A 2 × 2 factorial experiment was conducted to determine the effects of rearing environment (indoor (In) v. outdoor (Out)) and dietary zinc oxide (ZnO) supplementation (0 (−Zn) v. 3100 (+Zn) mg/kg feed) on the response of weaned pigs to a challenge infection with enterotoxigenic Escherichia coli (ETEC). Pigs from the two rearing environments were weaned onto trial diets at 4 weeks of age, moved into conventional accommodation and infected 3 days later with 109 CFU ETEC per os. Faecal ETEC shedding was determined before and after challenge. After 7 days of ETEC infection, all pigs were euthanized for gut lactic acid bacteria (LAB)-to-coliform ratio, pH and small intestine morphological measurements. Both ZnO and outdoor rearing reduced ETEC excretion, and these effects were additive. Outdoor rearing increased small intestine and colon tissue weight. ZnO increased villus height and goblet cell number in the upper small intestine, LAB-to-coliform ratio (through reduced coliforms) in the lower small intestine and proximal colon, and improved growth performance. There were interactive effects of rearing environment and ZnO supplementation on upper small intestine villus height and daily gain, as outdoor rearing conferred advantages on these variables only with ZnO dietary supplementation. Daily gains were 233, 174, 277 and 347 (s.e.m. 27.2) g/day for the In − Zn, Out − Zn, In + Zn and Out + Zn, respectively. These results suggest different, but complementary mechanisms of intestinal health and performance in outdoor-reared pigs and those offered ZnO supplemented diets. The results indicate that the benefits of ZnO to the weaned pig extend beyond suppression of ETEC and appear mediated through altered development of the small intestine mucosa.

A progeny test was designed to test whether genetic superiority for lean growth in terminal sires is expressed in their crossbred progeny when reared in a different environment. In each of 1986, 1987 and 1988, 22 Suffolk rams were chosen at the conclusion of an indoor, intensive performance testing regime on an index score that rated their propensity for lean growth, while constraining fat growth, at 150 days of age. Half of these rams had high index scores and half had low index scores. In each year, around 400 crossbred ewes were mated and the resulting lambs were finished on grass to one of three target live weights (35·5, 41·5, and 47·0 kg). Shoulder joints were dissected on 1505 lambs whilst half carcasses were dissected on 372 lambs. Double sampling techniques were then used to combine the data from the shoulder and half carcass more precisely to predict the lean, fat and bone weight and content in the carcass.

With each increment in target live weight, the carcasses were heavier and had proportionally more fat. The progeny of high index rams consistently had 144 (s.e.d. 32) g more lean, 66 (s.e.d. 12) g more bone, and 186 (s.e.d. 32) g less fat in a 19·7 (s.e. 0·5) kg carcass than progeny of low index rams, from the double sampling procedure. This improved composition reflected a correlated response to ram selection on the index. One standard deviation increase in ram index score corresponded to 51 g more lean and 64 g less fat in the 20 kg carcass of their crossbred offspring. These results show that the use of rams with high lean index scores in a crossbreeding system will produce lambs with leaner carcasses. Visual appraisals of fat and conformation both increased as the weight and, consequently, the fatness of the carcass increased. Offspring of high index rams were consistently scored as less fat than offspring of low index rams. But, at the lighter weights (35·5 and 41·5 kg), they were also scored lower in conformation — in effect, a penalty for their higher genetic merit for lean growth.

Performance in pigs is greatly reduced during periods of heat stress through a reduction in voluntary food intake (VFI). However, little information is available as to what extent growth in piglets is affected by high temperature. The objective of this study was therefore to quantify the change in VFI as affected by environmental temperature. Piglets, initially 15·5 (s.e. 1·9) kg body weight (BW), were individually housed and exposed over a period of 17 days to either 19, 21, 23, 25, 27, 29, 31, 33, or 35ºC. Animals had ad libitum access to a starter diet and water. VFI was measured daily whereas BW was determined twice weekly. Over the 17 days, daily VFI and BW gain were proportionately 0·48 and 0·51 lower at 35ºC than at 19ºC. Due to the reduced VFI at high temperatures, the average BW during the experiment was greater at low temperatures than at high temperatures. Consequently, part of the difference in VFI is directly due to temperature and part may be explained by cascading, indirect effects (i.e. the increased BW). To account for this, VFI was expressed as a power function of BW (VFI = aBWb). It was assumed that environmental temperature affected the scalar (a) through a quadratic or a ‘plateau-linear decline’ function of temperature. The VFI appeared relatively constant between 19 and 25ºC (0·096 (kg/day)/(kg BW0·83)) and decreased thereafter. Between 25 and 35ºC, VFI decreased on average by proportionately 0·28 in a 20-kg pig.

The maternal nutritional and metabolic environment is critical in determining not only the reproductive success but also the long-term health and viability of the offspring. Changes in maternal diet at defined stages of gestation coincident with different stages of development can have pronounced effects on organ and tissue function in later life. This includes adipose tissue for which differential effects are observed between brown and white adipose tissues. One early, critical window of organ development in the ruminant relates to the period covering uterine attachment, or implantation, and rapid placental growth. During this period, there is pronounced cell division within developing organelles in many fetal tissues, leading to their structural development. In sheep, a 50% global reduction in caloric intake over this specific period profoundly affects placental growth and morphology, resulting in reduced placentome weight. This occurs in conjunction with a lower capacity to inactivate maternal cortisol through the enzyme 11β-hydroxysteroid dehydrogenase type 2 in response to a decrease in maternal plasma cortisol in early gestation. The birth weight of the offspring is, however, unaffected by this dietary manipulation and, although they possess more fat, this adaptation does not persist into adulthood when they become equally obese as those born to control fed mothers. Subsequently, after birth, further changes in fat development occur which impact on both glucocorticoid action and inflammatory responses. These adaptations can include changes in the relative populations of both brown and white adipocytes for which prolactin acting through its receptor appears to have a prominent role. Earlier when in utero nutrient restricted (i.e. between early-to-mid gestation) offspring are exposed to an obesogenic postnatal environment; they exhibit an exaggerated insulin response, which is accompanied by a range of amplified and thus, adverse, physiological or metabolic responses to obesity. These types of adaptations are in marked contrast to the effect of late gestational nutrient restriction, which results in reduced fat mass at birth. As young adults, however, fat mass is increased and, although basal insulin is unaffected, these offspring are insulin resistant. In conclusion, changes in nutrient supply to either the mother and/or her fetus can have profound effects on a range of metabolically important tissues. These have the potential to either exacerbate, or protect from, the adverse effects of later obesity and accompanying complications in the resulting offspring.

Silvopastoral systems can be a good alternative for sustainable livestock production because they can provide ecosystem services and improve animal welfare. Most farm animals live in groups and the social organization and interactions between individuals have an impact on their welfare. Therefore, the objective of this study was to describe and compare the social behaviour of cattle (Bos indicus×Bos taurus) in a silvopastoral system based on a high density of leucaena (Leucaena leucocephala) combined with guinea grass (Megathyrsus maximus), star grass (Cynodon nlemfuensis) and some trees; with a monoculture system with C. nlemfuensis, in the region of Merida, Yucatán. Eight heifers in each system were observed from 0730 to 1530 h each day for 12 consecutive days during the dry season and 12 consecutive days during the rainy season. The animals followed a rotation between three paddocks, remaining 4 days in each paddock. The vegetation was characterized in the paddocks of the silvopastoral system to estimate the average percentage of shade provided. To make a comparison between systems, we used a t test with group dispersion, and Mann–Whitney tests with the frequency of affiliative and agonistic behaviours. We assessed differences in linearity and stability of dominance hierarchies using Landau’s index and Dietz R-test, respectively. The distance of cows with respect to the centroid of the group was shorter, and non-agonistic behaviours were 62% more frequent in the intensive silvopastoral system than in the monoculture one. Heifers in the silvopastoral system had a more linear and non-random dominance hierarchy in both seasons (dry season: h’=0.964; rainy season: h’=0.988), than heifers in the monoculture system (dry season: h’=0.571, rainy season: h’=0.536). The dominance hierarchy in the silvopastoral system was more stable between seasons (R-test=0.779) than in the monoculture system (R-test=0.224). Our results provide the first evidence that heifers in the silvopastoral system maintain more stable social hierarchies and express more sociopositive behaviours, suggesting that animal welfare was enhanced.

Seasonal variation in testis diameter and sperm output was studied in five Finnish Landrace (Finn) and five Tasmanian Merino (Merino) rams, together with five crossbreds between these breeds (Finn-Merino), five selected phenotypically from the Finn-Dorset breed type for high juvenile testis diameter (Finn-Dorset-High) and four for low juvenile diameter (Finn-Dorset-Low). There was marked seasonal variation in testis diameter for each of the breed types. The time of the seasonal increase in testis diameter varied among the breed types, the Merino rams starting earliest—49 days before the Finns. The characteristics of seasonal variation in testis diameter thus showed similarity with the characteristics of seasonal variation in the reproductive performance of females of the breed type. Breed differences in response to season were also demonstrated by a significant breed by season interaction for sperm production, but there were no indications of a useful association between variation in sperm production and variation in the reproductive performance of related females. Overall, differences in adult testis diameter were small relative to those among juveniles.

The aim was to examine the effect of dietary urea on yield and quality of embryos in superovulated donor ewes, and on embryo survival in recipient ewes. Ewes (25 donors and 34 recipients) were offered 1·25 kg of grass meal containing 50 g urea per ewe per day on a group basis; the remaining ewes (30 donors and 32 recipients) received 1·25 kg untreated grass meal per day. After 5 days, ewes were synchronized using a progestagen pessary for 14 days and stimulated with pregnant mare serum gonadotropin. Donors were naturally mated; recipients were detected in oestrus using vasectomized rams. On day 4 following the onset of oestrus, embryos were recovered from donors, graded morphologically and cell number counted. Two embryos of acceptable morphological grade (≥ eight cells on day 4) were then surgically transferred to recipient ewes. Recipients were slaughtered between days 34 and 36 post oestrus. The mean number of embryos recovered per ewe [3·68 (s.e. 0·41) v. 3·83 (s.e. 0·45)] was not different between untreated and urea-treated ewes, respectively. However, urea treatment of donor ewes reduced the mean cell number per embryo (10·27 (s.e. 0·27) v. 8·17 (s.e. 0·29) for untreated and urea-treated donor ewes, respectively, P < 0·001). Similarly, the percentage of embryos recovered that had ≥ 10 cells and their mean cell number was reduced following urea treatment of donor ewes (82/113 (73%) v. 39/93 (42%), P < 0·01 and 11·61 (s.e. 0·20) v. 10·41 (s.e. 0·29), P < 0·001) for untreated and urea-treated ewes, respectively. The diet offered to recipient ewes had no effect on the number of ewes confirmed pregnant (24/32 (75%) v. 28/34 (82%)) or on embryo survival following transfer (45/64 (70%) v. 51/68 (75%) for untreated and urea-treated ewes, respectively, P > 0·05). Excess nonprotein nitrogen in the form of dietary urea reduced embryo quality. However, embryo survival in recipient ewes was not affected when good quality embryos were transferred. This suggests that the deleterious effects of excess dietary urea are due to alterations to the oocyte and (or) the oviductal environment rather than changes in the uterine environment.

The aim of this study was to investigate 96 single-nucleotide polymorphisms (SNPs) from 54 candidate genes, and test the associations of the polymorphic SNPs with milk yield, composition, milk urea nitrogen (MUN) content and somatic cell score (SCS) in individual milk samples from Italian Brown Swiss cows. Milk and blood samples were collected from 1271 cows sampled once from 85 herds. Milk production, quality traits (i.e. protein, casein, fat and lactose percentages), MUN and SCS were measured for each milk sample. Genotyping was performed using a custom Illumina VeraCode GoldenGate approach. A Bayesian linear animal model that considered the effects of herd, days in milk, parity, SNP genotype and additive polygenic effect was used for the association analysis. Our results showed that 14 of the 51 polymorphic SNPs had relevant additive effects on at least one of the aforementioned traits. Polymorphisms in the glucocorticoid receptor DNA-binding factor 1 (GRLF1), prolactin receptor (PRLR) and chemokine ligand 2 (CCL2) were associated with milk yield; an SNP in the stearoyl-CoA desaturase (SCD-1) was related to fat content; SNPs in the caspase recruitment domain 15 protein (CARD15) and lipin 1 (LPIN1) affected the protein and casein contents; SNPs in growth hormone 1 (GH1), lactotransferrin (LTF) and SCD-1 were relevant for casein number; variants in beta casein (CSN2), GH1, GRLF1 and LTF affected lactose content; SNPs in beta-2 adrenergic receptor (ADRB2), serpin peptidase inhibitor (PI) and SCD-1 were associated with MUN; and SNPs in acetyl-CoA carboxylase alpha (ACACA) and signal transducer and activator of transcription 5A (STAT5A) were relevant in explaining the variation of SCS. Although further research is needed to validate these SNPs in other populations and breeds, the association between these markers and milk yield, composition, MUN and SCS could be exploited in gene-assisted selection programs for genetic improvement purposes.

Growth rates in pre-weaned calves influence their health, age at first calving and lifetime productivity. Many farms restrict milk rations to encourage solid feed intake and facilitate early weaning, but this can compromise growth. This study determined the milk feeding policies and associated growth rates on 11 commercial dairy farms in South East England, each following their normal management regime. Between 26 and 54 heifers were recruited per farm, providing a final cohort of 492, of which 71% were pure Holstein. Information on calf rearing practices (feeding, weaning, housing) and health was collected via questionnaires and weekly observations. Estimates of actual milk fed (kg solids) between 1 and 63 days were calculated for individual calves. Morphometric data (weight, height, length) were taken at weeks 1, 5 and 9 and at a median age of 7.5 months and growth rates were calculated. Most calves were fed milk replacer via automated feeders (four farms), teat feeder (one) or buckets (four) whereas two farms provided drums of acidified waste milk. Farms fed between 4 and 6 l/day of milk at mixing rates of 10% to 15%, providing 400 to 900 g/day of milk solids. Both skeletal growth rates and average daily weight gain (ADG) increased in the second month of life compared with the first: height growth from 0.17±0.14 to 0.25±0.16 cm/day and ADG from 0.48±0.25 to 0.71±0.28 kg/day. Post-weaning heifers up to 7.5 months had height increases of 0.16±0.035 cm/day and ADG of 0.83±0.16 kg/day. From 1 to 63 days 70% of calves had growth rates <0.7 kg/day and of these 19.6% gained <0.5 kg/day. Mean ADG before 9 weeks varied between farms from 0.52±0.30 to 0.75±0.20 kg/day. This was related to the amount of milk fed at both a farm and individual calf level. Increasing the total milk solids fed between 1 and 63 days from 20.4 to 46.3 kg (the 10th to 90th percentile observed) was associated with an increase of 0.11 kg/day ADG. All farms had a wide variation in growth rates despite single feeding policies. Higher circulating immunoglobulin G and IGF1 concentrations were associated with better growth, whereas low temperatures in month of birth, high scores for diarrhoea, respiratory and umbilical disease and large birth size reduced growth. Many commercially grown dairy heifers therefore experienced growth restriction in the pre-weaned period, potentially reducing their health, welfare and productivity.

Pathogenesis of pregnancy toxemia (PT) is believed to be associated with the disruption of lipid metabolism. The present study aimed to explore the underlying mechanisms of lipid metabolism disorder in the livers of ewes with PT. In total, 10 pregnant ewes were fed normally (control group) whereas another 10 were subjected to 70% level feed restriction for 15 days to establish a pathological model of PT. Results showed that, as compared with the controls, the levels of blood β-hydroxybutyrate (BHBA), non-esterified fatty acids (NEFAs) and cholesterol were greater (P<0.05) and blood glucose level was lower (P<0.05) in PT ewes. The contents of NEFAs, BHBA, cholesterol and triglyceride were higher (P<0.05) and glycerol content was lower (P<0.05) in hepatic tissues of PT ewes than those of the controls. For ewes with PT, excessive fat vacuoles were observed in liver sections stained with hematoxylin–eosin; furthermore, inner structures of hepatocytes including nuclei, mitochondria and endoplasmic reticulum were damaged seriously according to the results of transmission electron microscope. Real-time PCR data showed that compared with the controls, the expression of hepatic genes involved in fatty acid oxidation (FAO) and triglyceride synthesis (TGS) was enhanced (P<0.05) whereas that related to acetyl-CoA metabolism (ACM) was repressed (P<0.05) in PT ewes. Generally, our results showed that negative energy balance altered the expression of genes involved in FAO, ACM and TGS, further caused lipid metabolism disorder in livers, resulting in PT of ewes. Our findings may provide the molecular basis for novel therapeutic strategies against this systemic metabolic disease in sheep.

In three experiments 250 high-yielding dairy cows were fed for 18 weeks after parturition either a low-protein (LP) diet containing 150 to 160 g crude protein per kg or a high-protein (HP) diet containing 190 to 200 g crude protein per kg. In all three experiments cows were fed an average of 2·6 to 2·9 kg crude protein per day on the LP diet and 3·3 to 3·7 kg crude protein per day on the HP diet. Inclusive of maintenance, crude protein intake was, on average, 71 to 83 g crude protein per kg milk on the LP diet and 84 to 112 g crude protein per kg milk on the HP diet.

Protein intake did not affect the post-partum decrease in body weight; however, cows in their 4th and later lactations lost significantly more weight than cows in their 2nd and 3rd lactations (P < 0·01). Number of lactation did not affect the levels of rumen fluid ammonia or plasma urea, but older cows had significantly higher milk yields than younger ones. In all the experiments the first oestrus was observed, on average, between 38 and 43 days after parturition. The first insemination was carried out, on average, between 69 and 75 days after calving. Protein intake or age did not affect the intervals between parturition and the first observed oestrus or insemination. Proportional conception rates of cows fed the LP and HP diets were 0·566 and 0·431, respectively (P < 0·05). Conception rates of cows in their 2nd and 3rd lactations were 0·582 and 0·515 for cows on the LP and HP diets, respectively, whereas conception rates of cows in their 4th and later lactations were 0·526 and 0·288, respectively (P < 0·02). Within the HP-fed group the difference in conception rate between cows in their 2nd and 3rd lactations and those in their 4th and later lactations was also significant (P < 0·01). The proportion of cows pregnant 126 days after parturition was 0·786 and 0·645 for cows fed the LP and HP diets, respectively (P < 0·05). The proportion of cows in their 2nd and 3rd lactations which were pregnant, was 0·792 and 0·702 for cows of the LP and HP groups, respectively. Pregnancy rates for cows in their 4th and later lactations were 0·769 and 0·515 in the LP and HP groups, respectively (P < 0·05).

This study was conducted to investigate effects of disodium fumarate (DF) on fermentation characteristics and microbial populations in the rumen of Hu sheep fed on high-forage diets. Two complementary feeding trials were conducted. In Trial 1, six Hu sheep fitted with ruminal cannulae were randomly allocated to a 2 × 2 cross-over design involving dietary treatments of either 0 or 20 g DF daily. Total DNA was extracted from the fluid- and solid-associated rumen microbes, respectively. Numbers of 16S rDNA gene copies associated with rumen methanogens and bacteria, and 18S rDNA gene copies associated with rumen protozoa and fungi were measured using real-time PCR, and expressed as proportion of total rumen bacteria 16S rDNA. Ruminal pH decreased in the DF group compared with the control (P < 0.05). Total volatile fatty acids increased (P < 0.001), but butyrate decreased (P < 0.01). Addition of DF inhibited the growth of methanogens, protozoa, fungi and Ruminococcus flavefaciens in fluid samples. Both Ruminococcus albus and Butyrivibrio fibrisolvens populations increased (P < 0.001) in particle-associated samples. Trial 2 was conducted to investigate the adaptive response of rumen microbes to DF. Three cannulated sheep were fed on basal diet for 2 weeks and continuously for 4 weeks with supplementation of DF at a level of 20 g/day. Ruminal samples were collected every week to analyze fermentation parameters and microbial populations. No effects of DF were observed on pH, acetate and butyrate (P > 0.05). Populations of methanogens and R. flavefaciens decreased in the fluid samples (P < 0.001), whereas addition of DF stimulated the population of solid-associated Fibrobacter succinogenes. Population of R. albus increased in the 2nd to 4th week in fluid-associated samples and was threefold higher in the 4th week than control week in solid samples. Analysis of denaturing gradient gel electrophoresis fingerprints revealed that there were significant changes in rumen microbiota after adding DF. Ten of 15 clone sequences from cut-out bands appearing in both the 2nd and the 4th week were 94% to 100% similar to Prevotella-like bacteria, and four sequences showed 95% to 98% similarity to Selenomonas dianae. Another 15 sequences were obtained from bands, which appeared in the 4th week only. Thirteen of these 15 sequences showed 95% to 99% similarity to Clostridium sp., and the other two showed 95% and 100% similarity to Ruminococcus sp. In summary, the microorganisms positively responding to DF addition were the cellulolytic bacteria, R. albus, F. succinogenes and B. fibrisolvens as well as proteolytic bacteria, B. fibrisolvens, P. ruminicola and Clostridium sp.

1. An analysis has been made of the relationship between first lactation progeny test for milk yield and the survival of a bull's daughters to different ages using data for British Friesian, Ayrshire and Holstein-Friesian cows. It was found that the relative effect on survival of differences between bulls in milk yield increased by about 10% per 100 gallons for each lactation survived, e.g. for two bulls differing in heifer progeny test by 100 gallons, that with the higher figure will have 10% more daughters surviving to have a second lactation, 20% more having a third and so on. The probable effect on total length of life is 1·2 lactations per 100 gallons.

2. No evidence was found that selection on first lactation progeny test would reduce productive life in the dairy herd or even that it would increase the proportion culled for reasons other than yield in later lactations.

3. The genetic effects of culling in the first lactation on yield were in agreement with those expected from multiplying the phenotypic selection differential by the heritability. On the other hand, the selection differential in heifer yield produced by culling in later life considerably under-estimated its genetic effect. The effect of culling was to increase the genetic potential of animals for yield in the first lactation by roughly 10 gallons for each lactation survived, so that the average genetic superiority over their heifer contemporaries of cows in the herd at any time would be 30 gallons.

4. The heritability of survival to different ages was significantly different from zero in all analyses. The theoretical prediction that this would have a maximum at the fourth lactation was borne out in one sample but not in the other.

5. The genetic correlation of first lactation yield with survival was lowest in all samples for survival to have a second lactation. For survival to the third or later lactations it was higher than 0·7 in all analyses. As the genetic correlation between first and later yields in these data averaged about 0·8, this can only mean that milk yield is by far the most important genetic determinant of survival at all ages.

Attempts to lower the environmental footprint of milk production needs a sound understanding of the genetic and nutritional basis of methane (CH4) emissions from the dairy production systems. This in turn requires accurate and reliable techniques for the measurement of CH4 output from individual cows. Many of the available measurement techniques so far are either slow, expensive, labor intensive and are unsuitable for large-scale individual animal measurements. The main objectives of this study were to examine and validate a non-invasive individual cow CH4 measurement system that is based on photoacoustic IR spectroscopy (PAS) technique implemented in a portable gas analysis equipment (F10), referred to as PAS-F10 method and to estimate the magnitude of between-animal variations in CH4 output traits. Data were collected from 115 Nordic Red cows of the Minkiö experimental dairy farm, at the Natural Resources Institute Finland (Luke). Records on continuous daily measurements of CH4, milk yield, feed intake and BW measurements over 2 years period were compiled for data analysis. The daily CH4 output was calculated using carbon dioxide as a tracer method. Estimates from the non-invasive PAS-F10 technique were then tested against open-circuit indirect respiration calorimetric chamber measurements and against estimates from other widely used prediction models. Concordance analysis was used to establish agreement between the chamber and PAS-F10 methods. A linear mixed model was used for the analysis of the large continuous data. The daily CH4 output of cows was 555 l/day and ranged from 330 to 800 l/day. Dry matter intake, level of milk production, lactation stage and diurnal variation had significant effects on daily CH4 output. Estimates of the daily CH4 output from PAS-F10 technique compared relatively well with the other techniques. The concordance correlation coefficient between combined weekly CH4 output estimates of PAS-F10 and chamber was 0.84 with lower and upper confidence limits of 0.65 and 0.93, respectively. Similarly, when chamber CH4 measurements were predicted from PAS-F10 measurements, the mean of two separate weekly PAS-F10 measurements gave the lowest prediction error variance than either of the separate weekly PAS-F10 measurements alone. This suggests that every other week PAS-F10 measurements when combined would improve the estimation of CH4 output with PAS-F10 technique. The repeatability of daily CH4 output from PAS-F10 technique ranged from 0.40 to 0.46 indicating that some between-animal variation exist in CH4 output traits.

The effect of including thyme by-products from the distillation industry into the diet of pregnant ewes on the final quality of lamb meat was evaluated during meat storage in modified atmosphere. A total of 36 Segureña ewes were randomly assigned to three homogeneous groups. One group was fed a basal diet (BD) as control (C), whereas the diet of the other two groups was modified by substituting 10% (T1) and 20% (T2) of the BD with pellets made from 50% barley and 50% distilled thyme leaves (DTL). Meat spoilage (total viable, psychrotroph (PSY), moulds and yeasts, Enterobacteriaceae and lactic acid bacteria), thiobarbituric acid reactive substances (TBARS), colour (CIELab coordinates, metmyoglobin) and sensory characteristics of fresh lamb meat packed in modified atmosphere packaging (70% O2 : 30% CO2) were analysed after storage at 0, 7, 14 and 21 days. In general, the DTL-containing diet inhibited lipid and pigment oxidation in fresh lamb meat. Lower PSY counts and content of secondary oxidation product (TBARS) as a result of adding DTL to the ewe diet, whereas surface redness (a* values) was significantly higher on days 7 and 14. It can be concluded that thyme by-products from the distillation industry could be used as a source of natural antioxidant and antimicrobial in the feed for ewes.

The aim of this study was to estimate genetic parameters for longevity from Swedish crossbred sows to investigate the possibilities of selecting for this trait. Data were collected from 16 commercial piglet-producing herds, on crossbred (Landrace × Yorkshire) sows farrowing in the period 1 January 2001 to 31 December 2004. The data set with records on 10 373 sows was split into two sets according to the breed of the sire, i.e. Landrace sires (LS) or Yorkshire sires (YS). Removal hazard during productive life (PL) was analysed with survival analysis, using a sire model. Stayability from first to second litter (STAY12), stayability from first to third litter (STAY13), length of productive life (LPL) and lifetime production (LTP) were analysed with linear models, using an animal model. Females after the worst sire had 1.7 times higher (progeny of LS) and 2.4 times higher (progeny of YS) risk of removal than females after the best sire. Heritability for PL was estimated at 0.06 (LS) and 0.12 (YS). The heritabilities for the linear longevity traits ranged from 0.03 to 0.08. Genetic correlations between the four linear longevity traits were all high and positive (0.6 to 1.0), as were the phenotypic correlations (0.5 to 0.8). The correlations (Spearman rank) between the sire’s estimated breeding values for all the five longevity traits were all significant (P < 0.001) and moderate to strong in both data sets. Estimated breeding value (EBV) correlations between the five longevity traits and traits included in the present Swedish breeding evaluation (Quality Genetics (QG)) were significant in a few cases. Significant and favourable EBV correlations were found between age at first farrowing and both STAY12 and STAY13 (−0.20 and −0.31), as well as between litter weight at 3 weeks and LPL and LTP (0.13 to 0.20). Significant and unfavourable EBV correlations were found between age at 100 kg and STAY12 (0.32), as well as between the exterior conformation score from testing station and PL (−0.20). The level of the estimated heritabilities for longevity indicates that genetic improvement of sow longevity would be possible. However, overall, there was no strong indirect selection for sow longevity with the current Swedish breeding evaluation (QG).

1. The primary growth of a sward of S24 perennial ryegrass was harvested between 23 April and 9 May 1968, artificially dried and either chopped or coarsely milled. The two physical forms of grass were wafered either alone or together with 50% by dry weight of rolled, anaerobically stored barley, and given to 7-month-old, Hereford × British Friesian steers in an experiment of 2 × 2 factorial design.

2. A representative group of animals was slaughtered at the beginning of the experiment, and the remainder were individually fed ad libitum for 70 days, after which they also were slaughtered. During the feeding period digestibility was determined by total faecal collection from all the animals individually on two occasions.

3. Dry-matter intake and live-weight gain were similar on all feeds. The weight of gut contents as a percentage of final live weight was significantly lower and the carcass-weight gain was significantly higher for animals given wafers containing barley compared with those for animals given wafers of grass alone.

4. Coarse milling compared with chopping reduced the apparent digestibility of dry matter, organic matter, cellulose and energy; the addition of barley increased the digestibility of organic matter but further reduced that of cellulose.

5. The efficiency of conversion of digested energy to empty-weight or carcass gain was similar for wafers containing the two forms of forage, but the digested energy of wafers containing barley was converted to carcass weight with significantly greater efficiency than that of wafers consisting solely of grass.

6. Physical separation of the tissues of sample joints failed to show any significant differences in the proportion of fat, muscle and bone as a result of either differences in physical form or the inclusion of barley.

7. The results indicate that live-weight gain is an insufficiently sensitive measurement by which to assess the true productive potential of feeds given to ruminants in short-term experiments.

The objective was to determine the relationship of muscular and skeletal scores taken on the live animal and carcass conformation and fat scores with carcass composition and value. Bulls (n = 48) and heifers (n = 37) of 0.75 to 1.0 late-maturing breed genotypes slaughtered at 16 and 20 months of age, respectively, were used. At 8 months of age (weaning) and immediately pre-slaughter, visual muscular scores were recorded for each animal and additionally skeletal scores were recorded pre-slaughter. Carcass weight, kidney and channel fat weight, carcass conformation and fat scores, fat depth over the longissimus dorsi muscle at the 12th (bulls) or 10th (heifers) rib and carcass length were recorded post-slaughter. Each carcass was subsequently dissected into meat, fat and bone using a commercial dissection procedure. Muscular scores taken pre-slaughter showed positive correlations with killing-out rate (r ≈ 0.65), carcass meat proportion (r ≈ 0.60), value (r ≈ 0.55) and conformation score (r ≈ 0.70), and negative correlations with carcass bone (r ≈ −0.60) and fat (r ≈ −0.4) proportions. Corresponding correlations with muscular scores at weaning were lower. Correlations of skeletal scores taken pre-slaughter, carcass length and carcass weight with killing-out rate and the various carcass traits were mainly not significant. Carcass fat depth and kidney and channel fat weight were negatively correlated with carcass meat proportion and value, and positively correlated with fat proportion. Correlations of carcass conformation score were positive (r = 0.50 to 0.68) with killing-out rate, carcass meat proportion and carcass value and negative with bone (r ≈ −0.56) and fat (r ≈ −0.40) proportions. Corresponding correlations with carcass fat score were mainly negative except for carcass fat proportion (r ≈ 0.79). A one-unit (scale 1 to 15) increase in carcass conformation score increased carcass meat proportion by 8.9 and 8.1 g/kg, decreased fat proportion by 4.0 and 2.9 g/kg and decreased bone proportion by 4.9 and 5.2 g/kg in bulls and heifers, respectively. Corresponding values per unit increase in carcass fat score were −11.9 and −9.7 g/kg, 12.4 and 9.9 g/kg, and −0.5 and −0.2 g/kg. Carcass conformation and fat scores explained 0.70 and 0.55 of the total variation in meat yield for bulls and heifers, respectively. It is concluded that live animal muscular scores, and carcass conformation and fat scores, are useful indicators of carcass meat proportion and value.

Involuntary soil intake by cows on pasture can be a potential route of entry for pollutants into the food chain. Therefore, it appears necessary to know and quantify factors affecting soil intake in order to ensure the food safety in outside rearing systems. Thus, soil intake was determined in two Latin square trials with 24 and 12 lactating dairy cows. In Trial 1, the effect of pasture allowance (20 v. 35 kg dry matter (DM) above ground level/cow daily) was studied for two sward types (pure perennial ryegrass v. mixed perennial ryegrass–white clover) in spring. In Trial 2, the effect of pasture allowance (40 v. 65 kg DM above ground level/cow daily) was studied at two supplementation levels (0 or 8 kg DM of a maize silage-based supplement) in autumn. Soil intake was determined by the method based on acid-insoluble ash used as an internal marker. The daily dry soil intake ranged, between treatments, from 0.17 to 0.83 kg per cow in Trial 1 and from 0.15 to 0.85 kg per cow in Trial 2, reaching up to 1.3 kg during some periods. In both trials, soil intake increased with decreasing pasture allowance, by 0.46 and 0.15 kg in Trials 1 and 2, respectively. In Trial 1, this pasture allowance effect was greater on mixed swards than on pure ryegrass swards (0.66 v. 0.26 kg reduction of daily soil intake between medium and low pasture allowance, respectively). In Trial 2, the pasture allowance effect was similar at both supplementation levels. In Trial 2, supplemented cows ate much less soil than unsupplemented cows (0.20 v. 0.75 kg/day, respectively). Differences in soil intake between trials and treatments can be related to grazing conditions, particularly pre-grazing and post-grazing sward height, determining at least in part the time spent grazing close to the ground. A post-grazing sward height lower than 50 mm can be considered as a critical threshold. Finally, a dietary supplement and a low grazing pressure, that is, high pasture allowance increasing post-grazing sward height, would efficiently limit the risk for high level of soil intake, especially when grazing conditions are difficult. Pre-grazing and post-grazing sward heights, as well as faecal crude ash concentration appear to be simple and practical tools for evaluating the risk for critical soil intake in grazing dairy cows.

Responses in carcass composition and meat quality after seven generations of selection for components of lean growth rate were examined in a population of Large White pigs. There were four selection groups in the study, with divergent selection for lean growth rate on ad libitum (LGA) or restricted (LGS) feeding regimes, lean food conversion ratio (LFC) and daily food intake (DFI). In generations six and seven, two offspring from each of 10 sires, within each selection line, were to be allocated for half-carcass dissection and measurement of meat quality. There were 320 animals in the study, with 40 animals from each of the high and low selection lines and, within each selection line, two offspring per sire.

Responses in carcass composition were similar in the three selection groups given food ad libitum, but rates of lean and fat growth rate differed between selection lines. Intramuscular fat content was reduced with selection for high LGA and high LFC but was increased with selection for low DFI (-1·7 and -3·2 v. 2·7 (s.e.d. 0·7) mg/g), which was unexpected given the higher carcass fat content of the low DFI line, relative to the high line (249 v. 190 (s.e.d. 7) g/kg). Muscle colour was darker, as measured by trained sensory panel assessment, in selection lines which reduced the rate of fat deposition to achieve a leaner carcass (high LFC and low DFI) but there was no response in muscle colour with selection for LGA (0·4 and 0·3 v. 0·0 (s.e.d. 0·1)). Responses in muscle shear force (5·3 v. 4·4 (s.e.d. 0·4) kg) and flavour liking (4·0 v. 4·3 (s.e.d. 0·12)) were limited to the LGA and LFC selection groups, respectively. There were no significant responses in muscle moisture content, muscle pH or myofibrillar fragmentation index, nor were there any responses in meat quality with selection on LGS. Therefore, decreasing the rate of fat deposition was associated with darker meat and increasing the rate of lean growth was associated with higher shear force. There were selection strategy specific responses in the fatty acid composition of intramuscular fat, which may have contributed to the responses in eating quality.

In general, responses in meat quality were small, such that incorporation of meat quality traits in selection objectives, which are primarily focused on increasing the efficiency of lean meat production, may not be necessary. However, it would be pertinent to evaluate periodically genotypes of breeding companies for muscle quality traits.
