This study set out to demonstrate the feasibility of merging data from different experimental resource dairy populations for joint genetic analyses. Data from four experimental herds located in three different countries (Scotland, Ireland and the Netherlands) were used for this purpose. Animals were first lactation Holstein cows that participated in ongoing or previously completed selection and feeding experiments. Data included a total of 60 058 weekly records from 1630 cows across the four herds; number of cows per herd ranged from 90 to 563. Weekly records were extracted from the individual herd databases and included seven traits: milk, fat and protein yield, milk somatic cell count, liveweight, dry matter intake and energy intake. Missing records were predicted with the use of random regression models, so that at the end there were 44 weekly records, corresponding to the typical 305-day lactation, for each cow. A total of 23 different lactation traits were derived from these records: total milk, fat and protein yield, average fat and protein percentage, average fat-to-protein ratio, total dry matter and energy intake and average dry matter intake-to-milk yield ratio in lactation weeks 1 to 44 and 1 to 15; average milk somatic cell count in lactation weeks 1 to 15 and 16 to 44; average liveweight in lactation weeks 1 to 44; and average energy balance in lactation weeks 1 to 44 and 1 to 15. Data were subsequently merged across the four herds into a single dataset, which was analysed with mixed linear models. Genetic variance and heritability estimates were greater (P < 0.05) than zero for all traits except for average milk somatic cell count in weeks 16 to 44. Proportion of total phenotypic variance due to genotype-by-environment (sire-by-herd) interaction was not different (P > 0.05) from zero. When estimable, the genetic correlation between herds ranged from 0.85 to 0.99. Results suggested that merging experimental herd data into a single dataset is both feasible and sensible, despite potential differences in management and recording of the animals in the four herds. Merging experimental data will increase power of detection in a genetic analysis and augment the potential reference population in genome-wide association studies, especially of difficult-to-record traits.

Sixteen energy and N-balance trials with six sows were performed to study the energy requirement and protein gain of the animals during different stages in the second half of pregnancy. Energy and N-balances were measured during periods of 1 week and gaseous exchange was measured in a respiration chamber. The animals received 2·0,2·5,2·75 or 3 0 kg/day of a normal concentrate ration for sows. In one experiment, one animal had a negative energy balance on the 2 kg ration in the sixth week of pregnancy but in the other experiments the dietary energy intake was sufficient for positive energy balances until a few days before parturition. The N-balances were about 20 to 32 g/day in the second half of the gestation period. With 2·5 and 2·75 kg feed there was a negative deposition of fat at about 2 weeks before parturition. Heat production increased during pregnancy, but at a greater rate during the last 2 weeks. Until 2 to 3 weeks before parturition 2·5 to 2·75 kg of feed seemed to be adequate to meet the energy requirement of a pregnant sow of 180–200 kg live weight. During the last 2 weeks 3 kg was sufficient.

Litter size (number of lambs born per female lambing) of adult female Finnish Landrace and Tasmanian Merino sheep mated to males of either breed was 2·9 and 1·0 respectively. Breed of ram had a direct effect on the conception rate of the ewes to which they were mated—22% of ewes mated to Merino rams returned to oestrus but only 10% of those mated to Finn rams—but not on their litter size.

A comparison of the reproductive performance of crossbred females with that of purebred contemporaries indicated that there was very little or no heterosis for litter size, the crossbreds being almost exactly intermediate between the parents. The proportion of females showing oestrus during the mating period, however, was lower in the Merinos than in the Finns and crossbreds. This was particularly noticeable in females put to the ram at around 6 months of age. Whereas 35 of 36 Finnish Landrace females and 46 of 49 crossbreds showed oestrus, only one of the 20 Merinos did so. At about 6 months of age therefore the crossbred females showed heterosis in the incidence of oestrus.

Based on the potential benefits for long-term human health, there is interest in developing sustainable nutritional strategies for lowering medium-chain saturated fatty acids (FA) and increasing specific unsaturated FA in ruminant milk. Dietary supplements of extruded linseeds (EL), fish oil (FO) or a mixture of EL and FO increase cis-9,trans-11 CLA and long-chain n-3 polyunsaturated FA in bovine milk. Supplements of FO cause milk fat depression in lactating cows, but information for dairy goats is limited. A total of 14 Alpine goats were used in a replicated 3×3 Latin square with 28-days experimental periods to examine the effects of EL alone or in combination with FO on animal performance, milk fat synthesis and milk FA composition. Treatments comprised diets based on natural grassland hay supplemented with no additional oil (control), 530 of EL or 340 g/day of EL and 39 g/day of FO (ELFO). Compared with the control, ELFO tended (P=0.08) to lower milk fat yield, whereas EL increased (P<0.01) milk fat content and yield (15% and 10%, respectively). Relative to EL, ELFO decreased (P<0.01) milk fat content and yield (19% and 17%, respectively). Relative to the control and ELFO, EL decreased (P<0.05) milk 10:0 to 16:0 and odd- and branched-chain FA content and increased 18:0, cis-18:1, trans-13 18:1 (and their corresponding ∆-9 (desaturase products), trans-12,cis-14 CLA, cis-13,trans-15 CLA, cis-12,trans-14 CLA and trans-11,cis-13 CLA and 18:3n-3 concentrations. ELFO was more effective for enriching (P<0.05) milk cis-9, trans-11 CLA and trans-11 18:1 concentrations (up to 5.4- and 7.1-fold compared with the control) than EL (up to 1.7- and 2.5-fold increases). Furthermore, ELFO resulted in a substantial increase in milk trans-10 18:1 concentration (5.4% total FA), with considerable variation between individual animals. Relative to the control and EL, milk fat responses to ELFO were characterized by increases (P<0.05) in milk trans-16:1 (Δ9 to 11), trans-18:1 (Δ6 to 11), trans-18:2, CLA (cis-9,trans-11, trans-9,cis-11, trans-8,trans-10 and trans-7,trans-9) and 20- and 22-carbon FA concentrations. Overall, EL resulted in a relatively high cis-9 18:1 concentration and an increase in the 18:3n-3/18:2n-6 ratio, whereas combining EL and FO resulted in substantial increases in trans-FA, marginal enrichment in 20:5n-3 and 22:6n-3 and lower 16:0 concentration changes associated with a decrease in milk fat content. In conclusion, data provide further evidence of differential mammary lipogenic responses to diet in the goat compared with the cow and sheep.

Rubber seed oil (RO) that is rich in polyunsaturated fatty acids (FA) can improve milk production and milk FA profiles of dairy cows; however, the responses of digestion and ruminal fermentation to RO supplementation in vivo are still unknown. This experiment was conducted to investigate the effect of RO and flaxseed oil (FO) supplementation on nutrients digestibility, rumen fermentation parameters and rumen FA profile of dairy cows. Forty-eight mid-lactation Holstein dairy cows were randomly assigned to one of four treatments for 8 weeks, including basal diet (CON) or the basal dietary supplemented with 4% RO, 4% FO or 2% RO plus 2% FO on a DM basis. Compared with CON, dietary oil supplementation improved the total tract apparent digestibility of DM, neutral detergent fibre and ether extracts ( P < 0.05). Oil treatment groups had no effects on ruminal digesta pH value, ammonia N and microbial crude protein ( P > 0.05), whereas oil groups significantly changed the volatile fatty acid (VFA) profile by increasing the proportion of propionate whilst decreasing total VFA concentration, the proportion of acetate and the ratio of acetate to propionate ( P < 0.05). However, there were no differences in VFA proportions between the three oil groups (P > 0.05). In addition, dietary oil supplementation increased the total unsaturated FA proportion in the rumen by enhancing the proportion of trans-11 C18:1 vaccenic acid (VA), cis-9, trans-11 conjugated linoleic acid (CLA) and α-linolenic acid (ALA) ( P < 0.05). These results indicate that dietary supplementation with RO and FO could improve nutrients digestibility, ruminal fermentation and ruminal FA profile by enhancing the VA, cis-9, trans-11 CLA and ALA composition of lactating dairy cows. These findings provide a theoretical basis for the application of RO in livestock production.

Eight mature Dorset-cross sheep, each fitted with a permanent rumen cannula, were given a diet of chopped barley straw (plus urea and minerals) either with or without an Aspergillus oryzae (AO) fermentation extract (2 glday). The addition of AO fermentation extract to the diet increased the initial rate of straw degradation (P < 0·05) but did not alter the final extent of degradation. Total culturable bacteria increased with AO treatment but numbers of cellulolytic bacteria, ciliate protozoa, and aerobic fungi, were not significantly altered. Rumen pH, liquid clearance rate, total volatile fatty acids, acetate, propionate, butyrate, L-lactate and ammonia concentrations were also unaffected.

A quantitative trait loci (QTL) analysis of wool traits from experimental half-sib data of Merino sheep is presented. A total of 617 animals distributed in 10 families were genotyped for 36 microsatellite markers on four ovine chromosomes OAR1, OAR3, OAR4 and OAR11. The markers covering OAR3 and OAR11 were densely spaced, at an average distance of 2.8 and 1.2 cM, respectively. Body weight and wool traits were measured at first and second shearing. Analyses were conducted under three hypotheses: (i) a single QTL controlling a single trait (for multimarker regression models); (ii) two linked QTLs controlling a single trait (using maximum likelihood techniques) and (iii) a single QTL controlling more than one trait (also using maximum likelihood techniques). One QTL was identified for several wool traits on OAR1 (average curvature of fibre at first and second shearing, and clean wool yield measured at second shearing) and on OAR11 (weight and staple strength at first shearing, and coefficient of variation of fibre diameter at second shearing). In addition, one QTL was detected on OAR4 affecting weight measured at second shearing. The results of the single trait method and the two-QTL hypotheses showed an additional QTL segregating on OAR11 (for greasy fleece weight at first shearing and clean wool yield trait at second shearing). Pleiotropic QTLs (controlling more than one trait) were found on OAR1 (clean wool yield, average curvature of fibre, clean and greasy fleece weightand staple length, all measured at second shearing).

Omics research has indicated that heat shock protein 70 (HSP70) is a potential biomarker of meat quality. However, the specific changes and the potential role of HSP70 in postmortem meat quality development need to be further defined. In this study, Arbor Acres broiler chickens (n=126) were randomly categorized into three treatment groups of unstressed control (C), 0.5-h transport (T) and subsequent water shower spray following transport (T/W). Each treatment consisted of six replicates with seven birds each. The birds were transported according to a designed protocol. The pectoralis major (PM) muscles of the transport-stressed broilers were categorized as normal and pale, soft and exudative (PSE)-like muscle samples according to L* and pH24 h values to test the expression and location of HSP70. Results revealed that the activities of plasma creatine kinase and lactate dehydrogenase increased significantly (P<0.05) in normal and PSE-like muscle samples after transportation. The mRNA expression of HSP70 in normal muscle samples increased significantly (P<0.05) compared with that in the controls after stress. The protein expression of HSP70 increased significantly in normal muscle samples and decreased significantly (P<0.05) in PSE-like muscles. Immuno-fluorescence showed that HSP70 was present in the cytoplasm and on surface membranes of PM muscle cells in the normal samples following stress. Meanwhile, HSP70 was present on the surface membranes and extracellular matrix but was barely visible in the cytoplasm of the PSE-like samples. Principal component analysis showed high correlations between HSP70 and meat quality and stress indicators. In conclusion, this research suggests that the variation in HSP70 expression may provide a novel insight into the pathways underlying meat quality development.

The objective of this study was to evaluate the effects of three alternative (ALT) rearing systems for growing pigs (outdoor: 150 m2/pig; straw bedding: 1.30 m2/pig; and hut with access to a courtyard: 1.30 m2/pig) compared with a conventional system (fully slatted floor: 0.65 m2/pig, considered as control), on pre-slaughter stress indicators in relation with meat quality. To that end, the number of skin lesions on whole carcasses, as well as blood creatine kinase (CK) activity and urine levels in cortisol and catecholamines (adrenaline and noradrenaline) were determined at slaughter. Glycolytic potential (GP) and ultimate pH of the semimembranosus muscle were also measured. The global correlation network calculated between all these parameters shows that the indicators of pre-slaughter muscle activity (plasma CK) and/or stress indicators (e.g. adrenaline) are negatively (r = −0.26, P < 0.01; r = −0.29, P < 0.05, respectively) correlated with muscle GP and positively (r = 0.17, P < 0.05; r = 0.44, P < 0.001, respectively) with meat ultimate pH. Although some traits measured were sensitive to the degree of pre-slaughter mixing, they differed across rearing systems. The differences were most pronounced for the comparison of outdoors v. slatted floor. The lower levels of plasma CK and urinary catecholamines, and the lower number of carcass skin lesions of pigs reared outdoors, were related to a lower meat ultimate pH. Thus, ALT rearing systems influence animal welfare and meat quality, by providing enriched environmental conditions to the animals.

Four metabolism trials were conducted. Trials 1 and 2 (Tl, T2) investigated degree of saturation of fats (ratio of unsaturated to saturated fatty acids, U/S) on digestible energy (DE) content. Fats evaluated were rape oil (RO) and tallow (T) for Tl (U/S 15·67 and 0·97 respectively) and RO and palm oil (PO) for T2 (U/S 15·33 and 0·85 respectively). Three fats of intermediary U/S for each trial were produced by blending the two fats in proportions to give U/S of 3·18,2·08 and 1·49 in both trials. Trials 3 and 4 (T3, T4) investigated the effect of free fatty acid (FFA) content of fats on DE value. Fats were soya-bean oil (SO) and soya-bean acid oil (SAO) for T3 (FFA 6·2 and 626·0 g/kg respectively) and T and tallow acid oil (TAO) for T4 (FFA 44·3 and 818·2 g/kg fat respectively). Three fats of intermediary FFA for each trial were formed by blending the two fats in the ratios of 72:25, 50: 50 and 25: 75 in both trials. The FFA content of the blends were 161·2, 316·1 and 471·1 g/kg fat for T3 and 237·8, 431·3 and 624·7 g/kg fat for T4. All trials evaluated five fats by substitution, at 40, 80 and 120 g/kg into a basal diet, in a cross-over design, with 16 gilts of 25 kg initial live weight evaluating 16 diets over four time periods. Diets were offered for 10 days followed by a 5-day collection period using the marker to marker technique. Fat content of food and faeces, with methodology based on acid hydrolysis, allowed calculation of apparent digestible fat (AFD) of experimental diets. Analysis of variance gave effects of fats (P < 0·001 for Tl, T3 and T4 and P = 0·014 for T2), rates of inclusion (P < 0·001 for all trials), and fats × rates (P > 0·05, P > 0·05, P < 0·001, P < 0·01 for T1, T2, T3 and T4 respectively). Extrapolation of the function obtained by regressing AFD of diets (y) on rate of inclusion of fat (x) to × = 1000 generated values for the fats. The product of the coefficient of apparent fat digestibility of fats and their respective gross energies gave DE values for fats which were MJ/kg: T1 RO = 35·8 and T = 31·2; T2 RO = 36·7 and PO = 33·1; T3 SO = 374 and SAO = 32·8 and T4 T = 33·8 and TAO = 28·9. Data for fat blends intermediary between the two fats showed that DE improved exponentially as a function of U/S and that DE declined linearly with increasing FFA content.

The effects of hydrolyzed yeast supplementation on growth performance, health and immune-physiological parameters in neonatal calves challenged with vaccine were investigated. Twelve Holstein calves were started in the experiment at 2 ± 1 days of age and were studied for 35 days. Calves were randomly assigned to each of two dietary treatments, a control (CON) and hydrolyzed yeast (HY) group. The calves in the HY group received control calf starter supplemented with 0.2% HY. All calves were given calf starter ad libitum for 5 weeks starting in week 1. Calves were also given whole milk according to a step-down milking protocol. In order to induce immune responses, all calves were challenged with Hog cholera and Erysipelothrix insidiossa live vaccines by intramuscular injection at 3 weeks of age. Growth performance and feed intake were not affected by dietary treatment throughout the experimental period, except that the HY group had significantly higher (P < 0.05) milk intake than did the CON group at 3 weeks of age. Calves in the HY group showed significantly better (P < 0.05) fecal and health scores at 3 weeks compared to those in the control group. After vaccine challenge, neutropenia, lymphophilia and thrombocytopenia were observed in the CON group, but calves in the HY group did not show significant changes of leukocytes. The average concentration of serum haptoglobin in the HY group was significantly higher (P < 0.05) at 1 and 3 days post-vaccine challenge (DPVC) than that of CON group. Feeding HY supplemented calf starter resulted in a higher (P < 0.05) relative amount of bacterial and viral – specific IgA than in the CON group at 5 DPVC. Although the percentage of CD4+ T cells was significantly (P < 0.05) higher in the HY group than in the CON group at −2 DPVC, significant differences between groups after vaccine challenge was not observed during the experimental period. These results suggest that 0.2% HY supplementation in calf starter can improve the health status and immune-related serum protein production and affect blood cell composition in neonatal calves after vaccine challenge.

The overall reproductive performance has decreased over the last decades, involving changes in cyclicity, oestrous behaviour and fertility. High milk yield (MY), low body condition score (BCS) and large body condition (BC) loss have been identified as risk factors. However, these effects are often confounded, as high MY and body lipid reserve mobilization are correlated. The aim of this study was to evaluate the respective effects of MY and BC on post-partum ovarian cyclicity, oestrus and fertility of Holstein cows. This study provides novel information, as MY and BC change were uncoupled in the overall dataset that included 98 lactations and milk progesterone profiles. Cows were assigned to two feeding-level groups: high feed, which achieved high MY and moderate BC loss throughout lactation (8410 kg, −1.17 unit from calving to nadir BCS), and low feed, which limited MY and triggered a large BC loss (5719 kg, −1.54 unit). MY and BC had different effects at different stages of the reproductive process. Cyclicity as well as non-fertilization and early embryo mortality were mainly driven by body lipid reserves, whereas oestrous behaviour and late embryo mortality were related to MY. The results point to possible uncoupling between cyclicity, oestrus and early and late embryo survival allowing compensation along the reproductive process and leading to similar final reproductive performance. In compact calving systems, which require high pregnancy rates within a short period, higher MY strategies appear unsuitable even where BCS is maintained, owing to depressed oestrous behaviour and probably increased late embryo mortality, which delays rebreeding. Similarly, strategies that compromise cyclicity and fertility by excessively low BCS are unsuitable.

In order to optimize the use of genomic selection in breeding plans, it is essential to have reliable estimates of the genomic breeding values. This study investigated reliabilities of direct genomic values (DGVs) in the Jersey population estimated by three different methods. The validation methods were (i) fivefold cross-validation and (ii) validation on the most recent 3 years of bulls. The reliability of DGV was assessed using squared correlations between DGV and deregressed proofs (DRPs). In the recent 3-year validation model, estimated reliabilities were also used to assess the reliabilities of DGV. The data set consisted of 1003 Danish Jersey bulls with conventional estimated breeding values (EBVs) for 14 different traits included in the Nordic selection index. The bulls were genotyped for Single-nucleotide polymorphism (SNP) markers using the Illumina 54 K chip. A Bayesian method was used to estimate the SNP marker effects. The corrected squared correlations between DGV and DRP were on average across all traits 0.04 higher than the squared correlation between DRP and the pedigree index. This shows that there is a gain in accuracy due to incorporation of marker information compared with parent index pre-selection only. Averaged across traits, the estimates of reliability of DGVs ranged from 0.20 for validation on the most recent 3 years of bulls and up to 0.42 for expected reliabilities. Reliabilities from the cross-validation were on average 0.24. For the individual traits, the reliability varied from 0.12 (direct birth) to 0.39 (milk). Bulls whose sires were included in the reference group had an average reliability of 0.25, whereas the bulls whose sires were not included in the reference group had an average reliability that was 0.05 lower.

Forty-five local Omani ram, wether and ewe lambs were reared from birth until slaughter at 18, 28 or 38 kg live weight (five of each ‘sex’ at each weight group) on an ad libitum concentrate diet and Rhodesgrass hay.

Ram lambs grew faster from birth and reached predetermined slaughter weights earlier than wether and ewe lambs. At 28 kg live weight, ram lambs had: heavier heads, feet, reticulo-rumens and livers; higher muscle and bone and lower fat proportions in the carcass; lower muscle: bone and higher muscle: fat ratios; higher proportions of carcass but lower non-carcass fat than had wether and ewe lambs. The head, feet, alimentary tract, liver and heart of Omani sheep grew at a lower rate; the skin grew at a similar rate and the carcass grew at a rate faster than empty body weight (EBW). Relative to EBW, muscle grew at a similar rate, fat faster and bone slower. Both carcass and non-carcass fats grew at a rate higher than that of the growth of EBW, with non-carcass fat growing at a higher rate than that of carcass fat. The growth rate of omental fat was the fastest followed by kidney, mesenteric, subcutaneous, tail, scrotal, intermuscular and pelvic fats respectively.

This study demonstrated that Omani sheep have good potential for growth if they are managed and fed satisfactorily. Omani sheep are early maturing for which reason it is recommended that they be slaughtered at lighter weights to avoid higher fat content in the carcass. Castration in Omani sheep is not recommended for production of meat lambs under intensive systems as it resulted in reduced growth rates and deposition of excess fat at lower slaughter weights.

Prebiotics are suggested as an alternative to antibiotics in animal rearing. Fermentable substances such as inulin or lactulose have been proposed to stimulate the immune system and health by modulation of the intestinal flora and its fermentation products. In this study, effects of inulin and lactulose on the intestinal health and hematology of calves have been investigated. Both prebiotics significantly decreased thrombocyte counts in peripheral blood. Only inulin was able to increase hemoglobin concentration and hematocrit. Total leukocyte count was decreased by lactulose while both prebiotics tended to lower monocyte proportions. mRNA expression of inflammation-related markers in the intestine was also affected by both prebiotics hinting at a decreased inflammatory status. This may be due to a possible decrease in intestinal pathogen load that remains to be verified. Only mRNA amounts of interleukin 8 were increased by lactulose in mesenteric lymph nodes. In the ileum, expression of a proliferation marker was increased by inulin while an apoptosis-related gene was increased by both prebiotics. The results of this study show a clear effect of prebiotics on certain parameters associated with animal health and performance that remain to be studied in detail in future investigations.

This study investigated the effects of, and interactions between, dietary grain source and marginal changes in alfalfa hay (AH) particle size (PS) on digestive processes of dairy cows. A total of eight Holstein dairy cows (175 days in milk) were allocated in a replicated 4 × 4 Latin square design with four 21-day periods. The experiment was a 2 × 2 factorial arrangement with two levels of theoretical PS of AH (fine = 15 mm or long = 30 mm) each combined with two different sources of cereal grains (barley grain alone or barley plus corn grain in a 50 : 50 ratio). Results showed that cows consuming diets supplemented with corn had greater dry matter and nutrient intakes (P < 0.01), independent of forage PS. In addition, the apparent digestibility of fiber fractions was greater for diets supplemented with corn (P = 0.01). The feeding of barley grain-based diets was associated with greater apparent digestibility of non-fiber carbohydrates, and this variable was even greater when long AH was fed (P = 0.04). Moreover, the feeding of long AH resulted in longer time spent eating (P = 0.03) and higher pH (P < 0.01), as well as a tendency for higher acetate-to-propionate ratio in the rumen fluid (P = 0.06) at 3 h post feeding. In conclusion, the results indicated that the marginal increase of PS of AH may prolong eating time and improve rumen fermentation, particularly in diets based on barley grain. Partial substitution of barley grain by corn can improve feed intake and fiber digestibility in mid-lactation dairy cows.

A selection experiment was established in Coopworth sheep in 1981 to breed for increased or reduced ultrasonic backfat depth (scan C). Foundation females came from four flocks recorded for scan C and live weight, with weight-adjusted scan C data within flock being used for initial screening and subsequent selection. Three groups of animals per source flock, comprising proportionally the fattest 0·12, a random sample, and the leanest 0·12, were used to establish the F, control and L lines, respectively. Ewe flock numbers from 1981 to 1992 averaged 51 per line. Foundation rams were selected in the same manner from four different farms (two sources each in 1981 and 1982) to provide F line (proportionally the fattest 0·04), control line and L line (leanest 0·04) rams for use in 1981 and 1982, with four mated per line per year. Thereafter homebred rams were selected, with 41 or 42 homebred rams being used per line until 1992. Average generation intervals were 2·13 years and annual inbreeding rates per line 0·004. Bivariate heritability estimates for log scan C and log live weight, and a univariate estimate for log scan C using restricted maximum likelihood with an animal model, were 0·28, 0·22 and 0·38, respectively (all with s.e. 0·03). There was a suggestion of lower heritabilities in the L line for log scan C after adjustment for live weight. Realized heritabilities in the F and L lines were 0·34 (s.e. 0·07) and 0·26 (s.e. 0·03), respectively. Deviations of back-transformed weight-adjusted scan C in the last 2 years ofF and L data analysed (1991 and 1992 birth years) from the control flocks were 2·08 and −0·85 mm, which corresponded to responses of +2·50 and −1·03 phenotypic standard deviations, respectively. In addition there were relatively large responses in live weight taken at scanning, with F and L lines averaging 34·0 and 40·2 kg, compared with 38·0 kg for controls in the 1991 and 1992 birth years. The genetic and phenotypic correlations between log scan C and log live weight at scanning were 0·16 (s.e. 0·07) and 0·46 (s.e. 0·01) respectively.

A portable EEL reflectometer was modified to measure the variations in the brightness of pig meat. The instrument was calibrated spectrophotometrically with reference to the luminous reflectance of standardized materials and selected meat samples. A very satisfactory level of agreement between the instrument and the visual assessment of muscle paleness was found in an investigation involving 251 pigs.

Fat thickness and measurements of the m. longissimus (‘eye’ muscle) were taken at the last rib in 350 lambs' carcasses which were fully dissected. The lambs were from two ewe breeds, Clun and Colbred, and two ram breeds, Suffolk and Hampshire, and the carcass weight range was 15 to 21kg. Castrated males and females, and singles and twins, were evenly represented.

Rib fat thickness (J) was a slightly more precise predictor of the weights of lean, subcutaneous fat and subcutaneous plus intermuscular fat, when used in a multiple regression equation along with carcass weight, than fat thickness directly above the greatest depth of the ‘eye’ muscle (C). Both of these were more precise predictors than ‘eye’ muscle width and depth. Accounting for breed, either by allowing for different intercepts or completely different regression lines, did increase the proportion of variation in tissue weights explained by carcass weight and J or C, but to a small and, it was considered, commercially unimportant extent. This was despite differences in conformation between the breeds, reflected in this work by smaller ‘eye’ muscles in the ewe than the ram breeds and also in maturity, which might have been expected to influence tissue, including fat, distribution.

The results indicate that breed differences in partition and distribution within and between the carcass fat depots in sheep are smaller than those between the carcass and intra-abdominal fat depots.

Voluntary food intake and body weight were examined over 4-week intervals between 14 and 70 weeks of age in 306 females from 25 British breeds of cattle. At each age, the relationship of the natural logarithm of voluntary food intake to that of body weight was examined by linear regression both within and between breeds.

Of the total variation in voluntary food intake, the proportion accounted for by body weight was extremely high between breeds (phenotypically, 0·80 or more; genetically 0·88 or more, at most ages) but phenotypically low within breeds (0·33 or less). The mean voluntary intake of a breed at any age could be predicted from its mean body weight at the same age with a coefficient of variation (CV) among breeds that declined with age from 0·08 to 0·04. Within breeds, the corresponding CV for individual intake was between 0·12 and 0·15 beyond 9 months of age, and even higher at early ages.

Within breeds, the regression coefficient of log intake on log body weight was close to the value of 0·7 at all ages. Between breeds, it was over 0·8 at early ages, declining to about 0·7 beyond 1 year of age. Thus, genetically larger breeds voluntarily consumed relatively more food at early ages compared with later ages. Breed size should therefore be taken into account when recommending food intake requirements. Breed deviations for high and low appetite are discussed.
