Twenty-five mature Finnish Landrace × Dorset Horn ewes, each suckling two lambs, were used to measure the effects of dietary concentration of crude protein on food intake, milk yield and changes in body composition during the first 6 weeks of lactation. Diets were complete mixes of milled hay and concentrates, and the amounts of barley and fish meal were altered to give crude protein concentrations of 116 and 143g/kg dry matter. Ten ewes were slaughtered at 5 to 7 days of lactation and the remaining ewes were slaughtered at 40 to 43 days of lactation.

The higher concentration of crude protein in the diet did not alter food intake or digestion. Milk yield was not altered in the first 3 weeks of lactation but was increased in weeks 4 and 5 (P<0·05). Production of milk protein was increased by a higher protein concentration in the diet (P<0·01) and this effect was evident from the 2nd week of lactation. Weight of chemically determined fat in the body decreased from 179 to 13-0kg from 6 to 42 days of lactation (P<0·001) for ewes on diets of both concentrations of crude protein.

It was concluded that the higher level of protein intake during early lactation increased yields of milk and milk protein. The data suggest that the energy lost from the body was used more efficiently by ewes given the diet of high, rather than low, protein content.

Genome-wide association studies for difficult-to-measure traits are generally limited by the sample size with accurate phenotypic data. The objective of this study was to utilise data on primiparous Holstein–Friesian cows from experimental farms in Ireland, the United Kingdom, the Netherlands and Sweden to identify genomic regions associated with the feed utilisation complex: fat and protein corrected milk yield (FPCM), dry matter intake (DMI), body condition score (BCS) and live-weight (LW). Phenotypic data and 37 590 single nucleotide polymorphisms (SNPs) were available on up to 1629 animals. Genetic parameters of the traits were estimated using a linear animal model with pedigree information, and univariate genome-wide association analyses were undertaken using Bayesian stochastic search variable selection performed using Gibbs sampling. The variation in the phenotypes explained by the SNPs on each chromosome was related to the size of the chromosome and was relatively consistent for each trait with the possible exceptions of BTA4 for BCS, BTA7, BTA13, BTA14, BTA18 for LW and BTA27 for DMI. For LW, BCS, DMI and FPCM, 266, 178, 206 and 254 SNPs had a Bayes factor >3, respectively. Olfactory genes and genes involved in the sensory smell process were overrepresented in a 500 kbp window around the significant SNPs. Potential candidate genes were involved with functions linked to insulin, epidermal growth factor and tryptophan.

Feed intake behavior was studied between 9 weeks of age and slaughter in a total of 36 gilts, 32 immunocastrates, 33 surgically castrated barrows and 33 boars from 36 litters. Consequences for the concentration of substances contributing to off odor of pork (skatole, indole) were evaluated. Animals were kept in groups of 12 pigs of the same sex and treatment and fed ad libitum (13.4 MJ ME, 17% CP, 1.1% lysine). Individual feed intake behavior was recorded continuously by an electronic feeder. Immunocastration was carried out with two injections of Improvac with at least 4 weeks between both injections (1st: 12 to 17 weeks of age, 2nd: 19 to 21 weeks of age). Feed intake/day increased from an average of 0.91 ± 0.02 kg/day up to 3.15 ± 0.04 kg/day before slaughter. This increase was associated with a 50% reduction in the number of meals/day (from 15.8 ± 0.44 to 7.2 ± 0.29 meals/day). The larger meal sizes resulted from an increase in both, the duration of feed intake/meal and the feed intake rate (g/min). In addition, sex and treatment differences were observed: Feed intake in boars was lower than in all other groups due to a reduction in the number of meals/day and in the time spent feeding/day. In females, time spent feeding/day was quite similar to boars, but resulted from a higher number of meals of shorter duration. Barrows had a significantly higher feed intake because of a higher number of meals/day resulting in more time spent feeding/day. The feed intake rate was similar in boars, gilts and barrows and showed an increasing trend during the study, starting from about 15 g/min up to four times the amount. Immunocastration affected feed intake behavior severely, especially the meal size increased dramatically because of higher feed intake rate, which exceeded that of all other groups by 25% at the end of the study. The number of meals/day was not influenced by immunocastration and was almost identical to that of boars. Highest skatole concentrations were measured in fat of boars, whereas indole concentrations were higher in immunocastrates than in all other groups. In gilts and barrows, skatole concentrations were related to growth rate. Additionally, the feeding rate was an important factor explaining the variability in skatole/indole concentrations in adipose tissue. The physiological mechanisms however need further clarification.

Nitrogen emissions from dairy cows can be readily decreased by lowering the dietary CP concentration. The main objective of this work was to test whether the milk protein yield reduction associated with low N intakes could be partially compensated for by modifying the dietary carbohydrate composition (CHO). The effects of CHO on digestion, milk N efficiency (milk N/N intake; MNE) and animal performance were studied in four Jersey cows fed 100% or 80% of the recommended protein requirements using a 4×4 Latin square design. Four iso-energetic diets were formulated to two different CHO sources (starch diets with starch content of 34.3% and NDF at 32.5%, and fiber diets with starch content of 5.5% and NDF at 49.1%) and two CP levels (Low=12.0% and Normal=16.5%). The apparent digestible organic matter intake (DOMI) and the protein supply (protein digestible in the small intestine; PDIE) were similar between starch and fiber diets. As planned, microbial N flow (MNF) to the duodenum, estimated from the urinary purine derivatives (PD) excretion, was similar between Low and Normal CP diets. However, the MNF and the efficiency of microbial synthesis (g of microbial N/kg apparently DOMI) were higher for starch v. fiber diets. Milk and milk N fractions (CP, true protein, non-protein N (NPN)) yield were higher for starch compared with fiber diets and for Normal v. Low CP diets. Fecal N excretion was similar across dietary treatments. Despite a higher milk N ouput with starch v. fiber diets, the CHO modified neither the urinary N excretion nor the milk urea-N (MUN) concentration. The milk protein yield relative to both N and PDIE intakes was improved with starch compared with fiber diets. Concentrations of β-hydroxybutyrate, urea and Glu increased and those of glucose and Ala decreased in plasma of cows fed starch v. fiber diets. On the other hand, plasma concentration of albumin, urea, insulin and His increased in cows fed Normal compared with Low CP diets. This study showed that decreasing the dietary CP proportion from 16.5% to 12.0% increases and decreases considerably the MNE and the urinary N excretion, respectively. Moreover, present results show that at similar digestible OM and PDIE intakes, diets rich in starch improves the MNE and could partially compensate for the negative effects of Low CP diets on milk protein yield.

An experimental herd of Large White pigs was established in 1931 and maintained as a closed population until 1992. The complete -pedigree (410 boars and 916 sows) has been analysed to measure along the succesive cohorts of breeding animals: thefounder representation and allele survival, the evolution ofcoancestry and inbreeding and the components of inbreeding due to each founder. Inferences about genetic and phenotypic parameters and effects of dam and litter inbreeding on litter size were obtained, using Bayesian techniques, from 2612 litter records. A significant mean reduction of 0·27 piglets born and 0·39 live born for each 10% of litter inbreeding was found but also evidence of variation among founder lineages in inbreeding depression. Alleles contributing to inbreeding depression were descendent from specific founder lineages.

Forty Menz rams weighing 20 to 22 kg and aged 13 to 18 months were individually offered 1·0 kg/day chopped maize stover and one of five supplements over a 70-day growth trial followed by a 10-day metabolism trial. The amounts of supplement offered were designed to supply 4·4 g nitrogen per day and with stover, sufficient nutrients to allow growth rates of 50 g/day. The control supplement, 80 g dry matter (DM) per day extracted noug (Guizotia abyssinica) meal, was compared with 194 to 212 g DM per day of fruits (pods (carpels) with seeds) of Acacia tortilis, A. albida, A. nilotica and A. sieberiana. For the control and four Acacia supplements respectively, mean growth rates were 32, 32, 21, 16, 4 (s.e.6) g/day and mean stover intakes 483, 430, 401, 347, 320 (s.e. 74) g DM per day. The low growth rates and intakes with A. sieberiana and to a lesser extent A. nilotica were probably related to their content of phenolic compounds including insoluble proanthocyanidins which may have lowered the digestibility of neutral-detergent fibre and nitrogen. A. tortilis and A. albida would appear to be of comparable nutritive value to noug meal as supplements to maize stover. Unlike noug meal Acacia fruits are widely available in rural areas of Africa. Further research is required to identify other tree species suitable for use as supplements and how to overcome the anti-nutritional factors.

Linear measurements and sample joint dissections were examined as predictors of carcass lean percentage using data from 1060 carcasses comprising 108 subgroups (nine genotypes × two sexes × two feeding regimes × three slaughter weights). The potential predictors were examined in terms of precision, cost and the stability of their regression equations.

Probed fat thickness 6·5 cm from the dorsal mid-line at the last rib (P2) was the individual measurement giving the most precise prediction (residual s.d. pooled within subgroups = 2·21 percentage units; r = −0·72). The square root transformation (P2½) gave stable regression slopes over levels of all four factors, though there were important differences in intercepts between genotypes, sexes and slaughter weights.

The precision of prediction from the lean percentage of sample joints was generally improved by including P2½ with each in multiple regression. Used in this way with current Meat and Livestock Commission costings, the ham joint offered the best compromise between cost and precision (pooled residual s.d. = 1·25 percentage units; R = 0·92). Regression slopes on each joint were stable for all factors except for those on the rump back and rib back joints which varied by feeding regime. Intercepts varied by genotypes for all joints except the ham, while intercept differences for feeding regimes were small or non-significant.

The results confirm the value of the ‘sub-sampling with regression’ procedure for predicting carcass composition.

Genetic parameters were estimated among 26 traits in British Landrace bacon pigs. The data involved 2,296 pigs from 250 boars tested at the five British national pig progeny testing stations from 1959 to 1961 inclusive. Separate analyses were performed for each sex and for the litter totals, adjustments being made to the data for differences among periods within stations and for differences in age at start of test and in weight at slaughter. The genetic parameters were estimated from the sire components in a conventional hierarchical analysis of variance.

Estimates of heritability and genetic and phenotypic correlations among the 26 traits are presented and discussed. The parameter estimates were in very good agreement with figures obtained in a previous analysis with Large White pigs. They indicate that a large part of the variation and covariation among the 26 traits is genetic in origin, and the traits involved would change in response to selection. Moreover, with regard to their concurrent improvement there were no serious antagonisms in the genetic relationships among the traits studied. There was however, evidence of an interaction of sire and sex of progeny for nine of the 26 traits.

A principal component analysis was used in an attempt to summarise the correlations among the 26 traits. The first two components gave a reasonable fit to the correlation pattern and these were associated with fat depth, measures of muscling and dressing-out percentage.

A deterministic, dynamic pig growth model is described that predicts the effects of genotype and the thermal and nutritional environments on food intake, growth and body composition of growing pigs. From the daily potential for protein gain, as determined by pig genotype and current state, the potential gains of the other chemical components, including ‘desired’ lipid gain, are calculated. Unconstrained voluntary food intake is predicted from the current protein and lipid contents of the pig, and the composition of the food, as that which is needed to permit potential growth to be achieved. The model allows compensatory lipid gain. The composition of the food is described in terms of its digestible energy content (DEC), ideal digestible crude protein content (IDCPC) and bulkiness. Both energy and protein can be limiting resources and the bulk of the food may constrain intake. The animal’s capacity for bulk is a function of its size. The thermal environment is described by the ambient temperature, wind speed, floor type and humidity and sets the maximum (HLmax) and minimum (HLmin) values possible for heat loss. A comparison with heat production (HP) determines whether the environment is hot (HP > HLmax), cold (HP < HLmin) or thermoneutral (HLmin < HP < HLmax). A constraint on intake operates in hot environments, while in cold environments, there is an extra thermal demand. If conditions are thermoneutral no further action is taken. Daily gains of each of the chemical components are calculated by partitioning energy intake between protein and lipid gains according only to the energy to protein ratio of the food. The model builds on the work of others in the literature as it allows predictions on how changes in: (i) the kind of pig; (ii) the animal’s current state, which is particularly relevant in cases of compensatory growth; (iii) the dietary composition, and; (iv) the climatic environment, affect food intake and growth, whilst maintaining simplicity and flexibility.

Seven Scottish Blackface and seven Finnish Landrace wether lambs were slaughtered over the weight range 26 to 41 kg. Total chemical fat deposition in relation to fleece-free empty body weight was found to be similar for both breeds, pooled data giving the significant relationship y = 1·28+0·46x, where y was the percentage chemical fat in the fleece-free empty body and x the fleece-free empty body weight.

Statistically significant differences in the rate of chemical fat deposition in different depots were found between breeds. The Scottish Blackface was found to deposit relatively more fat in muscular plus associated fatty tissue than the Finnish Landrace while the reverse situation occurred in respect of fat deposition in omental plus mesenteric fatty tissues and perirenal fatty tissues.

No breed differences were found in the rate of deposition of subcutaneous fat or fat in bone or in the remainder (head, skin and viscera).

Canola co-products are sources of amino acid and energy in pig feeds, but their fermentation characteristics in the pig intestine are unknown. Thus, we determined the in vitro fermentation characteristics of the canola co-products Brassica juncea solvent-extracted canola meal (JSECM), Brassica napus solvent-extracted canola meal (NSECM), B. napus expeller-pressed canola meal (NEPCM) and B. napus cold-pressed canola cake (NCPCC) in comparison with soybean meal (SBM). Samples were hydrolysed in two steps using pepsin and pancreatin. Subsequently, residues were incubated in a buffer solution with fresh pig faeces as inocula for 72 h to measure gas production. Concentration of volatile fatty acids (VFA) per gram of dry matter (DM) of feedstuff was measured in fermented solutions. Apparent ileal digestibility (AID) and apparent hindgut fermentation (AHF) of gross energy (GE) for feedstuffs were obtained from pigs fed the same feedstuffs. On DM basis, SBM, JSECM, NSECM, NEPCM and NCPCC contained 15, 19, 22, 117 and 231 g/kg ether extract; and 85, 223, 306, 208 and 176 g/kg NDF, respectively. In vitro digestibility of DM (IVDDM) of SBM (82.3%) was greater (P<0.05) than that of JSECM (68.5%), NSECM (63.4%), NEPCM (67.5%) or NCPCC (69.8%). The JSECM had greater (P<0.05) IVDDM than NSECM. The IVDDM for NSECM was lower (P<0.05) than that for NEPCM, which was lower (P<0.05) than that for NCPCC. Similarly, AID of GE was greatest for SBM followed by NCPCC, JSECM, NEPCM and then NSECM. Total VFA production for SBM (0.73 mmol/g) was lower (P<0.05) than that of JSECM (1.38 mmol/g) or NSECM (1.05 mmol/g), but not different from that of NEPCM (0.80 mmol/g) and NCPCC (0.62 mmol/g). Total VFA production of JSECM was greater (P<0.05) than that of NSECM. Total VFA production of NSECM was greater (P<0.05) than that of NEPCM or NCPCC, which differed (P<0.05). The ranking of feedstuffs for total VFA production was similar to AHF of GE. In conclusion, in vitro fermentation characteristics of canola co-products and SBM simulated their fermentation in the small and large intestine of pigs, respectively. The 30% greater VFA production for JSECM than NSECM due to lower lignified fibre of JSECM indicates that fermentation characteristics differ between canola species. The NSECM had the highest fermentability followed by NEPCM and then NCPCC, indicating that fat in canola co-products can limit their fermentability in the hindgut.

This investigation was designed to evaluate the effects of feeding either free range or in confinement using concentrated diets with the same ingredients and oil source (5.5% of olive oleins) but with different antioxidant supplementation [control diet with a basal level of α-tocopheryl acetate (control); 200 mg/kg synthetic all-rac-α-tocopheryl acetate (Eall-rac); 200 mg/kg natural RRR-α-tocopheryl-acetate (ERRR-); flavonoid extract-enriched diet (AFlav); and phenolic compound-enriched extract (APhen)] on the fatty acid composition and lipid oxidation of Iberian pig muscle longissimus dorsi. The α-tocopherol concentration was significantly higher in muscles from free-range and ERRR- pigs than in muscles from Eall-rac pigs, and γ-tocopherol was only detected in muscles from free-range pigs. Longissimus dorsi muscles from free-range pigs had a significantly lower content of saturated fatty acids and higher content of polyunsaturated fatty acids than muscles from the other five groups of pigs fed in confinement; however, no significant effect on monounsaturated fatty acids was observed. No effect of dietary antioxidant supplementation (synthetic or natural α-tocopherol, flavonoid extract, or phenol extract) on the fatty acid composition of muscles was observed. A significant influence of dietary treatment on lipid oxidation was observed after 3 (P < 0.01), and 7 and 10 (P < 0.001) days of refrigerated storage, respectively. The lowest thiobarbituric acid-reactive substances (TBARS) values were found in pork chops from the free-range and ERRR- groups, intermediate values from the Eall-rac group, followed by AFlav and APhen, while the highest TBARS values corresponded to muscles from pigs fed the control concentrate. The source of α-tocopherol had a significant effect on lipid oxidation (P < 0.05), whereas the AFlav and APhen groups had similar TBARS values.

Ninety-six entire male Large White XLandrace pigs were assigned at 13 kg to one of six dietary crude protein (P) treatments (230 g/kg (P1), 201 g/kg (P2), 178 g/kg (P3), 151 g/kg (P4), 125 g/kg (P5), 93 g/kg (P6)) and one of four temperatures (T) (no. = 4) (18°C, 22°C, 26°C, 30°C), and were given food ad libitum until slaughter weight of 30 kg. At all temperatures gut fill was a constant proportion of food intake (Fl) (1·56) but this ratio varied with different protein concentrations. Food intake increased with decreasing temperature and with decreasing protein content to a maximum rate on P4 (1·347 kg) whereafter FI declined. There was a linear decrease in average daily gain (ADG) with decreasing protein content while temperature had a significant curvilinear effect on ADG and food conversion ratio (FCR) with maximum ADG (0·680 kg/day) at 26°C. Body protein content decreased as the dietary protein concentration declined below P3 and there was a corresponding increase in lipid content. Temperature had no effect on body protein content but had a significant effect on lipid content. Similar trends occurred in the rate of protein (PR) and lipid (LR) retention with maximum PR (117·1 g/day) attained on PI, P2 and P3. Protein and temperature had a significant effect on total heat loss (THL). Maximum THL occurred in the protein treatment that resulted in pigs consuming maximum FI. The efficiency of protein utilization increased with increasing temperature but the response was dependent on the protein supply. It is concluded that on low protein diets pigs increase their Fl to maintain potential protein growth until a point is reached where the animal can no longer compensate and FI will decline. The extent of the compensation will depend on the amount of heat the animal can lose which in turn is dependent on the environmental temperature.

Equations for predicting the meat, fat and bone proportions in beef carcasses using the European Union carcass classification scores for conformation and fatness, and hindquarter composition were developed and their accuracy was tested using data from 662 cattle. The animals included bulls, steers and heifers, and comprised of Holstein–Friesian, early- and late-maturing breeds × Holstein–Friesian, early-maturing × early-maturing, late-maturing × early-maturing and genotypes with 0.75 or greater late-maturing ancestry. Bulls, heifers and steers were slaughtered at 15, 20 and 24 months of age, respectively. The diet offered before slaughter includes grass silage only, grass or maize silage plus supplementary concentrates, or concentrates offered ad libitum plus 1 kg of roughage dry matter per head daily. Following the slaughter, carcasses were classified mechanically for conformation and fatness (scale 1 to 15), and the right side of each carcass was dissected into meat, fat and bone. Carcass conformation score ranged from 4.7 to 14.4, 5.4 to 10.9 and 2.0 to 12.0 for bulls, heifers and steers, respectively; the corresponding ranges for fat score were 2.7 to 11.5, 3.2 to 11.3 and 2.8 to 13.3. Prediction equations for carcass meat, fat and bone proportions were developed using multiple regression, with carcass conformation and fat score both included as continuous independent variables. In a separate series of analyses, the independent variable in the model was the proportion of the trait under investigation (meat, fat or bone) in the hindquarter. In both analyses, interactions between the independent variables and gender were tested. The predictive ability of the developed equations was assed using cross-validation on all 662 animals. Carcass classification scores accounted for 0.73, 0.67 and 0.71 of the total variation in carcass meat, fat and bone proportions, respectively, across all 662 animals. The corresponding values using hindquarter meat, fat and bone in the model were 0.93, 0.87 and 0.89, respectively. The bias of the prediction equations when applied across all animals was not different from zero, but bias did exist among some of the genotypes of animals present. In conclusion, carcass classification scores and hindquarter composition are accurate and efficient predictors of carcass meat, fat and bone proportions.

Understanding how critical sow live-weight and back-fat depth during gestation are in ensuring optimum sow productivity is important. The objective of this study was to quantify the association between sow parity, live-weight and back-fat depth during gestation with subsequent sow reproductive performance. Records of 1058 sows and 13 827 piglets from 10 trials on two research farms between the years 2005 and 2015 were analysed. Sows ranged from parity 1 to 6 with the number of sows per parity distributed as follows: 232, 277, 180, 131, 132 and 106, respectively. Variables that were analysed included total born (TB), born alive (BA), piglet birth weight (BtWT), pre-weaning mortality (PWM), piglet wean weight (WnWT), number of piglets weaned (Wn), wean to service interval (WSI), piglets born alive in subsequent farrowing and sow lactation feed intake. Calculated variables included the within-litter CV in birth weight (LtV), pre-weaning growth rate per litter (PWG), total litter gain (TLG), lactation efficiency and litter size reared after cross-fostering. Data were analysed using linear mixed models accounting for covariance among records. Third and fourth parity sows had more (P<0.05) TB, BA and heavier BtWT compared with gilts and parity 6 sow contemporaries. Parities 2 and 3 sows weaned more (P<0.05) piglets than older sows. These piglets had heavier (P<0.05) birth weights than those from gilt litters. LtV and PWM were greater (P<0.01) in litters born to parity 5 sows than those born to younger sows. Sow live-weight and back-fat depth at service, days 25 and 50 of gestation were not associated with TB, BA, BtWT, LtV, PWG, WnWT or lactation efficiency (P>0.05). Heavier sow live-weight throughout gestation was associated with an increase in PWM (P<0.01) and reduced Wn and lactation feed intake (P<0.05). Deeper back-fat in late gestation was associated with fewer (P<0.05) BA but heavier (P<0.05) BtWT, whereas deeper back-fat depth throughout gestation was associated with reduced (P<0.01) lactation feed intake. Sow back-fat depth was not associated with LtV, PWG, TLG, WSI or piglets born alive in subsequent farrowing (P>0.05). In conclusion, this study showed that sow parity, live-weight and back-fat depth can be used as indicators of reproductive performance. In addition, this study also provides validation for future development of a benchmarking tool to monitor and improve the productivity of modern sow herd.

In beef cattle, feeding behaviour and activity are associated with feed efficiency and methane (CH4) emissions. This study aimed to understand the underlying traits responsible for the contribution of cattle behaviour to individual differences in feed efficiency, performance and CH4 emissions. A total of 84 steers (530±114 kg BW) of two different breeds (crossbreed Charolais and Luing) were used. The experiment was a 2×2×3 factorial design with breed, basal diets (concentrate v. mixed) and dietary treatments (no additive, calcium nitrate or rapeseed cake) as the main factors. The individual dry matter intake (DMI; kg) was recorded daily and the BW was measured weekly over a 56-day period. Ultrasound fat depth was measured on day 56. Based on the previous data, the indexes average daily gain, food conversion and residual feed intake (RFI) were calculated. The frequency of meals, the duration per visit and the time spent feeding per day were taken as feeding behaviour measures. Daily activity was measured using the number of steps, the number of standing bouts and the time standing per day. Agonistic interactions (including the number of contacts, aggressive interactions, and displacements per day) between steers at the feeders were assessed as indicators of dominance. Temperament was assessed using the crush score test (which measures restlessness when restrained) and the flight speed on release from restraint. Statistical analysis was performed using multivariate regression models. Steers that spent more time eating showed better feed efficiency (P=0.039), which can be due to greater secretion of saliva. Feeding time was longer with the mixed diet (P<0.001), Luings (P=0.009) and dominant steers (P=0.032). Higher activity (more steps) in the pen was associated with poorer RFI, possibly because of higher energy expenditure for muscle activity. Frequent meals contributed to a reduction in CH4 emissions per kg DMI. The meal frequency was higher with a mixed diet (P<0.001) and increased in more temperamental (P=0.003) and dominant (P=0.017) steers. In addition, feed intake was lower (P=0.032) in more temperamental steers. This study reveals that efficiency increases with a longer feeding time and CH4 emissions decrease with more frequent meals. As dominant steers eat more frequently and for longer, a reduction in competition at the feeder would improve both feed efficiency and CH4 emissions. Feed efficiency can also be improved through a reduction in activity. Selection for calmer cattle would reduce activity and increase feed intake, which may improve feed efficiency and promote growth, respectively.

Red clover and fish oil (FO) are known to alter ruminal lipid biohydrogenation leading to an increase in the polyunsaturated fatty acid (PUFA) and conjugated linoleic acid (CLA) content of ruminant-derived foods, respectively. The potential to exploit these beneficial effects were examined using eight Hereford × Friesian steers fitted with rumen and duodenal cannulae. Treatments consisted of grass silage or red clover silage fed at 90% of ad libitum intake and FO supplementation at 0, 10, 20 or 30 g/kg diet dry matter (DM). The experiment was conducted with two animals per FO level and treatments formed extra-period Latin squares. Flows of fatty acids at the duodenum were assessed using ytterbium acetate and chromium ethylene diamine tetra-acetic acid as indigestible markers. Intakes of DM were higher (P < 0.001) for red clover silage than grass silage (5.98 v. 5.09 kg/day). There was a linear interaction effect (P = 0.004) to FO with a reduction in DM intake in steers fed red clover silage supplemented with 30 g FO/kg diet DM. Apparent ruminal biohydrogenation of C18:2n-6 and C18:3n-3 were lower (P < 0.001) for red clover silage than grass silage (0.83 and 0.79 v. 0.87 and 0.87, respectively), whilst FO increased the extent of biohydrogenation on both diets. Ruminal biohydrogenation of C20:5n-3 and C22:6n-3 was extensive on both silage diets, averaging 0.94 and 0.97, respectively. Inclusion of FO in the diet enhanced the flow of total CLA leaving the rumen with an average across silages of 0.22, 0.31, 0.41 and 0.44 g/day for 0, 10, 20 or 30 g FO/kg, respectively, with a linear interaction effect between the two silages (P = 0.03). FO also showed a dose-dependent increase in the flow of trans-C18:1 intermediates at the duodenum from 4.6 to 15.0 g/day on grass silage and from 9.4 to 22.5 g/day for red clover silage. Concentrations of trans-C18:1 with double bonds from Δ4–16 in duodenal digesta were all elevated in response to FO in both diets, with trans-11 being the predominant isomer. FO inhibited the complete biohydrogenation of dietary PUFA on both diets, whilst red clover increased the flow of C18:2n-6 and C18:3n-3 compared with grass silage. In conclusion, supplementing red clover silage-based diets with FO represents a novel nutritional strategy for enhancing the concentrations of beneficial fatty acids in ruminant milk and meat.

Herbage from the first regrowth of perennial ryegrass based swards was direct-ensiled following treatment with either an inoculant of Lactobacillus plantarum (Ecosyl, Imperial Chemical Industries pic) at 3·0 1/t, formic acid (850 g/kg) at 2·9 1/t, or no additive (control). During harvesting, alternate loads of inoculant material were treated with an absorbent polymer (ammonium polyacrylamide) at the rate of 1 kg/t herbage and ensiled in separate 100-t capacity silos. The mean dry matter (DM) and water soluble carbohydrate concentrations of herbage used for the four treatments was 157 and 120 g/kg respectively. Lactic acid levels post ensiling increased more rapidly in inoculant-treated herbage than with the other treatments. Formic acid and inoculant-treated silages were well preserved whereas control and inoculant-plus-polymer silages were only moderately well preserved. Losses of DM during ensilage were greater with the formic acid treatment with DM recovery values of 0·78, 0·72, 0·76 and 0·73 for the control, formic acid, inoculant and inoculant-plus-polymer silages respectively. Treatment of herbage with an absorbent polymer prior to ensiling resulted in a proportional reduction in effluent volume of 0·2 whereas formic acid treatment increased effluent flow by 0·28. The silages were evaluated in a changeover design experiment with two periods each of 4 weeks duration, using 24 British Friesian dairy cows. Animals were housed in individual stalls and in addition to the treatment silages, received 5 kg/day of supplement containing 193 g crude protein per kg DM. Silage intakes were increased by proportionately 0·10, 0·14 and 0·05 respectively with the formic acid, inoculant and inoculant-plus-polymer treatments compared with the control. The increased silage intakes with the inoculant treatment were reflected in an increased milk yield of 1·1 kg milk per day whereas formic acid and inoculant-plus-polymer treatments had no significant effect, although formic acid treatment did result in a significant increase in milk fat concentration. There were no major differences between treatments in energy or nitrogen digestibility, when determined on a complete ration basis. In conclusion, a large milk yield response was obtained as a result of treatment of herbage with inoculant prior to ensiling and this resulted from increased silage and hence energy intake. Treatment with formic acid increased silage and energy intake but had no effect on milk energy output.

Although veal production is a highly standardized system, there still remains considerable variability in productivity between units. This variability might be due to the farmers working on these units, through differences in stockmanship, work attitudes or behaviour, which in turn may affect animals’ fear responses, productivity and health. A survey was conducted on 50 commercial farms affiliated to the same veal company. All units had calves housed in individual crates, a similar number of crates, and the same diets and management advice. Data were collected on: building and general farm characteristics, farmers’ backgrounds and their attitudes towards their work and calves, farmers’ behaviour with the calves, calves’ reactivity to people, and disease level of the calves. Productivity results (growth rates, food efficiency and mortality) were used to classify veal units as ‘high producing’ (no. = 24) v. ‘moderate producing’ (no. = 26). Calves were less reactive to people in units where the farmer behaved sympathetically and where there were several stockpersons working. The disease level was lower in units where the farmer had a positive attitude towards the sensitivity of the calves to contact and towards the importance of cleaning. Productivity of the veal unit was associated with the health of the calves but not with their reactivity to people.

It is suggested that the farmer can have an influence on the success of the veal unit mainly through his/her ability to control the health of the calves and that a positive attitude towards animals and towards work (specifically cleaning actions) can improve the accuracy of surveillance and care of the animals. Moreover, through his/her behaviour with the calves and his/her ability to control their health, the farmer can play an important rôle in assuring calves’ welfare.
