This study explores heat and turbulent modulation in three-dimensional multiphase Rayleigh–Bénard convection using direct numerical simulations. Two immiscible fluids with identical reference density undergo systematic variations in dispersed-phase volume fractions, $0.0 \leq \varPhi \leq 0.5$, and ratios of dynamic viscosity, $\lambda _{\mu }$, and thermal diffusivity, $\lambda _{\alpha }$, within the range $[0.1\unicode{x2013}10]$. The Rayleigh, Prandtl, Weber and Froude numbers are held constant at $10^8$, $4$, $6000$ and $1$, respectively. Initially, when both fluids share the same properties, a 10 % Nusselt number increase is observed at the highest volume fractions. In this case, despite a reduction in turbulent kinetic energy, droplets enhance energy transfer to smaller scales, smaller than those of single-phase flow, promoting local mixing. By varying viscosity ratios, while maintaining a constant Rayleigh number based on the average mixture properties, the global heat transfer rises by approximately 25 % at $\varPhi =0.2$ and $\lambda _{\mu }=10$. This is attributed to increased small-scale mixing and turbulence in the less viscous carrier phase. In addition, a dispersed phase with higher thermal diffusivity results in a 50 % reduction in the Nusselt number compared with the single-phase counterpart, owing to faster heat conduction and reduced droplet presence near walls. The study also addresses droplet-size distributions, confirming two distinct ranges dominated by coalescence and breakup with different scaling laws.

Aqueous foams coarsen with time due to gas diffusion through the liquid between the bubbles. The mean bubble size grows, and small bubbles vanish. However, coarsening is little understood for foams with an intermediate liquid content, particularly in the presence of surfactant-induced attractive forces between the bubbles, measured by the interface contact angle where thin films meet the bulk liquid. Rigorous bubble growth laws have yet to be developed, and the evolution of bulk foam properties is unclear. We present a quasistatic numerical model for coarsening in two-dimensional wet foams, focusing on growth laws and related bubble properties. The deformation of bubble interfaces is modelled using a finite-element approach, and the gas flow through both films and Plateau borders is approximated. We give results for disordered two-dimensional wet foams with $256$ to $1024$ bubbles, at liquid fractions from $2\,\%$ to $25\,\%$, beyond the zero-contact-angle unjamming transition, and with contact angles up to $10^\circ$. Simple analytical models for the bubble pressures, film lengths and coarsening growth rates are developed to aid interpretation. If the contact angle is non-zero, we find that a prediction of the coarsening rate approaches a non-zero value as the liquid fraction is increased. We also find that an individual bubble's effective number of neighbours determines whether it grows or shrinks to a good approximation.

Lipids play an important role in human nutrition. Although adequate lipid consumption is necessary for an optimal functioning of the human body, overconsumption of saturated fatty acids can lead to postprandial hypertriglyceridaemia, which triggers the development of atherosclerosis. Important parameters that impact postprandial lipaemia and inflammation are related to the matrix structure and the fat-soluble micronutrient profile of ingested foods/lipids, but the specific effect of these parameters should be further studied, as most of the available studies evaluate their effect at fasting state. This review specifically explores the effects of food structure and fat-soluble micronutrients, from either micronutrient-rich foods or supplements, on postprandial hypertriglyceridaemia and inflammation. The review also highlights the potential of emerging biomarkers such as miRNAs or circulating microvesicles, as an alternative to the widely use biomarkers (e.g. low-density lipoproteins or blood concentration of pro-inflammatory cytokines), to identify inflammation associated with postprandial hypertriglyceridaemia at early stages.

The dynamics of stabilised concentrated emulsions presents a rich phenomenology including chaotic emulsification, non-Newtonian rheology and ageing dynamics at rest. Macroscopic rheology results from the complex droplet microdynamics and, in turn, droplet dynamics is influenced by macroscopic flows via the competing action of hydrodynamic and interfacial stresses, giving rise to a complex tangle of elastoplastic effects, diffusion, breakups and coalescence events. This tight multiscale coupling, together with the daunting challenge of experimentally investigating droplets under flow, has hindered the understanding of concentrated emulsions dynamics. We present results from three-dimensional numerical simulations of emulsions that resolve the shape and dynamics of individual droplets, along with the macroscopic flows. We investigate droplet dispersion statistics, measuring probability density functions (p.d.f.s) of droplet displacements and velocities, changing the concentration, in the stirred and ageing regimes. We provide the first measurements, in concentrated emulsions, of the relative droplet–droplet separations p.d.f. and of the droplet acceleration p.d.f., which becomes strongly non-Gaussian as the volume fraction is increased above the jamming point. Cooperative effects, arising when droplets are in contact, are argued to be responsible of the anomalous superdiffusive behaviour of the mean square displacement and of the pair separation at long times, in both the stirred and in the ageing regimes. This superdiffusive behaviour is reflected in a non-Gaussian pair separation p.d.f., whose analytical form is investigated, in the ageing regime, by means of theoretical arguments. This work paves the way to developing a connection between Lagrangian dynamics and rheology in concentrated emulsions.

A dilute magnetic emulsion under the combined action of a uniform external magnetic field and a small amplitude oscillatory shear is studied using numerical simulations. We consider a three-dimensional domain with a single ferrofluid droplet suspended in a non-magnetizable Newtonian fluid. We present results of droplet shape and orientation, viscoelastic functions and bulk emulsion magnetization as functions of the shear oscillation frequency, magnetic field intensity and orientation. We also investigate how the magnetic field induces mechanical anisotropy by producing internal torques in oscillatory conditions. We found that, when the magnetic field is parallel to the shear plane, the droplet shape is mostly independent of the shear oscillation frequency. Regarding the viscometric functions, we show how the external magnetic field modifies the storage and loss moduli, especially for a field aligned to the main velocity gradient. The bulk emulsion magnetization is studied in the same fashion as the viscoelastic functions of the oscillatory shear. We show that the in-phase component of the magnetization with respect to the shear rate reaches a saturation magnetization, at the high frequencies limit, dependent on the magnetic field intensity and orientation. On the other hand, we found a non-zero out-of-phase response, which indicates a finite emulsion magnetization relaxation time. Our results indicate that the magnetization relaxation is closely related to the mechanical relaxation for dilute magnetic emulsions under oscillatory shear.

We present a numerical study of emulsions in homogeneous and isotropic turbulence (HIT) at $Re_\lambda =137$. The problem is addressed via direct numerical simulations, where the volume of fluid is used to represent the complex features of the liquid–liquid interface. We consider a mixture of two iso-density fluids, where fluid properties are varied with the goal of understanding their role in turbulence modulation, in particular the volume fraction ($0.03<\alpha <0.5$), viscosity ratio ($0.01<\mu _d/\mu _c<100$) and large-scale Weber number ($10.6< We_\mathcal {L}<106.5$). The analysis, performed by studying integral quantities and spectral scale-by-scale analysis, reveals that energy is transported consistently from large to small scales by the interface, and no inverse cascade is observed. Furthermore, the total surface is found to be directly proportional to the amount of energy transported, while viscosity and surface tension alter the dynamic that regulates energy transport. We also observe the $-10/3$ and $-3/2$ scaling on droplet size distributions, suggesting that the dimensional arguments that led to their derivation are verified in HIT conditions.

Dispersion of droplets in an emulsion is commonly seen in several chemical, pharmaceutical and petroleum industries. Electric field has been shown to affect the stability of these dispersions. We study the dynamics of a pair of leaky dielectric droplets in a leaky dielectric liquid in the presence of an externally applied electric field. A pair of droplets may coalesce or repel each other in the presence of an electric field. Interactions between a pair of drops have been shown to be governed by the ratio $\varepsilon _r/\sigma _r$, where $\varepsilon _r$ and $\sigma _r$ are the ratios of drop to ambient fluid electric permittivities and conductivities, respectively. When inertia is neglected, the droplets approach each other if $\varepsilon _r/\sigma _r > 1$, whereas droplets repel when $\varepsilon _r/\sigma _r < 1$. However, inclusion of inertia permits interesting transient behaviour, where the droplets may attract due to the electrostatic dipole–dipole attraction even for $\varepsilon _r/\sigma _r < 1$. The approach velocity then is governed by the electrostatic forces and varies as $1/h^4$, where $h$ is the separation distance between the droplets, in contrast to being hydrodynamically driven as predicted in the Stokes flow limit by Baygents et al. (J. Fluid Mech., vol. 368, 1998, pp. 359–375). For compound droplets, interactions between droplets are essentially governed by the electrical properties of the outer droplet and the ambient fluid. However, transient dynamics may also result in the breakup of a compound droplet and lead to formation of single droplets.

Turbulent emulsions are complex physical systems characterized by a strong and dynamical coupling between small-scale droplets and large-scale rheology. By using a specifically designed Taylor–Couette shear flow system, we are able to characterize the statistical properties of a turbulent emulsion made of oil droplets dispersed in an ethanol–water continuous solution, at an oil volume fraction up to 40 %. We find that the dependence of the droplet size on the Reynolds number of the flow at a volume fraction of 1 % can be well described by the Hinze criterion. The distribution of droplet sizes is found to follow a log-normal distribution, hinting at a fragmentation process as the possible mechanism dominating droplet formation. Additionally, the effective viscosity of the turbulent emulsion increases with the volume fraction of the dispersed oil phase, and decreases when the shear strength is increased. We find that the dependence of the effective viscosity on the shear rate can be described by the Herschel–Bulkley model, with a flow index monotonically decreasing with increasing oil volume fraction. This finding indicates that the degree of shear thinning systematically increases with the volume fraction of the dispersed phase. The current findings have important implications for bridging the knowledge on turbulence and low-Reynolds-number emulsion flows to turbulent emulsion flows.

An electrokinetic model for a surfactant-stabilized nano-drop under oscillatory forcing is solved. This generalizes a model for which an analytical solution was recently proposed for large, highly charged drops. Calculations of the dynamic electrophoretic mobility and the accompanying electrostatic polarization for a single drop provide a theoretical foundation for interpreting electrokinetic sonic amplitude and complex-conductivity spectra for dilute surfactant-stabilized oil-in-water emulsions and bubbly liquids. The model is distinguished from earlier models by accounting for the internal fluid and interfacial dynamics at finite frequencies (${\sim }10^3\text {--}10^7\ \textrm {Hz}$). This dynamics accounts for the electro-migration, diffusion and advection of surfactant ions on the interface, and exchange of these ions with the immediately adjacent electrolyte. Surface gradients induce Marangoni stresses, which couple to the electrical and hydrodynamic stresses, modulating the magnitude and phase of the drop velocity and electrostatic polarization induced by the electric field. Of particular interest, for sodium dodecyl sulphate stabilized oil-in-water drops, is how the high surface-charge density manifests in a breakdown of the Smoluchowski-slip approximation, even for drops with very thin diffuse layers. More generally, the model furnishes dynamic mobilities for drops with arbitrary size and charge, thus permitting appropriate averaging for polydisperse systems. Such calculations may help to resolve long-standing challenges and controversy with regards to the surface-charge density of nano-drops and their macro-scale counterparts, and may pave the way to quantitative interpretations of more complex dynamic interfacial rheology and exchange kinetics, e.g. for Pickering emulsions.

Double emulsion formation in a hierarchical flow-focusing channel is systematically investigated using a free-energy ternary lattice Boltzmann model. A three-dimensional formation regime diagram is constructed based on the capillary numbers of the inner ($Ca_{i}$), middle ($Ca_{m}$) and outer ($Ca_{o}$) phase fluids. The results show that the formation diagram can be classified into periodic two-step region, periodic one-step region, and non-periodic region. By varying $Ca_{i}$ and $Ca_{m}$ in the two-step formation region, different morphologies are obtained, including the regular double emulsions, decussate regimes with one or two alternate empty droplets, and structures with multiple inner droplets contained in the continuous middle phase thread. Bidisperse behaviours are also frequently encountered in the two-step formation region. In the periodic one-step formation region, scaling laws are proposed for the double emulsion size and for the size ratio between the inner droplet and the overall double emulsion. Furthermore, we show that the interfacial tension ratio can greatly change the morphologies of the obtained emulsion droplets, and the channel geometry plays an important role in changing the formation regimes and the double emulsion sizes. In particular, narrowing the side inlets or the distance between the two side inlets promotes the conversion from the two-step formation regime to the one-step formation regime.

A theoretical analysis of the dynamic electrophoretic mobility of surfactant-stabilized nano-drops is undertaken. Whereas the theory for rigid spherical nanoparticles is well developed, its application to nano-drops is questionable due to fluid mobility of the interface and of the surfactant molecules adsorbed there. At zero frequency, small drops with surface impurities are well known to behave as rigid spheres due to concentration-gradient-induced Marangoni stresses. However, at the megahertz frequencies of electroacoustic (and other spectral-based) diagnostics, the interfacial concentration gradients are dynamic, coupling electromigration, advection and diffusion fluxes. This study addresses a parameter space that is relevant to anionic-surfactant-stabilized oil–water emulsions, using sodium-dodecylsulfate-stabilized hexadecane as a specific example. The drop size is several hundred nanometres, much larger than the diffuse-layer thickness, thus motivating thin-double-layer approximations. The theory demonstrates that fluid mobility and fluctuating Marangoni stresses can have a profound influence on the magnitude and phase of the dynamic mobility. We show that the drop interface transits from a rigid/immobile one at low frequency to a fluid one at high frequency. The model unifies electrokinetics and equilibrium interfacial thermodynamics. Therefore, with knowledge of how the interfacial tension varies with electrolyte composition (oil, surfactant and added salt concentrations), the particle radius might be adopted as the primary fitting parameter (rather than the customary $\unicode[STIX]{x1D701}$-potential) from an experimental measure of the dynamic mobility. This theory is general enough that it might be applied to aerosols and bubbly dispersions (at sufficiently high frequencies).

We study the formation of fine radial jets during the impact of a compound drop on a smooth solid surface. The disperse-phase droplets are heavier than the outer continuous phase of the main drop and sink to the bottom of the drop before it is released from the nozzle. The droplets often arrange into a regular pattern around the axis of symmetry. This configuration produces narrow high-speed jets aligned with every internal droplet. These radial jets form during the early impulsive phase of the impact, by local focusing of the outer liquid, which is forced into the narrowing wedge under each internal droplet. The pressure-driven flow forces a thin sheet under and around each droplet, which levitates and separates from the solid surface. Subsequently, surface tension re-forms this horizontal sheet into a cylindrical jet, which is typically as narrow as ${\sim}35~\unicode[STIX]{x03BC}\text{m}$, while smaller droplets can produce even thinner jets. We systematically change the number of inner droplets and the properties of the main drop to identify the jetting threshold. The jet speed and thickness are minimally affected by the viscosity of the outer liquid, suggesting pure inertial focusing. The jets emerge at around eight times the drop impact velocity. Jetting stops when the density of the inner droplets approaches that of the continuous phase. The interior droplets are often greatly deformed and broken up into satellites by the outer viscous stretching, through capillary pinch-off or tip streaming.

We present a numerical study of the rheology of a two-fluid emulsion in dilute and semidilute conditions. The analysis is performed for different capillary numbers, volume fractions and viscosity ratios under the assumption of negligible inertia and zero buoyancy force. The effective viscosity of the system increases for low values of the volume fraction and decreases for higher values, with a maximum for approximately 20 % concentration of the disperse phase. When the dispersed fluid has lower viscosity, the normalised effective viscosity becomes smaller than 1 for high enough volume fractions. To single out the effect of droplet coalescence on the rheology of the emulsion we introduce an Eulerian force which prevents merging, effectively modelling the presence of surfactants in the system. When the coalescence is inhibited the effective viscosity is always greater than 1 and the curvature of the function representing the emulsion effective viscosity versus the volume fraction becomes positive, resembling the behaviour of suspensions of deformable particles. The reduction of the effective viscosity in the presence of coalescence is associated with the reduction of the total surface of the disperse phase when the droplets merge, which leads to a reduction of the interface tension contribution to the total shear stress. The probability density function of the flow topology parameter shows that the flow is mostly a shear flow in the matrix phase, with regions of extensional flow when the coalescence is prohibited. The flow in the disperse phase, instead, always shows rotational components. The first normal stress difference is positive, except for the smallest viscosity ratio considered, whereas the second normal difference is negative, with their ratio being constant with the volume fraction. Our results clearly show that the coalescence efficiency strongly affects the system rheology and that neglecting droplet merging can lead to erroneous predictions.

We perform direct numerical simulations (DNS) of emulsions in homogeneous isotropic turbulence using a pseudopotential lattice-Boltzmann (PP-LB) method. Improving on previous literature by minimizing droplet dissolution and spurious currents, we show that the PP-LB technique is capable of long stable simulations in certain parameter regions. Varying the dispersed-phase volume fraction $\unicode[STIX]{x1D719}$, we demonstrate that droplet breakup extracts kinetic energy from the larger scales while injecting energy into the smaller scales, increasingly with higher $\unicode[STIX]{x1D719}$, with approximately the Hinze scale (Hinze, AIChE J., vol. 1 (3), 1955, pp. 289–295) separating the two effects. A generalization of the Hinze scale is proposed, which applies both to dense and dilute suspensions, including cases where there is a deviation from the $k^{-5/3}$ inertial range scaling and where coalescence becomes dominant. This is done using the Weber number spectrum $We(k)$, constructed from the multiphase kinetic energy spectrum $E(k)$, which indicates the critical droplet scale at which $We\approx 1$. This scale roughly separates coalescence and breakup dynamics as it closely corresponds to the transition of the droplet size ($d$) distribution into a $d^{-10/3}$ scaling (Garrett et al., J. Phys. Oceanogr., vol. 30 (9), 2000, pp. 2163–2171; Deane & Stokes, Nature, vol. 418 (6900), 2002, p. 839). We show the need to maintain a separation of the turbulence forcing scale and domain size to prevent the formation of large connected regions of the dispersed phase. For the first time, we show that turbulent emulsions evolve into a quasi-equilibrium cycle of alternating coalescence and breakup dominated processes. Studying the system in its state-space comprising kinetic energy $E_{k}$, enstrophy $\unicode[STIX]{x1D714}^{2}$ and the droplet number density $N_{d}$, we find that their dynamics resemble limit cycles with a time delay. Extreme values in the evolution of $E_{k}$ are manifested in the evolution of $\unicode[STIX]{x1D714}^{2}$ and $N_{d}$ with a delay of ${\sim}0.3{\mathcal{T}}$ and ${\sim}0.9{\mathcal{T}}$ respectively (with ${\mathcal{T}}$ the large eddy timescale). Lastly, we also show that flow topology of turbulence in an emulsion is significantly more different from single-phase turbulence than previously thought. In particular, vortex compression and axial straining mechanisms increase in the droplet phase.

The fluid dynamics of the collision and coalescence of liquid drops has intrigued scientists and engineers for more than a century owing to its ubiquitousness in nature, e.g. raindrop coalescence, and industrial applications, e.g. breaking of emulsions in the oil and gas industry. The complexity of the underlying dynamics, which includes occurrence of hydrodynamic singularities, has required study of the problem at different scales – macroscopic, mesoscopic and molecular – using stochastic and deterministic methods. In this work, a multi-scale, deterministic method is adopted to simulate the approach, collision, and eventual coalescence of two drops where the drops as well as the ambient fluid are incompressible, Newtonian fluids. The free boundary problem governing the dynamics consists of the Navier–Stokes system and associated initial and boundary conditions that have been augmented to account for the effects of disjoining pressure as the separation between the drops becomes of the order of a few hundred nanometres. This free boundary problem is solved by a Galerkin finite element-based algorithm. The interplay of inertial, viscous, capillary and van der Waals forces on the coalescence dynamics is investigated. It is shown that, in certain situations, because of inertia two drops that are driven together can first bounce before ultimately coalescing. This bounce delays coalescence and can result in the computed value of the film drainage time departing significantly from that predicted from existing scaling theories.

Multicomponent liquid drops in a host liquid are very relevant in various technological applications. Their dissolution or growth dynamics is complex. Differences in solubility between the drop components combined with the solutal Marangoni effect and natural convection contribute to this complexity, which can be even further increased in combination with the ouzo effect, i.e. the spontaneous nucleation of microdroplets due to composition-dependent miscibilities in a ternary system. The quantitative understanding of this combined process is important for applications in industry, particularly for modern liquid–liquid microextraction processes. In this work, as a model system, we experimentally and theoretically explore water–ethanol drops dissolving in anethole oil. During the dissolution, we observed two types of microdroplet nucleation, namely water microdroplet nucleation in the surrounding oil at drop mid-height, and oil microdroplet nucleation in the aqueous drop, again at mid-height. The nucleated oil microdroplets are driven by Marangoni flows inside the aqueous drop and evolve into microdroplet rings. A one-dimensional multiphase and multicomponent diffusion model in combination with thermodynamic equilibrium theory is proposed to predict the behaviour of spontaneous emulsification, i.e. microdroplet nucleation, that is triggered by diffusion. A scale analysis together with experimental investigations of the fluid dynamics of the system reveals that both the solutal Marangoni flow inside the drop and the buoyancy-driven flow in the host liquid influence the diffusion-triggered emulsification process. Our work provides a physical understanding of the microdroplet nucleation by dissolution of a multicomponent drop in a host liquid.

The shear-induced collective diffusivity down a concentration gradient in a viscous emulsion is computed using direct numerical simulation. A layer of randomly packed drops subjected to a shear flow, shows the layer width to increase with the $1/3$ power of time, consistent with a semi-dilute theory that assumes a diffusivity linear with concentration. This characteristic scaling and the underlying theory are used to compute the collective diffusivity coefficient. This is the first ever computation of this quantity for a system of deformable particles using fully resolved numerical simulation. The results match very well with previous experimental observations. The coefficient of collective diffusivity varies non-monotonically with the capillary number, due to the competing effects of increasing deformation and drop orientation. A phenomenological correlation for the collective diffusivity coefficient as a function of capillary number is presented. We also apply an alternative approach to compute collective diffusivity, developed originally for a statistically homogeneous rigid sphere suspension – computing the dynamic structure factor from the simulated droplet positions and examining its time variation at small wavenumber. We show that the results from this alternative approach qualitatively agree with our computation of collective diffusivity including the prediction of the non-monotonic variation of diffusivity with the capillary number.

The use of solid-laden emulsions (Pickering emulsions) provides an interesting alternative to normal emulsions because the need for organic surfactants is removed or reduced. Combination of a bentonite with a layered double hydroxide represents an effective emulsifying system and provides high stability against coalescence. Solid contents as low as 0.1% (w/w, related to the total mass of the emulsion) are sufficient to prepare very stable O/W emulsions; the mass ratio of hydroxide/bentonite is not critical but should vary between 0.25 and 4 (corresponding to mass fractions of the hydroxide between χ = 0.2 and 0.8). With large hydroxide contents, stabilization is mainly caused by the envelope of hydroxide particles around the oil droplets. This shell provides a mechanical barrier against coalescence, typical of Pickering emulsions described so far. Addition of increasing amounts of bentonite provides an additional stabilization by building-up a threedimensional network consisting of both types of particles spanning the coherent phase. A high storage modulus at mass fractions of the hydroxide between 0.2 and 0.8 indicates high flexibility for the inorganic framework which is considered to be an important factor in the high stability of these emulsions.

A new macroscopic model describing the rheology and microstructure of dilute emulsions with droplet morphology is developed based on an internal contravariant conformation tensor variable which is physically identified with the deformed ellipsoidal geometry of the dispersed phase. The model is consistent with existing first-order capillary number, $O(Ca)$, theory describing the microstructure as well as $O(Ca^{2})$ theory describing the emulsion-contributed extra stress. These asymptotic solutions are also used to determine all of the model parameters, making it the only macroscopic emulsion model that is consistent with all available asymptotic theories in the limit of small $Ca$. The governing equations are obtained from the Poisson and dissipation brackets, as developed for an incompressible fluid system endowed with an internal contravariant second-order tensor, subject to the imposition of the constraint of a unit determinant. First proposed by Maffettone & Minale (J. Non-Newtonian Fluid Mech., vol. 78, 1998, pp. 227–241), this constraint physically corresponds to conservation of the volume of the dispersed phase in the emulsion. The Hamiltonian of the emulsion is expressed through the surface energy of the dispersed phase, in addition to the kinetic energy, following previous work by Grmela et al. (J. Non-Newtonian Fluid Mech., vol. 212, 2014, pp. 1–12), but employing a more accurate evaluation of the surface area in terms of the internal contravariant conformation tensor. Structural predictions of the ellipsoid droplet morphology obtained with the new model are compared with classic experiments by Torza et al. (J. Colloid Interface Sci., vol. 38, 1972, pp. 395–411), showing good agreement.
