A group often female and five male Finnish Landrace sheep were taken to Scotland in 1962. In subsequent purebreeding for four years they and their offspring have shown average litter sizes (at birth) of 2·0, 3·0 and 3·4 for ewes aged one, two and three or more years respectively.

Body weights of breeding ewes prior to mating were on average 72, 106 and 128 lb for ewes of the three age groups.

Mean ewe fleece weights were 4·5 lb with the wide range of 1·7 to 7·1 lb due in part to some shedding of fleece wool in spring. The quality of the true wool in the undercoat was estimated at 54–56's.

In a 7-week experiment, the ability of lactating Holstein-Friesian cows to select a consistent diet from two similar foods differing in calculated metabolizable protein to energy (MP/ME) yield was investigated. The effect on diet selection of training through previous access to foods separately, was measured. Food intake was recorded with 28 computer-linked feeders. All foods were mixtures of grass silage and concentrates. In week 1, all feeders contained a standard food. In weeks 2 to 7 a low protein food (LP) and a high protein food (HP) were offered in 14 feeders each. Group CHOICE had access to both foods as a choice from week 2. Group TR1 was trained by access to one food during days 8 to 10 and to the other during days 11 to 13. Group TR2 received the same training as group TR1 during days 8 to 13 which was repeated once during days 14 to 19. After training, TR groups had access to both foods as a choice. Groups LOPRO and HIPRO had only access to LP or HP, respectively in weeks 2 to 5 and to both foods as a choice in weeks 6 and 7. In weeks 2 to 5 LOPRO COWS consumed less dry matter and produced less milk than CHOICE or HIPRO cows. After a week of adaptation, untrained CHOICE COWS selected 662 (s.e. 27) g HP per kg of intake, a choice that differed significantly (P < 0·01) from random. In weeks 4 to 7 TR cows established similar diet choice: 696 (s.e. 21) g HP per kg intake and the proportion selected was unaffected by length of training. The between-day variation in diet choice within cows was not affected by treatment. It is concluded that, under the circumstances tested, training was not required for cows to distinguish between two mixed foods with different calculated MP/ME ratios and to select proportions significantly different from random.

The main objective of this experiment was to monitor the impact of barn side and dietary crude protein (CP) on production performance, manure production and composition, and ammonia nitrogen (N) emission from a lactating dairy herd housed in a free-stall barn and managed under farm-like conditions throughout a number of months in each season of the year. The 78-cow lactating herd of the University of Wisconsin-Platteville (USA) was halved and each group was allocated to either the north or south side of the barn and either a recommended (REC) diet with 16.7 ± 1.3% CP dry matter basis (DM) or an excess (EXC) CP diet containing 1.5 units of CP above the REC diet (18.2 ± 1.5%). In 7 months between February 2004 and January 2005, total manure collection was conducted by manual scraping of the alleys and ammonia-N emission was calculated as intake N + bedding N – milk N – scraped manure N. Side of the barn (northern v. southern exposure) did not influence measurements and there was no effect of dietary CP on dry matter intake (DMI), milk, milk fat, and milk protein production, but a lower manure N concentration was observed for the group of cows fed the REC diet compared with the EXC diet (3.43% v. 3.66% of DM). Nitrogen intake was 63 g/day lower (643 v. 706 g/day), milk N was unaffected (157 g/day), manure N was 32 g/day lower (391 v. 423 g/day), and ammonia-N emission was 34 g/day lower (93 v. 127 g/day) for the group consuming the REC diet compared with the group consuming the EXC diet. There were larger variations in measured responses among months of the year than between level of dietary CP. Wet and dry manure excretions tended to be higher, but manure pH was reduced when corn silage became unavailable and the diet included additional corn grain and alfalfa silage as the only forage source. Prediction of manure N excretion for a group of cow determined as N intake – N milk was 9% higher than current prediction equations of the American Society of Agricultural Engineers. Ammonia-N loss averaged 110 g/day per lactating cow, but ranged from 64 g/day to 178 g/day with no clear seasonal pattern. There was no clear association between barn temperature, manure temperature or manure pH and ammonia-N emission; however, intake N explained 61% of the variation in ammonia-N emission.

The objective of this study was to evaluate the immunoglobulin G (IgG) absorption by Santa Ines lambs under two colostrum management systems usually used by producers. Twenty-seven Santa Ines newborn lambs received two meals of 250 ml of bovine colostrum from Holstein cows (BC group) or ovine colostrum from Santa Ines ewes (OC group) at 0 and 6 h of life. Pools of BC and OC were analyzed by radial immunodiffusion to quantify IgG. Results are expressed as least-square means and standard errors of mean (means ± s.e.m.). The concentration of IgG in bovine and ovine pools averaged 115.7 ± 20.5 and 48.1 ± 5.0 mg/ml, respectively, levels of concentration found in similar regular colostrum managements. The efficiency of IgG absorption was evaluated under two aspects, maximum apparent efficiency of absorption and total apparent efficiency of absorption (AEAmax and AEAtotal, respectively). The AEAmax was calculated taking into account the mass of IgG ingested just in the first meal of colostrum at birth and the serum IgG concentration at 6 h while the AEAtotal took into account the serum IgG concentration at 24 h of life that reflects the first colostrum offered at birth and the second meal at 6 h. The IgG and apparent efficiency of absorption results were transformed into the square root and log base 10, respectively, and were presented as geometric least-square means. In BC, lower (P < 0.05) AEAmax and AEAtotal were verified (14.2% and 15.6%, respectively), in relation to OC (23.6% and 24.4%, respectively). Serum IgG concentrations at 24 h were significantly higher (P < 0.05) in BC (31.4 mg/ml, respectively) compared with OC (22.2 mg/ml, respectively). The results in this study confirm that there is a limitation to the process of IgG absorption by the enterocytes of newborn lambs, which determined a nonlinear behavior of passive immunity acquisition. Similar values of AEAmax and AEAtotal for the two sources of colostrum reveal that the process of IgG absorption from the first and second meals during the first 6 h of life did not change and indicates that the ingestion of a second feeding of quality colostrum can enhance the acquisition of immune protection of newborn lambs.

A Bayesian threshold-liability model with Markov chain Monte Carlo techniques was used to infer genetic parameters for clinical mastitis records collected on Holstein-Friesian cows by one of the United Kingdom’s national recording schemes. Four data sets were created to investigate the effect of data sampling methods on genetic parameter estimates for first and multi-lactation cows, separately. The data sets were: (1) cows with complete first lactations only (8671 cows); (2) all cows, with first lactations whether complete or incomplete (10 967 cows); (3) cows with complete multi-lactations (32 948 records); and (4) all cows with multiple lactations whether complete or incomplete (44 268 records). A Gaussian mixed linear model with sire effects was adopted for liability. Explanatory variables included in the model varied for each data set. Analyses were conducted using Gibbs sampling and estimates were on the liability scale. Posterior means of heritability for clinical mastitis were higher for first lactations (0·11 and 0·10 for data sets 1 and 2, respectively) than for multiple lactations (0·09 and 0·07, for data sets 3 and 4, respectively). For multiple lactations, estimates of permanent environmental variance were higher for complete than incomplete lactations. Repeatability was 0·21 and 0·17 for data sets 3 and 4, respectively. This suggests the existence of effects, other than additive genetic effects, on susceptibility to mastitis that are common to all lactations. In first or multi-lactation data sets, heritability was proportionately 0·10 to 0·19 lower for data sets with all records (in which case the models had days in milk as a covariate) than for data with only complete lactation records (models without days in milk as a covariate). This suggests an effect of data sampling on genetic parameter estimates. The regression of liability on days in milk differed from zero, indicating that the probability of mastitis is higher for longer lactations, as expected. Results also indicated that a regression on days in milk should be included in a model for genetic evaluation of sires for mastitis resistance based on records in progress.

1. Two experiments each with 3 dry cows, 3 heifers and 3 calves were carried out in 1959 and 1960 under uniform continuous grazing conditions on a ryegrass-white clover sward to measure individual feed intake by the chromic oxide-faecal nitrogen method.

2. Estimates of digestibility were high (70–82% in organic matter) and there was evidence that calves selected a diet of higher digestibility than cows.

3. Mean daily estimates of organic matter intake were for cows (1300 lb. live-weight) 23·5 lb., for heifers (790 lb. live-weight) 20·8 lb. and for calves (450 lb. live-weight) 14·3 lb. Corresponding digestible organic matter intakes were 17·4, 15·3 and 11·0 lb.

4. Relationships between digestible organic matter intake and liveweight were calculated and the merits of the exponents 0·62 and 0·73 of liveweight discussed.

5. The results were compared with accepted cow equivalent standards and, regardless of the exponent chosen, agreed with the system which adopts higher values for young grazing cattle.

Ingestion of sewage sludge with soil, together with herbage containing elevated concentrations of potentially toxic elements (PTEs) might pose a risk to the human food chain through the accumulation of PTEs in edible tissues of livestock grazed on pastures which have received repeated doses of sludge. The accumulation of PTEs in tissues of animals grazed on a permanent pasture which had received repeated applications of sewage sludge between 1981 and 1994 was studied over two consecutive grazing seasons by monthly serial slaughter. Blocks of six weaned lambs were allocated at random at the start of the grazing seasons to slaughter date. Blocks of lambs were also allocated at random to an adjacent untreated pasture and to initial slaughter groups. Animals grazed continuously for two periods of 181 days and 152 days in 1994 (experiment 1) and 1995 (experiment 2), respectively. An application of sewage sludge was made to the treated site between the two experiments. The concentration of cadmium (Cd) in soil samples taken to 25 cm depth from the treated site was close to the United Kingdom statutory limit of 3 mg Cd per kg dry matter (DM) and 1·67 times the limit at the soil surface. Concentrations of other PTEs in soil were below statutory limis. The concentrations of PTEs in herbage at the treated site increased as each grazing period advanced (P < 0·05). Mean concentrations of Cd, lead (Pb), copper (Cu) and zinc (Zn) were higher (P < 0·05) in both experiments for herbage at the treated site than at the untreated site. No differences were observed in the concentrations of PTEs in muscle tissue between lambs grazed on treated or untreated pastures. The concentration of Cd in kidneys of lambs grazed on the treated pasture increased as the grazing seasons progressed from 0·19 to 0·36 mg/kg DM (P < 0·01) in experiment 1 and from 0·03 to 2·57 mg/kg DM in experiment 2 (P < 0·001). There was no measurable accumulation of Pb into kidney in either experiment. Concentrations of Cu in kidney remained similar during experiment 1 but increased during experiment 2 in lambs grazed on the treated pasture only (P < 0·05). Similar trends to those for kidney were observed for Cd in liver in both experiments. The concentrations of Pb increased in liver for lambs grazed on the treated site in experiment 1 (P < 0·01) but not in experiment 2. The concentrations of Cu in lambs grazed on the treated pasture in liver decreased (P < 0·01) in experiment 1 from 139 to 28 mg Cu per kg DM. Liver concentrations of Cu in experiment 2 increased (P < 0·01) from 63·5 to 197 mg Cu per kg DM, possibly reflecting the application of sludge to the experimental site between the two experiments. The results indicated that soil and herbage concentrations of PTEs were elevated following repeated applications of sewage sludge to grassland. The accumulation of PTEs in edible body tissues was generally low, with the greatest being of Cd and Cu in the second experiment, possibly reflecting recent application of sludge.

Female lambs were given a high energy and high protein diet in varying amounts to achieve either high (H; 220 g/day) or low (L; 110 g/day) rates of gain during two consecutive periods between 4 and 20 and 20 and 36 weeks of age. The effects on body growth and mammary gland development were compared by slaughtering an initial group of four lambs at 4 weeks of age (mean live weight 11 kg), eight L lambs (24 kg) and eight H lambs (33 kg) at 20 weeks of age, and eight LL lambs (36 kg), eight LH lambs (49 kg) and eight HL lambs (48 kg) at about 36 weeks of age.

At slaughter, a single mammary fat pad from each lamb was trimmed and weighed, and the deoxyribonucleic acid (DNA) content of the portion containing parenchyma determined. The mean weight (g) and DNA content (mg) were: 4-week-old lambs, 8·6 g, 1·5 mg; L, 14·7 g, 32·3 mg; H, 30·0 g, 25·9 mg; LL, 46·0 g, 61·2 mg; LH, 86·7 g, 91·0 mg; HL, 70·3 g, 73·0 mg respectively. Relative growth coefficients for mammary parenchyma, estimated from the increase in DNA relative to that for live weight, were 3·7 and 2·4 for L and H lambs respectively, between 4 and 20 weeks, and 1·6, 1·4 and 2·6 for LL, LH and HL lambs respectively, between 20 and 36 weeks of age.

These results are consistent with the hypothesis that a high plane of nutrition can decrease the rate of allometric growth of mammary parenchyma before puberty. However, the cessation of this growth phase was not related to the attainment of puberty, or of a specific live weight or age, but may be related to the availability of mammary fat pad tissue limiting further parenchymal development after 20 weeks of age.

Simmental × Holstein-Friesian steers were offered four forage diets. These comprised grass silage (G); proportionately 0·67 grass silage, proportionately 0·33 maize silage (GGM); 0·33 grass silage, 0·67 maize silage (MMG); maize silage (M) from 424 (s.d. = 11·5) kg to slaughter at a minimum weight of 560 kg. Forages were mixed and offered ad libitum. Steers were offered 2 kg of a concentrate daily, the concentrate being formulated such that all steers had similar crude protein intakes across dietary treatments. A sample of steers was slaughtered at the beginning of the experimental period to allow the calculation of the rate of gain of the carcass and its components. Carcass dissection of a sample of steers allowed the development of a prediction equation of carcass composition based on thoracic limb dissection of all carcasses. Forage dry matter intake and live-weight gain increased linearly as maize silage replaced grass silage in the forage mixture, resulting in improvements in food conversion ratio (all P = 0·001). Killing-out proportion increased with maize silage inclusion (P < 0·001) but fat and conformation scores did not differ significantly between diets. However, increasing maize inclusion in the diet resulted in a greater weight (P = 0·05) and proportion (P = 0·008) of fat in the carcass, and significant increases in internal fat deposition. The inclusion of maize led to a progressive increase in the daily gains of carcass (P < 0·001), and significant increases in the daily gains of both fat (P < 0·001) and lean tissue (P < 0·001). Fat colour was more yellow in cattle given diets G and GGM than diets MMG and M(P < 0·001) and colour intensity was lower on diet M than the other three diets (P < 0·001). There were no significant differences in any aspects of eating quality between diets. Therefore, maize silage has the potential to reduce the time taken for finishing beef animals to achieve slaughter weight with no apparent detrimental effects on subsequent meat quality.

The aim of this study was to develop a method for scoring osteochondrosis (OC) by using information from computed tomography (CT), as well as to estimate the heritability for OC scored by means of CT (OCwCT) of the medial and lateral condyles at the distal end of the humerus or the femur of the right and left leg and the sum of these scores (OCT). In addition, we were aiming at revealing the genetic relationship between OCwCT traits and growth in different periods (days from birth to 30 kg (D30), days from 30 to 50 kg (D30_50), days from 50 to 70 kg (D50_70), days from 70 to 90 kg (D70_90), days from 90 to 100 kg (D90_100) and days from birth to 100 kg (D100)). The OCwCT was assessed for 1449 boars, and growth data were collected for these 1449 boars and additional 3779 boars tested in the same time period. All boars were tested as part of the Norsvin Landrace boar test and in the same test station. Heritabilities for OCwCT on anatomical locations varied from 0.21 (s.e. = 0.08) on the medial condyle of the right humerus to 0.06 (s.e. = 0.06) on the lateral condyle of the left femur, whereas OCT exhibited the highest heritability (h2 = 0.31, s.e. = 0.09). Genetic correlations between OCT and OCwCT for the anatomical locations ranged from 0.94 (s.e. = 0.07) for OCT and OCwCT score for the medial condyle of the humerus right side to 0.26 (s.e. = 0.39) for OCT and the lateral condyle of the femur left side. Genetic correlations between D30 and OCT were medium high and unfavourable (rg = −0.74). As the boar gain weight, the relationship between growth rate – expressed as number of days spent growing from one interval to the next – and OCT decreased to 0.12 (s.e. = 0.19, i.e. not significantly different from zero) for the trait D90_100 kg. These changes of genetic correlation coefficients coincide with the maturing of the joint cartilage and skeletal structures. In this study, we demonstrate that CT could be used for selection against OC in breeding programmes in pigs and that the genetic correlations between growth periods and OC are decreasing over time.

Selective breeding is an effective tool to improve livestock. Several selection experiments have been conducted to study direct selection responses as well as correlated responses in traits of skeletal muscle growth and function. Moreover, comparisons of domestic with wild-type species and of extreme breeds provide information on the genetic background of the skeletal muscle phenotype. Structural muscular components that differed with increasing distance in lean growth or meat quality in mammals were found to be myofibre number, myofibre size, proportions of fibre types as well as the numbers and proportions of secondary and primary fibres. Furthermore, markers of satellite cell proliferation, metabolic enzyme activities, glycogen and fat contents, the expression of myosin heavy chain isoforms, of activated AMPKα and other proteins in skeletal muscle tissue and circulating IGF1 and IGF-binding proteins have been identified to be involved in selection responses observed in pigs, cattle and/or chicken. The use of molecular methods for selective breeding of fish has only recently been adopted in aquaculture and studies of the genetic basis of growth and flesh quality traits are scarce. Some of the molecular markers of muscle structure/metabolism in livestock have also been identified in fish, but so far no studies have linked them with selection response. Genome scans have been applied to identify genomic regions exhibiting quantitative trait loci that control traits of interest, for example, muscle structure and meat quality in pigs and growth rate in chicken. As another approach, polymorphisms in candidate genes reveal the relationship between genetic variation and target traits. Thus, in large-scale studies with pigs’ associations of polymorphisms in the HMGA2, CA3, EPOR, NME1 and TTN genes with traits of carcass and meat quality were detected. Other studies revealed the significance of mutations in the IGF2 and RYR1 genes for carcass lean and muscle fibre traits in pigs. Mutations in the myostatin (MSTN) gene in fish were also examined. Advances in research of the genetic and environmental control of traits related to meat quality and growth have been made by the application of holistic ‘omics’ techniques that studied the whole muscle-specific genome, transcriptome and proteome in relation to muscle and meat traits, the development of new methods for muscle fibre typing and the adaptation of biophysical measures to develop parameters of muscle fibre traits as well as the application of in vitro studies. Finally, future research priorities in the field are defined.

Many local livestock breeds in developing countries are being replaced by exotic breeds, leading to a loss of genetic resources. In southern Mali, for the past two decades, a trend towards increasing crossbreeding between the trypanotolerant N’Dama cattle and the trypano-susceptible Fulani Zebu cattle has been taking place. A survey with 160 farmers owning a cattle herd was carried out in southern Mali to investigate their production objectives, as well as trait and breed preferences and correlated socio-economic determinants in order to understand farmers’ breeding decisions and to identify comparative advantages of three breed groups (N’Dama, Fulani Zebu and crossbreds) raised in the study area. Data were analyzed using an exploded logit model. The reasons for raising cattle, as well as trait and breed preferences reflected the multiple objectives of the farmers. Draught power and savings were the most important production objectives. Productive traits were ranked highest; farmers reported large body size as the most preferred trait, followed by fertility, draught ability and milk yield. Crossbreds were the favored breed group. Breed preferences were mainly explained by ‘resistance to disease’ for N’Dama cattle and ‘high market price’ for Fulani Zebu and crossbred cattle. Production objectives, trait and breed preferences were mainly influenced by farmer group (local farmers and settled transhumants). Local farmers put comparatively more emphasis on livestock functions linked to crop production such as draught power. They had a higher preference for traction ability as a selection trait and preferred N’Dama over Fulani Zebu cattle. Settled transhumants emphasized milk yield as a selection trait and preferred Fulani Zebu over N’Dama. The results indicate that the trend towards more crossbreeding will continue putting the N’Dama breed under high risk of genetic dilution in southern Mali. The N’Dama cattle remain a valuable breed due to their adaptive traits such as disease and drought tolerance and their good traction ability, fulfilling the diverse objectives of local farmers. Crossbreeding was found to be a promising breeding strategy, which might contribute to the maintenance of the local breed, provided that breeding schemes are thoroughly planned and organized.

A simple dynamic model of metabolism in growing beef cattle is described; the scheme is based on carbon and nitrogen fluxes. There are six state variables, three relating to blood metabolite levels and three to body composition. The blood metabolite variables are acetyl-coenzyme A equivalents, glucose equivalents and amino acids, and the body composition ones are ash, lipid and protein. The fluxes in the model are based on nine biochemical transactions, six of which are catabolic and three biosynthetic. The model simulates changes in carcass composition in response to changing nutrient input and gives a measure of agreement with comparative slaughter data. It also highlights the need for more complete data on profiles of nutrient absorption in association with comparative slaughter experiments.

The aim of this work was to test the robustness of the 0.68 estimate of the efficiency of conversion of metabolisable protein into true milk protein (Agriculture and Food Research Council (AFRC), 1993) for protein-limiting diets and to determine whether a different value is appropriate for practical rationing. Seventy-two multiparous cows were blocked on the basis of milk energy output per unit of dry matter intake (DMI), and allocated at random to one of four treatments. Treatments supplied metabolisable energy (ME) at a fixed level to individuals within a block, but varied metabolisable protein (MP) supply from 25% below the estimated requirements, through −12.5% and +12.5% up to 25% above requirements for the average performance of animals within blocks at the start of the study. Cows were offered diets to meet their predicted ME requirements for each 3-week period with measurements performed in the last week of each period. Milk protein output was regressed against the estimated MP available for production for each cow and the efficiency of conversion of MP into milk true protein was calculated, assuming a maintenance requirement according to the MP system. The efficiency of conversion of MP into milk true protein decreased with the increasing supply of MP from 0.77 to 0.50. Using an iterative approach to determine the best fit of the data when supply matched requirement resulted in a range of efficiency values between 0.62 and 0.64 g of true milk protein per g of MP.

The experiment tested the hypothesis that short-term feeding of barley just before lambing would be as effective as maize in stimulating early production of colostrum. Both grains are high in starch, and should provide a substrate for lactose which, in turn, promotes lactogenesis. Thirty-five Corriedale ewes bearing single foetuses and 25 bearing twin-foetuses from a synchronised mating were fed on pasture during most of gestation. Fourteen days before the expected time of lambing the single- and twin-bearing ewes were allocated to three treatments and fed (1) a basal diet of lucerne hay to meet their nutrient requirements, (2) the basal diet plus a supplement of whole barley; or (3) the basal diet plus a supplement of cracked maize. The twin-bearing control ewes accumulated more colostrum than the single-bearing control ewes at birth (292 v. 190 g). However, supplementation with barley or maize increased the colostrum at birth to 360 and 541 g in singles and 648 and 623 g in twins. We conclude that barley is a good alternative to maize to stimulate production of colostrum especially in twin-bearing ewes whose lambs are the most likely to benefit from the supplement.

Response to an experimental infection with an enteropathogenic E. coli O103 strain (EPEC) was assessed in growing rabbits given a high or a low dietary fibre diet (200 and 120 g acid-detergent fibre per kg respectively for high ‘HF’ or low ‘LF’ fibre diet). The two experimental diets, differing in fibre level but not fibre quality, were given ad libitum from 21 days of age to two groups of 12 litters of nine pups, weaned at 28 days (trial 1) and caged collectively. At 42 days of age, the two groups were divided in two subgroups (i.e. four groups of 18 animals), inoculated or not with an EPEC O103 strain. Two further groups of 48 rabbits (trial 2) were given LF and HF diets from 28 days (weaning) to 70 days, and were individually housed to control precisely the food intake. Reducing the fibre level led to a lower post-weaning food intake (64 v. 85 g/days in the period from 28 to 42 days of age, P < 0·001) and digestible energy intake (0·75 v.. 0·86 MJ/day, P < 0·001), causing a lower growth (proportionately 0·088 lower, P < 0·001). At 42 days of age, only 17% of rabbits had a detectable caecal saprophyte E. coli flora (over 102 colony-forming units (CFU) per g, trial 1). Inoculating 6-week-old rabbits with EPEC led to moderate levels of mortality (26%). Health risk index (mortality + morbidity) was numerically higher in LF compared with HF groups (P = 0·12). The acute phase of the colibacillosis was between 3 and 10 days post inoculation. From days 7 to 14 post inoculation, a significantly higher frequency of rabbits having a high faecal excretion of E. coli (> 105 CFU per g) was found in LF than in HF rabbits (respectively 65 v. 26·7%, P = 0·04). The caecal pectinolytic flora reached 108 CFU per g at 42 and 65 days of age, and was not affected by diet or EPEC challenge. In 42-day-old rabbits the caecal volatile fatty acid concentration was higher in HF than in LF groups (respectively 79 v. 60 mmol/l, P < 0·05), while the caecal pH was slightly lower (respectively 5·93 v. 6·09, P < 0·01). At 65 days of age, rabbits resistant to the inoculation showed a similar fermentation pattern and fibrolytic flora level to non-inoculated animals. Caecal ammonia level was not affected either by age, diet or E. coli challenge (mean = 12·1 mmol/l). From these results, we conclude that a high fibre intake improved the resistance of the growing rabbit to a specific enteropathy, in association with a higher caecal fermentative activity and lower caecal pH.

Lambing records of 3,500 Scottish Blackface ewes and 2,000 Welsh Mountain ewes were used for a study of repeatability of ewe fertility and litter size. The repeatability of litter size at birth (calculated as an intra-ewe correlation) was higher in both flocks (0.19 and 0.24 for Blackface and Welsh ewes respectively) than that for barrenness (0.09 and 0.08) or for number of lambs born per mating (0.07 and 0.10). Repeatability of the corresponding traits at weaning were generally about half these values.

About two-thirds of the ewes had sires recorded and were used for a heritability analysis. The heritability of litter size at birth in both flocks was higher (0.14 and 0.16 for Blackface and Welsh respectively) than either the heritability of barrenness (−0.03 and 0.03) or of numbers of lambs born per mating (−0.01 and 0.07).

It was concluded that the greatest improvement in numbers of lambs weaned would be obtained by selection on litter size at birth. There would be correlated changes in live-weight (genetic correlations of 0.44 and 0.78 for Blackface and Welsh respectively) but not in fleece weight (genetic correlations of 0.09 and −0.13).

Records on milk yield, fat plus protein yield, food intake, food efficiency, calving live weight and mean live weight, up to 26 and 38 weeks of lactation, were obtained from dairy cows, fed ad libitum, in the Edinburgh School of Agriculture's Langhill herd. The data were divided into first and later lactations and restricted maximum likelihood analyses carried out on heifer, cow and pooled data, fitting an animal model, with repeat lactations as an additional random effect. Univariate analyses were done after canonical transformation of heifer data and approximate canonical transformation of cow and pooled data. Heritability estimates for food efficiency and food intake, from pooled data, were 0·13 (s.e. 0·09) and 0·37 (s.e. 0·11) for 26-week and 0·13 (s.e. 0·12) and 0·52 (s.e. 0·14) for 38-week lactation periods, respectively. Over the same periods, estimates for milk yield were 0·20 (s.e. 0·08) and 0·20 (s.e. 0·11), respectively. Estimates from the analyses of cow and heifer data separately were higher, as were their standard errors. Genetic correlations between milk production traits and efficiency, from the pooled data analysis, ranged from 0·44 to 0·61 and those between milk production traits and food intake from 0·32 to 0·74. Genetic correlations between live-weight traits and efficiency ranged from −0·81 to −;0·99, and those between food intake and live-weight traits from 0·28 to 0·46. The results indicate that when selection is on yield, the correlated responses in efficiency may be smaller under ad libitum feeding, compared with published values where cows were given food according to yield. Including live weight in the selection criterion may give higher responses in efficiency compared with selection on yield alone. In MOET nucleus schemes it may be worthwhile to include food intake or efficiency directly in the selection criteria.

The effect of partial replacement of poly- (PUFA) with monounsaturated (MUFA) fatty acids in pig diets on fatty acid composition of subcutaneous and intramuscular fat and on fat and lean firmness was studied. No effect of dietary fat was observed on total saturated fatty acid concentration in any of the backfat layers or intramuscular lipid fractions. No significant effect of dietary fat was observed for the MUFA concentration in the outer layer, but a marked effect was evident for the inner layer (P < 0·001). A linear effect of dietary MUFA was observed for MUFA (P < 0·001) and PUFA (P < 0·001) in polar lipids. No significant effect of dietary treatment was observed on total concentration of n-3 fatty acids in any lipid location but a marked effect was observed for total n-6 fatty acid concentration. The response of pig fatty acid n-6 concentration was different depending on the lipid location. The neutral lipid fraction showed significantly lower n-6/n-3 fatty acid ratio than the subcutaneous fat. Intramuscular polar lipids showed no significant response of n-6/n-3 ratio. A linear effect of dietary MUFA concentration was observed on the melting point on the inner backfat layer (MP = 34·4 (s.e. 2·51) + 0·15 (s.e. 0·07) ✕ dietary MUFA (g/kg dry matter) (R2 = 0·24, P < 0·05)), indicating that the partial substitution of dietary PUFA by MUFA produced a fat of higher consistency. No response of the melting point of the outer layer to dietary treatment was observed. A marked effect of dietary fat was shown for backfat hardness (P < 0·001), gumminess (P < 0·001) and chewiness (P < 0·001). No effect of dietary fat was observed on the rheological properties of longissimus lumborum muscle.

1. Nitrogen balance studies have been conducted on 16 early-weaned calves given four diets containing groundnut meal or herring meal, the protein of which had been rendered soluble or insoluble by different methods processing.

2. There were highly significant differences in nitrogen retention between ‘soluble’ and ‘insoluble’ herring meals but no differences between ‘soluble’ ‘insoluble’ groundnut meals.

3. ‘Insoluble’ herring meal gave retention values which tended to be higher (significantly so, in one experiment), and ‘soluble’ herring meal gave values significantly lower, than either type of groundnut meal. Mean daily live-weight gains tended to follow the same pattern.

4. Blood-urea concentration was significantly lower on the diets containing herring meal than on those containing groundnut meal but within each type meal did not differ according to solubility.

5. These results are discussed in the light of in vitro studies on the effect of pH on protein solubility.

6. It is concluded that solubility is of minor importance in groundnut meals but of major importance in fish meals when these are included in early weaning diets for calves.

7. Under conditions of low or ‘potentially low’ solubility the amino acid content of the protein source appears to be of considerable significance.
