Three hundred and sixty male and female Californian ♂ × New Zealand White ♀ growing rabbits were used to study the influence of nine types of fat at 30 or 60 g/kg diet on growth and apparent digestibility. The fats used were: beef tallow (T), pork lard (L), sunflower oil (SO), two by-products from the oil-refining industry, sunflower oleins (O) and soya-bean lecithin (S), and 2: 1 (w/w) mixtures of T + S, L + S, O + S and T + O. All diets, including a diet without added fat, were formulated to a 190 g/kg acid-detergent fibre (ADF) level and to a 100 kJ digestible energy per g digestible protein ratio.

As O level in the diet increased, growth was significantly impaired (P < 0·001) but the other fats had no significant effect on this variable (P > 0·05). A maximum oleins concentration in the diet of 10 g/kg is suggested. Excluding diets with more than 10 g oleins per kg, a significant improvement in food conversion ratio was recorded for diets containing 60 g added fat per kg (P < 0·05). This improvement was related not only to a higher gross energy concentration of added-fat diets but also to a significantly (P < 0·001) higher energy digestibility (0·653 v. 0·602 for 60 g/kg added-fat diets and control diet respectively). Fat addition both at 60 and 30 g/kg also improved significantly (P < 0·001) dry matter, organic matter, crude protein and ether extract (EED) digestibilities. As a result, the use of ether extract in addition to ADF for estimating the energy value of diets including added fat, is proposed.

An increase in the degree of unsaturation of dietary ether extract increased significantly EED (P < 0·001), but did not affect other variables studied.

Excessive flavour in lamb meat is undesirable for consumers and can prompt purchase resistance. Volatile indoles responsible for off-flavours accumulate more in the fat of lambs on pasture than on grain and are enhanced when lambs graze alfalfa. Here, we investigated whether barley supplementation of lambs grazing alfalfa influences meat sensory quality. Using three groups of 12 male Romane lambs, we compared three feeding regimes: alfalfa grazing (AG), alfalfa grazing + daily supplementation with barley (29 g/kg live weight0.75, AGS) and stall feeding with concentrate and hay (SF). As some of the compounds involved in meat sensory traits may act as dietary biomarkers, we also investigated potential implications for meat authentication. Although barley represented 38% of the diet in AGS lambs, it did not offer any advantage for animal average daily gain or parasitism level. Animal performance, carcass weight and fatness did not differ between feeding regimes. Dorsal fat firmness tended to be greater in AG than AGS and greater in AGS than SF. Skatole and indole concentrations in perirenal and dorsal fat were lower in SF lambs than in AG and AGS lambs (P<0.01 to P<0.0001), but did not differ between AG and AGS lambs. Yellowness, chroma and hue angle of perirenal fat were lower in SF lambs than in AG and AGS lambs (P<0.001), but did not differ between AG and AGS lambs. Absolute value of the mean integral for both perirenal fat and subcutaneous caudal fat (AVMIPF and AVMISC), quantifying the intensity of light absorption by carotenoids in perirenal and subcutaneous caudal fat, respectively, were lower in SF lambs than in AG and AGS lambs (P<0.0001 for both comparisons), but did not differ between AG and AGS lambs. Meat colour was unaffected by the treatment. We confirm that lambs grazing alfalfa accumulate high levels of volatile indoles in their fat, but we show that barley supplementation to lambs grazing alfalfa is not effective in reducing fat volatile indoles concentration and excessive odour/flavour in the meat. We also confirm that both perirenal fat skatole concentration and AVMIPF are of interest for discriminating lambs that grazed alfalfa from lambs that were stall-fed, and we show that they are not effective for discriminating supplemented from non-supplemented grazing lambs.

The mammary epithelium coordinates the uptake of milk precursors and the transport of milk components in order to produce milk of relatively constant composition at a particular stage of lactation, as long as the mammary gland is healthy. The mammary epithelial cell controls the uptake of blood-borne molecules at its basal side and the release of products into milk at its apical side, through mechanisms of internalization (endocytosis) and mechanisms of release (exocytosis). These events are strictly dependent on the physiological stage of the mammary gland. This review addresses the mechanisms responsible for these processes and points out new questions that remain to be answered concerning possible interconnections between them, for an optimal milk secretion.

Transport of animals is a stressful procedure often resulting in significant losses for the slaughter plant. This study aimed to determine whether or not pigs would benefit from a loading density (low density (LD)) (179 kg/m2) below the normal EU standard loading density (normal density (ND)) (235 kg/m2). Eight similar, 550-km-long road journeys, were followed in which fattening pigs were transported across Germany from farm to slaughter plant. During each journey all pigs were transported at LD (n=4) or ND (n=4). Twelve female pigs per journey (total n=96) were randomly selected for measurement and monitoring of body temperature, behaviour, heart rate and blood parameters. Throughout the journeys, LD pigs displayed more resting behaviour than ND pigs. Average body temperature was lower (P<0.05) for pigs transported at LD (38.0±0.07°C) than those transported at ND (38.3±0.06°C). During loading heart rate increased in both ND and LD pigs and declined after the vehicle had been closed before departure but remained slightly elevated in ND pigs. Pigs transported at ND displayed signs of stress (elevated HR and body temperatures) during the drivers’ break. Blood parameters were only slightly (not significant) effected by loading density. Results indicate that pigs are more capable of adapting to long (550 km) transport conditions when loaded at a density below the present EU requirement.

In two experiments, ewes carrying two, three or four foetuses were offered restricted amounts of concentrates in the range 0 to 1050 g fresh weight per day and hay ad libitum from day 105 of pregnancy until lambing. The replacement rates of concentrates for forage were similar for both Teeswater × Dalesbred and Finnish Landrace × Dorset Horn ewes in experiment 1 (mean −0·63) when the ewes were offered hay which had an organic matter digestibility (OMD) in vitro of 0·56. There was no significant effect of number of foetuses carried on hay intake. As pregnancy progressed, hay intake increased slightly when hay alone was given and decreased at the higher levels of concentrates.

In experiment 2, hay intake by Finnish Landrace × Dorset Horn ewes was significantly higher when hay of higher digestibility was offered (0·52, 0·69 and 0·84 OMD) and decreased when higher levels of concentrates were given. Ewes carrying two foetuses ate more than ewes with three or four foetuses particularly when hay was offered as the sole food. Generally, hay intake decreased as pregnancy progressed and this was more evident when concentrates were offered.

A predictive equation is given to enable hay intake to be derived from hay digestibility, concentrate level, ewe live weight, number of foetuses carried and week of pregnancy.

Based on potential benefits to human health, there is increasing interest in altering the composition of ruminant-derived foods. Including rapeseeds in the dairy cow diet is an effective strategy for replacing medium-chain saturated fatty acids (SFA) with cis-monounsaturated fatty acids (MUFA) in bovine milk, but there is limited information on the optimum level of supplementation. Decreases in SFA due to plant oils are also accompanied by increases in milk trans fatty acid (FA) content and it is possible that high oleic acid rapeseeds may result in a higher enrichment of cis-9 18:1 and lower increases in trans FAs in milk compared with conventional varieties. Seven multiparous lactating Holstein–Friesian cows were allocated to one of seven treatments in an incomplete Latin square design with five 28-day experimental periods, to evaluate the effect of replacing calcium salts of palm oil distillate (CPO; 41 g/kg diet dry matter, DM) with 128, 168 or 207 g/kg diet DM of conventional (COR) or a high oleic acid (HOR) rapeseed fed as a supplement milled with wheat. Rapeseed variety and inclusion level had no effect (P > 0.05) on DM intake, milk yield and composition. Both rapeseed varieties decreased linearly (P < 0.001) milk fat SFA content, which was partially compensated for by a linear increase (P < 0.001) in cis-9 18:1 concentration. Reductions in milk SFA were also associated with increases (P < 0.05) in trans 18:1 and total trans FA content, with no difference (P > 0.05) between rapeseed varieties. Replacing CPO in the diet with milled rapeseeds had no effect (P > 0.05) on total milk conjugated linoleic acid (CLA) concentration. Relative to a COR, inclusion of a high oleic acid variant in the diet increased (P = 0.01) the ratio of trans-MUFA : trans-polyunsaturated fatty acids in milk that may have implications with respect to cardiovascular disease risk in humans. In conclusion, data indicated that replacing CPO with milled rapeseeds at levels up to 1150 g oil/day could be used as a nutritional strategy to lower milk SFA content without inducing adverse effects on DM intake and milk production. HOR reduced milk fat SFA content to a greater extent than a conventional variety, but did not minimise associated increases in trans FA concentrations. However, the high oleic acid variant did alter the relative abundance of specific trans 18:1, CLA and trans 18:2 isomers compared with conventional rapeseeds.

Sixteen New Zealand White ✕ Californian doe rabbits (four per diet) weighing 3397 (s.e. 378) g, and surgically fitted with a glass T-cannula at the terminal ileum were used to determine the apparent ileal digestibility of non-starch polysaccharides of four fibrous foods. Four diets were formulated to contain paprika meal, olive leaves, lucerne hay or soya-bean hulls as the sole source of fibre. Fibre sources were supplemented with different proportions of soya protein isolate, wheat flour, lard, sodium chloride, calcium carbonate, calcium phosphate, DL-methionine and a mineral/vitamin mix, to obtain diets containing at least 185 g crude protein and 50 g starch per kg. All diets included 2 g/kg of the respective fibre source marked with chromium. Diets were assigned to individually caged rabbits in a completely randomized design and were offered ad libitum throughout the experiment. Dry matter intake was not affected by type of diet. Fibre source affected (P < 0·05) corrected ileal apparent digestibility of total non-strach polysaccharides (NSP), xylose, galactose, glucose and uronic acids. Uronic acids were the best digested monomer at the ileum in all the foodstuffs studied, ranging from 0·195 to 0·522 for olive leaves and paprika meal, respectively. Corrected ileal apparent digestibility of uronic acids was correlated with the uronic acids insoluble in NDF solution, expressed as proportion of total uronic acid content (r =–0·74; P = 0·001), the proportion of large particles (> 1·25 mm; r = –0·71; P < 0·01) and the proportion of fine particles (< 0·315 mm; r = 0·65; P = 0·01). Other monomers (arabinose, mannose, rhamnose and galactose) usually related to pectic substances, also showed in general a greater ileal digestibility than that of total NSP. Taking into account the uronic acids content of the diet and their digestibility, digestible uronic acids accounted for 0·572, 0·528, 0·93 and 0·353 of the total ileal digestible NSP of paprika meal, olive leaves, lucerne hay and soya-bean hulls based diets, respectively. The sum of arabinose, mannose, rhamnose and galactose accounted for 0·15 of total NSP digested at the ileum on average, over the different fibre sources studied. Glucose and xylose were the monomers least digested at the ileum. Their corrected ileal apparent digestibilities were close to zero, except for the paprika meal (0·266 and 0·216) and soya-bean hulls (0·137 and 0·057) based diets. In conclusion, the results of this study indicate that a valuable amount of total NSP is hydrolysed before the caecum in rabbits. However, this hydrolysis affects mainly pectic and readily fermentable substances.

Lamb mortality remains a significant welfare and economic issue for sheep production. Lamb survival is to a degree dependent upon an easy delivery and the expression of appropriate behaviours from both mother and offspring, such as rapid standing, udder seeking and sucking by the lamb. Genetic solutions have the potential to improve birth assistance and lamb behaviour but large amounts of data are needed. Therefore, to achieve this objective, simple, proxy methods (scoring systems) were developed to quantify the level of birth difficulties and lamb vigour on farm. In the first study, detailed historical behavioural data from 1156 lambs (Scottish Blackface and Suffolk (S)) were analysed to develop criteria for 3 scores: birth assistance, lamb vigour and sucking assistance. The birth assistance score was developed by analysing the relationships between birth presentation and intervention levels, and intervention level and labour length. Lambs with abnormal birth positions required more assistance than normally presented lambs and lambs with long labours required more and greater assistance than those with short labours. Lamb vigour score was developed by analysing the latencies for the lamb to first perform specific behaviours; more vigorous lambs reach landmark behaviours faster than low vigour lambs. The sucking assistance score was developed from the relationship between the latency to suck successfully and assistance level, where lambs that were slow to suck required more assistance than lambs that were quick to suck. In the second study, the behaviour scoring systems (5-point categorical scales) were validated using a commercial flock of 80 twin-bearing crossbred ewes mated with either Texel (T) or S sires by simultaneously recording scores and the latency to perform specific landmark behaviours (i.e. to stand, seek the udder and suck). The vigour scores (recorded at 5 min of age) were compared with the latency from birth to standing and showed that lambs with lower (better) vigour scores were faster to stand after birth than those with higher scores. The sucking assistance scores were compared with the latency from birth to sucking, and showed that lambs with lower sucking assistance scores are quicker to suck than those with high scores. These results showed that the scoring systems could provide a practical and reliable assessment of birth assistance and lamb behaviour on farm and were sufficiently sensitive to discriminate vigour levels between lambs sired by either S or T rams.

With international demand for production systems aimed at thermal comfort and animal welfare, milk producers have become increasingly interested in compost barns. However, doubts about the behavioral aspects of cows in tropical and subtropical climates remain, because the compost barn system offers a larger bed area per animal at a lower stocking rate. The objective of this study was to evaluate whether the diurnal behaviors, hygiene and lameness of crossbred dairy cows are influenced by different number of lactations when housed in a compost-bedded pack barn system under hot and humid conditions. Crossbred cows (Holstein and Jersey), which were divided into two treatments based on number of lactations (primiparous and multiparous cows), were evaluated during lactation (n=12). The study was conducted from September 2015 to February 2016 in a compost barn in the southwest region of the state of Paraná, Brazil. Daytime behavior was observed between milking schedules using focal observations with 0/1 sampling. Cow hygiene and lameness were evaluated using subjective scores ranging from 1 to 4 and 1 to 5, respectively. Animal behavior and welfare was analyzed using Bayesian inference with a mixed effects model. The probabilities of dyspnea and pushing behaviors were higher (P<0.05) in multiparous cows, and the probability increased during the hottest hours of the day. For both multiparous and primiparous cows, the agonistic behaviors of pushing, butting and chasing peaked during the afternoon. Eating behaviors had the highest likelihood values (0.8 at 0800 h). The cows preferred to remain lying down in the morning, while rest and standing rumination were preferred in the afternoon. Primiparous cows were cleaner than multiparous cows, and the hygiene score for this group was significantly lower (P<0.05). The hygiene and lameness scores for all animals were low, and the highest scores were 1 and 2. In conclusion, multiparous cows exhibited more frequent agonistic behaviors during the hottest hours of the day. Regarding hygiene and lameness scores, multiparous cows exhibited a higher degree of dirtiness compared with the primiparous cows.

Rheological properties of digesta play a role in digesta passage kinetics through the gastrointestinal tract, in turn affecting nutrient absorption kinetics. Therefore, we studied the effects of diet viscosity on digesta passage and physicochemical properties in pigs. Twenty male growing pigs (35 kg body weight at the start) were assigned to one of five diets with increasing dietary concentrations of β-glucans (BG; from 0 % to 10 %), in exchange for maize starch. After a 17-day adaptation period, pigs were euthanised and the mean retention time (MRT) of digesta solids (TiO2) and liquids (Cr-EDTA) in the stomach, and proximal and distal half of the small intestine was quantified. In the stomach, the MRT of liquids, but not of solids, increased when dietary BG level increased (6 min per % dietary BG, P = 0.008 and R2 = 0.35). Concomitantly, stomach DM content (5 g/kg per % dietary BG, P < 0.001 and R2 = 0.53) and apparent digesta viscosity (56 Pa × s at 1/s shear rate per % dietary BG, P = 0.003 and R2 = 0.41) decreased. In the proximal half of the small intestine, no effects of dietary BG level were observed. In the distal half of the small intestine, water-binding capacity (WBC) of digesta increased (0.11 g/g digesta DM per % dietary BG, P = 0.028 and R2 = 0.24) and starch digestibility decreased (0.3% per % dietary BG, P = 0.034 and R2 = 0.23) when dietary BG level increased. In the colon, apparent digesta viscosity at 45/s shear rate increased (0.1 Pa × s per % dietary BG, P = 0.03 and R2 = 0.24) in the proximal half of the colon, and digesta WBC increased (0.06 g/g digesta DM per % dietary BG, P = 0.024 and R2 = 0.26) in the distal half of the colon when dietary BG level increased. To conclude, increasing dietary BG level caused the MRT of liquids, but not that of solids, to increase in the stomach, resulting in reduced separation of the solid and liquid digesta fractions. This caused dilution of the stomach content and reduction in digesta viscosity when dietary BG levels increased. Effects of dietary BG level on physicochemical properties in the proximal small intestine were absent and may have been due to a low DM content. The WBC of digesta in the distal small intestine and colon increased when dietary BG level increased, as did apparent digesta viscosity in the proximal colon. This likely reflects the concentration of BG in digesta when moving through the gastrointestinal tract.

This review provides an assessment of research findings into the current practices and standards and the principles and aspirations for organic dairy production, with respect to the health and welfare of the dairy cow. The relationships between the four main factors: management, environment, genetics and nutrition and their impact on the health and welfare status of organic dairy cows are considered. The concept that good animal health and welfare is more than merely the absence of disease, with behavioural aspects of health and welfare such as physiological and psychological needs, is also discussed. These factors are inter-related and important in all dairy systems, irrespective of whether the system is organic, low-input or intensive. Incidences of individual clinical and sub-clinical diseases that are recorded in conventional dairy systems also occur in organic dairy systems, with infertility, lameness and mastitis being the major problems. However, the magnitude of the incidence of many of these diseases may be either lower or higher in organic systems due to different management practices and the standards defined for organic milk production that, for example, prohibit the routine use of conventional medicines and require the feeding of high-forage diets. In relation to different systems, it is important to note that contrary to a common assumption, good welfare does not necessarily occur with more extensive systems. The type of organic system (self-sufficient, purchased-feed) also has the potential to have a major influence on the incidence of health problems and the reproductive status of organic dairy herds. Health status is also influenced by environmental and welfare factors, including the method of rearing replacement animals, type of housing and the geographical and climatic conditions of individual farms. Overall, this review identifies where conflicts arise between current practice and the organic principles and standards, and aims to provide suggestions to bring about further improvement in organic dairy health and welfare.

Sixty-five Holstein–Friesian calves were randomly allocated to one of eight nutritional treatments at 4 days of age. In this factorial design study, the treatments comprised of four levels of milk replacer (MR) mixed in 6 l of water (500, 750, 1000 and 1250 g/day) × two crude protein (CP) concentrations (230 and 270 g CP/kg dry matter (DM)). MR was fed via automatic teat feeders and concentrates were offered via automated dispensers during the pre-wean period. MR and calf starter concentrate intake were recorded until weaning with live weight and body measurements recorded throughout the rearing period until heifers entered the dairy herd at a targeted 24 months of age. There was no effect of MR protein concentration on concentrate or MR intake, and no effect on body size or live weight at any stage of development. During the pre-weaning period, for every 100 g increase in MR allowance, concentrate consumption was reduced by 39 g/day. While, for every 100 g increase in the amount of MR offered, live weight at days 28 and 270 increased by 0.76 and 2.61 kg, respectively (P < 0.05). Increasing MR feed levels increased (P < 0.05) heart girth and body condition score at recordings during the first year of life, but these effects disappeared thereafter. Increasing MR feeding level tended to reduce both age at first observed oestrus and age at first service but no significant effect on age at first calving was observed. Neither MR feeding level nor MR CP content affected post-calving live weight or subsequent milk production. Balance measurements conducted using 44 male calves during the pre-weaning period showed that increasing milk allowance increased energy and nitrogen (N) intake, diet DM digestibility, true N digestibility and the biological value of the dietary protein. Increasing the MR protein content had no significant effect on the apparent digestibility of N or DM.

The increasing availability of automated milk dispensers on dairy farms facilitates ad libitum milk supply but weaning calves from high milk allowances is challenging. This study evaluated effects of gradual weaning methods on starter intake, growth, selected blood parameters and weaning distress in ad libitum fed dairy calves during weaning and early post-weaning periods. Thirty-six male Holstein (n = 30) or crossbred (n = 6) calves were individually housed from days 2 to 14 of age and had ad libitum access to milk replacer (MR) from teat buckets. From days 15 to 84 of age, calves were grouped and had ad libitum access to MR, starter, straw and water from automated feeders. At day 35, calves were blocked (age and breed), and randomly assigned to a weaning method: (1) linear fixed (LIN), MR supply was stepped down to 6 l/day on day 36, and linearly reduced between days 36 to 63 from 6 to 2 l/day. (2) Step-down (STEP), MR supply was stepped down to 6 l/day from days 36 to 48, 4 l/day from days 49 to 56 and 2 l/day from days 57 to 63. (3) Dynamic (DYN), at day 36, MR supply was reduced for each individual calf to 75% of the average voluntary consumption between day 29 and 35, then maintained for 9 days, reduced to 50% for 10 days, and to 25% for 9 days. The DYN calves received more MR during weaning than LIN calves, whereas STEP calves had intermediate MR intake. Starter intake was not affected by weaning method. The DYN calves (1.33±0.08 kg/day) grew faster and were heavier than STEP calves (1.10±0.08 kg/day) during post-weaning period, whereas no difference was observed between LIN calves (1.23±0.08 kg/day) and others. At days 70 and 84, concentrations of β-hydroxybutyric acid were higher in LIN calves compared to STEP and DYN calves. Hair cortisol concentrations were not affected by weaning method. During the gradual weaning process CP intake seemed to recovered earlier than metabolizable energy (ME) intake in all treatments, suggesting that ME rather than CP could be the first limiting factor for growth during weaning. These results highlight the post-weaning benefits of DYN and LIN weaning methods when compared with more abrupt step-down strategies.

It is well known that any quantitative (energy and protein levels) and qualitative (nature of the diet, nutrient dynamic) changes in the feeding of animals affect metabolism. Energy expenditure and feed efficiency at the whole-body level, nutrient partitioning between and within tissues and organs and, ultimately, tissue and organ characteristics are the major regulated traits with consequences on the quality of the meat and milk produced. Recent progress in biology has brought to light important biological mechanisms which explain these observations: for instance, regulation by the nutrients of gene expression or of key metabolic enzyme activity, interaction and sometimes cross-regulation or competition between nutrients to provide free energy (ATP) to living cells, indirect action of nutrients through a complex hormonal action, and, particularly in herbivores, interactions between trans-fatty acids produced in the rumen and tissue metabolism. One of the main targets of this nutritional regulation is a modification of tissue insulin sensitivity and hence of insulin action. In addition, the nutritional control of mitochondrial activity (and hence of nutrient catabolism) is another major mechanism by which nutrients may affect body composition and tissue characteristics. These regulations are of great importance in the most metabolically active tissues (the digestive tract and the liver) and may have undesirable (i.e. diabetes and obesity in humans) or desirable consequences (such as the production of fatty liver by ducks and geese, and the production of fatty and hence tasty meat or milk with an adapted fatty acid profile).

A total of 166 crossbred does were used to study the possible long-term effect of two types of crossbred does (H1 v. H2, old and current generations, respectively) from the cross of different generations of lines selected for litter size, the use of a rearing programme based on a low-energy diet, and the administration of a high-energy diet during reproductive life, on the performance and body condition of lactating rabbit does and their litters until slaughter. The body condition of the reproductive rabbit does increased in the successive cycles to the fourth parturition, being maintained from this moment on. Animals more selected for litter size at weaning presented a greater food intake (+3%; P<0·05) and milk yield (+6%; P<0·05) during the first 21 days of lactation, which could be related to greater maternal aptitude. The difference in the weight of pups at slaughter time (+24 g for H2 respect to H1 pups) was one third lower than that expected from the generation response of the paternal line (0·45 g/day), perhaps related to the different enteropathy incidence depending on the genetic type. The use of a high-energy diet during the reproduction period increased the milk yield (+22%; P<0·05) of does, as the growth (+16 g at weaning day; P<0·05) and survival index (+2%; P<0·05) of the litters during lactation, but could produce a more sudden weaning of pups as a consequence of their lower pre-weaning food intake (−42%; P<0·05), which has been related with a greater health risk index during the growing period (+4·2%; P<0·05). Reproductive does given a high fibre diet during the rearing period (from 3 kg live weight to 28th day of the first pregnancy) reached parturition with a higher live weight than does that received a moderate energy diet restricted during this same period (+142 g; P<0·05). All other parameters controlled for the lactating does and their litters were not affected by the type of diet received during the rearing period. Females that were not effectively mated at first AI (11 days post partum) showed a greater increase in their perirenal fat thickness between partum and the 11th day of lactation than those lactating females that showed an effective mating (+0·22 v. +0·37 mm, respectively; P<0·05).

A scientific literature review and consensus of expert opinion used the welfare definitions provided by the Farm Animal Welfare Council (FAWC) Five Freedoms as the framework for selecting a set of animal-based indicators that were sensitive to the current on-farm welfare issues of young lambs (aged ⩽6 weeks). Ten animal-based indicators assessed by observation – demeanour, response to stimulation, shivering, standing ability, posture, abdominal fill, body condition, lameness, eye condition and salivation were tested as part of the objective of developing valid, reliable and feasible animal-based measures of lamb welfare The indicators were independently tested on 966 young lambs from 17 sheep flocks across Northwest England and Wales during December 2008 to April 2009 by four trained observers. Inter-observer reliability was assessed using Fleiss's kappa (κ), and the pair-wise agreement with an experienced, observer designated as the ‘test standard observer’ (TSO) was examined using Cohen's κ. Latent class analysis (LCA) estimated the sensitivity (Se) and specificity (Sp) of each observer without assuming a gold standard and predicted the Se and Sp of randomly selected observers who may apply the indicators in the future. Overall, good levels of inter-observer reliability, and high levels of Sp were identified for demeanour (κ = 0.54, Se ⩾ 0.70, Sp ⩾ 0.98), stimulation (κ = 0.57, Se = 0.30 to 0.77, Sp ⩾ 0.98), shivering (κ = 0.55, Se = 0.37 to 0.85, Sp ⩾ 0.99), standing ability (0.54, Se ⩾ 0.80, Sp ⩾ 0.99), posture (κ = 0.45, Se ⩾ 0.56, Sp = 0.99), abdominal fill (κ = 0.44, Se = 0.39 to 0.98, Sp = 0.99), body condition (κ = 0.72, Se ⩾ 0.38 to 0.90, Sp = 0.99), lameness (κ = 0.68, Se > 0.73, Sp = 1.00), and eye condition (κ = 0.72, Se ⩾ 0.86, Sp = 0.99). LCA predicted that randomly selected observers had Se > 0.77 (acceptable), and Sp ⩾ 0.98 (high) for assessments of demeanour, lameness, abdominal fill posture, body condition and eye condition. The diagnostic performance of some indicators was influenced by the composition of the study population, and it would be useful to test the indicators on lambs with a greater level of outcomes associated with poor welfare. The findings presented in this paper could be applied in the selection of valid, reliable and feasible indicators used for the purposes of on-farm assessments of lamb welfare.

The availability of resources including energy, nutrients and (developmental) time has a crucial impact on productivity of farm animals. Availability of energy and nutrients depends on voluntary feed intake and intestinal digestive and absorptive capacity at optimal feeding conditions. Availability of time is provided by the management in animal production. According to the resource allocation theory, resources have to be allocated between maintenance, ontogenic growth, production and reproduction during lifetime. Priorities for these processes are mainly determined by the genetic background, the rearing system and the feeding regimen. Aim of this review was to re-discuss the impact of a proper resource allocation for a long and healthy life span in farm animals. Using the barrel model of resource allocation, resource fluxes were explained and were implemented to specific productive life conditions of different farm animal species, dairy cows, sows and poultry. Hypothetically, resource allocation mismatch neglecting maintenance is a central process, which might be associated with morphological constraints of extracellular matrix components; evidence for that was found in the literature. A potential consequence of this limitation is a phenomenon called disproportionate growth, which counteracts the genetically determined scaling rules for body and organ proportions and could have a strong impact on farm animal health and production.

This study analysed the effect of level of nutrition and date of birth (age) on the onset of puberty in Payoya she-kids born in autumn (November) or in winter (February). Two experiments were conducted to examine pubertal events at the onset of puberty. For each date of birth (age), two experimental groups were used, differing on the level of nutrition. Groups were balanced for live weight (LW) and body condition score (BCS). For the first experiment (goat kids born in autumn), 27 Payoya she-kids were used: high-nutrition group (H1, n = 13) and control group (C1, n = 14). For the second experiment (goat kids born in winter), 25 Payoya she-kids were used: high-nutrition group (H2, n = 13) and control group (C2, n = 12). In both experiments, the level of feeding was adjusted weekly according to LW so that the animals would gain about 50 and 100 g per day for C and H groups, respectively. Oestrus was tested daily using young aproned bucks. Ovulation rate was assessed by laparoscopy 7 days after identification of oestrus. Plasma samples were obtained weekly for progesterone assay. LW and BCS were recorded weekly. No effect of nutrition level or birth date (Experiment 1 v. 2) on the date of the first ovarian activity or the first detected oestrus was observed. No effect of nutrition on LW or BCS at the first detected oestrus was observed. Birth date influenced significantly the LW of the animals at the onset of ovarian activity or first oestrus (P < 0.001). Irregular sexual activity was frequently observed before the first oestrus (74.7% and 48.0% of the first reproductive activity was irregular for Experiments 1 and 2, respectively). No effect of nutrition level or birth date on ovulation rate was observed. Ovulation rate at first oestrus was influenced by LW in November-born goat kids (1.06 ± 0.06 v. 1.67 ± 0.21 corpora lutea for LW < 30 and ⩾ 30 kg, respectively, P < 0.01). These results demonstrate that the age at puberty was very dependent upon the season of birth in Payoya goat kids, and that there could be some benefit in breeding November-born goat kids at a higher LW to obtain a higher prolificacy at the first kidding as a consequence of a higher ovulation rate at puberty.

A multidisciplinary research programme was developed to get a scientific expertise for the quality assessment of products obtained from cloned livestock. Thirty-seven bovine Holstein female clones of five different genotypes and their products were analysed in comparison with 38 control animals obtained by conventional artificial insemination and raised under the same conditions at the same experimental farm. Animal evaluation included over 150 criteria and more than 10 000 measurements to check the physiological status and health over a 3-year period. All the parameters studied were in the normal range for age and breed, but some significant differences were detected between clone and control groups in terms of delayed onset of puberty in clones, higher neutrophil counts in haematology or lower biochemical plasma concentrations of gamma glutamyl transferase. Milk and meat analyses were conformable to expected values. We, however, found some differences in fatty acid (FA) composition of milk and muscle suggesting a possible deviation in lipid metabolism as assessed by higher delta-9 desaturase activity indexes in both milk and muscles from clones compared with controls. Repeated muscle biopsies in the semitendinosus muscle of the same animals demonstrated a higher oxidative activity in muscle of young clones (8 months of age) compared with controls, suggesting a delayed muscle maturation in clones. Nutritional evaluation of milk and meat using the rat feeding trials did not show any difference between clone and control products for food intake, growth rate, body composition of the rats, nor for possible allergenicity. Possible reactivation of bovine endogenous retroviruses (BERVs) was analysed and compared between normal and cloned cattle. As expected, these BERV sequences are not transcribed and no RNA was detected in the blood of clones, donor animals or controls; therefore, it may be assumed that the sanitary risk associated with BERV sequences is not higher in cattle derived from somatic nuclear transfer than in cattle born from conventional reproduction. Our results confirm that the quality and safety of products (milk and meat) from adult and clinically healthy cloned cattle is globally similar to normal animals. However, from a strictly biological point of view, the slightly delayed maturation we observed in the muscle of clones together with some marginal differences identified in FA composition of both muscle and milk, point to the need for more refined analysis to totally exclude any risks from the consumption of those products.

The effects of dietary protein content and level of feeding on carcass characteristics and organ weights were studied in castrated male Iberian pigs growing from 50 to 100 kg live weight (LW). Animals were offered four diets providing 145, 120, 95 and 70 g ideal crude protein (CP) per kg dry matter (DM) and 13·94, 14·29, 14·56 and 14·83 MJ metabolizable energy (ME) per kg DM, respectively. Three levels of feeding were assayed: 0·60, 0·80 and 0·95 of ad libitum intake. The pigs were slaughtered at 100 kg LW. Daily gain in carcass (carcass gain, g/day) and protein deposition (PD, g/day) in this component attained 76·2% and 78·8% of whole-body average daily gain and PD, respectively. Carcass gain improved with each decrease in dietary CP from 145 up to 120 g/kg DM and then levelled off. A small but significant effect of dietary CP on carcass composition was observed, due to an enhanced fat deposition in pigs fed the lowest protein content diet. Mean values of protein, fat, ash and water contents in the carcass were 101·8, 522·7, 27·6 and 353·7 g/kg respectively. PD in the eviscerated carcass was not affected significantly by dietary protein level but tended to reach a maximum value with the diet that provided 95 g CP per kg DM: 55·7 g/day at the highest feeding level assayed. Carcass energy retention (MJ/day) increased significantly ( P<0·001) with decreasing dietary protein supply and on increasing level of feeding. Raising feed intake resulted in a significant decrease for carcass and a concomitant increase for viscera, as proportions of empty body weight ( P<0·05 and P<0·001, respectively). Proportional weights of shoulder and ham were not affected either by dietary CP content or feeding level. Proportionate weights of dissectable fat in the shoulder and intermuscular and subcutaneous fat in the ham were not affected by CP content of the diet. In contrast, intermuscular fat content of ham was increased by feeding level ( P<0·05), likely with implications for the quality of the cured meat product.
