The effective degradability (Dg) of dry matter (DM), nitrogen (N) and amino acids (AA) in soya-bean meal (SBM), fish meal (FM), dried brewers' grains (DBG) and ensiled lucerne (EL) was measured using polyester bags suspended in the rumens of six cows given a basal diet of maize silage, hay and concentrate. Rumen outflow rate was measured using chromium-mordanted SBM.

AA were grouped into essential (EAA), non-essential (NEAA) or branched chain (BrAA). The AA concentration in DM varied from 88 g/kg DM for EL to 566 g/kg for FM. The proportion of determined AA in crude protein (CP) was similar for SBM, FM and DBG and always higher than 0·85. EL had the lowest A A concentration in CP, partly due to the presence of ammonia N (170 g/kg total N).

Methionine always had a higher, and threonine a lower Dg than total AA in all foods. Dg of other AA was generally food dependent.

SBM always had the highest EAA, BrAA, NEAA, mean AA and total N degradability, whilst FM always had the lowest Dg for EAA, BrAA, mean AA and total N, and these values were significantly different in comparison with SBM. The effective Dg of BrAA in DBG was significantly lower than in SBM and significantly higher than in FM. In EL, NEAA and mean AA Dg were significantly lower compared with SBM.

Effective Dg of total AA in SBM and EL was significantly lower than the CP Dg; this difference was not apparent in DBG or FM.

The undegraded fraction of FM and EL had a significantly higher proportion of EAA whilst DBG and EL had a higher proportion of BrAA when compared with the unexposed food. Isoleucine concentration, highest in EL, and lysine and methionine contents, highest in FM, differed significantly between the four protein source residues.

The first limiting AA after rumen incubation, in relation to casein and meat, was always methionine. The essential amino acid index of the food residues post incubation, relative to casein and meat, was lower in SBM, DBG and EL but higher in FM.

Two trials were conducted using two breeds of sheep varying in prolificacy but producing high commercial milk yields. In the first, 85 Chios ewes were assigned at 10 weeks before lambing to one of three planes of feeding: L, straw ad libitum; M, straw ad libitum + 0·5 kg concentrates; and H, straw ad libitum +1·0 kg concentrates. Six weeks prior to lambing, treatment L was stopped and all 85 ewes were re-randomized to treatments M and H. They were kept on these treatments until 14 days after lambing. In the second trial, 54 Chios and 56 Awassi ewes were allocated to the M and H treatments 6 weeks prior to lambing. After lambing they were fed ad libitum on straw and concentrates for 28 days.

The mean metabolizable energy intake (Meal/day) over the 6-week period before lambing was 2·78 and 3·96 for Chios ewes in Trial 1, 2·39 and 3·51 for Chios ewes in Trial 2 and 2·66 and 3·72 for Awassi ewes in Trial 2, for the M and H treatments respectively.

In both trials the treatment of the ewes affected the birth v/eight of twin and triplet lambs but not that of singles. In Trial 1, the differences in 14-day milk yield between treatments M and H were highly significant. In Trial 2, however, in which the ewes were fed ad libitum during lactation, no differences in the 14-day or the 28-day milk yields were observed for either breed. It is concluded that milk yields in early lactation are closely related to actual plane of nutrition in lactation but may also be affected by the body condition of the ewe at lambing, which may in turn be influenced by a low level of feeding in pregnancy.

Abstract Acute phase proteins (APP) are released into the circulation in mammals upon infection and may be used to diagnose the health status of managed populations of animals such as pigs. The current study determines APP levels in a population of apparently healthy Large White pigs from a single farm, to address two questions: (1) whether phenotypic associations can be observed between productivity and APP, indicating the effects of possible subclinical infections and (2) whether previous selection for either food intake or ‘lean growth under restricted feeding’ influences APP levels. The APP investigated were alpha1- acid glycoprotein (AGP) and haptoglobin. The APP were measured at 18 and 24 weeks of age in pigs previously selected for high lean growth (no. = 31), low lean growth (no. = 38), high daily food intake (no. = 24) and low daily food intake (no. = 26), but performing under ad libitum feeding conditions. Performance traits and APP levels were constant over the experimental period, indicating that the farm health status did not vary over time. Performance traits and APP were recorded on 119 pigs, of which 80 had both APP and performance measurements. Multiple regression analyses were used to investigate phenotypic relationships between performance traits and APP levels. Plasma concentrations of AGP were higher in 18-week-old pigs compared with 24-week-old pigs (P < 0·01) whereas haptoglobin levels did not vary according to age. Significant sex differences in APP levels were observed. Females had higher circulating levels of AGP than males at both 18 weeks and 24 weeks. Females also had higher levels of haptoglobin at 18 weeks. Levels of AGP had significant negative correlations with daily weight gain (−0·59, P < 0·01 and −0·48, P < 0·05 at 18 and 24 weeks respectively) and with daily food intake (−0·53, P < 0·01 and −0·38, P < 0·05 at 18 and 24 weeks respectively). At age 24 weeks, haptoglobin was negatively correlated with both daily weight gain (−0·35, P < 0·05) and food efficiency (−0·34, P < 0·05). Pigs selected for high lean growth under restricted feeding had higher AGP levels than pigs selected for low lean growth under restricted feeding at 18 (593 v. 332 μg/ml, P < 0·01) and 24 weeks of age (313 v. 219 μg/ml, P < 0·05). Selection for daily food intake did not consistently affect AGP levels, and neither selection criteria influenced plasma haptoglobin concentrations. To conclude, we have demonstrated that amongst contemporaneous pigs of the same genotype, higher systemic AGP levels and, to a lesser extent, higher haptoglobin levels are associated with decreased performance, and that genetic selection for ‘efficient lean growth under restricted feeding’ can increase serum AGP levels.

The surgical castration of male chickens induces hormonal changes, which permanently influence metabolic processes in birds. The aim of this study was to determine the effect of age and castration on the growth rate, feed conversion, lipid profile and histopathological changes in the livers of cockerels and capons. The experimental materials comprised male chickens of the Green-legged Partridge breed (old traditional Polish chicken breed), raised to 28 weeks of age. At 8 weeks of age, 100 birds were castrated. Caponization had a significant effect on the plasma concentrations of total cholesterol, high-density lipoprotein cholesterol, low-density lipoprotein cholesterol and triacylglycerols (P<0.05). Fatty degeneration and lymphoid cell infiltration were observed more frequently in the livers of capons than cockerels. Capon carcasses were characterized by increased deposition of abdominal and subcutaneous fat (P<0.05). Total meat weight in the carcasses of cockerels and capons was similar, but the proportions of muscles were different. From 20 weeks of age, the weight of breast muscles was higher, and the weight of leg muscles was lower in capons than in cockerels (P<0.05). Capons were characterized by higher liver weight, higher gizzard weight and lower heart weight than cockerels (P<0.05). The feed conversion ratio (kg/kg BW) was similar in intact cockerels and capons. The values of carcass quality parameters and feed conversion ratio as well as histopathological changes in the liver indicate that Green-legged Partridge capons should be slaughtered at 20 to 24 weeks of age.

The objective of this study was to quantify the genetic associations between a range of carcass-related traits including wholesale cut weights predicted from video image analysis (VIA) technology, and a range of pre-slaughter performance traits in commercial Irish cattle. Predicted carcass cut weights comprised of cut weights based on retail value: lower value cuts (LVC), medium value cuts (MVC), high value cuts (HVC) and very high value cuts (VHVC), as well as total meat, fat and bone weights. Four main sources of data were used in the genetic analyses: price data of live animals collected from livestock auctions, live-weight data and linear type collected from both commercial and pedigree farms as well as from livestock auctions and weanling quality recorded on-farm. Heritability of carcass cut weights ranged from 0.21 to 0.39. Genetic correlations between the cut traits and the other performance traits were estimated using a series of bivariate sire linear mixed models where carcass cut weights were phenotypically adjusted to a constant carcass weight. Strongest positive genetic correlations were obtained between predicted carcass cut weights and carcass value (min rg(MVC) = 0.35; max rg(VHVC) = 0.69), and animal price at both weaning (min rg(MVC) = 0.37; max rg(VHVC) = 0.66) and post weaning (min rg(MVC) = 0.50; max rg(VHVC) = 0.67). Moderate genetic correlations were obtained between carcass cut weights and calf price (min rg(HVC) = 0.34; max rg(LVC) = 0.45), weanling quality (min rg(MVC) = 0.12; max rg(VHVC) = 0.49), linear scores for muscularity at both weaning (hindquarter development: min rg(MVC) = −0.06; max rg(VHVC) = 0.46), post weaning (hindquarter development: min rg(MVC) = 0.23; max rg(VHVC) = 0.44). The genetic correlations between total meat weight were consistent with those observed with the predicted wholesale cut weights. Total fat and total bone weights were generally negatively correlated with carcass value, auction prices and weanling quality. Total bone weight was, however, positively correlated with skeletal scores at weaning and post weaning. These results indicate that some traits collected early in life are moderate-to-strongly correlated with carcass cut weights predicted from VIA technology. This information can be used to improve the accuracy of selection for carcass cut weights in national genetic evaluations.

There is a large demand for holistic welfare assessment systems that result in a singular balanced summary of welfare. The Welfare Quality® (WQ) broiler protocol summarizes 18 welfare measures into four principles (‘good feeding’, ‘good housing’, ‘good health’ and ‘appropriate behaviour’), which are then integrated into one overall category (‘excellent’, ‘enhanced’, ‘acceptable’ or ‘not classified’). But the protocol is time consuming which hampers implementation. Furthermore, WQ’s aim to assess animal welfare in a wide range of husbandry systems may decrease its ability to discriminate between flocks from the same system. We applied the protocol in the context of intensive indoor rearing to assess whether it discriminated sufficiently between flocks, could be shortened without losing essential information, and provided a balanced summary of welfare. The vast majority of the flocks (88%) received the same overall classification (acceptable) whilst all other flocks received an adjacent classification (enhanced), suggesting poor discriminative capacity. For 95% of the flocks overall classification was explained by two measures only (‘drinker space’ and ‘stocking density’). A system based on these two measures would reduce assessment time from 3.5 h to a few minutes. However, both measures’ validity can be questioned as they are risk factors for poor welfare rather than animal-based outcome measures and they suffer from methodological weaknesses. Furthermore, the possibility for such an extreme simplification raises doubts on whether the overall classification reflects a balanced summary of different welfare aspects. In line with this, overall classification was not affected by replacing single measures within the ‘good health’ and ‘appropriate behaviour’ principles with realistically attainable minima or maxima for intensively reared flocks. Even replacing either of these two principles entirely with their realistically obtainable minimum or maximum did not affect classification. Such insensitivity to change may discourage attempts to improve the welfare of intensively reared flocks when assessments are made based on the overall classification. This calls for an adjustment of the classification system, which is currently being developed by the Welfare Quality Network.

The lipid content and fatty acid (FA) profile in pig tissues are strongly influenced by genotype and nutrient supply, with implications in meat quality. The de novo lipid synthesis and pattern of FA unsaturation could be an important cause of variation in the overall efficiency of energy utilization among breeds. To test the effects of pig genotype and CP supply on the evolution of back-fat tissue FA profile throughout the growing and finishing stages, 32 Iberian (IB) and Landrace × Large White (LR × LW) barrows were offered one of two diets differing in CP content (13% or 17% as fed). A pair-fed procedure (0.8 × ad libitum intake of IB pigs) was used. Subcutaneous fat samples were taken at the dorso-lumbar region at ∼38, 50, 65, 90 and 115 kg BW. Higher proportions of total monounsaturated FA (MUFA; P < 0.01) and lower proportions of total saturated FA (SFA; P < 0.01 to 0.05) were found in the outer back-fat layer of pigs both at 50 and 115 kg BW. Pig genotype affected the FA composition of both subcutaneous back-fat layers. The proportions of C18:0 and SFA in fat tissue were higher in IB than in LR × LW pigs from 38 to 65 kg BW, especially in the outer layer. In addition, MUFA contents were higher in IB pigs at 115 kg BW in both layers (+5% on average; P < 0.01). Increased proportions of C18:2 n-6 and polyunsaturated FA (PUFA) were found in LR × LW pigs, irrespective of the stage of growth and back-fat layer (P⩽0.02). At 50 kg BW, pigs receiving the high-protein diet presented the highest C18:2 n-6, C18:3 n-3, C20:5 n-3 and PUFA contents. A significant genotype × CP content interaction was observed for C18:3 n-3 because of the increased concentration of this FA in LR × LW pigs when offered the 17% CP diet (P < 0.05). Higher C16:0 and SFA contents (+5%; P = 0.03) were found in pigs offered the 13% CP diet and slaughtered at 115 kg BW. There was a genotype × CP interaction for MUFA concentration because of the higher MUFA content observed in IB pigs offered the highest protein content diet (P = 0.03). Our results suggest that genetic variation in de novo lipid synthesis and pattern of FA unsaturation might contribute to explain differences in back-fat FA profile of IB and LR × LW pigs under identical nutritional management. They could be also relevant to explain the low efficiency of nutrient and energy utilization in the IB pig.

The effects of soluble fiber inclusion in gestation diets with varying fermentation characteristics (fermentation kinetics and short-chain fatty acids (SCFA)-profile) on lactational feed intake of sows and their piglet growth over two parities were investigated using an in vitro–in vivo methodology. After breeding, 90 multiparous Landrace sows were randomized to one of three experimental diets: the control (CON) diet, konjac flour (KF) diet or sugar beet pulp (SBP) diet. All diets had similar levels of net energy, CP, insoluble fiber and NDF, but KF and SBP diets had higher soluble fiber levels than the CON diet. During gestation, the sows were restrictively fed with three different diets, but during lactation, all the sows were similarly fed ad libitum. The three gestation diets were enzymatically hydrolyzed using pepsin and pancreatin, and enzymolyzed residues were used in in vitro fermentation. Gas and SCFA production were monitored during fermentation. After fermentation, enzymolyzed residues of KF or SBP diets resulted in higher final asymptotic gas volume than those of the CON diet. The enzymolyzed residues of KF diet were mainly part of rapidly fermented fractions, whereas those of SBP diet were mainly part of slowly fermented fractions. In addition, the acetic acid, butyric acid and total SCFA concentrations of enzymolyzed residues of KF diet were higher (P<0.01) than the control and SBP diets. In the in vivo studies, on day 90 of gestation, the KF diet sows had higher plasma SCFA concentration (P<0.05) at 4 h after feeding than the CON diet sows. Furthermore, the KF diet sows had lower plasma free fatty acid (FFA) concentration (P<0.01) at 4 h after feeding, and a lower value of homeostasis model assessment (HOMA)-insulin resistance (P<0.05), but a higher value of HOMA-insulin sensitivity (P<0.01). The KF diet sows also consumed more feed during lactation (P<0.01) and weaned significantly heavier pigs (P<0.01) than the CON diet sows. The overall results showed that the high fermentation capacity KF diet contributed to an increased lactational feed intake and improved performance of piglets in the second reproductive cycle.

Soybean meal is rich in soybean isoflavones, which exhibit antioxidant, anti-inflammatory, antiviral and anticancer functions in humans and animals. This study was conducted to investigate the effects of soybean isoflavones on the growth performance, intestinal morphology and antioxidative properties in pigs. A total of 72 weaned piglets (7.45 ± 0.13 kg; 36 males and 36 females) were allocated into three treatments and fed corn-soybean meal (C-SBM), corn-soy protein concentrate (C-SPC) or C-SPC supplemented with equal levels of the isoflavones found in the C-SBM diet (C-SPC + ISF) for a 72-day trial. Each treatment had six replicates and four piglets per replicate, half male and half female. On day 42, one male pig from each replicate was selected and euthanized to collect intestinal samples. The results showed that compared to pigs fed the C-SPC diet, pigs fed the C-SBM and C-SPC + ISF diets had higher BW on day 72 (P < 0.05); pigs fed the C-SBM diet had significantly higher average daily gain (ADG) during days 14 to 28 (P < 0.05), with C-SPC + ISF being intermediate; pigs fed the C-SBM diet tended to have higher ADG during days 42 to 72 (P = 0.063), while pigs fed the C-SPC + ISF diet had significantly higher ADG during days 42 to 72 (P < 0.05). Moreover, compared to pigs fed the C-SPC diet, pigs fed the C-SBM diet tended to have greater villus height (P = 0.092), while pigs fed the C-SPC + ISF diet had significantly greater villus height (P < 0.05); pigs fed the C-SBM and C-SPC + ISF diets had significantly increased villus height-to-crypt depth ratio (P < 0.05). Compared with the C-SPC diet, dietary C-SPC + ISF tended to increase plasma superoxide dismutase activity on days 28 (P = 0.085) and 42 (P = 0.075) and reduce plasma malondialdehyde (MDA) content on day 42 (P = 0.089), as well as significantly decreased jejunal mucosa MDA content on day 42 (P < 0.05). However, no significant difference in the expression of tight junction genes among the three groups was found (P > 0.05). In conclusion, our results suggest that a long-term exposure to soybean isoflavones enhances the growth performance, protects the intestinal morphology and improves the antioxidative properties in pigs.

The Meat Standards Australia (MSA) grading scheme has the ability to predict beef eating quality for each ‘cut×cooking method combination’ from animal and carcass traits such as sex, age, breed, marbling, hot carcass weight and fatness, ageing time, etc. Following MSA testing protocols, a total of 22 different muscles, cooked by four different cooking methods and to three different degrees of doneness, were tasted by over 19 000 consumers from Northern Ireland, Poland, Ireland, France and Australia. Consumers scored the sensory characteristics (tenderness, flavor liking, juiciness and overall liking) and then allocated samples to one of four quality grades: unsatisfactory, good-every-day, better-than-every-day and premium. We observed that 26% of the beef was unsatisfactory. As previously reported, 68% of samples were allocated to the correct quality grades using the MSA grading scheme. Furthermore, only 7% of the beef unsatisfactory to consumers was misclassified as acceptable. Overall, we concluded that an MSA-like grading scheme could be used to predict beef eating quality and hence underpin commercial brands or labels in a number of European countries, and possibly the whole of Europe. In addition, such an eating quality guarantee system may allow the implementation of an MSA genetic index to improve eating quality through genetics as well as through management. Finally, such an eating quality guarantee system is likely to generate economic benefits to be shared along the beef supply chain from farmers to retailors, as consumers are willing to pay more for a better quality product.

We determined whether plant diversity and sequence of plant ingestion affected foraging when cattle chose from plants that varied in concentrations of alkaloids, tannins and saponins. We hypothesized cattle that ate high-alkaloid grasses (endophyte-infected tall fescue (TF) or reed canarygrass (RCG)) would prefer forages high in tannins (birdsfoot trefoil, BFT+) or saponins (alfalfa, ALF+), because tannins and saponins can bind to alkaloids, presumably reducing their absorption. We further hypothesized that forages with tannins or saponins consumed before, rather than after, foraging on high-alkaloid grasses would promote greater use of those grasses presumably by binding to alkaloids, thereby reducing their absorption. In Phase 1, cattle (n = 32) grazed on either high (+) or low (−) alkaloid grass (TF or RCG) pastures for 30 min each morning at 0600 h and were then offered a choice of BFT+, BFT−, ALF+ and ALF− for 60 min each day for 12 days. In Phase 2, cattle (n = 32) were first offered a choice of BFT+ or ALF+ for 30 min at 0600 h and then placed on grass (TF+ or −, or RCG+ or −) pastures for 60 min for 12 days. In both phases, we had four spatial replications of four treatments with 2 per calves assigned to each of the 16 replications per treatment combinations. Scan samples of individuals at 2-min intervals were used to determine incidence of foraging on each plant species (%). Cattle grazed more on RCG than on TF in Phases 1 (62% v. 27%; P = 0.0015) and 2 (71% v. 32%; P = 0.0005). In Phase 1, cattle that first foraged on RCG+ or TF− subsequently preferred ALF over BFT, whereas cattle offered RCG− or TF+ foraged on ALF and BFT equally. Foraging by cattle on RCG was cyclic during Phase 1, whereas cattle foraging on TF markedly decreased incidence of use of TF from 41% to only 16% by the end of the 12-day trial (P = 0.0029). Contrary to the cyclic (RCG) or steadily declining (TF) use of grasses in Phase 1, cattle steadily and dramatically increased foraging on both RCG and TF throughout Phase 2, when they first grazed BFT+ or ALF+ followed by high-alkaloid grasses (P = 0.0159). Our findings suggest that in plant species the sequence of ingestion influenced foraging behavior of cattle and that secondary compounds influenced those responses.

The aim was to evaluate the effect of heat-treatment, microbial phytase addition and feeding strategy (dry feeding v. fermented liquid feeding) on degradation of phytate (myo-inositol hexakisphosphate, InsP6) and formation and further degradation of lower inositol phosphates (myo-inositol pentakisphosphate–myo-inositol bisphosphate, InsP5–InsP2) at the distal ileum of pigs. Furthermore, the apparent ileal digestibility/degradability (AID) of phosphorus (P), InsP6–P and calcium (Ca) and the apparent total tract digestibility (ATTD) of P and Ca were studied. Pigs were fitted with a T-shaped ileal cannula for total collection of digesta at 2 h intervals during an 8 h sampling period after feeding the morning meal. Each period lasted for 2 weeks: 8 days of adaptation followed by 3 days of total collection of faeces and 3 days of total collection of ileal digesta. The experiment was designed as a 4 × 4 Latin square with four pigs fed four diets. A basal wheat/barley-based diet was fed either as non-heat-treated or heat-treated (steam-pelleted at 90°C). The heat-treatment resulted in an inactivation of plant phytase below detectable level. Diet 1 (non-heat-treated basal diet fed dry); diet 2 (heat-treated basal diet fed dry); diet 3 (as diet 2 but with microbial phytase (750 FTU/kg as fed) fed dry); diet 4 (as diet 3 fed liquid (fermented for 17.5 h nighttime and 6.5 h daytime at 20°C with 50% residue in the tank)). Chromic oxide (Cr2O3) was included as marker and ATTD was determined both by total collection of faeces (ATTDTotal) and Cr2O3 (ATTDCr). InsP6 was completely degraded in diet 4 before feeding resulting in no InsP6–P being present in ileal digesta. InsP6–P concentration in ileal digesta decreased with increasing dietary levels of plant or microbial phytase in pigs fed the dry diets. Consequently, AID and ATTD of P and Ca were greatest for pigs fed diet 4 followed by diets 3, 1 and 2. The ATTD of P depended on the used method as ATTDTotal of P was 72%, 61%, 44% and 34%, whereas ATTDCr of P was 65%, 52%, 38% and 23% for diets 4, 3, 1 and 2, respectively. In all pigs the ileal concentration of InsP5–InsP2–P was extremely small, and thus unimportant for maximisation of ATTD of plant P. In conclusion, fermented liquid feeding with microbial phytase seems to be an efficient approach to improve ATTD of plant P compared with dry feeding. This opens up for further reductions in P excretion.

The relative contribution of ruminal short-chain fatty acid (SCFA) absorption and salivary buffering to pH regulation could potentially change under different dietary conditions. Therefore, the objective of this study was to investigate the effects of altering the ruminal supply of rapidly fermentable carbohydrate (CHO) on absorptive function and salivation in beef cattle. Eight heifers (mean BW±SD=410±14 kg) were randomly allocated to two treatments in a crossover design with 37-day periods. Dietary treatments were barley silage at 30% low forage (LF) or 70% high forage (HF) of dietary dry matter (DM), with the remainder of the diet consisting of barley grain (65% or 25% on a DM basis) and a constant level (5%) of supplement. The LF and HF diets contained 45.3% and 30.9% starch, and 4.1% and 14.0% physically effective fiber (DM basis), respectively. Ruminal pH was continuously measured from day 17 to day 23, whereas ruminal fluid was collected on day 23 to determine SCFA concentration. Ruminal liquid passage rate was determined on day 23 using Cr-ethylenediaminetetraacetic acid. Eating or resting salivation was measured by collecting masticate (days 28 and 29) or saliva samples (days 30 and 31) at the cardia, respectively. On days 30 and 31, the temporarily isolated and washed reticulo-rumen technique was used to measure total, and Cl−-competitive (an indirect measure of protein-mediated transport) absorption of acetate, propionate and butyrate. As a result of the higher dietary starch content and DM intake, the ruminal supply of rapidly fermentable CHO, total ruminal SCFA concentration (118 v. 95 mM; P<0.001) and osmolality (330 v. 306 mOsm/kg; P=0.018) were greater in cattle fed LF compared with HF. In addition, feeding LF resulted in a longer duration (2.50 v. 0.09 h/day; P=0.02) and a larger area (0.44 v. 0.01 (pH×h)/day; P=0.050) that pH was below 5.5. There was no diet effect on total and Cl−-competitive absorption (mmol/h and %/h) of acetate, propionate, butyrate and total SCFA (acetate+propionate+butyrate), but eating salivation was less (131 v. 152 ml/min; P=0.02), and resting salivation tended to be less (87 v. 104 ml/min; P=0.10) in cattle fed an LF diet. In summary, lower ruminal pH in cattle with greater rapidly fermentable CHO intake was attributed to an increase in SCFA production and decrease in salivation, which were not compensated for by an increase in epithelial permeability.

Commercially farmed animals are frequently housed in conditions that impose a number of concurrent environmental stressors. For pigs housed indoors, elevated levels of mechanical noise, atmospheric ammonia and low light intensities are commonplace. This experiment examined the effects on growing pigs of chronic exposure to combinations of commercially relevant levels of these potential stressors. Four-week-old hybrid female pigs (n = 224) were housed under experimentally manipulated conditions of nominally either <5 or 20 ppm atmospheric concentration of ammonia (24 h), a light intensity of 40 lux or 200 lux (12 h) and mechanical noise at either ⩽60 or 80 dB(A) (24 h) for 15 weeks in a fully factorial arrangement (23) of treatments. The response of pigs to these environmental factors was assessed using a suite of physiological, production and behavioural measures. These included indicators of hypothalamic–pituitary–adrenal (HPA) axis activation such as salivary cortisol and adrenal morphometry, as well as body weight, food conversion efficiency and general health scores. Play behaviour was recorded as it is thought to be inversely related to stress. Chronic exposure to ammonia produced the strongest effect, shown by lower concentrations of salivary cortisol and larger adrenal cortices in the pigs reared under 20 ppm ammonia, which may have been indicative of a period of HPA activation leading to a downregulation of cortisol production. The pigs in the ammoniated rooms also performed less play behaviour than pigs in non-ammoniated rooms. There was evidence for an interaction between high noise and ammonia on the health scores of pigs and for brighter light to ameliorate the effect of ammonia on salivary cortisol. However, there was no measurable impact of these potential stressors on the productivity of the pigs or any of the other physiological parameters measured. We conclude that there should be little concern in terms of performance about the physical stressors tested here, within current European Union legal limits. However, 20 ppm ammonia may have had an adverse influence on the well-being of growing pigs. In this study, all other aspects of the pigs’ husbandry were optimal; therefore, it is possible that under less favourable conditions, more pronounced effects of ammonia, noise and dim light would be observed.

Adding nitrate to the diet or increasing the concentration of dietary lipid are effective strategies for reducing enteric methane emissions. This study investigated their effect on health and performance of finishing beef cattle. The experiment was a two×two×three factorial design comprising two breeds (CHX, crossbred Charolais; LU, Luing); two basal diets consisting of (g/kg dry matter (DM), forage to concentrate ratios) 520 : 480 (Mixed) or 84 : 916 (Concentrate); and three treatments: (i) control with rapeseed meal as the main protein source replaced with either (ii) calcium nitrate (18 g nitrate/kg diet DM) or (iii) rapeseed cake (RSC, increasing acid hydrolysed ether extract from 25 to 48 g/kg diet DM). Steers (n=84) were allocated to each of the six basal diet×treatments in equal numbers of each breed with feed offered ad libitum. Blood methaemoglobin (MetHb) concentrations (marker for nitrate poisoning) were monitored throughout the study in steers receiving nitrate. After dietary adaptation over 28 days, individual animal intake, performance and feed efficiency were recorded for a test period of 56 days. Blood MetHb concentrations were low and similar up to 14 g nitrate/kg diet DM but increased when nitrate increased to 18 g nitrate/kg diet DM (P<0.001). An interaction between basal diet and day (P<0.001) indicated that MetHb% was consistently greater in Concentrate – than Mixed-fed steers at 18 g nitrate/kg diet DM. Maximum individual MetHb% was 15.4% (of total Hb), which is lower than considered clinically significant (30%). MetHb concentrations for individual steers remained consistent across time. Concentrate-fed steers were more efficient (lower residual feed intake (RFI) values) than Mixed-fed steers (P<0.01), with lower dry matter intake (DMI) (kg/day) (P<0.001) and similar average daily gain (ADG). CHX steers were more efficient (lower RFI; P<0.01) than LU steers with greater ADG (P<0.01), lower DMI (/kg BW; P<0.01) and lower fat depth (P<0.001). ADG, BW or DMI did not differ across dietary treatments (P>0.05). Neither basal diet nor treatment affected carcass quality (P>0.05), but CHX steers achieved a greater killing out proportion (P<0.001) than LU steers. Thus, adding nitrate to the diet or increasing the level of dietary lipid through the use of cold-pressed RSC, did not adversely affect health or performance of finishing beef steers when used within the diets studied.

Sixty crossbred females received one of three pregnancy feeding rates over five parities: high (2·3 kg/day); medium (2·0 kg/day) and low (1·7 kg/day) to produce variation in body fatness and live weight. During a 32-day lactation all sows were fed the same allowance according to litter size. At the start of parity 5 ultrasonic P2 backfat depths for the high, medium and low treatments respectively were 11·2, 11·0 and 10·6 (s.e. 1·77) mm while live weight was 184, 177 and 167 (s.e. 8·6) kg. Averaged over five parities, backfat depths at conception were not significantly different between treatments. Sows given higher pregnancy feeding rates in pregnancy were heavier and fatter pre-partum but lost relatively more live weight and backfat during lactation. Regression coefficients for the slope of the relationship between total sow pregnancy weight (kg) and fatness (mm) change, and food intake (kg/day) were 0·2 and 0·04 respectively. Pregnancy feeding rate did not influence the number of live births but total litter weight at weaning was positively related to the weight and fatness of the sow at parturition and her subsequent rate of weight and fat loss during lactation (these characteristics of the sow also being positively related): live weight of litter at 32 days (kg) = 67 – 1·8 sow backfat change in lactation (mm) – 0·4 sow live-weight change in lactation (kg). Absolute sow live weight and fatness were positive influences on readiness to rebreed after weaning.

Following a 3-week covariance period, 30 group-housed dairy cows were individually given one of three diets from week 4 to week 13 of lactation to determine any possible advantage in milk yield and production of feeding levels of undegradable protein (+UDP) or rumen-degradable protein (+RDP) above the minimum levels (control) proposed by the Agricultural Research Council (ARC, 1984). The three concentrates given were formulated to be of equivalent metabolizable energy (ME, 13·5 MJ/kg dry matter (DM)) concentration and each consisted of rolled barley plus a protein supplement: control (crude protein (CP), 129 g/kg DM) 0·35 kg DM fish meal per day; +UDP (CP, 167 g7kg DM) 1·0 kg DM fish meal per day; and +RDP (CP, 167 g/kg DM) 1+5 kg DM soya per day. For each group the total ‘concentrate’ allowance per animal per day was 11·6 kg fresh weight and was given in three equal feeds. Grass silage (CP 122 g/kg DM, ME 106 MJ/kg DM) was given ad libitum. For the control, +UDP and +RDP treatments, respectively, mean grass silage intakes were 8·29, 8·62 and 8·65 kg/day and mean milk yields were 26·6, 26·3 and 26·1 kg/day. These were not significantly different (P > 0·05). Milk fat concentration was lower (P < 0·05) for the +UDP treatment (36·4 g/kg) in comparison with the control (38·6 g/kg) or the +RDP treatment (39·7 g/kg) but no other milk constituent was significantly influenced by treatment. There was a trend for a greater live-weight gain with treatment +UDP (0·81 kg/day) compared with the other two treatments (control 0·50, +RDP 0·51 kg/day) but there were no differences in condition-score change between treatments. In this trial there was no advantage to feeding formulated levels of UDP or RDP above those proposed by ARC (1984).

The relation between survival to complete lactations 2, 3 and 4 and both linear type and production traits of pedigree Holstein-Friesian dairy cattle in the United Kingdom was analysed. There were records on 23 071 pedigree animals which were themselves type classified as heifers. The linear and quadratic phenotypic regressions of survival on most type traits were significant, even with yield fitted as a covariate. Phenotypic regressions of survival on milk, fat and protein yield were significantly positive, but that on protein content significantly negative. Phenotypic correlations with survival were under 0·1 for the linear traits, 0·16 for a subjective total type score, and 0·14 for milk yield. Genetic correlations between survival and type traits, estimated by multivariate restricted maximum likelihood, were as high as 0·4 for several traits of the udder and teats and for total score, and higher than for milk yield or composition. Regressions of survival on estimated sire transmitting abilities gave rather lower estimates of genetic correlations, except for total score. The results indicate that in these pedigree and classifying herds the total score is a culling criterion in its own right.

The 3-hydroxy-3-methylglutaryl-CoA reductase (HMGCR) is the rate-limiting enzyme in the biosynthesis of cholesterol. We have studied the role of the HMGCR gene in pig lipid metabolism by means of expression and structural analysis. We describe here the complete coding region of this gene in pigs and report two synonymous single nucleotide polymorphisms in the coding region. We have, additionally, studied the association of one of these polymorphisms (HMGCR:c.807A>C) with several lipid deposition- and cholesterol-related traits in a half-sib population generated from a commercial Duroc line, showing in some families a positive relationship of HMGCR:c.807A allele with serum low-density lipoprotein (LDL)-bound cholesterol and triglyceride levels, and also with intramuscular fat (IMF) content of gluteus medius muscle. We have also assessed the expression levels in muscle and in liver from 68 Duroc individuals corresponding to the most extreme animals for the analysed traits. Liver HMGCR expression correlated negatively with the serum high-density lipoprotein (HDL) levels, carcass lean percentage and stearic acid content, while muscle expression correlated also negatively with the carcass lean percentage, stearic and linoleic acids content, but showed a positive correlation with the serum lipid cholesterol (HDL, LDL and total cholesterol), IMF and muscle oleic and palmitic fatty acid content. With this information, we have performed an association analysis of expression data with lipid metabolism phenotypic levels and the HMGCR genotype. The results indicate that HMGCR expression levels in muscle are different in the two groups of pigs with extreme values for fat deposition and total cholesterol levels, and also between animals with the different HMGCR genotypes.

Genetic parameters for birth weight were estimated for two sets of spring-born and one set of autumn-born lambs of the same breed composition and genetic origin using a model that included random additive, additive maternal, permanent environmental maternal, litter and residual effects. Litter effects were significant for all data sets, indicating that within-year effects of common environment and (or) non-additive genotype were important for birth weight and should be included in genetic evaluation programmes. Estimates of variance components for autumn-born lambs differed significantly from those obtained from spring-born lambs or from the combined data. In contrast, estimates obtained for the two sets of spring-born lambs did not differ from those obtained when data on all spring-born lambs were pooled. The estimate of h2 for birth weight in spring-born lambs was over twice as large as that obtained for autumn-born lambs (0·26 v. 0·22).In contrast, the across-year repeatability of ewe effects was much larger in autumn lambs (0·41 v. 0·26) as was the full-sib littermate correlation (0·73 v. 0·49). Mean birth weights were also 0·4 to 0·6 kg less in autumn lambs. These results suggest that negative effects on birth weight that have been reported for lambs gestated during summer in equatorial and subtropical regions are also manifested (albeit at reduced levels) in less extreme climates (in this case, 37°, 15' N latitude and 654 m elevation) and that maternal variation exists in the ability of the ewe to maintain adequate lamb birth weights in autumn lambing systems.
