The aim of this study was to determine the genetic background of longitudinal residual feed intake (RFI) and BW gain in farmed mink using random regression methods considering heterogeneous residual variances. The individual BW was measured every 3 weeks from 63 to 210 days of age for 2139 male+female pairs of juvenile mink during the growing-furring period. Cumulative feed intake was calculated six times with 3-week intervals based on daily feed consumption between weighing’s from 105 to 210 days of age. Genetic parameters for RFI and BW gain in males and females were obtained using univariate random regression with Legendre polynomials containing an animal genetic effect and permanent environmental effect of litter along with heterogeneous residual variances. Heritability estimates for RFI increased with age from 0.18 (0.03, posterior standard deviation (PSD)) at 105 days of age to 0.49 (0.03, PSD) and 0.46 (0.03, PSD) at 210 days of age in male and female mink, respectively. The heritability estimates for BW gain increased with age and had moderate to high range for males (0.33 (0.02, PSD) to 0.84 (0.02, PSD)) and females (0.35 (0.03, PSD) to 0.85 (0.02, PSD)). RFI estimates during the growing period (105 to 126 days of age) showed high positive genetic correlations with the pelting RFI (210 days of age) in male (0.86 to 0.97) and female (0.92 to 0.98). However, phenotypic correlations were lower from 0.47 to 0.76 in males and 0.61 to 0.75 in females. Furthermore, BW records in the growing period (63 to 126 days of age) had moderate (male: 0.39, female: 0.53) to high (male: 0.87, female: 0.94) genetic correlations with pelting BW (210 days of age). The result of current study showed that RFI and BW in mink are highly heritable, especially at the late furring period, suggesting potential for large genetic gains for these traits. The genetic correlations suggested that substantial genetic gain can be obtained by only considering the RFI estimate and BW at pelting, however, lower genetic correlations than unity indicate that extra genetic gain can be obtained by including estimates of these traits during the growing period. This study suggests random regression methods are suitable for analysing feed efficiency and BW gain; and genetic selection for RFI in mink is promising.

The variation of weight, degree of lipid infiltration and lipoprotein lipase (LPL) activity were studied in seven adipose tissues of Alpine and Saanen kids during five trials where animals were fed with milk replacer, were either weaned or unweaned, were either unfasted or fasted during 24 h and were slaughtered at 8, 10, 12, 14, 18 or 20 kg live weight.

At every live weight, kid carcasses were characterized by a relatively-high proportion of visceral adipose tissues: omental, mesenteric, perirenal and pericardic tissues (about half of total adipose tissues) and by a low deposition of external fat and a low lipogenic activity in the subcutaneous tissues. The intermuscular adipose tissue of the leg was the most rapidly developing tissue (coefficient of allometry 2·26) followed by omental (2·13), mesenteric (1·55), perirenal (1·48) and pericardic (1·38) tissues.

The perirenal, omental and inguinal tissues had the highest lipid content and LPL activity, and the sternal, caudal and mesenteric the lowest. There was a positive intertissue correlation (+0·80) between the lipid concentration and the LPL activity of adipose tissues, However, the lipid concentration of the omental tissue increased while its LPL activity per g tissue decreased with increasing live weight of the animal.

After a 24-h fast, a tendency to a proportional decrease in the weight of all adipose tissues by 0·20 to 0·35 and in the LPL activity by 0·36 to 0·88 was observed; the weight and LPL activity losses of the perirenal tissue were the greater.

Fourteen days after weaning the weight losses of adipose tissues remained high but the LPL activities increased again, showing an early recovery of lipogenic activity after weaning. However, they did not reach the values recorded during the pre-weaning period.

In kids, each adipose tissue had its own characteristics and played a specific role in lipid metabolism both during lipogenesis and lipolysis.

Selection in native local breeds needs great carefulness due to the small population size and the risk of inbreeding. Furthermore, most breeds are dual-purpose, and milk and beef attitudes are antagonistic. For preservation purposes functional traits need to be considered. Focusing on the small local Rendena cattle, this study aimed to analyse the genetic correlations among milk, beef and udder health traits and the response to selection predicted under different scenarios. The study considered milk, fat and protein yields (MY), factor scores for udder volume (UV), conformation (UC) and muscularity obtained from type traits scored on primiparous cows, and performance test traits (PT) measured on young bulls at test station: average daily gain, in vivo SEUROP fleshiness, in vivo dressing percentage. Somatic cell score (SCS) was considered as a functional trait, with a possibility of restricting its genetic gain to zero. The study considered 281 497 MY test-day data collected on 16 974 cows, and data from linear type evaluation on 11 992 primiparous cows for factor scores. The PT data were recorded on 1428 young bulls, and SCS obtained from cell counts at milk recording. Bi-trait restricted maximum likelihood animal model analyses were performed to assess genetic parameters. Heritability varied from 0.157 (fat) to 0.442 (dressing percentage). Udder volume and MY resulted positively genetically correlated (average correlation 0.427), whereas the low-negative genetic correlation between MY and UC (−0.141) suggested a negative impact of milk gain on udder form. Beef traits of factor muscularity and PT showed medium-high favourable genetic correlations (from 0.357 to 0.984), excluding a null correlation between daily gain and muscularity. The genetic correlation MY v. muscularity was unfavourable (−0.328 on average), whereas null correlations were found in MY v. PT, apart from fat v. dressing percentage (−0.151). Somatic cell score showed low unfavourable correlations with protein (0.111) and UV (0.092), and favourable correlations with UC (−0.193). Response to selection in different scenarios indicated a good balanced gain for milk and beef when standardized economic weights of 0.66 and 0.34 are given to the two attitudes, and SCS genetic gain is restricted. Current genetic trends (MY and PT increasing, but muscularity lessening) reflect a stronger selection for milk, suggesting a slight progressive change towards a milk conformation. Aiming to preserve the dual-purpose characteristics of a breed, proper breeding policies taking into account the genetic relationships among traits and including functional traits should be applied in local dual-purpose populations.

A study was conducted to compare the digestibility of organic matter (OM), neutral-detergent fibre (NDF), acid-detergent fibre (ADF), hemicellulose and nitrogen (N) and N balance in Mukota (M), Large White (LW) and the LW × M F1 pigs. Four male pigs of each breed, at proportionately 0·3 of their mature body weights, were randomly allocated to each of four diets in a cross-over design. The diets, which were formulated to contain similar levels of protein (ca. 160 g crude protein per kg) and energy (ca. 9 MJ metabolizable energy per kg), contained 0, 100, 200 and 300 g maize cob meal per kg, which corresponded to NDF levels of 276·4, 360·3, 402·9 and 523·5 g/kg dry matter, respectively. There was a negative correlation (P < 0·001) between the digestibility of OM, NDF, ADF and hemicellulose and the level of NDF in the diet. The digestibility of OM, NDF, ADF and hemicellulose decreased linearly (P < 0·05) with increase in the level of NDF among all three genotypes. There was a genotype × diet interaction on NDF and ADF digestibilities with digestibility in the LW decreasing faster (P < 0·05) than in the Mukota and LW × M F1 cross with increasing NDF. Both breed and level of maize cob meal affected N digestibility (P < 0·001), whilst the N retained per unit metabolic body weight was only affected by diet (P < 0·01). Increasing the level of maize cob meal beyond 100 g/kg, however, did not reduce N digestibility (P < 0·05). There was neither genotype nor dietary effect (P > 0·05) on N retained per unit N intake. These findings showed that the Mukota and the LW × M F1 cross were better able to digest the fibrous components than the LW. In addition, the Mukota and the LW × M F1 cross displayed an ability to retain protein to the same extent as the LW.

With increased regulations regarding the use of feed-grade antimicrobials in livestock systems, alternative strategies to enhance growth and immunity of feedlot cattle are warranted. Hence, this experiment compared performance, health and physiological responses of cattle supplemented with feed-grade antibiotics or alternative feed ingredients during the initial 60 days in the feedlot. Angus×Hereford calves (63 steers+42 heifers) originating from two cow–calf ranches were weaned on day −3, obtained from an auction yard on day −2 and road-transported (800 km; 12 h) to the feedlot. Upon arrival on day −1, shrunk BW was recorded. On day 0, calves were ranked by sex, source and shrunk BW, and allocated to one of 21 pens. Pens were assigned to receive (7 pens/treatment) a free-choice total mixed ration containing: (1) lasalocid (360 mg/calf daily of Bovatec; Zoetis, Florham Park, NJ, USA)+chlortetracycline (350 mg/calf of Aureomycin at cycles of 5-day inclusion and 2-day removal from diet; Zoetis) from days 0 to 32, and monensin only (360 mg/calf daily of Rumensin; Elanco Animal Health, Greenfield, IN, USA) from days 33 to 60 (PC), (2) sodium saccharin-based sweetener (Sucram at 0.04 g/kg of diet dry matter; Pancosma SA; Geneva, Switzerland)+plant extracts containing eugenol, cinnamaldehyde and capsicum (800 mg/calf daily of XTRACT Ruminants 7065; Pancosma SA) from days 0 to 32 and XTRACT only (800 mg/calf daily) from days 33 to 60 (EG) or (3) no supplemental ingredients (CON; days 0 to 60). Calves were assessed for bovine respiratory disease (BRD) signs and dry matter intake was recorded from each pen daily. Calves were vaccinated against BRD pathogens on days 0 and 22. Shrunk BW was recorded on day 61, and blood samples collected on days 0, 6, 11, 22, 33, 43 and 60. Calf ADG was greater (P=0.04) in PC v. EG and tended (P=0.09) to be greater in PC v. CON. Feed efficiency also tended (P=0.09) to be greater in PC v. CON, although main treatment effect for this response was not significant (P=0.23). Mean serum titers against bovine respiratory syncytial virus were greater in EG v. PC (P=0.04) and CON (tendency; P=0.08). Collectively, the inclusion of alternative feed ingredients prevented the decrease in feed efficiency when chlortetracycline and ionophores were not added to the initial feedlot diet, and improved antibody response to vaccination against the bovine respiratory syncytial virus in newly weaned cattle.

A study was carried out in the dry season, from October 1993 to May 1994 at an institutional farm in Niono (14º5’N, 6ºE, 295 m), on the Sahelian border of Mali with a semi-arid climate. Thirty-four local Sahelian goats in their first to fifth lactation weighing about 27 kg were used. Eleven of them suckled twin and 23 suckled single kids. The does were herded on natural rangeland for 8 to 9 h/day and received no food supplements. Dry season forage mass, intake and nutritive value of diets selected by goats, milk yield and effects on kids’ growth were measured.

The vegetation cover consisted of a herbaceous stratum dominated by annual gramineae plants and a woody stratum composed of 26 species of plants, whose relative abundance varied according to the topography and soil type. The goats spent between 0·126 (early dry season) and 0·004 (late dry season) of grazing time on herbaceous cover and the remaining time on consuming leaves, flowers and fruits of woody plants. The phytomass decreased as the dry season advanced. However, nutrient intake was relatively constant during the course of the study period, as the goats compensated for low biomass by walking more and grazing larger areas and for longer periods. On average, goats selected diets with 121 g crude protein and 7·6 MJ metabolizable energy per kg dry matter.

The milk yield and milk fat were measured weekly for 29 weeks but data for only 12 weeks are interpreted and discussed. Mean daily actual and fat-corrected milk (40 g fat per kg milk) production for the first 12 weeks of lactation was 692 (s.e. 139) g and 627 (s.e. 73) g respectively. The milk yield was maximum in the 1st week of lactation followed by a gradual decline. Milk yield was affected by litter size, number of lactation, weight and age of does at parturition. The does with twin kids produced significantly more milk (762 (s.e. 110) g/day) than the does with singles (656 (s.e. 158) g/day) (P < 0·05). The milk yield increased from the first lactation (542 (s.e. 49) g/day) to the third lactation (739 (s.e. 49) g/day) (P < 0·05) with no difference between the third and fifth lactation. Does over 27 kg produced more milk than those under 27 kg (P < 0·001) and does over 2·5 years produced more milk than younger does (P < 0·01). Milk fat was inversely related to milk production. Kids born as singles were heavier (2194 (s.e. 76) g) than those born as twins (1966 (s.e. 78) g) (P < 0·05). The kid growth rate was affected by birth weight (P < 0·001) and milk yield of dams (P < 0·01). Within litter size (single or twins), sex had no significant effect on the growth rate of kids, however the singles grew faster than twins (P < 0·001) throughout the 12 weeks of measurement. Single kids were 1·41 times as heavy as twins at 12 weeks.

It is concluded that, the milk yield of does and weight gain of kids under the precarious feeding conditions of the study indicate that the local goats monitored were adapted to local harsh conditions. Nutrition has been regarded as the main constraint to goat production from the range in the dry season. Further specific studies are needed to overcome the dry season nutritional stress and to improve goat production.

Resin acid-enriched composition (RAC) mainly containing tall oil fatty acid with an active component of resin acid (RA) can improve the microbial population in the digestive system, change the microbial fermentation, and improve the feed conversion ratio. We investigated the effects of dietary supplementation of RAC on sow colostrum yield (CY), colostrum composition and gut microbiota. Tall oil fatty acid and RA are commonly termed RAC and CLA, pinolenic, abietic, dehydrobiotic acids are characteristic components of RAC. The experiment was conducted in three trials in three respective herds. Sows were fed with a control diet and the same diet supplemented with 5 g RAC/day per sow during the last week of gestation. The 16S ribosomal RNA gene sequencing technique was used to assess sows’ faecal microbiota populations at farrowing. Colostrum nutritional composition, acute phase proteins (APPs) and immunoglobulin (Ig) content were also assessed. Individual piglets were weighed at birth and 24 h after the birth of first piglets in order to calculate CY and later at 3 to 4 weeks to calculate average daily gain. The RAC-fed sows had significantly higher IgG levels (P<0.05) in all three herds but treatment did not influence colostrum IgA and IgM concentration. There were no significant differences in colostrum protein, lactose and fat content in sows of the two diet groups (P>0.05), but those fed RAC had higher levels of colostrum serum amyloid A. Colostrum yield was significantly higher in RAC-fed sows in herds 2 and 3 with heavier piglets between 3 and 4 weeks of age (P<0.05), but not in herd 1 (P>0.05). Resin acid-enriched composition supplementation significantly increased some beneficial and fermentative bacteria (Romboutsia and Clostridium sensu stricto) than the control diet (P<0.01) while some opportunistic pathogens (Barnesiella, Sporobacter, Intestinimonas and Campylobacter), including Proteobacteria, were suppressed. Therefore, RAC added to the sow diet at late pregnancy increases colostrum IgG, colostrum availability for neonate piglets, and seems to promote better maternal intestinal microbial sources.

Performance and feeding behaviour traits in growing pigs could be affected by social interaction effects when animals are raised in group. So, properly knowing the genetic correlations between direct and social interaction effects among performance and feeding behaviour traits could improve the accuracy of the genetic evaluations. Our aim was to explore the role of feeding behaviour traits (FBT) and indirect genetic effects (IGEs) in the genetic evaluations of growing pigs. Thus, genetic parameters were estimated for production traits (PT): average daily gain, average daily feed consumption, feed conversion ratio and backfat thickness; as well as for FBT: average daily feeding rate, average daily feeding frequency, average daily occupation time and average daily time between consecutive visits. Traits were recorded in 1144 Duroc pigs during the fattening period. Two bivariate models were fitted: classic animal model and an animal model fitting IGE. Estimations were done following Bayesian procedures. Heritability estimates obtained with classic animal model for all studied traits were medium-high. The additional heritable variation captured by IGE supposed that the ratios of total genetic variance to phenotypic variance (T2) were higher than the heritability estimates obtained with the classic model, except for occupation time trait, when a lower value (0.20 ± 0.19) was estimated. This is due to a high and negative correlation between IGE and direct genetic effects (DGEs) of this particular trait (−0.78 ± 0.27). Results from classic animal model do not evidence a clear role of FBT to improve the accuracy of breeding value predictions for PT; only average daily feeding rate seems to show a positive correlation (around 0.50 to 0.60) with average daily gain, average daily feed consumption and backfat thickness. However, when IGE model was fitted, the number of estimates of genetic correlations between FBT and PT showing a relevant magnitude increased, generally for the correlations between IGE of FBT and DGE of PT; or particularly for the correlations between IGE of average daily feeding frequency, and the IGE of all the PT, except average daily gain. Thus, in evaluations using the animal model with IGE fitted, the inclusion of FBT could aid the improvement of the accuracy of breeding value predictions for PT. This is a consequence of the improved genetic relationships between traits that can be fitted when considering such models.

Bull beef production is traditionally based on high concentrate rations fed indoors. Inclusion of grazed grass, which is generally a cheaper feed, would decrease the cost of bull beef production, but may affect beef quality. Accordingly, the organoleptic quality and composition of beef from continental-sired suckler bulls (n=126) assigned to either ad libitum concentrates to slaughter (C), grass silage (GS) ad libitum for 120 days followed by C (GSC) or GS followed by 100 days at pasture and then C (GSPC) and slaughtered at target carcass weights (CW) of 360, 410 or 460 kg was examined. Tenderness, flavour liking and overall liking were lower (P<0.05) for GSPC than for C and GSC. Intramuscular fat content and soluble collagen proportion were lower (P<0.05) for GSPC than GSC which was lower (P<0.05) than C. Soluble collagen proportion was lower (P<0.05) for 460 kg than 410 kg CW, which was lower (P<0.05) than 360 kg CW. Inclusion of a grazing period decreased the ratings of tenderness, flavour liking and overall liking, but age of the bulls at slaughter had no clear influence on sensory characteristics.

Fatty acid (FA) composition is a key component of sheep milk nutritional quality. However, breeding for FA composition in dairy sheep is hampered by the logistic and phenotyping costs. This study was aimed at estimating genetic parameters for sheep milk FA and to test the feasibility of their routine measurement by using Fourier-transform IR (FTIR) spectroscopy. Milk FA composition of 989 Sarda ewes farmed in 48 flocks was measured by gas chromatography (FAGC). Moreover, FTIR spectrum was collected for each sample, and it was used to predict FA composition (FAFTIR) by partial least squares regression: 700 ewes were used for estimating model parameters, whereas the remaining 289 animals were used to validate the model. One hundred replicates were performed by randomly assigning animals to estimation and validation data set, respectively. Variance components for both measured and predicted traits were estimated with an animal model that included the fixed effects of parity, days in milking interval, lambing month, province, altitude of flock location, the random effects of flock-test-date and animal genetic additive. Genetic correlations among FAGC, and between corresponding FAGC and FAFTIR were estimated by bivariate analysis. Coefficients of determination between FAGC and FAFTIR ranged from moderate (about 0.50 for odd- and branched-chain FA) to high (about 0.90 for de novo FA) values. Low-to-moderate heritabilities were observed for individual FA (ranging from 0.01 to 0.47). The largest value was observed for GC measured C16:0. Low–to-moderate heritabilities were estimated for FA groups. In most of cases, heritabilites were slightly larger for FAGC than FAFTIR. Estimates of genetic correlations among FAGC showed a large variability in magnitude and sign. The genetic correlation between FAFTIR and FAGC was higher than 60% for all investigated traits. Results of the present study confirm the existence of genetic variability of the FA composition in sheep and suggest the feasibility of using FAFTIR as proxies for these traits in large scale breeding programs.

Correlated genetic changes in the level and pattern of average daily food intake (ADFI) were evaluated n i a population of pigs under index selection over an 11-year period. Performance testing was carried out in single sex groups of two or three full-sibs over the live-weight range 27 to 87 kg on an ad libitum feeding regime. The selection index incorporated live-weight gain, ultrasonic backfat thickness and a group food conversion ratio. Samples of boars from a contemporary control line were used to measure genetic change over time. Cumulated correlated responses in ADFI for boars and gilts showed considerable variation between years but the values were always negative and tended to increase up to year 7 but increased no further from then on. Thus, in year 11 the cumulated responses for ADFI in boars and gilts were -0·25 (s.e. 0·06) kg (P < 0·001) and -0·19 (s.e. 0·05) kg (P < 0001) respectively, the corresponding regressions of cumulated response on year number being — 0012 and — 0·017 kg. The relationship between food intake and live weight was compared in samples of boars and gilts from the selection line (S) and boars from the control line (C) during the final year of the study. The regression of ADFI on live weight for the two boar lines differed in intercept but not in slope with S line boars consuming, on average, 0·23 kg/day less meal than the C line boars over the test period. The regression equations for S line boars and gilts differed in slope and elevation with gilts consuming relatively more food daily up to around 60 kg live weight and less subsequently.

Free range pigs, born outdoors and reared after weaning in enriched indoor accommodation, were compared with conventionally raised pigs from a farm, matched for effects on meat quality, with respect to behaviour during transport and lairage, blood chemistry at slaughter and meat quality characteristics. Pigs were either kept in farm pen groups or were mixed at loading and kept in the groups, so formed, until slaughter. Free range pigs tended to settle faster during the 2½ h transport and 2 h lairage than conventionally raised pigs and were more likely to lie as resting posture during transport. Mixing at loading had no effect on posture during transport or during lairage for free range pigs but mixed conventionally raised pigs showed a greater variability in posture during lairage compared to non-mixed conventionally raised pigs, presumably as a result of disturbance from fighting conspecifics. Conventionally raised and free range pigs showed similar levels of aggression during transport but conventionally raised pigs were more aggressive during the lairage (average for mixed groups 12 v. 2 fights, P < 0.001). Aggressive interactions, such as one-way bites, were almost exclusively confined to mixed groups and all fights with mutual biting in mixed groups occurred solely between unfamiliar animals. The frequency of unacceptable skin damage in the middle and shoulder was highest in conventionally raised pigs and in mixed groups. Cortisol concentration and creatine kinase (CK) activity in slaughter blood were not affected by the rearing system. Mixing did not affect cortisol concentrations but led to higher CK activities compared to non-mixing (957 v. 588 U/l, respectively, P < 0.05). The rate of pH fall after slaughter was not affected by the rearing system but muscle temperatures early post mortem were highest in free range pigs. Mixing did not affect pH or temperature early post mortem. Neither rearing system nor mixing at loading affected ultimate pH or internal reflectance (meat quality marbling values).

Six multiparous Holstein-Friesian cows were offered a total mixed ration based on maize silage in a repeated measure design to evaluate the partition of gross energy (GE) during early to mid lactation. Four measurements were made at 6-week intervals with energy and nitrogen balances carried out in open-circuit respiration chambers over 6 days during lactation weeks 6, 12, 18 and 24. The intakes of total diet dry matter (DM) corrected for volatile losses (VCDM), organic matter (OM) and GE declined significantly (P < 0•01) as lactation progressed, although apparent digestibility of these fractions was not altered, resulting in a significant (P < 0•01) decline in digestible nutrient intake at each stage of lactation. Methane and urine energy losses were not significantly affected, resulting in significantly (P < 0·001) higher amounts of digestible energy (DE) partitioned to methane and urine as lactation progressed with associated significant reductions in metabolizable energy (ME) intake (MEI) (P < 0·01) and ME as a proportion of DE (P < 0·001) and GE (q) (P < 0·05). With advancing lactation there was a significant (P < 0·001) increase in the amount of ME partitioned to heat (HP/MEI), but no significant change in the amount partitioned to milk and tissue. Individual values for diet metabolizability (ME/GE) at actual (production) levels (qa) (mean 0·625 MJ/MJ) were corrected to an equivalent value at maintenance (qmc) (mean 0·666 MJ/MJ). The overall ME intakes (MJ/day) were: ad libitum, 246, corrected for level of feeding effect, 263, with a predicted ME requirement according to AFRC (1993) (MER93) of 242. Substitution of the calculated qmc into the predictive equations (AFRC, 1993) resulted in a mean maintenance requirement of 57·6 MJ/day (0·464 MJ/kg M0·75/day) whilst the mean value derived from the linear model describing the experimental data was 82·5 MJ/day (0·664 MJ/kg M0·75/day). The mean efficiencies of utilization of ME for milk production derived from AFRC (1993) and the linear regression model were 0·653 MJ/MJ and 0·625 MJ/MJ respectively.

The effects of dietary protein content and level of feeding on carcass characteristics and organs weight were evaluated in 72 male castrated Iberian pigs growing from 15 to 50 kg live weight. Animals were offered six diets providing 223, 192, 175, 156, 129 and 101 g crude ideal protein (CP) (N × 6·25) per kg dry matter (DM) and 14·64, 14·14, 14·37, 14·80, 15·36 and 15·53 MJ metabolizable energy (ME) per kg DM, respectively. Each diet was offered at three levels of feeding : 0·60, 0·80 and 0·95 × ad libitum intake. Mean values of protein, fat, ash and water contents in the carcass determined at 50 kg live weight were 130, 378, 28·2 and 458 g/kg, respectively, with a small but significant effect of CP content of the diet on carcass composition (P <0·001 to P <0·01) favouring both protein and fat content on decreasing dietary protein level. Protein deposition (PD) in the eviscerated carcass reached a maximum value when the diet containing 129 g CP per kg DM was offered (54·6 g/day at the highest feeding level). Nitrogen (N) retention in the carcass represented 70·9% of whole-body N retention and the efficiency of this process (carcass N retention : N intake) increased with declining dietary protein content (P <0·001). Carcass energy retention increased significantly with decreasing dietary CP content (P <0·001) and with feeding level (P <0·001). Raising energy intake resulted in a significant increase on total weight of viscera as proportion of empty body weight (P <0·001). Decreasing the CP content in the diet resulted in a lower proportional shoulder weight (P <0·01) meanwhile the proportion of ham decreased significantly (P <0·05) with increase in feeding level. The proportionate weights of dissectable fat in the shoulder and of intermuscular and subcutaneous fat in the ham increased significantly (P <0·05 and P <0·001) in response to decreasing dietary CP content meanwhile only ham intermuscular fat content increased with feeding level (P <0·001). Thus, decreasing dietary protein concentration from well in excess of requirements and increasing energy intake enhance N and fat retention in the carcass but also increases intermuscular fat content in the ham of the Iberian pig with possible implications for meat quality.

In the present study, the effect of Rosmarinus officinalis L. dietary supplementation on meat quality and oxidative stability of Nero Siciliano pigs was examined. During the growing–fattening period, 32 Nero Siciliano pigs were allotted into two treatment groups consisting of 8 replicates with 2 pigs per pen. For 90 days, the animals received a basal diet: one group (CTR) was not dietary supplemented, whereas the other group received (1 g/kg) rosemary extract (ROX). Supplementation with rosemary extract significantly improved the polyunsaturated fatty acid content of the meat, which showed higher values in the meat of the ROX group compared with the CTR group (P<0.001); in detail, values for 18:2n-6 (P=0.001), 20:4n-6 (P=0.001), 22:6n-3 (P=0.012) and PUFA/SFA ratio (P=0.004) appeared to increase in the dietary supplemented group. On the other hand, atherogenic and thrombogenic indexes showed slight differences among the groups (IA: P=0.079; IT: P=0.084). Dietary supplementation with R. officinalis L. was not effective in protecting meat from oxidative deterioration, considering that the lipid oxidation, measured in meat across 5 days of refrigerated storage in darkness, progressed similarly in both the groups during storage (P>0.05). Color measurement performed in the present study on meat samples from the two dietary treatments showed that redness decreased (P=0.046) and hue values increased (P=0.036), indicating that a deterioration of the initial color occurred and that the rosemary extract was ineffective in preventing color deterioration. Nevertheless, the lightness, yellowness and chroma color descriptors showed similar values in relation to dietary treatment (P>0.05). Considering the nutritional value of meat as an important contributor to the overall quality, the results obtained in this study support the possibility of the dietary supplementation with R. officinalis L. extract in pigs as a functional additive in livestock feeding.

The purpose of the present study was to evaluate locomotor strategies during development in domestic chickens (Gallus gallus domesticus); we were motivated, in part, by current efforts to improve the design of housing systems for laying hens which aim to reduce injury and over-exertion. Using four strains of laying hens (Lohmann Brown, Lohmann LSL lite, Dekalb White and Hyline Brown) throughout this longitudinal study, we investigated their locomotor style and climbing capacity in relation to the degree (0 to 70°) of incline, age (2 to 36 weeks) and the surface substrate (sandpaper or wire grid). Chicks and adult fowl performed only walking behavior to climb inclines ⩽40° and performed a combination of wing-assisted incline running (WAIR) or aerial ascent on steeper inclines. Fewer birds used their wings to aid their hind limbs when climbing 50° inclines on wire grid surface compared with sandpaper. The steepness of angle achieved during WAIR and the tendency to fly instead of using WAIR increased with increasing age and experience. White-feathered strains performed more wing-associated locomotor behavior compared with brown-feathered strains. A subset of birds was never able to climb incline angles >40° even when using WAIR. Therefore, we suggest that inclines of up to 40° should be provided for hens in three-dimensional housing systems, which are easily negotiated (without wing use) by chicks and adult fowl.

Apparent mortality among 280 215 embryos from the 4th to 16th week of gestation was studied from returns to service records following first inseminations with fresh semen from 100 bulls of five dairy and three beef breeds of cattle over a period of 8 years.

The average incidence of apparent mortality was 20·3% for embryos conceived by fresh semen first inseminations. Differences in rates of apparent embryonic mortality between breeds of sire and also between sires within the Guernsey, Ayrshire and Dairy Shorthorn were statistically significant although confounded with the breed of dam. The highest incidence was from matings by bulls of the Channel Island breeds. These results suggest that hereditary factors influenced embryonic mortality in cattle.

The rate of apparent mortality was higher among embryos conceived by frozen semen than by fresh semen. Ageing of fresh semen extra-corporeally also increased the rate of apparent embryonic mortality but to a lesser extent than frozen semen.

The rate of apparent embryonic mortality increased with the greater number of inseminations required for conception possibly because of a deteriorating maternal environment.

Calving difficulty (CD) is a key functional trait with significant influence on herd profitability and animal welfare. Breeding plays an important role in managing CD both at farm and industry level. An alternative to the economic value approach to determine the CD penalty is to complement the economic models with the analysis of farmer perceived on-farm impacts of CD. The aim of this study was to explore dairy and beef farmer views and perceptions on the economic and non-economic on-farm consequences of CD, to ultimately inform future genetic selection tools for the beef and dairy industries in Ireland. A standardised quantitative online survey was released to all farmers with e-mail addresses on the Irish Cattle Breeding Federation database. In total, 271 farmers completed the survey (173 beef farmers and 98 dairy farmers). Both dairy and beef farmers considered CD a very important issue with economic and non-economic components. However, CD was seen as more problematic by dairy farmers, who mostly preferred to slightly reduce its incidence, than by beef farmers, who tended to support increases in calf value even though it would imply a slight increase in CD incidence. Farm size was found to be related to dairy farmer views of CD with farmers from larger farms considering CD as more problematic than farmers from smaller farms. CD breeding value was reported to be critical for selecting beef sires to mate with either beef or dairy cows, whereas when selecting dairy sires, CD had lower importance than breeding values for other traits. There was considerable variability in the importance farmers give to CD breeding values that could not be explained by the farm type or the type of sire used, which might be related to the farmer non-economic motives. Farmer perceived economic value associated with incremental increases in CD increases substantially as the CD level considered increases. This non-linear relationship cannot be reflected in a standard linear index weighting. The results of this paper provide key underpinning support to the development of non-linear index weightings for CD in Irish national indexes.

Body-composition data from 73 non-pregnant, non-lactating cows of five genotypes were used to calculate the composition of empty body-weight change in mature cattle. The composition of empty body-weight change was shown to be dependent on empty body weight, containing more fat and less water, protein and ash at higher empty body weights. There were no differences between the genotypes. Between 300 and 600 kg empty body weight the protein concentration in empty body-weight change ranged from 125 to 40 g/kg, whilst application of standard energy values for fat and protein gave equivalent figures for body energy of 22·5 to 32·7 MJ/kg.

The number of organically managed cattle (OMC) within the European Union has increased tremendously in the last decade. However, there are still some concerns about animals under this farming system meeting their dietary requirements for milk production. The aim of this study was to compare the metabolic adaptations to the onset of lactation in three different herds, one conventional and two organic ones. Twenty-two conventionally managed cattle (CMC) and 20 from each organic farm were sampled throughout the periparturient period. These samplings were grouped into four different stages: (i) far-off dry, (ii) close-up dry, (iii) fresh and (iv) peak of lactation and compared among them. In addition, the results of periparturient animals were also compared within each management type with a control group (animals between the 4th and 5th months of pregnancy). Metabolic profiles were used to assess the health status of the herds, along with the quantification of the acute phase proteins haptoglobin and serum amyloid A, insulin and the calculation of different surrogate indices of insulin sensitivity. Generalised linear mixed models with repeated measurements were used to study the effect of the stage, management type or their interaction on the serum variables studied. The prevalence of subclinical ketosis was higher in OMC, although they showed better insulin sensitivity, a lower degree of inflammation and less liver injury, without a higher risk of macromineral deficiencies. Therefore, attention should be paid on organic farms to the nutritional management of cows around the time of calving in order to prevent the harmful consequences of excessive negative energy balance. Moreover, it must be taken into account that most of the common practices used to treat this condition in CMC are not allowed on a systematic basis in OMC.
