Laying hens housed in free-range systems have access to an outdoor range, and individual hens within a flock differ in their ranging behaviour. Whether there is a link between ranging and laying hen welfare remains unclear. We analysed the relationships between ranging by individual hens on a commercial free-range layer farm and behavioural, physiological and health measures of animal welfare. We hypothesised that hens that access the range more will be (1) less fearful in general and in response to novelty and humans, (2) have better health in terms of physical body condition and (3) have a reduced physiological stress response to behavioural tests of fear and health assessments than hens that use the range less. Using radio frequency identification tracking across two flocks, we recorded individual hens’ frequency, duration and consistency of ranging. We also assessed how far hens ventured into the range based on three zones: 0 to 2.4, 2.4 to 11.4 or >11.4 m from the shed. We assessed hen welfare using a variety of measures including: tonic immobility, open field, novel object, human approach, and human avoidance (HAV) behavioural tests; stress-induced plasma corticosterone response and faecal glucocorticoid metabolites; live weight, comb colour, and beak, plumage, footpad, and keel bone condition. Range use was positively correlated with plasma corticosterone response, faecal glucocorticoid metabolites, and greater flight distance during HAV. Hens that used the range more, moved towards rather than away from the novel object more often than hens that ranged less. Distance ranged from the shed was significantly associated with comb colour and beak condition, in that hens with darker combs and more intact beaks ranged further. Overall the findings suggest that there is no strong link between outdoor range usage and laying hen welfare. Alternatively, it may be that hens that differed in their ranging behaviour showed few differences in measures of welfare because free-range systems provide hens with adequate choice to cope with their environment. Further research into the relationship between individual range access and welfare is needed to test this possibility.

This trial was conducted to study the effect of livestock production system (freedom extensive system (FES) v. semi extensive system (SES)) and amount of finishing feed (1.5 v. 3.0 kg of commercial feed) in SES on carcass characteristics, meat quality and nutritional value of meat foal slaughtered at 18 months of age. For this study, a total of 49 foals (21 from FES and 28 from SES) were used. The obtained results showed that SES had a positive influence on carcass characteristic because these foals showed the best values for live weight, carcass weight, dressing percentage, perimeter of leg (PL) and carcass compactness index. On the other hand, finishing feeding also had a significant (P<0.05) effect on PL and lean thickness, as the highest values were obtained in foals finished with 3 kg of commercial fodder. The physico-chemical properties were significantly affected by the livestock production system with the exception of ashes content (P>0.05). Foals finished in SES increased in 408% the intramuscular fat content (0.23 v. 1.17%, for foals reared in FES and SES, respectively). On the other hand, L*-value and a*-value were significantly (P<0.01) affected by livestock production system, as foals from the FES group had a more intense redder color (higher CIE a*-value) and higher lightness (higher CIE L*-value) compared with those from the SES group. Finally, meat nutritional value was significantly affected by livestock production system, as foals from an extensive production system on wood pasture could be considered as healthier in relation to their fatty acid profiles (low n-6/n-3 ratio and high hypocholesterolemic/hypercholesterolemic ratio) as a result of the beneficial grass intake on meat fatty acid profile.

Food intake in pigs is highly variable across different production circumstances. This report concludes from a critical review of published observations that it was unrealistic to expect from the scientific literature purporting to express nutrient requirement any reasonable prediction of the particular food intake of groups of pigs. None the less, such knowledge is essential for the practical purposes of their day-to-day nutrition. The literature does however yield general principles from which may be derived: (a) the likely forms (but not the parameter values) of intake functions relating food intake to pig live weight; and (b) the likely factors involved in the modulation of food intake at any given live weight. Using these principles two methods for determining on-farm food intake from the use of simple and available records were proposed. The first requires knowledge only of start and final weight, the time elapsed, and total food intake: it involves two steps, the determination of a suitable growth curve followed by the fitting of a suitable food intake curve. The second method is appropriate in the absence of information on total food intake, and requires a minimum number of spot measurements through the growth period. Different functions were tested for the curve of best fit. As a further benefit it appeared that models could be constructed from the information presented that would speculate for diagnostic purposes upon the likely modulators of food intake. Such models could explore the constraints of gut capacity, the energetic requirements of maintenance and potential growth, the influence of excessive or inadequate environmental temperature, the quality of housing and stocking density.

Sixty-four yearling Friesian steers, in eight groups with eight animals per treatment, were fed on pelleted diets containing ground barley straw, maize and soya bean meal. The percentage of straw in the diets varied from 0% to 50% and the crude protein was adjusted in all diets to 12% on an air dried basis. Levels of 0, 10, 20 and 30% ground straw were tested in 1963–4 and 20, 30, 40 and 50% in 1964–5.

Growth rates in the range of 8·28–9·49 kg. per week were obtained, with growth rate falling significantly (P<0·05) by 0·36±0·15 kg. per week for each 10% increase in straw in the 1964–5 trial; the differences between treatments in the 1963–4 trial were non-significant. The efficiency of food conversion varied from 6·5:1 for 0% straw to 7·7:1 for 50% ground barley straw. Feed intake increased as the percentage of straw in the diet rose above 20%. Regressions relating those carcass measurements in which differences between groups were significant to the percentage of straw in the diet were not significant except that for eye muscle area (P<0·05). Neither carcass nor meat quality differed significantly in animals given 20 % and 50 % ground straw.

The results of digestibility trials with male hoggets showed a linear depression in the digestibility of diets as the percentage of straw increased.

The results are discussed in relation to previous knowledge of the factors affecting the voluntary feed intake of ruminants.

An analysis has been made of still-births and difficulties at parturition in a dairy herd in which purebreds and crossbreds of Friesian, Ayrshire and Jersey origin were kept. There were 2,049 calvings including 28 involving twins.

Purebred heifer dams produced 14·7% dead purebred calves (mostly Friesian and Jersey) and 6·4% dead crossbred calves (P < 0·05). For older dams the corresponding values were 2·4% and 3·6% (P > 0·05). Losses were smaller with crossbred dams. Crossbred heifer dams (two-breed crosses) with 6·5% dead calves exceeded older crossbreds with 1·9% dead calves. Three-breed crossbred dams gave similar results (8·2% and 1·2%). An intermediate size of cow of second or later parity was associated with the lowest mortality.

Friesian and Hereford sires, the calves by which were heavier than those by Ayrshire and Jersey sires, were associated with greater losses than were the latter but this applies to heifer dams and not to the same extent if at all, to older dams.

Of 52 parturitions described as difficult, 31 resulted in dead calves. Malpresentation accounted for 32 cases; the majority of these were ‘hindfeet first’. Friesian and Hereford bulls sired a higher proportion of the calves involved in difficult cases than Ayrshire and Jersey sires.

The effects of acetone concentration in milk, feeding frequency, and intake of concentrates and energy in total diet on milk yield were studied in 38624 lactations from 474 herds during 3 years. Herd-related data on feeding factors were collected once per indoor feeding period. Milk acetone concentrations higher than 0·40 mmol/l were deemed to denote hyperketonaemia, whether subclinical or clinical. The lactation curves of ketotic cows had an abnormal shape, with an inverted peak in early lactation. Most of the reduction in milk yield took place during the first 100 days of lactation with an estimated loss of proportionately 0·085 (acetone concentration ≤0·40 v. >2·00 mmol/l). The loss in 200-day milk yield was estimated to 328 kg 40 g/kg fat-corrected milk (FCM) at an overall mean of 5056 kg. If a herd's performance is monitored by lactation curves, a low peak — and hence an apparently high persistency – can indicate a ketosis problem. More frequent feeding of concentrates was correlated with a proportionately 0·033 to 0·074 higher milk yield in multiparous cows, but inconsistent between years. A more variable proportional response (−0·035 to 0·131) was observed in primiparous cows depending on interactions with, for example, breed. A greater total energy supply, including a larger amount of concentrate (maximum in lactation), was correlated with a higher milk yield, about 0·06 kg FCM per day per MJ metabolizable energy and 0·5 kg FCM per day per kg concentrate, respectively. However, increased feeding of concentrates at calving (parity 1) and 15 days after calving (multiparous cows) was correlated with decreased milk yield, by about −0–3 and −0–5 kg FCM per day per kg concentrate, respectively.

Methods to reduce castration-related pain in piglets are still issues of concern and interest for authorities and producers. Our objectives were to estimate the effectiveness of two protocols of local anesthesia (lidocaine and the combination of lidocaine+bupivacaine) as well as the use of meloxicam as a postoperative analgesic in alleviating castration-related pain, measured by acute physiological responses. Eight groups (15 piglets/group) were included in the study: (1) castration without anesthesia or analgesia, without meloxicam (TRAD WITHOUT), (2) castration without anesthesia or analgesia, but with meloxicam (TRAD WITH), (3) handling without meloxicam (SHAM WITHOUT), (4) handling with meloxicam (SHAM WITH), (5) castration after local anesthesia with lidocaine but without meloxicam (LIDO WITHOUT), (6) castration after local anesthesia with lidocaine and meloxicam (LIDO WITH), (7) castration after local anesthesia with lidocaine+bupivacaine without meloxicam (LIDO+BUPI WITHOUT), (8) castration after local anesthesia with lidocaine+bupivacaine and meloxicam (LIDO+BUPI WITH). Acute physiological responses measured included skin surface temperature and serum glucose and cortisol concentrations. On days 4 and 11 post-castration BW was recorded and average daily gain was calculated over this period. Furthermore, piglet mortality was recorded over the 11-day post-castration period. Administration of local anesthetic or meloxicam did not prevent the decrease in skin surface temperature associated with castration. Lidocaine reduced the increase in glucose concentration associated with castration. For castrated pigs, the joint use of lidocaine and meloxicam caused a significant decrease in cortisol concentration; the combination of intratesticular lidocaine and bupivacaine did not seem to be more effective than lidocaine alone. No effect of treatments on mortality and growth were detected.

1. Of 80 gilts reared on a restricted plane of nutrition, 75 were allocated to one of four groups. Group 1; 17 gilts mated at puberty were slaughtered after farrowing their first litter. Group 2; 20 gilts mated at puberty were observed for three parities. Group 3; 18 gilts mated at second oestrus were observed for three parties. Group 4; 18 gilts mated at third oestrus were observed for three parities. Group 5; nine additional gilts reared on feed ad libitum and mated at first oestrus were observed for three parities. All animals received the same ration after the first mating.

2. The mean age (±SD) of the restricted gilts at puberty was 186 ± 17 days at a weight of 89 ± 9 kg. The gilts fed ad libitum were significantly (P<0·01) older and heavier at puberty (203 ± 15 days and 120 ± 27 kg).

3. Conception rates were 83, 86, 94 and 82% for Groups 1 and 2 combined, 3, 4 and 5 respectively.

4. Gilts mated at first, second and third oestrus produced, respectively, 7·8, 9·8 and 10·4 ± 2·2 piglets in the first parity. Group 5 gilts had 11·0 ± 2·2 piglets. All significant differences were confined to the first parity.

5. By the end of the third parity there were no differences between the restricted gilts mated at first, second or third oestrus in total number of piglets born or reared.

6. The gilts slaughtered (at 135 kg) after producing one litter yielded carcasses which were heavier but leaner than those from contemporary maiden gilts grown to 120 kg on a semi-restricted feeding scale.

The suckling frequency in 34 first-lactation sows and their litters in conventional farrowing pens was observed during a 35-day lactation period from birth to weaning. In order to quantify the ontogenetic development of this behaviour a non-linear regression function was used as a model. The maximum (MAX) of the curve was determined at day 8×5 (31×4 sucklings per 24-h period) and was considered as the biological beginning of the weaning process. The occurrence of MAX was shifted towards an earlier time by about 6 days earlier from small (4 to 7 piglets per litter) to large litters (11 to 14 piglets per litter). However, no significant influence of the litter size on the development of the daily suckling frequency and the average individual piglet weight was found. Nevertheless, there was a tendency for an inverse relationship between the litter size and the piglet weight during lactation and, further, for an increased daily suckling frequency during early lactation and a lower frequency during late lactation in larger litters. As a compensation for the decreasing suckling frequency piglets markedly increased their creep food consumption in the last week of the suckling period (day 28 to 35). The results indicate that the suckling behaviour in domestic pigs reflects sow-piglet relationships which are consistent with a theoretically predicted model of weaning conflict. Hence, it is suggested that modelling the suckling behaviour using well defined and comparable measures may be a suitable approach for the evaluation of the weaning process both in terms of sociobiology (e.g. weaning conflict, parent-offspring conflict) and of farm animal science (e.g. performance, housing conditions).

Agroecology uses ecological processes and local resources rather than chemical inputs to develop productive and resilient livestock and crop production systems. In this context, breeding innovations are necessary to obtain animals that are both productive and adapted to a broad range of local contexts and diversity of systems. Breeding strategies to promote agroecological systems are similar for different animal species. However, current practices differ regarding the breeding of ruminants, pigs and poultry. Ruminant breeding is still an open system where farmers continue to choose their own breeds and strategies. Conversely, pig and poultry breeding is more or less the exclusive domain of international breeding companies which supply farmers with hybrid animals. Innovations in breeding strategies must therefore be adapted to the different species. In developed countries, reorienting current breeding programmes seems to be more effective than developing programmes dedicated to agroecological systems that will struggle to be really effective because of the small size of the populations currently concerned by such systems. Particular attention needs to be paid to determining the respective usefulness of cross-breeding v. straight breeding strategies of well-adapted local breeds. While cross-breeding may offer some immediate benefits in terms of improving certain traits that enable the animals to adapt well to local environmental conditions, it may be difficult to sustain these benefits in the longer term and could also induce an important loss of genetic diversity if the initial pure-bred populations are no longer produced. As well as supporting the value of within-breed diversity, we must preserve between-breed diversity in order to maintain numerous options for adaptation to a variety of production environments and contexts. This may involve specific public policies to maintain and characterize local breeds (in terms of both phenotypes and genotypes), which could be used more effectively if they benefited from the scientific and technical resources currently available for more common breeds. Last but not least, public policies need to enable improved information concerning the genetic resources and breeding tools available for the agroecological management of livestock production systems, and facilitate its assimilation by farmers and farm technicians.

Thirty-six male piglets weaned at 20 days of age were allocated to an initial slaughter group and to five dietary treatments with proteinlevels of 15·0, 17·2, 19·1, 21·4 and 23·2% crude protein at a common energy level of approximately 3·6 Meal digestible energy/kg. All diets were offered ad libitum and growth response was compared between 5 and 20 kg and 10 and 20 kg live weight. In both periods there were significant improvements in growth and the food conversion ratio from 15·0 to 17·2%, and 17·2 to 19·1% crude protein. Between 10 and 20 kg live weight dietary protein levels above 19·1% were associated with a depression in growth. Carcass protein increased and ether-extractable material decreased with increased dietary protein over the entire range studied. Retention of digestible nitrogen was maximized on the lower protein diets. Conversion of food into carcass lean was maximized on the two highest protein diets.

Administration of melatonin to advance the breeding season in sheep has been widely used, since this hormone conveys the photoperiodic signal to the reproductive neuroendocrine axis. An increased lambing percentage has been reported following such treatment during anoestrus, which could be mediated through a higher rate of embryonic survival, either by an improvement in luteal function or by a reduction in the antiluteolytic mechanisms. The aim of this article is to review the body of knowledge on the effect of melatonin on the ovine ovary, the embryo and the establishment of pregnancy. Some studies using synchronized ewes have found that melatonin treatments during anoestrus do not improve ovulation rate by modifying the timing of follicle emergence, but increasing the number of ovulatory follicles by decreasing the atresia of medium and large follicles. On the other hand, the addition of melatonin to the in vitro maturation medium does not improve oocyte maturation rate in oocytes from sheep ovaries recovered either in anoestrus or in the breeding season. However, a luteotrophic effect of melatonin at either short or medium term has been reported. We have recently observed that melatonin implants tend to improve the survival of embryos collected from ewes after superovulation in anoestrus. More specifically, melatonin induced a significant reduction of the number and rate of non-viable (degenerate and retarded) embryos. Preliminary data from our laboratory suggest that the uterine sensitivity to progesterone – in terms of progesterone receptor expression – of superovulated ewes could be reduced by melatonin treatment. It can be concluded that the success of exogenous melatonin as a means to improve lamb production of sheep is due, at least in part, to an improvement of luteal support and embryonic survival.

A total of twelve lactating Jersey cows were used in a 5-week experiment to determine the effects of severe feed restriction on the permeability of mammary gland cell tight junctions (TJs) and its effects on milk stability to the alcohol test. During the first 2 weeks, cows were managed and fed together and received the same diet according to their nutritional requirements (full diet: 15 kg of sugar cane silage; 5.8 kg of alfalfa hay; 0.16 kg of mineral salt and 6.2 kg of concentrate). In the 3rd week, animals were distributed into two groups of six cows each. One group received the full diet and the other a restricted diet (50% of the full diet). In the 4th and 5th weeks, all animals received the full diet again. Milk composition and other attributes, such as titratable acidity, ethanol stability, pH, density and somatic cell count (SCC) were evaluated. Cortisol levels indicated the stress condition of the cows. Plasma lactose and milk sodium were measured to assess mammary TJ leakiness. Principal factor analysis (PFA) showed that the first two principal factors (PFs) contributed with 44.47% and 20.57% of the total variance in the experiment and, as feeding levels increased, milk stability to the ethanol test became higher and plasma lactose levels decreased, which indicates lower permeability of the mammary gland cell TJ. Correspondence analyses were consistent with PFA and also showed that lower feeding levels were related to reduced milk stability, high plasma lactose, high sodium in milk, low milk lactose (another parameter used to assess TJ permeability) and higher cortisol levels, indicating the stress to which animals were submitted. All observations were grouped in three clusters, with some of the above-mentioned patterns. Feeding restriction was associated with higher permeability of TJ, decreasing milk stability to the ethanol test.

In this paper a methodology is developed to improve the design and implementation of a linear morphological system in beef cattle using artificial intelligence. The proposed process involves an iterative mechanism where type traits are successively defined and computationally represented using knowledge engineering methodologies, scored by a set of trained human experts and finally, analysed by means of four reputed machine learning algorithms. The results thus achieved serve as feed back to the next iteration in order to improve the accuracy and efficacy of the proposed assessment system. A sample of 260 conformation records of the Asturiana de los Valles beef cattle breed is shown to illustrate the methodology. Three sources of inconsistency were detected: (a) the existence of different interpretations of the trait’s definition, increasing the subjectivity of the assessment; (b) the narrow range of variation of some of the anatomical traits assessed; (c) the inclusion of some complex traits in the assessment system. In this sense, the reopening of the evaluated Asturiana de los Valles assessment system is recommended. In spite of the difficulty of collecting data from live animals, further implications of the artificial intelligence systems on morphological assessment are pointed out.

An experiment using twenty-five bulls aged between 1 and 1·5 years and weighing 117 to 209 kg was carried out to estimate voluntary dry-matter intake (DMI), digestible dry-matter intake (DDMI), dry-matter apparent digestibility (DMD) and growth rate when the bulls were given 18 foods available from smallholder dairy farms on the slopes of Mount Kilimanjaro, Tanzania. The animals were randomly allocated to five groups of five animals each. Foods were then randomly allocated to the five groups for four periods of 60 days each during which DMI was measured. A digestion trial was made at the completion of each measurement. Outflow rates of solids from the rumen were determined by giving the animals 200 g Cr-mordanted fibre of each food and grab faecal samples were obtained. Dry matter (DM) degradation characteristics of the foods were determined in sacco in the rumen of three Boran steers fed on guatemala grass and the water soluble fraction (A) was measured. DMI varied from 2·2 kg for banana pseudostem to 4·77 kg/day for urea-treated maize stover. DMD ranged from 549 for untreated maize stover to 767 g/kg DM for banana pseudostem and growth rate ranged from 72 for banana leaves to 275 glday for urea-treated maize stover. Potential degradability (defined by A + B) (where B is the insoluble fraction degradable with time) for the DM ranged from 617 g for banana leaves to 874 g/kg DM for banana pseudostem and the degradation rate (c) ranged from 0·0168 for banana leaves to 0·0440 per h for green maize stover. The separate use of degradation characteristics A, B and c in multiple regression to predict DMI, DDMI, and growth rates gave better results than when A + B or (A + B) + c were used. Multiple correlation coefficients between degradation characteristics and DMI, DDMI and group rate were r– 0·90, 0·93 and 0·93 respectively. The results indicate that DMI, DDMI and growth rates by cattle fed on crop residues and forages could be predicted well using the rumen degradation characteristics of the foods.

The nature of human–animal interactions is an important factor contributing to animal welfare and productivity. Reducing stress during routine husbandry procedures is likely to improve animal welfare. We examined how the type of early handling of calves affected responses to two common husbandry procedures, ear-tagging and disbudding. Forty Holstein–Friesian calves (n = 20/treatment) were exposed to one of two handling treatments daily from 1 to 5 weeks of age: (1) positive (n = 20), involving gentle handling (soft voices, slow movements, patting), and (2) negative (n = 20), involving rough handling (rough voices, rapid movements, pushing). Heart rate (HR), respiration rate (RR) and behaviour (activity, tail flicking) were measured before and after ear-tagging and disbudding (2 days apart). Cortisol was measured at −20 (baseline), 20 and 40 min relative to disbudding time. There were no significant treatment differences in HR, RR or behaviour in response to either procedure. However, the following changes occurred across both treatment groups. HR increased after disbudding (by 14.7 ± 4.0 and 18.6 ± 3.8 bpm, positive and negative, respectively; mean ± s.e.m.) and ear-tagging (by 8.7 ± 3.1 and 10.3 ± 3.0 bpm, positive and negative, respectively). After disbudding, there was an increase in RR (by 8.2 ± 3.4 and 9.3 ± 3.4 breaths/min, positive and negative, respectively), overall activity (by 9.4 ± 1.2 and 9.9 ± 1.3 frequency/min, positive and negative, respectively) and tail flicking (by 13.2 ± 2.8 and 11.2 ± 3.0 frequency/min, positive and negative, respectively), and cortisol increased from baseline at 20 min post procedure (by 10.3 ± 1.1 and 12.3 ± 1.1 nmol/l positive and negative, respectively). Although we recorded significant changes in calf responses during ear-tagging and disbudding, the type of prior handling had no effect on responses. The effects of handling may have been overridden by the degree of pain and/or stress associated with the procedures. Further research is warranted to understand the welfare impact and interaction between previous handling and responses to husbandry procedures.

The prediction of the control of nutrient partitioning, particularly energy, is a major issue in modelling dairy cattle performance. The proportions of energy channelled to physiological functions (growth, maintenance, gestation and lactation) change as the animal ages and reproduces, and according to its genotype and nutritional environment. This is the first of two papers describing a teleonomic model of individual performance during growth and over repeated reproductive cycles throughout the lifespan of dairy cattle. The conceptual framework is based on the coupling of a regulating sub-model providing teleonomic drives to govern the work of an operating sub-model scaled with genetic parameters. The regulating sub-model describes the dynamic partitioning of a mammal female’s priority between life functions targeted to growth (G), ageing (A), balance of body reserves (R) and nutrient supply of the unborn (U), newborn (N) and suckling (S) calf. The so-called GARUNS dynamic pattern defines a trajectory of relative priorities, goal directed towards the survival of the individual for the continuation of the specie. The operating sub-model describes changes in body weight (BW) and composition, foetal growth, milk yield and composition and food intake in dairy cows throughout their lifespan, that is, during growth, over successive reproductive cycles and through ageing. This dynamic pattern of performance defines a reference trajectory of a cow under normal husbandry conditions and feed regimen. Genetic parameters are incorporated in the model to scale individual performance and simulate differences within and between breeds. The model was calibrated for dairy cows with literature data. The model was evaluated by comparison with simulations of previously published empirical equations of BW, body condition score, milk yield and composition and feed intake. This evaluation showed that the model adequately simulates these production variables throughout the lifespan, and across a range of dairy cattle genotypes.

Rearing entire pigs may lead to meat quality and welfare problems in relation to pubertal development. A better knowledge of the sources of variation of pubertal development, behaviour and boar taint is needed before generalizing entire male pigs. From 84 days of age, entire male pigs were reared in groups of 10 either in a conventional (C, 1 m²/animal, slatted floor) or an enriched (E, 2.5 m²/animal, straw bedding, outdoor run) housing during spring or autumn and fed ad libitum (n=10/housing/season). Mounting behaviour was observed for 3 h during the third (M3), fourth (M4) and fifth (M5) months of age. The total number of skin lesions was counted on both sides of the pigs 1 day before the behavioural recordings. The time spent in the outdoor run was also recorded during 3 days per month. The animals were slaughtered at 161±1 days of age (122±9 kg live weight). Blood samples were collected at 89 (M3), 119 (M4) and 152 (M5) days of age and at slaughter for the testosterone and oestradiol measurements. The testes were collected at slaughter, freed from the surrounding tissues and weighed. The fat samples were collected for the androstenone and skatole concentration measurement. Plasma testosterone and oestradiol-17β (oestradiol), fat androstenone and skatole and weight of the testes did not differ between the housing systems. Plasma testosterone (8.3 v. 3.9 nmol/l, P<0.05) and oestradiol (12.0 v. 9.2 pmol/l, P<0.1) at M3, fat skatole (0.124 v. 0.043, P<0.03) and weight of the testes (587 v. 512 g, P<0.05) were higher in the autumn than in the spring trial, suggesting that the pubertal development was accelerated. The number of received mounting behaviours was slightly higher in the autumn (P=0.08) trial and was markedly higher in the E than in the C environment (P<0.003). Skin lesions were more numerous in the C than in the E housing at M4 and M5 and in the spring than in the autumn trial at M3 and M4 (P<0.05). Fat androstenone and the number of performed mounting behaviours were significantly correlated between each other and with numerous indicators of the pubertal development (P<0.05). The number of skin lesions was correlated with plasma testosterone and live weight (P<0.05). Overall, this study suggests the effect of season on sexual development, the effect of the housing system on behaviour, and demonstrates the links between sexual hormones, behaviour and boar taint.

The need to improve the knowledge of fermentation processes within the digestive tract in pigs is growing, particularly for ingredients that may act as potential prebiotic sources, such as resistant starch (RS). A study (based on enzymatic digestion followed by in vitro fermentation) was conducted to investigate whether various sources of RS, obtained from eight native starches characterized by inherent heterogeneous starch chemistry and structure, can influence short-chain fatty acid (SCFA) concentrations and relative production kinetics. Total and individual SCFA productions were evaluated over time and up to 72 h of incubation. The in vitro hydrolysis of native starches allowed a classification from very high [⩾650 g/kg dry matter (DM)] to low (<50 g/kg DM) RS amount. The total SCFA production was similar between ingredients, whereas acetate and butyrate molar ratios in the SCFA profile differed (from 0.48 to 0.56 and from 0.17 to 0.25, respectively; P < 0.05). Differences in fermentation kinetic parameters for total and individual SCFA productions were observed (P < 0.05). Considering the total SCFA production after 72 h of incubation, the time at which half of the maximum production has been reached (T1/2), the maximum rate of production (Rmax) and its time of occurrence (Tmax) differed between ingredients (P < 0.05), with values ranging from 6.1 to 11.9 h, from 0.459 to 1.300 mmol/g DM incubated per hour and from 5.1 to 9.8 h, respectively. Overall, a similar trend was observed considering individual SCFA productions. In particular, T1/2 ranged from 6.4 to 12.5 h, from 5.5 to 12.5 h and from 6.7 to 11.3 h for acetate, propionate and butyrate, respectively (P < 0.05). For Rmax, differences were obtained for propionate and butyrate productions (P < 0.05), whereas no difference was recorded for acetate. In summary, our findings indicated that both quantitative and qualitative production of SCFA and related kinetics were influenced by fermentation of RS obtained from native starches characterized by heterogeneous starch characteristics. Current findings are based on an in vitro approach, and thus require further in vivo validations.

Social and health care provision have led to substantial increases in life expectancy. In the UK this has become higher than 80 years with an even greater proportional increase in those aged 85 years and over. The different life stages give rise to important nutritional challenges and recent reductions in milk consumption have led to sub-optimal intakes of calcium by teenage females in particular when bone growth is at its maximum and of iodine during pregnancy needed to ensure that supply/production of thyroid hormones to the foetus is adequate. Many young and pre-menopausal women have considerably sub-optimal intakes of iron which are likely to be associated with reduced consumption of red meat. A clear concern is the low intakes of calcium especially as a high proportion of the population is of sub-optimal vitamin D status. This may already have had serious consequences in terms of bone development which may not be apparent until later life, particularly in post-menopausal women. This review aims to examine the role of dairy foods and red meat at key life stages in terms of their ability to reduce or increase chronic disease risk. It is clear that milk and dairy foods are key sources of important nutrients such as calcium and iodine and the concentration of some key nutrients, notably iodine can be influenced by the method of primary milk production, in particular, the iodine intake of the dairy cow. Recent meta-analyses show no evidence of increased risk of cardiovascular diseases from high consumption of milk and dairy foods but increasing evidence of a reduction in the risk of type 2 diabetes associated with fermented dairy foods, yoghurt in particular. The recently updated reports from the World Cancer Research Fund International/American Institute for Cancer Research on the associations between dairy foods, red meat and processed meat and various cancers provide further confidence that total dairy products and milk, are associated with a reduced risk of colorectal cancer and high intakes of milk/dairy are not associated with increased risk of breast cancer. Earlier evidence of a significant increase in the risk of colorectal cancer from consumption of red and particularly processed meat has been reinforced by the inclusion of more recent studies. It is essential that nutrition and health-related functionality of foods are included in evaluations of sustainable food production.
