Residual feed intake (RFI), defined as the difference between an animal’s actual feed intake and expected feed intake over a specific period, is an inheritable character of feed conversion efficiency in dairy cows. Research has shown that a lower RFI could improve the profitability of milk production. This study explored variation in RFI by comparing the differences in body size, milk performance, feeding behavior, and serum metabolites in 29 Holstein cows in mid lactation. The cows were selected from a total of 84 animals based on their RFI following feedlot tests. Selected cows were ranked into high RFI (RFI >1 SD above the mean, n=14) and low RFI (RFI<1 SD below the mean, n=15). The low RFI cows (more efficient) consumed 1.59 kg/day less dry matter than the high RFI group (P<0.01), while they produced nearly equal 4% fat-corrected milk. The milk : feed ratio was higher for the low RFI group than for the high RFI group (P<0.05). The levels of milk protein (P<0.01), total solids (P<0.05), and nonfat solids (P<0.05) were also higher for the low RFI group, whereas milk urea nitrogen was lower (P<0.01). The daily feeding duration was shorter for the low RFI group than for the high RFI group (P<0.01). No significant differences were found in levels of glucose, β-hydroxybutyrate, prolactin, insulin, IGF-1, growth hormone or ghrelin, but the level of neuropeptide Y was higher (P<0.01) and levels of leptin and non-esterified fatty acid (P<0.05) were lower for the low RFI group than for the high RFI group. There were substantial differences between cows with different RFI, which might affect the efficiency of milk protein metabolism and fat mobilization.

Two experiments were conducted to study the effects of phytase derived from Escherichia coli (ECP) and Peniophora lycii (PLP) on performance, nutrient digestibility, and phosphorus (P) equivalency values of young pigs; and the influence of varying ratios of calcium (Ca) to total phosphorus (Ca:tP) with or without ECP on growth performance of pigs. In each experiment, 48 10-kg pigs were housed in individual pens for 28 days. Experiment 1 was designed to study the efficacy of ECP and PLP in improving growth performance and bone mineralization of young pigs given a low inorganic P (iP) diet. In the experiment, pigs were blocked by weight and sex and randomly allocated to eight dietary treatments. Each treatment had six replicates. The treatments were a positive control with adequate iP (PC); a low iP negative control (NC) diet; NC with supplemental iP in the form of monosodium phosphate added to provide 0·75 or 1·50 g iP per kg diet (as-fed basis); NC with ECP or PLP added at 500 or 1000 FTU per kg (as-fed basis; one phytase unit or FTU is defined as the quantity of enzyme required to liberate 1 μmol of iP per min, at pH 5·5, from an excess of 15 μmol/l sodium phytate at 37°C). In experiment 2, the objective was to study the effect of varying Ca:tP ratio with or without ECP on growth performance of growing pigs. Pigs (eight replicates) were blocked by weight and sex and randomly assigned to six dietary treatments in a 3×2 factorial arrangement of Ca:tP ratios at 1·2, 1·5, or 1·8; and ECP at 0 or 1000 FTU per kg (as-fed basis). In experiment 1, ECP ( P<0·001) and PLP ( P<0·05) linearly increased daily gain. There was a positive linear ( P<0·05) response to the supplementation of the NC diet with ECP or PLP in the mineralization of the third and fourth metacarpal bones. Phosphorus equivalency values for 500 FTU of ECP or PLP based on mineralization of the third metacarpal bone were 0·77 g or 0·572 g, respectively. There were linear ( P<0·001) and quadratic ( P<0·05) responses to ECP, and linear ( P<0·01) response to PLP in P digestibility. Neither iP supplementation nor either of the two phytases had significant effects on digestibility of dry matter, protein or energy. In experiment 2, reducing Ca:tP ratio linearly improved ( P<0·05) daily gain, food intake, and food efficiency in pigs regardless of phytase supplementation. There was an enzyme by Ca:tP interaction on food intake. These studies in young pigs showed that ECP and PLP were efficacious in improving the growth performance and bone mineralization and that reducing the Ca:tP ratio enhanced performance response to phytase supplementation.

Carcass measurement and dissection data for 1176 pigs were used to examine the suitability of different measurements for predicting carcass lean percentage in commercial classification and grading. Three carcass weight groups with means of 47, 72 and 93 kg, were analysed separately. Similar results were obtained and those for the 72 kg group are given in this abstract. The s.d. of percentage carcass lean in this group was 3·84. Visual conformation score, carcass length and m. longissimus depth were valueless as predictors (residual s.d. of carcass lean percentages were 3·84, 3·77 and 3·80 respectively). Fat thickness measurements taken on the exposed surface of the split carcass provided a less precise prediction (best residual s.d.=2·89) than fat measurements taken over the m. longissimus using the optical probe (best residual s.d. = 2·20). The probe measurements were taken 6·5 cm from the dorsal mid line at fixed positions along the carcass from 4/5th cervical vertebrae to the 5/6th lumbar vertebrae. Precision of prediction showed a regular pattern with highest levels at the last rib (the P2 position currently used in the Meat and Livestock Commission classification scheme) and at the 13th rib, with lower values anteriorly and posteriorly. These two measurements in multiple regression were more precise than any other pair of measurements for predicting both percentage carcass lean (residual s.d. = 2·16) and the lean percentage in individual primal joints.

The objective of this study was to determine if a moderate or high reduction of dietary CP, supplemented with indispensable amino acids (IAA), would affect growth, intestinal morphology and immunological parameters of pigs. A total of 40 barrows (initial BW=13.50±0.50 kg, 45±2 day of age) were used in a completely randomized block design, and allocated to four dietary treatments containing CP levels at 20.00%, 17.16%, 15.30% and 13.90%, respectively. Industrial AA were added to meet the IAA requirements of pigs. After 4-week feeding, blood and tissue samples were obtained from pigs. The results showed that reducing dietary CP level decreased average daily gain, plasma urea nitrogen concentration and relative organ weights of liver and pancreas (P<0.01), and increased feed conversion ratio (P<0.01). Pigs fed the 13.90% CP diet had significantly lower growth performance than that of pigs fed higher CP at 20.00%, 17.16% or 15.30%. Moreover, reducing dietary CP level decreased villous height in duodenum (P<0.01) and crypt depth in duodenum, jejunum and ileum (P<0.01). The reduction in the dietary CP level increased plasma concentrations of methionine, alanine (P<0.01) and lysine (P<0.05), and decreased arginine (P<0.05). Intriguingly, reducing dietary CP level from 20.00% to 13.90% resulted in a significant decrease in plasma concentration of IgG (P<0.05), percentage of CD3+T cells of the peripheral blood (P<0.01), also down-regulated the mRNA abundance of innate immunity-related genes on toll-like receptor 4, myeloid differentiation factor 88 (P<0.01) and nuclear factor kappa B (P<0.05) in the ileum. These results indicate that reducing dietary CP level from 20.00% to 15.30%, supplemented with IAA, had no significant effect on growth performance and had a limited effect on immunological parameters. However, a further reduction of dietary CP level up to 13.90% would lead to poor growth performance and organ development, associated with the modifications of intestinal morphology and immune function.

The aquaculture industry depends upon the development of sustainable protein sources to replace fishmeal (FM) in aquafeeds and the products derived from soybeans are some of the most studied plant feedstuffs. A key area of investigation for continuing to improve modern aquafeeds includes the evaluation of varying proportions and combinations of plant ingredients to identify mixtures that are more efficiently utilized by the fish. This study investigated the effects of increasing soybean meal (SBM) by replacing a mix of plant ingredients in low FM (20%) diets on growth, blood biochemistry profile and gut histology on European sea bass. Five isonitrogenous and isolipidic experimental diets were formulated: four diets containing increasing SBM levels (0, 10, 20 and 30%; 0SBM, 10SBM, 20SBM and 30SBM, respectively) with a low content of FM (20%) and one control diet (0% SBM; 35% FM). Diets containing SBM brought to comparable performance and protein utilization, while 0SBM had negative impact on feed conversion rate and protein utilization. Blood parameters suggested an optimal nutritional status under all feeding treatments, even though slightly decreased values were reported at increasing dietary SBM. Histology examination did not show any changes indicative of soy-induced enteritis. We can conclude that for European sea bass: (i) different blends of plant protein did not affect feed intake despite the 20% FM dietary level; (ii) the inclusion of SBM maintains optimal growth and feed utilization in low FM diets; (iii) blood biochemistry profile showed a good nutritional status under all feeding regimes; (iv) no evidence of soy-induced enteritis was reported in any group fed low FM diets. For formulation of practical diets in on-growing of European sea bass, SBM up to 30% can be successfully incorporated into feeds containing low FM inclusion.

The in situ dry matter (DM) and neutral-detergent fibre (NDF) degradability kinetics of eight forages (four grass hays and four legume hays, harvested at two different dates) were compared to assess the fitting ability of a first-order and a Gompertz model.

The Gompertz model fitted DM degradability data as well as the first-order model and differences between fitted and observed data for the two models were very small but the Gompertz model proved to be statistically superior for the NDF degradability data, especially for the early hours of incubation.

A numerical but not significant difference was observed in the estimated rapidly available fraction for DM and NDF, which zvas respectively lower (mean values 24·4 v. 27·8%) and higher (mean values 5·8 v. 1·8%) with the first-order model. More pronounced differences were observed for the estimates of total potential degradability of NDF, which were often significantly lower with the Gompertz model (average values for the eight forages 75·1 v. 72·3%;.

The sigmoidal shape of the Gompertz model was more biologically appropriate to describe the initial phases of NDF degradation and was thus applied to the cellulose and hemicellulose degradability data.

As the harvesting date progressed through the season, a decrease of the immediately available fraction of DM and nitrogen was generally observed but the effect of harvesting date was not so evident for fibre fractions; the differences within forages were very low. Correlation coefficients between lignin content and total potential degradability of fibre were always high (for NDF, r = −0·96; for hemicellulose r = −0·95; for cellulose r = −0·79; P < 0·001), while the acid-detergent fibre content influenced DM and nitrogen total potential degradability (r = −0·91 and −0·82, respectively).

Stress neuroendocrine systems (hypothalamic–pituitary–adrenal axis and sympathetic nervous system) were studied in 100 female pigs from each of the five main genetic lines used in Europe for pork production: Piétrain, Large White, Landrace, Duroc and Meishan. Levels of cortisol and catecholamines were measured in urine collected at the farm, after transportation to the slaughterhouse and the next morning before slaughter. With the exception of the Piétrain line that showed intermediate levels of cortisol despite its extreme leanness, a significant positive relationship was found between basal cortisol levels and fatness, both across and within (except in Piétrain and Duroc) lines. Basal cortisol levels were 2.46-fold higher in Meishan (20.46 ng/mg creatinine) than in Large White pigs (8.30 ng/mg creatinine), the two extreme breeds. Post-transportation levels were highest but proportional to basal levels, suggesting that the adrenal reactivity to adrenocorticotropic hormone is a major source of variability between lines. Levels of catecholamines were less variable between lines but correlated also with fatness, partlyviapartial correlations with cortisol levels. In serum collected at exsanguination, creatine kinase activity was correlated with muscularity across the five breeds. However, this was due to a much larger activity than expected in Piétrain pigs, although all animals were negative for the allele of the ryanodine receptor gene responsible for stress sensitivity. Serum glucose levels were inversely related to fatness. These data show that the differences between breeds or lines can be utilised by cross-breeding and that this can lead to changes in stress hormones and in turn to some degree of changes in carcass traits.

The objectives of the experiment were to evaluate growth and carcass characteristics, organ weight, meat quality and intramuscular fatty acid (FA) and amino acid composition between the Chinese indigenous pig breed Dahe and the crossbred Dawu. The Dahe pigs had lower average daily gain (P < 0.001) and a higher feed conversion ratio (P < 0.001) compared with the Dawu pigs. The Dahe pigs contained less lean meat percentage (P < 0.001) and more carcass fat percentage (P < 0.001) compared with the Dawu pigs. For organ weight, the Dahe pigs had lower relative heart weight and small intestine weight, respectively, compared with that of the Dawu pigs (P < 0.001). In addition, the Dahe pigs showed higher pH values (at 45 min and 24 h, P < 0.001 and P < 0.001, respectively), higher Marbling score (P < 0.05), lower Minolta L values (at 45 min and 24 h, P < 0.001 and P < 0.05, respectively) and lower muscle fiber area (P < 0.05) than did the Dawu pigs. C18:1, C16:0, C18:0 and C18:2 were the main FAs and nine essential amino acids were found in the Longissimus dorsi of the two breeds.

Although the effects of pig genotype on total-tract apparent digestibility (TTAD) have been widely reported in the literature, there is controversial information on the digestive capacity of indigenous breeds compared with lean-type pigs. The strategy of this study was to test the effects of pig genotype and crude protein (CP) supply on performance, digestive utilization of nutrients, relative organ weight and morphometric analysis of the small intestine. Thirty-eight Iberian (IB) and Landrace × Large White (LD) pigs were used. Three pigs per genotype were slaughtered at approximately 15 kg BW. The remaining pigs were fed one of two diets differing in CP content (13% or 17% as fed) using a pair-fed procedure. Feeding level was restricted at 0.8 × ad libitum of IB pigs. Nutrient digestibility and nitrogen (N) balance trials were performed at 30 and 80 kg BW. Four pigs per dietary treatment and genotype were slaughtered at approximately 50 and 115 kg BW. The gastrointestinal tract and the rest of the visceral organs were weighed and samples of the small intestine were taken to carry out histological and histometrical studies. Daily gain and gain-to-feed ratio were higher in LD than in IB pigs during the fattening and growing–fattening periods (P < 0.01). N TTAD was significantly higher for LD pigs at 30 kg BW (P < 0.05), whereas at 80 kg BW we observed greater values for digestibility of organic matter and energy in IB pigs (averaging 1.5%, P < 0.01). Both N retention (NR) and efficiency of NR were increased in LD pigs at 30 and 80 kg BW (30% as mean value). The proportional weight of the small intestine was greater in LD than in IB pigs at 50 and 115 kg BW. Histometry showed that IB presented a lower muscle layer thickness than LD pigs in ileum, irrespective of the BW (P < 0.05). In contrast, LD pigs showed approximately 10% higher ileal villi length and villi-to-crypt ratio than IB pigs at 115 kg BW. CP supply affected to a larger extent the small intestinal micro-anatomical structure of LD pigs at 50 kg BW. In conclusion, our results suggests that although the higher growth rate, NR and efficiency of NR observed in LD pigs might be associated with presumably more efficient structural aspects of the small intestine, the main differences between the two genotypes should be attributed to a larger extent to protein and energy utilization in tissues with consequences for the overall efficiency of energy use.

This paper investigates the genetic control of the resistance of goats to nematode parasites, and relationships between resistance and production traits. The data set comprised faecal egg counts (FECs) measured on 830 naturally challenged (predominant species Teladorsagia circumcincta), crossbred cashmere-producing goats over 5 years (1993-1997) and production traits (fibre traits and live weight) on 3100 goats from the same population in Scotland, over 11 years (1987-1997). Egg counts comprised repeated measurements (4 to 11) taken at 12 to 18 months of age and production traits, i.e. live weight and fibre traits, were measured at approximately 5 months of age. The goats for which FECs were available were subdivided into a line selected for decreased FECs, using the geometric mean FEC across the measurement period and goats not selected on the basis of FECs, acting as controls. The selected line had significantly lower FECs, compared with the control, in 4 out of 5 years (back transformed average proportional difference of 0·23). The heritability of a single FEC measurement (after cubic root transformation) was 0·17 and the heritability of the mean FEC was 0·32. The heritabilities of the fibre traits were moderate to high with the majority in excess of 0·5. The heritability of live weight was 0·22. Genetic correlations between FECs and production traits were slightly positive but not significantly different from zero. Phenotypic and environmental correlations were very close to zero with the environmental correlations always being negative. It is concluded that selection for reduced FEC is possible for goats. Benefits of such selection will be seen when animals are kept for more than 1 year of productive life.

Records were analysed on more than 75 000 calvings by 685 Holstein-Friesian bulls tested in commercial dairy herds in England and Wales. The data were collected from 1988 to 1994. The traits analysed were the degree of difficulty at calving, assessed from no difficulty to serious difficulty, calf mortality to 48 h, gestation length and a subjective assessment of calf size. Information was available for the percentage Holstein genes in the sire, dam age (heifer or mature), sex of the calf and the year and month of the calving for all records, while lactation number of the dam and the regional location of the herd were also recorded in 1993 and 1994 (14988 records). Estimates of heritability and genetic and phenotypic correlations were obtained for all traits by restricted maximum likelihood (REML) procedures using a sire model, while also fitting the effects of dam age, calf sex, year and season of calving and significant interations.

Heifers had more difficult calvings, higher calf losses and shorter gestations than mature cows while seriously difficult calvings and mortality were higher for male calves (all P < 0·05). Summer months were associated with lower incidences of difficult calvings, lower mortality and shorter gestations. Heritability estimates were 0·05 (s.e. <0·01) for calving difficulty score, 0·45 (s.e. 0·02) for gestation length, 0·02 (s.e. <0·01) for mortality and 0·08 (s.e. <0·01) for calf size score. Heritability estimates for the scored categorical and binomial (mortality) traits were also obtained using threshold model analysis. As expected, these estimates were higher than the REML estimates; 0·12 (s.e. 0.01) for calving difficulty score, 0·08 (s.e. 0·01) for mortality and 0·14 (s.e. 0·01) for calf size score. Calving difficulty score was genetically correlated with calf size score (-0.81), mortality (0.40) and gestation length (0.34) and calf size score was moderately correlated with mortality (-0.40). In all cases, the genetic correlations were stronger than the corresponding phenotypic correlations.

Sire genetic merit was predicted for calving difficulty score and the distribution of these predictions is described. Sire predictions for calving difficulty score on the underlying scale were backtransformed to predict the expected incidence of serious difficulties in future calvings.

Inappropriate floors in pig pens and slippery floor conditions may cause leg problems that reduce animal welfare. Therefore the objectives of the present study were to characterise the walk of pigs on dry concrete solid floor, to evaluate whether pigs modify their gait according to floor condition, and to suggest a coefficient of friction (COF) that ensures safe walking on solid concrete floors for pigs. Kinematic (50 Hz video recordings in the sagittal plane) and kinetic (1 KHz force plate measuring three perpendicular ground reaction forces) data were collected from four strides of both the fore- and hindlimbs of 30 healthy pigs walking on dry, greasy and wet concrete floor with 10 pigs on each floor condition. The COF of the floor conditions were tested in a drag-test. The results from the gait analysis showed that the pigs adapted their gait to potentially slippery floors by lowering their walking speed and reducing their peak utilised COF on greasy and wet (contaminated) floors compared with dry floors. Moreover, the pigs shortened their progression length and prolonged their stance phase duration on greasy floor compared with dry and wet floors. Thus the greasy floor appeared the most slippery condition to the pigs, whereas the wet floor was intermediate to the other two conditions. The pigs walked with a four-beat gait, and the limbs differed biomechanically, as the forelimbs carried more load, received higher peak vertical forces and had longer lasting stance phases than did the hindlimbs. The utilised COF from the gait analysis indicated that a high floor COF (>0.63) is needed to prevent pigs from slipping and thus to ensure safe walking on dry concrete floors.

A study was carried out involving 721 pigs, comprising boars and gilts, with either 0, 0.25 , or 0.50 Duroc inclusion level, which were produced by mating Large White boars with Large White × British Landrace sows, Large White boars with Duroc × (Large White × British Landrace) sows, or Duroc boars with Large White × British Landrace sows, respectively. Animals were reared on one of seven different feeding regimens from 30 to 90 kg live weight. Tissue growth rates were determined using a triple sampling procedure based on a combination of full-side and ham joint dissection on subsamples of pigs (127 and 366 pigs, respectively) and P2 backfat thickness on the remainder. Initial body composition was determined at 30 kg on subsamples of the three genotypes. Daily food intakes increased with increasing Duroc inclusion but live-weight gains were similar for the three genotypes. Lean and fat growth rates and food conversion ratios were greatest for the 0·50 Duroc group, although the genotype differences were small. Killing-out proportions and P2 fat depths were higher for the 0.25 and 0·50 Duroc groups. The proportion of lean in the carcass was lower (P < 0·01) for 0·50 Duroc pigs. Japanese colour scores and EEL reflectance indicated that the longissimus muscle was darker for the 0·25 and 0·50 Duroc genotypes. Subcutaneous fat firmness scores and penetrometer readings taken in the mid back indicated softer fat for the 0 Duroc group. Intramuscular fat levels increased (P < 0·01) with increasing Duroc inclusion (10.4, 11.2, and 18·2 g/kg for the 0, 0.25, and 0.50 groups respectively). Cooked longissimus from pigs with 0·50 Duroc had a lower shear force and was judged to have a stronger pork odour and to be more tender and acceptable than that from the 0 Duroc group. The 0.25 Duroc group showed a small improvement in tenderness but a weaker pork odour and similar overall acceptability compared with the 0 Duroc group. This study suggests that the use of the Duroc in crossing systems in the United Kingdom will have limited impact on growth performance but that 0·50 Duroc inclusion will result in fatter carcasses, higher intramuscular fat levels and improved eating quality.

Today, different analytical methods are used by different laboratories to quantify androstenone in fat tissue. This study shows the comparison of methods used routinely in different laboratories for androstenone quantification: Time-resolved fluoroimmunoassay in Norwegian School of Veterinary Science (NSVS; Norway), gas chromatography coupled to mass spectrometry in Co-operative Central Laboratory (CCL; The Netherlands) and in Institut de Recerca i Tecnologia Agroalimentàries (IRTA; Spain), and high-pressure liquid chromatography in Agroscope Liebefeld-Posieux Research Station (ALP; Switzerland). In a first trial, a set of adipose tissue (AT) samples from 53 entire males was sent to CCL, IRTA and NSVS for determination of androstenone concentration. The average androstenone concentration (s.d.) was 2.47 (2.10) μg/g at NSVS, 1.31 (0.98) μg/g at CCL and 0.62 (0.52) μg/g at IRTA. Despite the large differences in absolute values, inter-laboratory correlations were high, ranging from 0.82 to 0.92. A closer look showed differences in the preparation step. Indeed, different matrices were used for the analysis: pure fat at NSVS, melted fat at CCL and AT at IRTA. A second trial was organised in order to circumvent the differences in sample preparation. Back fat samples from 10 entire males were lyophilised at the ALP labortary in Switzerland and were sent to the other laboratories for androstenone concentration measurement. The average concentration (s.d.) of androstenone in the freeze-dried AT samples was 0.87 (0.52), 1.03 (0.55), 0.84 (0.46) and 0.99 (0.67) μg/g at NSVS, CCL, IRTA and ALP, respectively, and the pairwise correlations between laboratories ranged from 0.92 to 0.97. Thus, this study shows the influence of the different sample preparation protocols, leading to major differences in the results, although still allowing high inter-laboratory correlations. The results further highlight the need for method standardisation and inter-laboratory ring tests for the determination of androstenone. This standardisation is especially relevant when deriving thresholds of consumer acceptance, whereas the ranking of animals for breeding purposes will be less affected due to the high correlations between methods.

Health traits are of paramount importance for economic dairy production. Improvement in liability to diseases has been made with better management practices, but genetic aspects of health traits have received less attention. Dairy producers in Canada have been recording eight health traits (mastitis (MAST), lameness (LAME), cystic ovarian disease (COD), left displaced abomasum (LDA), ketosis (KET), metritis (MET), milk fever (MF) and retained placenta (RP)) since April 2007. Genetic analyses of these traits were carried out in this study for the Holstein breed. Edits on herd distributions of recorded diseases were applied to the data to ensure a sufficient quality of recording. Traits were analysed either individually (MAST, LAME, COD) or were grouped according to biological similarities (LDA and KET, and MET, MF and RP) and analysed with multiple-trait models. Data included 46 104 cases of any of the above diseases. Incidence ranged from 2.3% for MF to 9.7% for MAST. MET and KET also had an incidence below 4.0%. Variance components were estimated using four different sire threshold models. The differences between models resulted from the inclusion of days at risk (DAR) and a cow effect, in addition to herd, parity and sire effects. Models were compared using mean squared error statistic. Mean squared error favoured, in general, the sire and cow within sire model with regression on DAR included. Heritabilities on the liability scale were between 0.02 (MET) and 0.21 (LDA). There was a moderate, positive genetic correlation between LDA and KET (0.58), and between MET and RP (0.79).

Genetic parameters pertaining to the same chemical characteristics of three porcine tissues, that is backfat (BF), perirenal fat (PF) and longissimus muscle (LM), were estimated in centrally tested Large White and Landrace pigs. Animals were fed ad libitum. They were slaughtered at an average BW of 99.6 kg, and samples of BF (both inner and outer layers) and LM were removed at the 13th to 14th rib level of the carcass on the day after slaughter. The data set included 2483 animals recorded for average daily gain (ADG; 35 to 100 kg), estimated carcass lean percentage (LEAN) and lean tissue growth rate (LTGR). Among these animals, around 950 pigs were recorded for lipid content (L%) and water content (W%) of BF and LM and for fatty acid composition (FAC) of BF, whereas FAC of LM was measured on 297 pigs and L%, W%, and FAC of PF on around 210 pigs. Heritabilities (h2) and genetic correlations (ra) were estimated using REML-animal model methodology. Estimates of h2 for L%, W% and FAC of BF, PF and LM were of moderate-to-high magnitude: for example 0.47 ± 0.09 for L% of LM, 0.59 ± 0.11 for W% of BF, 0.45 ± 0.08 for the ratio of polyunsaturated to saturated fatty acids (P/S) of BF, 0.61 ± 0.15 and 0.29 ± 0.10 for the coefficient of unsaturation of lipids (UNSAT, average number of double bonds of unsaturated fatty acids) of PF and LM, respectively. Genetic correlations of L% with P/S or UNSAT were strongly negative (from −0.4 to −0.9) in BF and LM, but not in PF. The ‘between-tissue’ genetic correlations for homologous compositional traits were far from being unity (e.g. ra = 0.57 ± 0.05 ‘between’ BF and PF for UNSAT). Genetic relationships between ADG and tissue compositional traits were globally weak. By contrast, genetic correlations were moderate-to-high between carcass leanness and tissue compositional traits, especially those of fat depots: for example −0.66 ± 0.14 between LEAN and L% of BF, 0.50 ± 0.07 between LEAN and UNSAT of PF, −0.44 ± 0.08 between LEAN and L% of LM, and 0.27 ± 0.03 between LEAN and UNSAT of LM. On the basis of the parameter estimates found here, breeding for higher LTGR is expected to increase the ratio of water to lipids and the unsaturation degree of lipids in subcutaneous BF and, to a lesser extent, in PF. Tissue composition and FAC of LM would be less affected.

Inclusion of rapeseed feeds in dairy cow diets has the potential to reduce milk fat saturated fatty acid (SFA) and increase cis-monounsaturated fatty acid (cis-MUFA) content, but effectiveness may depend on the form in which the rapeseed is presented. Four mid-lactation Holstein dairy cows were allocated to four maize silage-based dietary treatments according to a 4 × 4 Latin Square design, with 28-day experimental periods. Treatments consisted of a control diet (C) containing 49 g/kg dry matter (DM) of calcium salts of palm oil distillate (CPO), or 49 g/kg DM of oil supplied as whole rapeseeds (WR), rapeseeds milled with wheat (MR) or rapeseed oil (RO). Replacing CPO with rapeseed feeds had no effect (P > 0.05) on milk fat and protein content, while milk yields were higher (P < 0.05) for RO and MR compared with WR (37.1, 38.1 and 34.3 kg/day, respectively). Substituting CPO with RO or MR reduced (P < 0.05) milk fat total SFA content (69.6, 55.6, 71.7 and 61.5 g/100 g fatty acids for C, RO, WR and MR, respectively) and enhanced (P < 0.05) milk cis-9 18:1 MUFA concentrations (corresponding values 18.6, 24.3, 17.0 and 23.0 g/100 g fatty acids) compared with C and WR. Treatments RO and MR also increased (P < 0.05) milk trans-MUFA content (4.4, 6.8, 10.5 g/100 g fatty acids, C, MR and RO, respectively). A lack of significant changes in milk fat composition when replacing CPO with WR suggests limited bioavailability of fatty acids in intact rapeseeds. In conclusion, replacing a commercial palm oil-based fat supplement in the diet with milled rapeseeds or rapeseed oil represented an effective strategy to alter milk fatty acid composition with the potential to improve human health. Inclusion of processed rapeseeds offered a good compromise for reducing milk SFA and increasing cis-MUFA, whilst minimising milk trans-MUFA and negative effects on animal performance.

A method to establish the economic optimum (minimum) cost of fertility in the dairy herd is described and demonstrated. A Markov chain model is used iteratively to establish the gross margin of the herd in the long term at various levels of oestrous detection rate and under two different rebreeding strategies. These gross margins are required by the optimization methodology. Under the initial assumptions reflecting current commercial practice in the United Kingdom, gross margin was £806 per cow. This figure varied by proportionately 0·15 over the range of oestrous detection rates assumed (0·4 to 0·7) while delaying rebreeding by 20 days caused gross margin to drop by approximately 0·04. It was concluded that it is important to optimize fertility control as well as rebreeding strategy in order to establish the economic impact of fertility in the dairy herd.

The economic value of fertility was also expressed per unit of calving interval and adjusted calving interval (ACI). ACI was calculated by dividing calving interval by the proportion of cows not culled for reproductive failure. Under the assumptions made, the marginal value of calving interval at the optimum oestrous detection rate was £6·22 per day, rising to £7·44 per day if rebreeding was delayed. The corresponding figures for ACI were £1·57 per day and £1·24 per day. The range in marginal values at sub-optimal oestrous detection rates were £4·38 for calving interval and £0·61 for ACI. It was concluded that the lower variation in ACI at different levels of fertility may make it a more representative trait for inclusion in a selection index provided the necessary genetic parameters can be reliably estimated.

This study assessed the effects of dietary supplementation with extruded linseed on milk yield and composition, milk fatty acid (FA) profile and renal and hepatic metabolism of grazing goats in mid-lactation. Forty Saanen goats were divided into two isoproductive groups: one group was fed the control diet (CON) composed of hay and pelleted concentrate and the other group was supplemented with additional 180 g/day of extruded linseed (LIN; dry matter basis), which supplied 70 g/day of fat per head for 9 weeks. Animals grazed on pasture for ∼3 h/day after the first of the 2 daily milkings. Milk samples were collected weekly and analyzed for fat, protein, lactose, milk urea nitrogen (MUN) and somatic cell count. Blood samples were collected every 2 weeks and analyzed for total bilirubin, creatinine, aspartate transaminase (AST), alanine transaminase (ALT), gamma glutamyl transpeptidase, alkaline phosphatase, total protein and urea nitrogen. Milk yield was higher in the LIN than in the CON group (2369 v. 2052 g/day). LIN group had higher milk fat (37.7 v. 33.4 g/kg) and protein (30.7 v. 29.1 g/kg) concentration and lower MUN (35.0 v. 43.3 mg/dl) than CON group. Goats fed LIN had greater proportions of 18:1 trans11, 18:2 cis9trans11 and total polyunsatured fatty acids n-3 in milk fat, because of higher 18:3n-3 and 20:5n-3 FA, and lower proportions of short- and medium-chain FAs than goats fed CON. All kidney and liver function biomarkers in serum did not differ between dietary groups, except for AST and ALT, which tended to differ. Extruded linseed supplementation to grazing mid-lactating goats for 2 months can enhance the milk performance and nutritional profile of milk lipids, without altering the general hepatic and renal metabolism.

Farmers have to cope with both society and market pressures in their working practices, as well as with the enlargement of farms, off-farm opportunities and profound changes in the workforce. Expectations in terms of working duration and rhythms are increasingly expressed by farmers, meaning that working conditions and the efficiency of work organisation are critical issues nowadays. The bibliography shows that work organisation is mainly discussed by social scientists, but that livestock scientists make a significant contribution to the debate. Indeed, technical changes modify working calendars, priorities between tasks and interchangeability among workers; technical adaptations are levers to solving problems of work with equipment, buildings and the workforce. We present here French approaches to work organisation that take into account livestock management and its implications in work organisation. The ‘Work Assessment’ method represents the work organisation and evaluates work durations and time flexibility for farmers. The ATELAGE model describes and qualifies work organisation with its various regulations and time scales, integrating the other activities – economic or private – that farmers can carry on. Three principles underpin them: not all workers are interchangeable; tasks have different temporal characteristics (rhythms, postponement, etc.); and the year is a succession of work periods that differ in their daily form of organisation. We illustrate with concrete examples how these approaches contribute to helping and guiding farmers in their thoughts about change.
