within the scientific community, public health bodies and industry to employ interventions to control and reduce the impact of stress on health. There is now strong potential for functional foods to offer stress management benefits. Various physiological pathways have been targeted by specific dietary supplements for stress reduction, including the hypothalamic–pituitary–adrenal axis and sympathetic nervous system. Presently there are a number of ingredients, which include vitamin C, milk proteins, a number of herbal extracts (ginkgo biloba, ginseng, kava, valerian and lemon balm), and n-3 fatty acids, that have demonstrated potential stress reactivity-lowering and mood-enhancing effects, although further work is required to substantiate the efficacy in human subjects. Dietary supplements that can alleviate excessive stress responses may play an increasingly important role for the maintenance of health in a stressful environment. However, future research should employ a greater range of measures that will provide stronger evidence to substantiate functional food claims for stress relief.

Epidemiological studies find that whole-grain intake is protective against cancer, cardiovascular disease, diabetes and obesity. Potential mechanisms for this protection are diverse since whole grains are rich in nutrients and phytochemicals. First, whole grains are concentrated sources of dietary fibre, resistant starch and oligosaccharides, carbohydrates that escape digestion in the small intestine and are fermented in the gut, producing short-chain fatty acids (SCFA). SCFA lower colonic pH, serve as an energy source for the colonocytes and may alter blood lipids. These improvements in the gut environment may provide immune protection beyond the gut. Second, whole grains are rich in antioxidants, including trace minerals and phenolic compounds, and these compounds have been linked to disease prevention. Additionally, whole grains mediate insulin and glucose responses. Although lower glycaemic load and glycaemic index have been linked to diabetes and obesity, risk of cancers such as colon and breast cancer have also been linked to high intake of readily-available carbohydrate. Finally, whole grains contain many other compounds that may protect against chronic disease. These compunds include phytate, phyto-oestrogens such as lignan, plant stanols and sterols, and vitamins and minerals. As a consequence of the traditional models of conducting nutrition studies on isolated nutrients, few studies exist on the biological effects of increased whole-grain intake. The few whole-grain feeding studies that are available show improvements in biomarkers with whole-grain consumption, such as weight loss, blood lipid improvement and antioxidant protection.

Mushrooms are the fungi that have been used as food since time immemorial. Nutritionally they are a valuable source of health food, which is low in calories, and rich in carbohydrates, essential amino acids, fibre, important vitamins and minerals. Mushrooms have also been used in medicine for centuries in the Orient but their potential as health potentiators and elicitors of immune system is recent. In the last two decades there has been an upsurge on the use of mushrooms as nutraceuticals and many edible species have been thoroughly investigated and authenticated for medicinal use. The species that have been properly analysed for medicinal value are: Ganoderma lucidum (Reishi), Lentinus edodes (Shiitake), Grifola frondosa (Maitake), Agaricus blazei (Hime-matsutake), Cordyceps militaris (Caterpillar fungus), Pleurotus ostreatus (Oyster mushroom) and Hericium erinaceous (Lions mane). There are many more species of cultivated and wild edible and non-edible mushrooms that have been analysed for both their nutritional and nutraceutical components but to a lesser extent than those listed above. The active constituents found in mushrooms are polysaccharides, dietary fibres, oligosaccharides, triterpenoids, peptides and proteins, alcohols and phenols, and mineral elements such as zinc, copper, iodine, selenium and iron, vitamins, amino acids etc. These have been found to boost the immune system, have anti-cancerous properties, act as anti-hypercholesterolaemic and hepato-protective agents, show anti-HIV activity and anti-viral activity, and ameliorate the toxic effect of chemo- and radiotherapy. Many of the species are known to be aphrodisiacs. Many commercial products from these mushrooms are available in the market. Prominent among these are: Lentinan from Lentinus edodes, Concord Sunchih and Reishi Plus from Ganoderma lucidum, Grifon from Grifola frondosa and Didanosine from Cordyceps militaris. The nutraceuticals have been found to relieve the stress and pressure of modern society by stimulating both basic and secondary immune responses of the immune system. There are more than 5000 species of mushrooms recorded from all over the world out of which around 2000 are identified as edible. A large number of the species are yet to be analysed for their nutraceutical/medicinal potential.
