An experiment was performed to determine whether quality differences between boars and castrates when used for bacon production are true castration effects or due to the greater leanness of boars. Sixty-four commercial hybrid male pigs, half of which were castrated at 10 days of age, were given different levels of feeding so that at 87 kg live weight there was a 2-mm difference in P2 fat thickness between two groups of 16 boars and two groups of 16 castrates. The leanest group of castrates and the fattest group of boars had similar fat thickness and carcass composition. This design allowed the separation of castration and feeding treatment (carcass composition) effects. Skin thickness and weight (boars greater) and kidney weight (boars heavier) were much more influenced by castration than feeding treatment. Other effects that were more influenced by castration, although less strongly, were killing-out proportion (boars lower because of testes), leg and loin length (boars shorter), joint weight distribution (boars lighter in flank) and lean weight distribution (boars slightly less lean in leg, and more in foreloin and belly). Lean to bone ratio in the side was influenced less by castration than by feeding treatment but boars had more intermuscular fat in relation to subcutaneous fat than castrates. The lean content of the leg was closely related to that of the side, and there were different relationships in boars and castrates.

This study evaluated the strategy of supplementing oral micellized natural vitamin E (d-α-tocopherol) to either piglets and/or sows on α-tocopherol concentrations in piglets serum and tissues after weaning. One first experiment tested the influence of the vitamin E supplementation source (natural form in water v. the synthetic form in feed) and dose administered to piglets and/or sows on serum α-tocopherol concentration, α-tocopherol stereoisomer accumulation, antioxidant capacity and immune response of weaned piglets. A second experiment studied the effect of sow source and dose vitamin E supplementation on some of these parameters in piglets. Oral supplementation to sows with natural vitamin E as a micellized form (d-α-tocopherol) at the lowest dose produced a similar concentration of α-tocopherol in serum at days 2, 14 and 28 postpartum to those supplemented with threefold higher dose of the synthetic form in feed. At day 39 of age, neither piglet supplementation source nor dose significantly affected α-tocopherol accumulation in the serum, muscle, subcutaneous fat or liver. Those piglets from sows supplemented with the micellized alcohol form had higher RRR-α-tocopherol stereoisomers (P<0.001) and lower (P<0.001) RRS- RSS- and RSR-α-tocopherol, at day 39 of age than those from sows supplemented with the synthetic form. A predominant importance of sow over piglet vitamin E supplementation was observed on stereoisomer distribution in piglets. Low doses of oral natural vitamin E supplementation to sows or piglets did not increase the oxidative stress of piglets when compared with the use of the synthetic form in feed. Immunoglobulin levels in piglet serum at day 39 were not affected by natural vitamin E supplementation at low doses in drinking water of piglets or sows when compared with the synthetic form in feed. IgA tended to be higher (P=0.145) at day 39 in piglets supplemented with natural vitamin E when compared with those supplemented with the synthetic form. Low doses of oral micellized natural vitamin E supplementation to sows is an interesting feeding strategy, when compared with the use of high doses of the synthetic form in feed, because it results in similar α-tocopherol concentrations, allows a predominant –R stereoisomer distribution in piglets and also maintains their oxidative status in vivo.

Body size was estimated for 255 Greyface ewes using five linear body dimensions. On the basis of this calculated measure combined with a subjective measure of body size 50 small and 50 large ewes were selected for use in the experiment. Precise ovulation data were obtained by endoscopy and this technique allowed the ewes to be mated subsequently.

Body size did not affect the mean ovulation rate of the ewes although, at the same level of body condition, the large ewes were 25% heavier than the small ewes. The ovulation rates and the numbers of lambs born were influenced by changes in live weight and body condition. For these reasons live weight per se was not a good indicator of ovulation rate as ewe live weight was a combination of both body size and body condition. At the same live weight small ewes in improving body condition had a significantly higher ovulation rate than large ewes in reducing body condition.

The onset of the breeding season of the ewes was not affected by their body size. The mean date of onset of oestrous activity for both large and small ewes was 17 October 1972 at a latitude 55° 52′ N.

A method to obtain linear selection indexes that maximize objectives that involve average profit in one or more generations within a planning horizon based on non-linear profit functions, was derived through application of optimal control theory. The method involves simultaneous optimization of indexes for each generation in the planning horizon. Optimum linear indexes were found to be conform indexes derived from selection index theory, with economic values equal to a weighted sum of partial derivatives of the profit function at the trait means which result in each generation of the planning horizon. Numerical procedures to derive optimum indexes are presented. Methods and properties of alternative strategies for selection witli non-linear profit functions are illustrated for selection on egg weight and rate of lay in poultry. In the example, the additional benefit of selection indexes that maximize cumulative net present value of profit over a planning horizon of10 years was small relative to use of traditional selection procedures. Optimal indexes were also derived with a derivative-free non-linear programming optimizer, with identical results. The latter method also allows incorporation of additional constraints.

Possible extensions of the optimal control methodology to address other problems related to optimization of selection over multiple generations are discussed.

Monitoring animal welfare (AW) in pig farms requires both proper indicators and a feasible approach. Animal-based measures (ABMs) are well-established AW indicators. Furthermore, AW screening at the slaughterhouses could be useful for identifying problems on farm. The aim of this study was to evaluate ABMs at the slaughterhouse and, when possible, to compare these ABMs with those collected on the farm. The study was carried out in northern Italy in a commercial abattoir and in a sample of farms. Animal-based measures were recorded on pigs from 62 batches of 54 farms, during ante-mortem (n=10 085 pigs) and post-mortem (n=7952 pigs) inspections. Sixteen of 54 farms were selected to compare ABMs collected at the slaughterhouse with ABMs collected on the farm. Overall, 2295 pigs (mean pigs examined per farm 119±45) were inspected at the slaughterhouse (group S) and 420 pigs (mean pigs per farm 26±5) on the farm (group F). Non-animal-based measures were also collected at the 16 farms. Differences between groups S and F, at the animal level, were assessed by a two-tailed paired Wilcoxon–Mann–Whitney test. Differences at the site of observation level (farm and slaughterhouse) were assessed by Fisher’s exact test using a hierarchical log-linear modelling for contingency tables. The most frequent ABMs at the slaughterhouse were manure on the body (47.7%), followed by dermatitis (28.0%), white spot (25.4%) and bursitis (24.7%). Recording ABMs at the slaughterhouse and on the farm usually yielded similar results; however, there were some exceptions. In particular, significant differences were found for non-uniformity of size (P<0.05) and dermatitis (P<0.001), which were higher at the slaughterhouse than on the farm. Results of log-linear modelling underlined the effect of the farm of origin on the percentage of pigs with bursitis, manure on the body and ear injuries that were observed at the slaughterhouse. In group S, significant associations between manure on the body and insufficient presence of clean and dry areas in the corresponding farm were found (P<0.05). Although these results should be interpreted with care due to the limited sample of farms, the slaughterhouse could be a feasible site of observation of ABMs, which could then be integrated in monitoring of AW on farm. Considering the number of slaughtered batches per farm, it would be possible to repeat assessments several times throughout the year for each farm, which could help provide an index for the continuous monitoring of AW.

Crossbreeding of indigenous tropical and improved western dairy cattle breeds as tool to improve dairy cattle performance on smallholder farms has been widely advocated, criticised and yet applied. The government of Ethiopia supported this technology for decades but adoption rate is low. Constraints are documented but there is little information about farm level introduction and development of crossbreeding. A total 122 smallholders with mixed crop livestock farms and at least 8 years of successful crossbreeding were interviewed using a pre-tested questionnaire in two contexts in Amhara Regional state in north-western Ethiopia. Crossbreeding initiator was either uncoordinated government extension or a coordinated development project, also implemented with governmental support. Qualitative and quantitative data on farmers’ motivations, crossbreeding introduction, initiator support, breeding adaptation and impacts at farm level were analysed. Results show that even though motives vary between contexts the underlying reason to introduce crossbreeding was economic profit. To be able to introduce crossbreeding support of initiators (e.g. extension) and other farmers was essential. The crossbreeding introduction context had some influence. Governmental actors were the main source of support and supplier of exotic genetics but the farmer network acted as safety net filling gaps of government support. Breeding strategies focused on performance increase. A lack of basic understanding of crossbreeding has been identified. A surprising, probably biased, result was general satisfaction with initiator support and with breeding services. It was challenged by the high proportion of farmers unable to follow a breeding strategy due to insufficient bull and/or semen supply. Crossbreeding changed the smallholder production system to a high input – high output system. Except for crossbred adaptation problems, challenges were ranked context specific and influenced by the initiator. Farmers perceived crossbreeding as success and recommended it. We conclude that farmers can realize income increase with crossbreeding. The complexity of this technology, high initial investment and the need for support services and external production inputs are probable reasons why crossbreeding uptake is low. Improving the availability of semen and/or bulls must be the top priority for breeding service providers to enable farmers to follow a breeding strategy and reach a suitable and sustainable herd performance. Access to investment capital, input supply, strong technical support and market linkages are crucial for successful crossbreeding.

Horses are often stabled in individual boxes, a method that does not meet their natural needs and may cause psychical and musculoskeletal diseases. This problem is particularly evident in Iceland, where horses often spend the long winter periods in cramped boxes. The aim of this study was to analyze the suitability of a group housing system in Iceland, but the results are also applicable to horses of other regions. Eight Icelandic horses were observed in an active stable system, and their behavior and time budget were recorded. Movement and lying behavior were studied with ALT (Activity, Lying, Temperature detection) pedometers. The effect of an automatic concentrate feeding station (CFS) on the horses’ behavior was examined. In the first period of investigation, the horses were fed concentrates manually, and in the second period, they were fed with the CFS. Additional behavioral observations and a determination of social hierarchy occurred directly or by video surveillance. The physical condition of the horses was recorded by body weight (BW) measurement and body condition scoring (BCS). The results showed a significant increase between the first and second trial periods in both the activity (P < 0.001) and the lying time (P = 0.003) of the horses with use of the CFS. However, there was no significant change in BW during the first period without the CFS (P = 0.884) or during the second period with the CFS (P = 0.540). The BCS of the horses was constant at a very good level during both trial periods, and the horses showed a low level of aggression, a firm social hierarchy and behavioral synchronization. This study concludes that group housing according to the active stable principle is a welfare-friendly option for keeping horses and is a suitable alternative to conventional individual boxes.

Radio frequency identification (RFID) technology offers a real-time solution to monitor behavioral responses of individual animals to various stimuli, which provides crucial implications on farm management and animal well-being. The objectives of this study were to (1) develop and describe an ultra-high frequency radio frequency identification (UHF-RFID) system for continuously monitoring feeding and drinking behaviors of individual broilers in group settings; and (2) validate the performance of the UHF-RFID system against video analysis in determining the instantaneous bird number (IBN) and time spent (TS) at feeder and drinker. The UHF-RFID system consisted of cable-tie tags, antennas, a reader and a data acquisition (DAQ) system. The antennas generated electromagnetic fields where tags were detected and registered by the DAQ system. Electromagnetic fields of the antennas were modified to cover areas of concern (i.e. tube feeders and nipple drinkers) through a series of system evaluations and customizations including tag sensitivity test, power adjustment, radio wave shielding, and assessment of interference by add-ons (e.g. plastic wraps for protecting antennas and an empty carton box for zoning out broilers) and feed/feeder. System validation was performed in two experimental rooms, each with 60 tagged broilers. The results showed that the max reading distances of tags with an identical manufacturer’s specification were markedly different, indicating large variations in sensitivity among the tags. Desired electromagnetic fields could be achieved by adjusting the power supplied to antennas and by partially shielding antennas with customized stainless steel sheets. The protection materials and fully loaded feeder had little effect on electromagnetic fields of the antennas. The accuracies of the UHF-RFID system for determining IBN and TS were, respectively, 92.5±4.2% and 99.0±1.2% by the feeder antennas and 94.7±4.2% and 93.7±6.9% by the drinker antennas. It is concluded that the UHF-RIFD system can accurately detect and record feeding and drinking behaviors of individual broilers in group settings and thus is a useful tool for investigating impacts of resource allocations and management practices on these behaviors.

Ten Large White × Landrace boars at an initial live weight of 43 kg were given free access to two isoenergetic foods with 119 (L) and 222 (H) g crude protein (CP) per kg food as a choice, for 54 days. Six more similar boars were given access to food H only. The diet selected by the choice-fed pigs (measured as the proportion of food H per kg total food intake) changed systematically with time; the CP content of the selected diet fell from 193 in the first 7 days to 146 g CP per kg food in the last 7 days. The performance of the choicefed pigs, over the 54-day period, was as good as that of those given food H only: live-weight gain was 1101 v. 1069 g/day and food conversion efficiency 0·380 v. 0·374 g gain per g food respectively. However, the choice-feeding system allowed boars to reduce the protein content of their diet as they grew. It is suggested that it might be possible to give pigs a choice between two appropriate foods during the whole growing-fattening period instead of frequently changing the composition for their single food in order to try to meet their requirements.

This study was designed to obtain information on predicting intake and digestibility from near infrared reflectance spectroscopy (NIRS) scans of faeces in dairy cows given different diets and levels of intake. Comparisons were made between using NIRS to predict alkanes in faeces and direct calibration of NIRS for intake and digestibility. Faecal samples were obtained from 91 cows in five experiments where dry-matter intake (DMI) had been measured for individual cows. All samples were scanned by NIRS and concentrations of alkanes C32, C33 and C36 were determined in 32 samples. DMI (mean 19-4, s.d. 5-06 kg/day) was estimated with standard errors of 0-36 and 0-44 kg/day from C32 and C36 alkanes determined by gas chromatography, and with standard errors of 1-17 and 1-42 kg/day when DMI was estimated from C32 and C36 alkanes predicted by NIRS. When DMI was predicted directly by NIRS, the standard error of prediction was 0-48 kg/day (R2 = 0-97). Prediction of dry matter digestibility by NIRS was not accurate (standard error of cross validation = 0-032; R2= 0-68), probably because of the limited variation in digestibility values within the data set. It is concluded that using NIRS to predict alkane concentrations of faeces does not give accurate estimates of DMI but direct prediction of DMI by NIRS gives estimates with similar accuracy to estimates derived from the traditional alkane technique.

(1) Voluntary intake of forage was measured in 31 Scottish Blackface ewes for the last 14 weeks of pregnancy, throughout lactation, and 15 weeks subsequently. During pregnancy 15 ewes were given hay and 16 dried grass (apparent dry-matter digestibilities in vitro were 51 and 69·6% respectively). All ewes were given the same dried grass during lactation and after weaning (digestibilities 75 and 73% respectively). Body fat was estimated from tritiated water space.

(2) Pregnant ewes consumed twice as much digestible dry matter from dried grass (1028 g) as from hay (502 g). Intakes of ewes with twin and single foetuses were similar.

(3) During lactation the mean daily intakes of dried grass were 2278, 2610,2612 and 2722 g dry matter respectively, for ewes that had been given dried grass in pregnancy and had single and twin lambs, and for those that had been given hay and had singles and twins. Differences between dried grass and hay were consistently significant (P < 0·01).

(4) After weaning the intakes declined rapidly but their ranking remained similar.

(5) Lamb birth weights were affected by nutrition during pregnancy, lamb growth rates within twins or singles were not influenced by maternal nutrition during pregnancy or lactation. Differences in ewe intakes during lactation were reflected in ewe body-weight changes.

(6) For all ewes, up to 64% of the variation in intake during lactation could be related to factors prevailing before and at lambing (pregnancy diet, ewe weight and fat content) and during lactation (lamb gain and ewe weight change).

Survival data were simulated under the Weibull model in a half-sib family design, and about 50% of the records were censored. The data were analysed using the proportional hazard model (PHM) and, after transformation to survival scores, using a linear and a binary (logit) model (LIN and BIN, respectively), where the survival scores are indicators of survival during time period t given survival up to period t – 1. Correlations between estimated and true breeding values of sires (accuracies of selection) were very similar for all three models (differences were smaller than 0·3%). Daughter effects were however less accurately predicted by the LIN model, i.e.taking proper account of the distribution of the survival data yields more accurate predictions of daughter effects. The estimated variance components and regressions of true on estimated breeding values were difficult to compare for the LIN models, because estimated breeding values were expressed as additive effects on survival scores while the simulated true breeding values were expressed on the underlying scale. Also the differences in accuracy of selection between sire and animal model breeding value estimates were small, probably due to the half-sib family design of the data. To estimate breeding values for functional survival, i.e. the component of survival that is genetically independent of production (here milk yield), two methods were compared: (i) breeding values were predicted by a single-trait linear model with a phenotypic regression on milk yield; and (ii) breeding values were predicted by a two-trait linear model for survival and milk yield, and breeding values for survival corrected for milk yield were obtained by a genetic regression on the milk yield breeding value estimates. Both methods yielded very similar accuracies of selection for functional survival, and are expected to be equivalent.

Seventy high genetic merit Holstein heifers were used in two experiments to investigate (1) the effects of plane of nutrition and diet type during the pre-pubertal period and (2) the effects of plane of nutrition during the post-pubertal period on metabolic hormone concentrations, growth and milk production. In experiment 1, treatment 1 and 2 heifers were given food to achieve a live-weight gain of 0·70 and 0·95 kg/day from 3 to 10 months of age on a grass silage based diet, while treatment 3 heifers were given food to achieve 0·95 kg/day on a barley straw/concentrate diet. During the pre-pubertal period, heifers reared on treatment 1 had significantly higher growth hormone(GH) concentrations (ng/ml per 1 h) than heifers reared on treatment 2 (P < 0·01) and had significantly lower insulin concentrations than heifers reared on treatment 3 (P < 0·01). Heifers reared on treatment 1 had significantly lower insulin-like growth factor 1 (IGF-1) concentrations than those reared on treatment 3 (P < 0·01). At 10 months of age heifers reared on treatment 1 were of lower condition score (P < 0·01) than those on treatment 2 and had a smaller heart girth diameter (P < 0·01) than those on treatments 2 and 3. During the first lactation, milk yield and composition produced by the heifers was not significantly affected by treatment. In experiment 2, treatment A heifers were given, from 14 to 24 months of age, a low plane of nutrition to allow a live-weight gain of 0·65 kg/day on a grass silage and grass based diet during the winter and summer periods respectively. Treatment B heifers were kept on a high plane of nutrition to allow a live-weight gain of 0·90 kg/day on the same forage along with concentrate supplementation. During the rearing period, GH and IGF-1 concentrations were not significantly affected by treatment. Treatment A heifers weighed less before calving (P < 0·05), had a lower condition score (P < 0·01), and had a smaller heart girth diameter (P < 0·01) than those on treatment B. During the first 10 weeks of lactation, heifers on treatment A had a higher silage dry matter intake and lost less weight (P < 0·05) than those on treatment B, however, by 20 weeks of lactation these effects had disappeared. Milk yield and composition during the first lactation were not significantly affected by treatment. Overall, the findings of experiments 1 and 2 did not show any beneficial effects of higher weights at first calving in high genetic merit Holsteins and therefore indicate that accelerated growth in the pre- or post-pubertal period may not be required.

The effect of body condition at calving on ovarian follicle characteristics during post-partum anoestrus was studied in 38 suckling Blue-Grey cows with mean body-condition scores of 2·80 (s.e. 0·05) (H) or 2·35 (s.e. 0·05) (L) at calving and fed so that they maintained live weight and body condition during lactation. Cows of each level of body condition were ovariectomized at either 5 or 9 weeks after calving and follicles ≥3 mm in diameter were dissected out and incubated in a medium (Medium 199) for 2 h. Follicle incubates were assayed for progesterone, testosterone and oestradiol. L cows had fewer follicles ≥3 mm in diameter than H cows (24·1 v. 44·9; P < 0·05) at 5 weeks post partum due to a lower number of small (3 to 4 mm) follicles (12·9 v. 30·6; P < 0·05). At 9 weeks there was no effect of body condition on mean numbers of follicles (38·1 v. 40·4; P > 0·05). The proportions of healthy, intermediate and atretic follicles in all cows were 0·35, 0·20 and 0·45 respectively; these proportions were not affected by body condition or time of ovariectomy. Body condition did not affect the overall mean capacity of the cultured follicles to produce oestradiol or progesterone in vitro but testosterone production was higher in follicles from H than L cows (6406 v. 5206 pg/h; P < 0·05). However, at 9 weeks post partum a greater proportion of H than L cows had a large (>8 mm), healthy, highly oestrogenic follicle (4/8 v. 1/7; P = 0·18).

At 9 weeks post partum, the four large, healthy, oestrogen-active follicles (those secreting >250 pg/h) from H cows were approximately 11-fold more oestrogenic than the single comparable follicle from L cows (7100 v. 635 pg/h; P > 0·05). There was little difference at week 5 post partum: 3288 and 2785 pg/h (P > 0·05) for H and L cows respectively. Oestrogen-active follicles from H cows were significantly more oestrogenic at 9 than 5 weeks post partum (5807 v. 3021 pg/h; P < 0·05). The results suggest that the body condition-related reduction in the number and steroidogenic capacity of large oestrogenic follicles in post-partum cows may be associated with a reduction in LH pulsatility.

A total of 48 Duroc×(Landrace×Large White) gilts of 33.2 kg BW were used to investigate the influence of immunocastration and diet on growth performance and carcass, meat and fat quality. Four treatments were arranged factorially (2×2) with two sexes (immunocastrated gilts: IG v. entire gilts: EG) and two dietary treatments (a commercial feedstuff as control v. granulated barley as a single major ingredient) provided during the finishing period (from 103 to 126 kg BW). There were four replicates of three pigs per treatment. At the end of the trial, the IGs grew faster (P<0.05) and ate more feed (P<0.05) than the EGs. Carcasses from the IGs had thicker backfat depth than those from the EGs (P<0.01) and carried out a lower percentage of rejected carcasses (P<0.05) at slaughterhouse owing to lack of fat. Meat from the IGs tended to have higher intramuscular fat (IMF) content in the Longissimus thoracis (LT) muscle than that from the EGs (P=0.09). In addition, immunocastration increased the total saturated fatty-acid proportion in subcutaneous fat and IMF (P<0.001) and decreased the total monounsaturated fatty acid (MUFA) and total polyunsaturated fatty acid (PUFA) percentages in subcutaneous backfat (P<0.05 and P<0.001, respectively) and in IMF (P<0.01 and P=0.06, respectively). The use of a diet based on granulated barley during the finishing period had no effect on growth performance but tended to increase IMF content in the LT muscle (P<0.06), and increased MUFA (P<0.05) and decreased PUFA (P<0.01) proportions in omental fat. It is concluded that immunocastration of gilts intended for dry-cured ham industry improved some aspects of growth performance and carcass and meat quality, whereas granulated barley had scarce effect on productive traits and fatty-acid profile but tended to improve IMF content.

The effect of three protein (77, 97 and 117 g DVE (true protein digested in the small intestine) per kg dry matter (DM)) and two energy levels (7·38 and 8·03 MJ NEF (net energy for fattening) per kg DM) on the performance of Belgian White-blue double-muscled finishing bulls and on the quality of their carcasses and meat was investigated. The diet, offered ad libitum, consisted of 650 g/kg concentrates and 350 g/kg maize silage on DM basis.

No significant influence was found of the energy level on the growth rate. The low protein level reduced live-weight gain, from 370 to 501 kg (1·43 kg on average v. 2·60 and 1·66 kg daily; P < 0·02). The growth rate during the entire period (370 to 692 kg) and the live weight at slaughter were significantly influenced by the protein content.

The bulls given the high energy level lost less weight during the 20-h fasting period before slaughter. Their carcasses were classified with a higher fatness score and a better conformation. These carcasses had a higher fat content, while the proportion of bone in the carcass was lower than in the low energy groups. The cold carcass weight of the low protein groups (456 kg on average) was significantly smaller than that of the four other groups (470 kg on average). Although no differences between the six groups were found concerning the dressing proportion, this measurement was significantly influenced by the protein level (685 g/kg for low protein v. 692 for high protein). The SEUROP conformation was positively influenced by the protein and the energy level, while the fatness score was influenced only by the energy level (5·5 v. 6·0 for the low and the high energy level, respectively). Although the differences in conformation, fatness score and dressing proportion are significant, because of the small variation, the practical meaning is less important.

The metabolic response of dairy cows to high as opposed to low altitude conditions (2000 m v. 400 m above sea level) was determined. In the first experiment, four cows were subjected to a series of measurements before, during and after transport from lowland to high altitude pasture. During transport, cortisol, l-lactate and non-esterified fatty acids were significantly elevated but decreased within 1 to 3 days to initial levels. After transport, β-hydroxybutyrate and the thyroid hormones immediately increased and returned within 3 weeks to initial levels. Plasma urea increased during transport and subsequently was at an intermediate level due to the different diet. There were no direct carry-over effects of transport on metabolic traits during pasturing.

In the second experiment, three groups of six different dairy cows were either grazed in one of two consecutive years or kept inside (2nd year only). Lowland sojourn lasted for 4 weeks, and high altitude period for 8 weeks. At the end of high altitude sojourn, both outside and inside groups were found still to have significantly higher plasma cortisol values than at lowland. Thyroid hormones and ketosis related metabolites sharply increased at the start of the alpine period and were elevated for 1 to 3 weeks thereafter. According to the hormonal and metabolic profiles, the permanently housed cows did not benefit from the less adverse climatic conditions and the lower physical strain. Plasma urea closely reflected dietary changes in the ratio of nitrogen to fermentable organic matter. Plasma protein, albumin, creatinine, and liver enzyme activities were not affected by transport or high altitude sojourn in both experiments. The results indicate that the metabolic response to transport and high altitude conditions can be mostly explained by the efforts to cover the additional energy requirements. Overall the data suggest a wide but nevertheless limited ability of early-lactating cows to adapt to high altitude conditions.

Milk mineral concentration is important from both the perspective of processing milk into dairy products and its nutritive value for human consumption. Precise estimates of genetic parameters for milk mineral concentration are lacking because of the considerable resources required to collect vast phenotypes quantities. The milk concentration of calcium (Ca), potassium (K), magnesium (Mg), sodium (Na) and phosphorus (P) in the present study was quantified from mid-IR spectroscopy on 12 223 test-day records from 1717 Holstein-Friesian cows. (Co)variance components were estimated using random regressions to model both the additive genetic and within-lactation permanent environmental variances of each trait. The coefficient of genetic variation averaged across days-in-milk (DIM) was 6.93%, 3.46%, 6.55%, 5.20% and 6.68% for Ca, K, Mg, Na and P concentration, respectively; heritability estimates varied across lactation from 0.31±0.05 (5 DIM) to 0.67±0.04 (181 DIM) for Ca, from 0.18±0.03 (60 DIM) to 0.24±0.05 (305 DIM) for K, from 0.08±0.03 (15 DIM) to 0.37±0.03 (223 DIM) for Mg, from 0.16±0.03 (30 DIM) to 0.37±0.04 (305 DIM) for Na and from 0.21±0.04 (12 DIM) to 0.57±0.04 (211 DIM) for P. Genetic correlations within the same trait across different DIM were almost unity between adjacent DIM but weakened as the time interval between pairwise compared DIM lengthened; genetic correlations were weaker than 0.80 only when comparing both peripheries of the lactation. The analysis of the geometry of the additive genetic covariance matrix revealed that almost 90% of the additive genetic variation was accounted by the intercept term of the covariance functions for each trait. Milk protein concentration and mineral concentration were, in general, positively genetically correlated with each other across DIM, whereas milk fat concentration was positively genetically correlated throughout the entire lactation with Ca, K and Mg; the genetic correlation with fat concentration changed from negative to positive with Na and P at 243 DIM and 50 DIM, respectively. Genetic correlations between somatic cell score and Na ranged from 0.38±0.21 (5 DIM) to 0.79±0.18 (305 DIM). Exploitable genetic variation existed for all milk minerals, although many national breeding objectives are probably contributing to an indirect positive response to selection in milk mineral concentration.

Lambs grazing alfalfa or white clover are prone to flavour taint which can be an impediment to consumer acceptance. Here we investigated whether condensed tannin (CT)-rich sainfoin pellet supplementation of lambs grazing alfalfa influences meat sensory quality. Using three groups of 18 male Romane weaned lambs, we compared three feeding regimes: alfalfa grazing (AF), alfalfa grazing + daily supplementation with CT-rich sainfoin pellets (15 g dry matter (DM)/kg live weight, AS) and stall feeding with concentrate and grass hay indoors (SI). We also investigated the potential interest of sainfoin pellet supplementation for controlling digestive parasitism. The sainfoin pellets contained 42 g of CT/kg of DM and they represented on average 36% of the diet in AS lambs. Skatole and indole were detected in most of the AF and AS lambs, whereas in very few SI lambs. Skatole and indole concentrations in perirenal and dorsal fat were lower in the AS lambs than the AF lambs (P < 0.025 to P < 0.001), but the intensity of ‘animal’ odour and ‘animal’ flavour of the chops did not differ between both forage-grazing groups. Longissimus thoracis et lumborum muscle lightness was lower in the AF and AS lambs than the SI lambs (P < 0.001) with the other muscle colour coordinates being unaffected by the treatment and between-treatment group differences in muscle colour coordinates remaining constant throughout the 9-day display period. Subcutaneous fat colour coordinates were not influenced by the treatment. The number of individual anthelmintic drenches necessary to keep nematode faecal egg count below a threshold of 550 eggs/g of faeces was lower in the AS than the AF lambs (0.94 per lamb v. 1.63 per lamb; P < 0.001). Faecal oocyst count was lower in the AS than the AF lambs for the first measurement made 56 days after the beginning of the experiment (P < 0.001) and was not significantly different between both forage-grazing groups thereafter. The use of CT-rich sainfoin pellets to supplement lambs that are concurrently grazing alfalfa reduced fat volatile skatole and indole concentrations and delayed the onset of both helminth and coccidian infections.

In each of 2 years (years A and B), the effects of three nutritional regimes were examined using 12 cows kept at pasture for 77 days at 2000 m above sea level. Two supplement formulations (1 and 2) were designed, both equally high in readily fermentable energy (14·6 MJ metabolizable energy (ME) per kg dry matter (DM)) but differing in crude protein content (53 and 193 g/kg DM). The treatments imposed were either pasture grass alone (control groups; both seasons) or grass and supplements provided at three levels relative to energy (E) and protein (P) maintenance requirements estimated for lowland conditions. These levels were (i) 1·0 E: 0·8 P provided by 4·6 kg of supplement 1 per day in both years; (ii) 0·5 E: 0·4 P provided by 2·2 kg of supplement 1 per day in year A; (iii) 1·0 E: 2·5 P provided by 4·4 kg of supplement 2 per day in year B. Intensive measurement periods, including food intake estimation by the double alkane technique, were carried out in weeks 3, 7 and 11 on Alpine pasture. Performance data, plasma levels of indicative blood traits and body condition were additionally monitored in the cows at a lowland site for 2 weeks prior to transport. Supplementing with a high energy/low protein concentrate gave no clear benefit in milk yield, which declined proportionately by 0·33 in the 11 weeks under Alpine conditions. Provision of additional supplementary protein (supplement 2) resulted in a proportionate decline in milk yield of only 0·20 over the 11-week period. Cows exhibited high substitution ratios of 1·4 to 2·6 kg herbage DM per kg concentrate DM and cows on all treatments were estimated to consume similar amounts of ME. A combination of reduced fibre intake and lower fibre digestibility with supplementation significantly reduced milk fat contents to low levels. Energy supplementation significantly reduced plasma β-hydroxybutyrate levels. However, live-weight and body tissue loss rates (based on ultrasonic scans of subcutaneous fat layer and longissimus dorsi muscle) were equally great with and without energy supplementation but less severe with extra protein (supplement 2). Adaptation to the high Alpine conditions was achieved in all treatments as indicated by increased blood haemoglobin, accompanied by a lower plasma level of insulin-like growth factor-I. Plasma thyroid hormone levels suggested that adaptation to energy deficiency and possibly to cold was more effective with supplementary energy. Other energy-dependent blood metabolites and insulin responded similarly in all treatments to high altitude grazing. Estimated maintenance energy requirement for Alpine conditions was 0·72 times greater than lowland maintenance requirement.
